Pantone’s choice is influenced by designer runways, fabric shows, news events, pop culture and consumer habits. “There’s the element of encouragement with orange; it’s building on the ideas of courage and action, that we

want to move on to better things. I think it would be a disservice to go with a relaxed, soothing color now,” said Leatrice Eiseman, Pantone Color Institute executive director, the research division of Pantone Inc., which creates color standards for the fashion, beauty and home industries. Orange is a more urgent call to action than last year’s hot-pink hue Honeysuckle, which also channeled cheerfulness coupled with nostalgia. Consumers weren’t always so keen to orange, however, said Eiseman, who wrote the new book “Pantone: The 20th Century in Color.”

It’s been used a lot in high fashion — think Versace and Hermes — for years, but to Americans, it was more closely associated with fast food or children’s products, she explained. It all started to change as computers opened many doors in the 1990s. “When use of the computer started taking off, you could see the awareness of colors used in other cultures. The orange began to come through. Italians got it, and certain Asian countries like India and Indonesia used orange, and then it started to make its way into the mainstream. And then in 1998 one of the iMac choices was orange,” Eiseman said. “And at this point, we’re ready to acknowledge orange as a ‘happening’ color.”

or a column that visually separates a space, for example, “or as long as the colors work together and an

› Afraid of making a mistake with a color like tangerine? Put it an entry way or other space where you

want some punch or visual excitement.

› Break the rules. Sian Blue, for example is a dramatic color, but painting a front door with the color in high

gloss gives it more impact. Play with sheen for a new look.

While ottomans tend to be more structured, with a solid form and usually some legs, poufs or hassocks are actually just big upholstered cushions, and aren’t usually used as tables the way ottomans often are.

But poufs are the perfect squishy footrest and suit family rooms or relaxed living rooms. With a versatile, portable accessory like this, you can afford to

play a little. look for unusual designs, colorful hues and interesting shapes; poufs add a nice punch to a space for not a lot of money, unless you choose something by a designer. Poufs are great if you’ve got toddlers — they’re cruising-friendly, and fun to flop over. Some poufs come filled, but you can use just about anything to fill the cover — old clothing, sheets, newspaper or purchased foam trimmed to size. If you’re at all crafty, consider sewing your own. Better Homes & Gardens’ website offers step-by-step instructions with material costs of about $50. They used burlap to make the example, which gives the pouf a great textured look. It’s not a complex project, so you could have some fun with a few yards of interesting material.

if you’re shopping for new furniture, you should know about the fresh take on color and a big push for multifunctional pieces that fit today’s lifestyles — among six hot trends spotted at the Fall 2011 furniture market at High Point, N.C.

“Companies have focused on one small item to add to your home to give a lift to a room, rather than the financial or style-and-sensibility challenge of doing over an entire room,” says Jackie Hirschhaut, vice president of public relations at the American Home Furnishings Alliance.

1. Bursts of colorNeutrals are still around, but you’ll find vividly colored accent pieces — “great color finishes on wood furniture like Bombay chests, coffee tables, accent tables, a wide range of colors, patriotic stars and stripes on wood

furniture. It’s a little whimsy that lightens the ambiance of a room.”

2. Multi-function furniture “More than we’ve ever seen before — beds with underbed storage in place of box springs, entertainment centers with electric fireplaces and extra storage.”

3. Kitchen organization. “If you don’t have a glorious big kitchen and need more work space, you can buy a kitchen island that is actually a piece of furniture. Paula Deen has done a furniture collection. One piece is a great cabinet, very narrow with drawers and storage designed from a piece in her own home.”

6. Ottomans. Still white-hot in home interiors — “extra seating, extra storage with tops that lift off, a place to put up your feet or serve as a table. It’s an underrated piece of furniture, and now companies are doing very different looks.”

4. Home office flexibility. “We’re so portable with our computers and components now that an office can be anywhere in the home. You’ll see furniture that looks like a sofa table but it’s a writing desk with a surface that pulls out to expand the workspace, for example, and pieces you can place anywhere in the house without it looking like an office.”

5. Youth furniture grows up. “There was a time when kids’ furniture was kitschy and novelty. Now it’s more sophisticated and focused on storage, study and sleep.”

