Experts are pointing to Florida's new property tax amendment as a boost to both the state's housing market and economy. On Election Day, February 5, 2008, Florida voters approved Amendment 1. This amendment provides property tax relief for primary homeowners by doubling the existing homestead exemption from $25,000 to $50,000. Economists say the new portability provision - which lets homeowners take their Save Our Homes tax benefit with them when they move - should encourage some people to either build a new home or purchase an existing home that is on the market. According to Gerald Stone of the Associated Press, Amendment 1 is unlikely to be the last word on property tax relief in Florida, however. Gov. Charlie Crist, who led the campaign to pass the proposed state constitutional amendment, said it's just one step in a process he compared to a football game. "This is the second play," said Crist, a former high school quarterback. "We've got to keep driving down the field to get into the end zone for our people. This is just the start." Optimism in the real estatemarket is growing, especially inSouthwest Florida. Experts arepointing to Florida's newproperty tax amendment as aboost to both the state's housingmarket and economy.

And with warmer weatherjust around the corner, mostconsumers will be turning intheir Ugg boots and galoshesfor flip-flops and sandals.

However, experts warnthat while those sassy summersandals may be simple to slipon and easy on the pocketbook,they also come with their owninherent problems.

"Flip-flops offer little interms of arch support, footprotection and shockabsorption. Tendonitis, archpain and sprained ankles arejust some of the problems flip-flops can cause," said Dr.Christian Robertozzi, presidentof the American PodiatricMedical Association (APMA).

In fact, most industry

experts agree that flip-flopsand sandals were never meantto be worn as everyday shoes,but instead were meant to beworn from the locker room tothe pool or in the shower.

However, if you can't bearthe thought of foregoing thosesassy, strappy sandals, APMAoffers this advice that canprovide some tender lovingcare for your tootsies, whilestill showing off your toes:• Consider whether the

shoes are made forwalking. Flats and slidesshouldn't be worn for longperiods of time or whenwalking long distances.Instead, select a sole thatdoesn't bend or twistexcessively, to avoid archand heel pain.

• Choose the source ofmaterial carefully. Flip-flops and sandals that are

made of natural material,such as soft, suppleleather, will preventcalluses and dead skinbuildup around the heels.

• Watch the height. Mostfashion magazines toutminimum 2-inch heels as away of lengthening the legand looking slimmer.However, anything higherchanges the way the footfunctions and causes thefoot to wobble. Rather,look for sandals withlower, wider heels and astable sole to offer greatersupport and balance,reducing pressure on thetoes and ball of the foot.

• Don't forget the lotion.It's easy to forget to applysunscreen to your feet andankles, but doing so willensure sunburn. Inaddition, reapply after

getting out of the water.• Wear shoes specific to

the activity. Although thehigh wedges may lookfabulous, they are of littlehelp in a volleyball game

or Frisbee tournament. Toavoid toe and ankleinjuries, wear appropriatefootwear.For more information,

Tip One: Use a sunscreen withSPF 15 or higher every day.

It's important to apply atleast one ounce of sunscreen toyour entire body 30 minutesbefore going outside. Look forfacial and body moisturizerscontaining SPF 15 or higher. Rack of Pork with Orange Apricot ChutneyServes:6

2 1/2 lbs Pork Loin Rib Roast Rack 3 cloves Garlic 1 tbsp Chopped Fresh Rosemary 1 tbsp Coarse Black Pepper 1 tsp Coarse Sea Salt 1 tsp Vegetable Oil

1 cup Dried Apricots, diced 1 Medium orange 1/2 Medium Onion, finely chopped 1/2 cup Brown Sugar

1 cup Cider Vinegar 1 tsp Grated Fresh Ginger1 tsp Ground Coriander

Mix batter ingredients together in a pre-sprayed 8 X 8-inch baking dish. Cover and allow mixtureto rest at room temperature for 10 minutes. Mix cinnamon mixture. Mix icing and set aside.

Top batter evenly with cinnamon mixture; using fingers, poke topping thoroughly into batter.

Bake by placing in a COLD oven; set temperature to 350°F; set timer for 25 minutes. Cool 10minutes and drizzle with icing.

One-Dish Cinnamon Swirl Bake

Serves 9Ingredients

Batter Icing1-1/2 cups All-purpose Flour 1 cup Powdered Sugar

2 envelopes Quick-Rise Yeast 1 to 2 tbsps Milk1/4 cup Sugar 1 tbsp Butter or Margarine, melted1/4 tsp Salt 1/2 tsp Pure Vanilla Extract

2/3 cup Milk (very warm 120º-130ºF) 2 tsps Butter or Margarine, melted

2 tbsps Corn Oil 1 Large Egg

No- stick spray Cinnamon Mixture

3 tbsps Butter or Margarine, softened 3/4 cup Light or Dark Brown Sugar

1-1/2 tsps Cinnamon

Prepare rib roast: Trim excess fat from roast. Cut garlic cloves into small slivers. With a small,sharp knife cut incisions all over pork - as many as there are garlic slivers. Insert slivers intoincisions. Combine rosemary, pepper, and salt. Rub mixture all over pork and roast at 325°F forabout 1-1/2 hours, or until an internal temperature of 155°F is reached on a meat thermometer.

Meanwhile, prepare chutney: Cut and mince one tablespoon zest from orange. Combine allremaining ingredients, including all juice from orange. Bring to a simmer in a small saucepanover medium heat. Continue simmering until chutney becomes "jammy', about 30 minutes.Slice pork between ribs, and serve with chutney, warm or at room temperature.

