FARRO & RED PEPPER SALAD

1. Cook farro and vegetables at a boil for 18 minutes. Rinse under cold water and drain well. This can be done either the night before or frozen and thawed.

2. In a bowl mix the water, oil and seasoning packet. Mix well to avoid clumps. Add farro and stir.

3. Buy multi-colored cherry tomatoes (if available) and slice in half. Buy a small bunch of cilantro, rinse and dry well. Chop or tear the cilantro into little pieces. Fold the

tomatoes and cilantro into the salad.

4. MIX WELL before serving as the dressing can settle.

FREEKEH & KALE SALAD

1. Cook freekeh and vegetables at a boil for 18 minutes. Rinse under cold water and drain well. This can be done either the night before or frozen & thawed.

2. In a bowl mix the water, oil and seasoning packet. The dressing will be thick; mix well to avoid clumps.

3. Chop the cherry tomatoes in half and add to the dressing, along with the grains. Rinse and dry the kale well; it can be sandy. Remove the center rib of the kale and

discard. Shred or chop the kale. Using your hands or the back of the knife bruise the kale for a minute or two; it will start become tender and dark green. Add the kale to

the salad and stir until the dressing coats all of the ingredients.

4. MIX WELL before serving as the dressing can settle.

COUSCOUS CAPRESE SALAD

1. Cook couscous and vegetables at a boil for 8-10 minutes. Rinse under cold water and drain well.

2. In a bowl mix the water, oil and seasoning mix. The dressing will be thick; mix well to avoid clumps.

3. Chop the cherry tomatoes in half and add to the dressing and mix, along with couscous. Finely shred the basil and fold into the salad. You can buy little balls of fresh

mozzarella in the cheese department; slice those in half. If they don’t have those, then buy the large ball of fresh mozzarella and chop into smaller chunks. This is an

optional ingredient but makes the salad great. Fold all the ingredients into the salad and mix well.

4. MIX WELL before serving as the dressing can settle.

3. Wash &chop the parsley. Buy multi-colored cherry tomatoes (if available) and slice in half. Fold together cilantro, grains, &tomatoes along with dressing.

4. MIX WELL before serving as the dressing can settle.

set aside for 5 minutes, until all of the water has absorbed.

2. Fluff the quinoa with a fork, and set aside to cool, uncovered.

3. While quinoa cools, whisk the olive oil, water, and spices together in a large bowl. Add cooled quinoa, edamame and green onions. Stir to coat with dressing.

4. Enjoy immediately or rest for 1 hour in the fridge to let flavors meld.