Opposite: Neutral doesn’t have to be beige. Rich mocha is a great backdrop for a black sofa loaded with pillows in vivid colors. Pairing matching floor lamps create symmetry and direct attention to the beamed ceiling. Animal print introduces a sophisticated note.

Inspired by a glass candelabra lamp with dangling prisms in turquoise, red, blue, green and fuschia, Linda Curran has infused her home with rich, vibrant colors. For Curran, her color palette is an extension of who

she is. “People can be scared of color and pattern. I love it, I embrace it. Sometimes I have to stop because I could just keep going and max it out. I have to pull myself back a little bit,” said the Realtor, smiling. When she purchased the home more than a year ago, it was a nondescript, blank white canvas. But Curran saw the potential, and she set about transitioning from staid and traditional to vibrant and contemporary interiors. “What drew me to this house were the swimming pool and deep lot, two fireplaces and three living areas. That’s pretty amazing in a house this size. I considered knocking out a bedroom to get more space.” Instead she worked within the home’s existing footprint and embraced, rather than replaced, the rough cedar paneling and stone fireplace surround in the main living room. It proved to be a perfect foil for the deep mocha walls and pops of color — a red leather club chair, animal print-upholstered occasional chair, dramatic artwork and pillow-filled black sofa. Beyond color, simple changes made a huge difference. Neutral wall-to-wall carpet went down in the living room and a new tile floor was installed in the dining area and kitchen, although she left the crisp white countertops in the kitchen as counterpoint to bright accessories. Hardware was replaced, along with the old sliding patio doors. The new French doors open into the sunroom. She pulled down outdated window treatments in the sunroom and opened up the view to the swimming pool. She chose a black-and-white color scheme and splashed it with color. The 20-year-old love seat was redressed in a stylish tapestry and dotted with pillows. “I move things around from room to room — nothing is static in my house. I keep and store all my accessories so I can change things around. The sunroom has the overflow accessories from the house and because my taste is pretty contemporary, it all seems to work,” she said. In her personal retreat, Curran finds respite in a restful space built around a monochromatic color scheme of pewter gray with crisp white, silver and reflective surfaces. The basement was transformed into a functional and fun family room by moving a wall, ripping out paneling, reframing the fireplace and installing a glass-tiled bar.

• Whether the fabric is patterned or plain, the repetition of that fabric throughout the room is pleasing.

• Place the bed so the headboard is visible as you walk in the door, and centered on the wall if possible.

• Night tables do not have to match, just be close to the same height on each side of the bed. I like to use a chest on one side and a 36” round table with tablecloth and glass top on the other. The round table allows for space for additional favorite things such as framed family photos, a bowl of potpourri or a vase of flowers.

• Pillows need to be a functional accessory. I often stop at three Euro shams (24 by 24 inches) and two regular pillow shams in front, with sleeping pillows tucked out of sight. The days of a multitude of accent pillows heaped on the bed are gone.

• Wall-to-wall carpeting is warm and quieting and should be a short, tight weave for easy vacuuming.

• A chair or bench in the room is helpful.

She could picture how she wanted her house to look.For years, she’d torn pages from home magazines and saved scraps of ideas she loved into a folder that became quickly

stuffed. When the former Miss Iowa and her husband found the perfect property to build their first — and forever — home, she’d pull it out and mine it for must-haves. Genial and philanthropic-minded hosts, the couple wanted a home that had plenty of style and space to entertain. At the same time, it couldn’t be too stuffy. It had to be comfortable for their rough-and-tumble children, too. They found their piece of ground on a bluff above the Mississippi River and worked with Ahmann Design Inc., in Hiawatha, to take full advantage of the views. It took 1 1/2 years to build. “Every room has a view. I had an image of how I wanted the rooms to look and we hardly changed anything, just some tweaking here and there,” she said. Old World-inspired copper-topped turrets, gutters and finals and the stone and brick facade are distinct and appealing exterior features. The knotty alder front door sweeps open into a welcoming foyer with pillow-edged limestone floors and a flowing staircase with beamed ceiling. Textured interior walls are painted an earthy golden hue throughout much of the home for subtle continuity.