In large saucepan combine broth, cumin, coriander, hot pepper flakes, gingerroot andgarlic; bring to boil. Add mushrooms, carrots and onion and cook covered overmedium heat for 5-7 minutes or until carrots are crisp-tender. Meanwhile placecouscous in a medium bowl and pour 1cup boiling water over it; cover and let standfor 5 minutes. Add red pepper, chickpeas and raisins to the mushroom mixture;continue to cook 2-3 minutes or until hot. Taste and add 1/4 tsp each salt and pepperif desired. Stir in parsley. Fluff couscous with a fork and spoon into individual servingdishes; top with vegetable mixture including broth. Garnish with pine nuts if desired.

Health(NUI) – It is estimated that thenumber of people with visionloss in the United States willdouble over the next 20 years.If you were unaware that thereare no early warning signs ofvision loss from eye diseasessuch as glaucoma, diabetic eyedisease and age-related maculardegeneration, you're not alone.

According to a studyconducted by the National EyeInstitute (NEI) and the LionsClubs International Foundation(LCIF), most adults value theireyesight and are aware ofserious eye diseases commonlyassociated with visualimpairment. However, they lackknowledge of how and when toseek timely detection andtreatment for those diseases.

Fifty-one percent surveyedsaid that they have heard of eyediseases caused by diabetes, butonly 11 percent knew that suchdiseases do not have earlywarning signs. The study'sfindings reinforce the criticalneed to educate the public aboutcommon eye diseases such asglaucoma, diabetic eye diseaseand age-related maculardegeneration. Hispanicrespondents reported the lowestaccess to eye health informationat 41 percent, compared with 28percent of Asians, 26 percent ofAfrican Americans and 16percent of Caucasians.

"Good eyesight isimportant to our quality of life.It is essential for adults to haveaccurate information that willhelp them make informeddecisions about their eye healthneeds," said Dr. Paul Sieving,director of NEI.

To help increase awarenessabout eye diseases, LCIF hasdeveloped the Lions Eye HealthProgram (LEHP) a community-based education program forLions Clubs, other communityorganizations and individuals topromote healthy vision and toraise awareness of the causes ofpreventable vision loss. Theprogram encourages annualdilated eye exams and educatesthose with low vision and theircaregivers about the condition.

"Lions have long beenchampions of people who areblind and visually impaired,"said Jimmy Ross, chairpersonof LCIF. "By better educatingthe public on the need forregular eye exams and timelytreatment of eye diseases, wecan end preventable blindness."

Preheat oven to 375°F..

Combine sugar and corn starch in medium bowl. Whisk ineggs. Stir in butter, corn syrup, milk and vanilla. Fold in halfof apples. Pour into pie crust.

Place remaining apples in overlapping circle on top of pie.Sprinkle with walnuts. Bake for 50 minutes or until center ofpie is set. Cool on wire rack. Refrigerate.

Apple Custard Pie

Yield - 1 pie1/2 cup Sugar 1/3 cup Corn Starch

3 Eggs 1/2 cup Butter OR Margarine, melted 3/4 cup Golden Corn Syrup 1/4 cup Milk

1 tsp Pure Vanilla Extract 3 large Cooking Apples, peeled and thinly sliced

1 (9-inch) Unbaked Pie Crust 2 tbsp Chopped Walnuts, optional

Brie and Sage Stuffed Chicken BreastServes 6

6 Butterflied Chicken Breasts, fillets removed 5 oz Chilled Brie Cheese

18 large, Fresh Sage Leaves, divided 6 slices Prosciutto or Ham

1/4 tsp each Pepper and Salt (optional) 1/2 cup Tomato Ketchup

3 tbsp Balsamic Vinegar 1 tbsp each Maple Syrup and Dijon mustard

1 clove Garlic, minced

Preheat the grill to medium-high. Cut the cheese into 6 equal portions. Top each piece of cheesewith two sage leaves and wrap with a slice of ham. Place each cheese bundle on one side of abutterflied chicken breast. Fold the chicken over to enclose the filling and secure closed withtoothpicks. Sprinkle evenly with salt and pepper.

Chop the remaining sage. Stir the ketchup with the balsamic vinegar, maple syrup, mustard, garlicand chopped sage until combined. Divide glaze in half. Brush one portion over the chicken.

Place the chicken on the grill and reduce the temperature to medium. Grill the chicken for 6minutes; turn and baste with the remaining sauce. Grill for an additional 10 minutes, or until aninstant read thermometer inserted into the thickest portion of meat registers 165° F. Remove fromgrill, tent with foil and let rest for 5 minutes before serving.

There once was a little boy whohad a bad temper. His Father gavehim a bag of nails and told him thatevery time he lost his temper, he musthammer a nail into the back of thefence. The first day the boy haddriven 37 nails into the fence. Overthe next few weeks, as he learned tocontrol his anger, the number of nailshammered daily gradually dwindleddown. He discovered it was easier tohold his temper than to drive thosenails into the fence.

Finally the day came when theboy didn't lose his temper at all. Hetold his father about it and the fathersuggested that the boy now pull outone nail for each day that he was ableto hold his temper.

The days passed and the youngboy was finally able to tell his fatherthat all the nails were gone. Thefather took his son by the hand andled him to the fence. He said, "Youhave done well, my son, but look atthe holes in the fence. The fence will