Perhaps the fifth time is the charm, and not the third, as the adage goes. “We love to build,” she confesses, “But this is our fifth — and the last house we build without palm trees. Over the years, we’ve

refined what we want, and this new home reflects our family’s needs as our children have gotten older. Plus, my husband is a big golfer, and he wanted to be right on the golf course, so here we are.” These homeowners also are keen on modern design, appreciating the clean aesthetic and emphasis on low-profile shapes and minimal accessories, but with touches of “in-the-moment” contemporary color schemes and industrial chic details. Cedar Falls’ builder Rob Schuerman worked with the couple to create a streamlined, modern home that is both restful and functional. Josie Schuerman helped the homeowner design the interiors. “We had to take into account that many of the surrounding homes were traditional, and we couldn’t go over the top. I’d describe the exterior as transitional. Inside, we kept the woodwork white for contrast with the dark cabinetry and flooring. The cabinets had to look sleek in style and trim so it wasn’t overwhelming to look at,” said Rob Schuerman. Industrial-inspired finishes keep the look pared-down, and a sense of openness flows throughout the main level. Light floods the spaces through tall, broad windows. In the living area, the gray color scheme is punctuated by reflective metal surfaces and luxurious gray upholstery on the sectional sofa. Furnishings and accessories are kept to a minimum. Deepest espresso and lime green accents provide an organic touch. Floors are dark Italian porcelain tile, both dramatic and easy to keep clean. “I’d never done gray before, and I liked the modern look. We brought in lots of metal to complement the gray and the dark woods and floor and soft lime green are nice counterpoints,” she said. The open-concept floor plan draws attention to the sleek kitchen design. Although the footprint isn’t huge, it lives large because it is so functional and efficient. Hanstone Basento quartz countertops are rich with great depth, and stainless steel appliances and glass tile backsplash are shiny counterparts to the dark cabinetry. Modern bar stools are gathered around one side of the island. Schuerman designer Amy Fisher worked on the design and layout of the kitchen. The calm master bedroom suite offers respite from the day’s stresses, and a steam shower with aromatherapy in the spa-like bathroom is the perfect place to unwind. Universal design elements such as extra-wide doors make it easier to age-in-place, and a mother-in-law’s suite was installed to accommodate visits from aging parents and frequent out-of-town visitors. A combination of natural and artificial light is optimal, Young says. But for bathrooms without windows, sconces on both sides of a mirror plus an overhead fixture on a dimmer will do the job. Take a few hours or hire a handyman to re-caulk around the tub and shower. Replace dated, inadequate light fixtures. Rip out the old-fashioned medicine cabinet and replace it with a mirror as large as you can make it.

Backyard transformed into relaxing, blooming retreat

“Go away” reads the sign hanging on the side gate. A clutch of pretty flower-filled pots softens the stern message, but is it any wonder Doug Castenson and Dean Petersen would want to keep their enchanting garden retreat private? The white gate is low, though, ideal for leaning and gabbing with neighbors, and their casual summer soirees are magnets for friends and family. “The sign is meant as a joke,” said Castenson, laughing. “We entertain a lot and spend a lot of time out in the garden, and we have two dogs that run around the place.”

Ten years ago, the transformation began from a typical backyard of turf and a few shrubs into a restful garden in this long-established Waterloo neighborhood. Castenson drafted the plans, drawing landscape sketches to divide the backyard into a series of garden rooms, as well as incorporate hardworking beds and borders to indulge his passion for plants. Their home is on a side street, just a stone’s throw from a busy thoroughfare. But traffic sounds disappear beneath the quiet, soothing burbling of water in the classic stone fountain, the garden’s focal point with its pineapple top, and the greenscape. “I love trees for their shade and aesthetics in a garden, and you’re planting them for posterity, aren’t you? gardener here. It’s his vision. I help with the landscaping and stonework,” said Petersen. He also enjoys growing herbs for cooking. “Rosemary is my favorite, and dill and basil. I make pesto in the fall, and grow tomatoes.” Doug, a former art teacher, became interested in flowers and plants as a teenager and later worked in a greenhouse. And he’s a bit of a softie, too, appreciating the pass-along sentimental value of peonies, irises and roses, particularly David Austin English roses, including the pristine white “Winchester Cathedral,” the divinely fragrant pink classic “Gertrude Jekyll,” and deep pink and lush “Brother Cadfael.” A pergola-style arbor defines one garden space, and curving brick paths wind between the borders. A boxwood hedge lines one path. “Two I purchased and the rest I grew from cuttings. I do a little shaping, but they’ve really thrived,” said Castenson. In the spring, tulips and daffodils are the color show, with ferns, hostas, hydrangeas and other shade-lovers unfurling as the days grow longer. There’s enough light, too, for growing “Casa Blanca” and other fragrant Oriental lilies, daylilies and more. Dozens of colorful pots are tucked here and there, particularly to highlight the garden’s multiple seating and dining areas. A dramatic — and practical — tent pavilion, a wisteria vine winding its way up and over the supports, covers the brick patio. “We spend a lot of time out here, especially on the weekends when the weather is fine. It’s a place to enjoy lunch or dinner and just sit outdoors and relax,” said Castenson.

An open-concept kitchen and family room with its barrel-vaulted ceiling are warm and friendly, prime gathering spots for the family. “I wanted a big, open kitchen because I didn’t want to feel enclosed whether I was cooking for the kids or a party. The whole space feels comfortable because this is really where we live,” said the homeowner. In warmer months, nightly meals are enjoyed on the screened porch. The homeowner collaborated with interior designer Rhonda Staley, IIDA, of The Mansion in Iowa City. Taking her cues from the home’s Euro-style elegance, Staley chose details that echoed the homeowner’s quiet sophistication. Tumbled travertine tiles were laid cobblestone-style in the kitchen, white oak floors stained dark walnut ground the living room. Roman shades mounted over patio doors in the family room, and overscaled upholstered furnishings chosen for both looks and liveability. Upholstery fabrics range from chenille and velvet to leather, linen and silk. “Nothing stiff, always inviting and homey. The rooms are so large that furnishings have to be substantial, not dainty. We made a trip to the furniture market in High Point, N.C., to select pieces, starting with the family room and kitchen barstools,” Staley explained. In the master suite, the homeowners awaken each morning to a glorious view framed by elegant silk draperies in a room with exquisite architectural and decorating details that are easily evident, but never overstated. The master bath is carefully appointed with hard-to-find Breccia de Vendome marble and a whimsical and colorful chandelier. “Actually, there isn’t a thing we’d change. We never had a change order on this house. It just feels like home.”

Chicken & SausageServes 44 chicken breast halves, bone-in with skin removed½ pound flavored chicken sausage links, cut diagonally into thirds2 teaspoons olive oil3 cloves garlic, chopped1 teaspoons dried rosemary1 pound small red potatoes with skin, cut into quarters½ teaspoon salt¼ teaspoons black pepper¼ cup white wine3 tablespoons balsamic vinegar2 small red peppers, cut into 1-inch squaresIn nonstick skillet over medium-high heat, brown sausage for five minutes. Remove sausage to plate. Add chicken breasts, meat side down, to same skillet and cook, turning once, for five minutes or until golden brown. Remove to plate.In same skillet, warm olive oil. Add garlic and rosemary; sauté one minute. Add potatoes and three tablespoons water. Cover and cook 15 minutes, checking to make sure that potatoes are not sticking. Teriyaki Chicken & NoodlesServes 41 pound chicken tenderloins, or thin-sliced boneless, skinless chicken breast halves1 package (8 ounces) thin rice noodles1 can (14 ounces) reduced-fat coconut milk7 tablespoons low-sodium teriyaki sauce (divided)1 bag (12 ounces) broccoli slaw1 red bell pepper, cut into strips¼ teaspoon salt2 egg whites, lightly beaten¾ cup panko crumbs3 tablespoons canola oilSoak noodles in bowl of warm water for 15 minutes. In large saucepan over medium heat, warm coconut milk, four tablespoons teriyaki sauce, broccoli slaw, red pepper strips and salt. Cook until broccoli and pepper are heated throughout, about five minutes; set aside.Brush both sides of chicken pieces with two tablespoons teriyaki sauce. Dip each piece in egg white and coat completely with panko crumbs.In large nonstick skillet, warm canola oil over high heat. Add chicken pieces and sauté 2 to 3 minutes, then turn and cook additional 2 minutes or until crumbs are crisp. While chicken is cooking, drain rice noodles and add to coconut-teriyaki sauce in pan; reheat as needed. Place noodles and sauce on serving platter; top with chicken pieces. Chipotle Chicken, Sweet Onion and Cabbage TacosMakes 61 pound chicken tenders, halvedStir Fry:1 large onion, halved and sliced (about 2 cups)2 tablespoons canola oil½ teaspoons hot pepper sauce1 teaspoon ground cumin1 teaspoon salt¼ teaspoon black pepper1 tablespoon lime juice (from half of lime)Tacos:2 cups packaged coleslaw mix½ cups cilantro leaves1 ripe avocado, sliced thin½ cup fresh salsa12 eight-inch soft flour tortillas, warmed according to package directions½ cup sour creamIn wok, heat oil over high heat. Experience

Beer lovers should get in touch with their inner packrat as retailers

clear Imperial Stouts, barleywines, winter warmers and holiday

ales to make way for spring and early summer seasonals. You

can stock an eclectic cellar of beers that will benefit from aging

— and be there for those odd, cool summer nights when you

want a big beer.

I experienced the benefits of aging or cellaring, a few years ago during

an informal comparison of fresh and aged versions of beers including Goose

Island’s Pere Jacques, a Belgian-style Abbey Ale with a respectable 8 percent

alcohol-by-volume. The fresh version was excellent, but the older vintage

was truly a revelation. The 2009 was fruity, malty and pleasantly sweet with a

hot alcohol edge, but there was flavor conflict. The 2007 version was almost

unrecognizable as the same beer. The flavors had melded to become greater

than the sum of their parts — a mellow, rich, extraordinarily nuanced, yet

entirely cohesive beer. I nearly cried when the bottle was empty. A portion of

every suitable beer purchase since has gone to the cellar.

Here are some guidelines to cellaring: 1. Choose the right beer to age. In general, the higher the alcohol content,

the longer you can store the beer. Imperial Stouts, barleywines, old ales

and Belgian strong ales age very well to five to 10 years; some vintage ales

beyond that. Beers with an emphasis on hops — fresh hop ales, India Pale

ales, Imperial India Pale ales, etc. — have the strength to be aged, but I drink

them fresh because those wonderful citrus, floral, herbal flavors fade quickly.

Ditto to anything with a delicate flavor profile such as hefeweizens and berry

or flower-infused beers.

2. UItraviolet-rich sunlight is the main enemy of beer longevity, dismantling

molecules in hops, which then bind with sulfur molecules into an unpleasant,

skunky-smelling compound. Any light-proof enclosure — closet, cupboard,

cardboard box — will suffice. Long-term refrigeration is not recommended

because low humidity can dry out corks in corked bottles.

3. Consistent cool temperature is a major factor in long-term storage. The

BeerAdvocate website recommends a 40-60 degree range with lighter (in

content, not color) beers at the lower end, stronger beers at the high end.

4. Store bottles upright. Bottle-conditioned beers contain yeast which will

eventually settle, forming a layer of sediment on the bottom, wherever that

may be. If stored on its side, when you tip the bottle to pour, more of this will

end up in your glass and not everyone cares for the flavor.

5. Store a couple of each beer to see how the flavors change over time. Don’t

forget to drink one fresh to establish a benchmark and satisfy your need for

immediate gratification.

Chef Haley Silacek has created an elegant, romantic — and

surprisingly easy — menu featuring recipes sure to win the

cook lots of love and kisses.

The meal begins with Prosciutto Wrapped Shrimp Salad,

followed by pan-seared filet medallions in a wild mushroom

sauce, roasted garlic green beans and cheezy orzo. For

the grand finale, a wine-besotted pear draped in rich, dark

chocolate. Iowa wine selections are included for every course.

All menu ingredients are available at Hy-Vee Food Stores.

Prosciutto Wrapped Shrimp Salad with Pomegranate VinaigretteVinaigrette:

2 tablespoons pomegranate juice

6 tablespoons extra virgin olive oil

2 tablespoons pure honey

Salt and pepper to taste

Salad:

6 slices prosciutto

1 bag mixed greens

Seeds of ½ pomegranate

2 teaspoons sliced almonds, toasted

4 ounces Celebrity honey goat cheese

6 each 16-20-count shrimp, raw

In a bowl, mix together juice and honey. Whisking, slowly add

oil until mixture is completely emulsified. Next, sauté shrimp

in a small amount of olive oil until pink and145 F. Let shrimp

cool slightly and wrap each with prosciutto slice. Toss lettuce

in dressing mixture and season with salt and pepper to taste.

Crumble goat cheese, almonds and pomegranate seeds on top

of salad and arrange shrimp around salad.

Wine: “Blue” wine from Fireside Winery in Marengo

Amana Pan Seared Filet Medallions with Wild Mushroom Sauce4 4-ounce filet medallions

½ cup oyster mushrooms

½ cup shitake mushrooms

½ cup Baby Bella mushrooms

½ teaspoon fresh garlic minced

1 Knorr Au Jus Packet

½ cup dry red table wine

1 teaspoon cornstarch

1 teaspoon cold water


Preheat pan on medium heat with a little butter. Salt and

pepper both sides medallions. When pan is fairly hot, cook filets

2 minutes on each side. Remove from pan. Add mushrooms,

wine and garlic; let simmer until wine is reduced by half. Add

Au Jus, salt and pepper. Combine cornstarch and water and

add to boiling sauce to thicken. Place filets back in pan and

simmer until filets reach 130 F for medium rare.

Cheesy Orzo ½ pound orzo

½ teaspoon garlic, minced

¾ cup hand shredded mozzarella

¼ cup Parmesan, grated

1/4 cup heavy cream,


Cook orzo al dente and strain. Place back on low heat and add

cheese, garlic, cream, salt and pepper.

Roasted Garlic Green Beans 1 ½ cups fresh string beans

1 bulb fresh garlic

1 tablespoon canola oil


Clip ends off green beans and cook in boiling water until

slightly soft and strain. Place garlic and oil in a small piece of

foil and wrap up tightly. Roast garlic in the oven for 35 minutes.

Squeeze roasted garlic out of the bulb and toss 1 teaspoon

in the cooked green beans. Season with salt and pepper. Continued on page 60

Raspberry Poached Pear with Chocolate Ganache 2 pears, peeled with stem on

3/4 bottle Farm House Red Raspberry wine

1 teaspoon cinnamon, ground

2 tablespoon pure honey

Ganache:

1 cup heavy cream

1 cup Hershey’s dark chocolate chips

Garnish:

Fresh raspberries

Fresh mint leaves

Powdered sugar

Use a potato peeler to peel pear, leaving stem in. Cut a thin slice off

the pear bottom so it sits straight up. In a sauce pan, combine wine,

cinnamon and honey; whisk until smooth. Cook for 2 minutes and pour

glaze into a small, rimmed baking sheet. Sit pears upright into glaze and

baste. Bake uncovered at 350 F for 30 minutes, basting pears every 10

minutes.

For ganache: Boil cream in saucepan and as soon as it come to a

boil, add chocolate chips and whisk until smooth. Place pears in pretty

serving dish, pour ganache over pears and garnish with fresh raspberries,

mint leaves and powdered sugar.

Chicken & Sugar Snap Pea CurryServes 41 ½ pounds boneless, skinless chicken breast halves, sliced thinly2 tablespoons canola oil1 tablespoon ground coriander2 cups fresh sugar snap peasSauce:1 tablespoon canola oil1 onion, diced (about 1 cup)1 tablespoon curry powder1 teaspoon chili powder1 teaspoon jalapeño pepper, minced1 teaspoon fresh ginger, minced1 (14 ounces) can diced tomatoes, drained1 (14 ounces) can light coconut milk2 teaspoons salt¼ teaspoons black pepperIn medium saucepan over medium-low heat, warm 1 tablespoon canola oil. Add onion, curry powder, chili powder, jalapeno pepper and ginger. Cook, stirring occasionally, until onion is translucent, about 4 minutes. Add drained tomatoes, coconut milk, salt and pepper. Increase heat to medium high and bring mixture to a boil; lower heat to simmer and cook until sauce has thickened, about 10 minutes. Remove from heat and set aside.Add 2 tablespoons canola oil to a wok and place over high heat. When oil is hot, add chicken slices and coriander, stirring constantly. Cook chicken until almost done (about 5 – 7 minutes) and add sugar snap peas. Continue to cook, stirring, 3 minutes. Combine chicken and curry sauce mixture; simmer 3 – 5 minutes to blend flavors.
