    Theres nothing like a miniatureChristmas village to give a home awarm, festive look during theholidays but dont let that villagebe limited to snow-covered cottages andDickens-style Christmas carolers.

    The holiday scene might be filled with tinylittle Harley-Davidsons. Or the villagers couldrepresent a mini United Nations of ethnicities.Maybe the villagers are Disney, Peanuts orDr. Seuss characters. There are even villagesbearing the colours and logos of NationalFootball League teams.

    Todays villages are evolving as fast as theworld around them, and accommodate allcreeds, colours and fan bases.

    Department 56, which has manufacturedtraditional Christmas villages for generations,is on the leading edge of the trend.

    Our strategy has been to gain youngerconsumers through licensed villages, saidspokeswoman Pam Schechtman. We look forproperties that have stood the test of timeand are multigenerational.

    Department 56 began in 2000 with abuilding from Universal Pictures How theGrinch Stole Christmas and a Harry Potteranimated scene. The companys Classic

    Brands division, Schechtman said, continuesto do well for Department 56 and gives us theopportunity to create products for some ofthe worlds most beloved brands.

    The idea is to draw new collectors to thehobby through affiliations. Fans of thoseaffiliates may buy pieces for themselves, orpeople who enjoy collecting traditionalvillages will purchase pieces to woo childrenand grandchildren.

    The partnerships dont alienate purists, saidCarla Olson, owner of the online Peanutsretailer JoeCollector.com. Instead, they drawin people who might otherwise not considera Christmas village.

    My customers love it, Olson said. Ivenever heard anything negative about thePeanuts village, and Ive been carrying itsince it came out years ago.

    If a whole themed village seems likeoverkill, tone it down by buying just onesmall vignette and displaying it alone, or ifthe scale is right, then intersperse individualpieces in a traditional village, said LarryHeard, owner of Robert Moore ChristmasTown in Mobile, Ala.

    People will put a Bass Pro shop in themiddle of the North Pole somewhere, hesaid. That doesnt work in every case, butthere are pieces that go really well together.

    Theres also demand for ethnically and

    racially diverse villagers who reflect Americasmelting pot. Department 56 adds diverse newcharacters to its Snow Village and Christmasin the City lines every year, Schechtman said.

    Wayne Bronner, chief executive officer ofBronners Christmas Wonderland, said hescarried black and Hispanic angels and villagefigures for years. People like to see villagesthat their families could live in, he said.

    Erecting an entire village can be expensive.Just one house in certain lines can cost up to$100. But most people assemble their villagesone piece at a time, overmany years.

    You just buy abuilding and add toit, Bronner said. Intime, youll have thewhole streetscape withall the accessories.

    The risk of buyingthem piece by piece isthat a line will bediscontinued before theset is completed, but evendiscontinued pieces canbe found in second-handstores, online auctionhouses and collectibleshops. And, if enoughpeople raise a stink,

    manufacturers will revive a line.Department 56 retired All Hallows Eve but

    had to bring it back for a limited timebecause so many people called and told themthey didnt get it all, Heard said.

    The hobby can be a little addicting, hewarned. For people who are devotees of, say,the Claymation TV classic Rudolph the Red-Nosed Reindeer, it just wont do to not haveRudolphs misfit headquarters and whats aPeanuts village without Snoopy?

    Bronner said the more unusual villages aregreat conversation starters.

    I think the traditional villages willalways be the most popular, but the

    Somewhere on the spectrum between techno-dazzle (iPadapps for toddlers, anyone?) and fuzzy-wuzzy bears,theres a sweet spot: toys that inspire kids to have fun,stretch their creativity and learn while they play. With alittle effort and some guidance from savvy toy shop owners any attentive shopper can hit the mark.

    Toys that encourage the most beneficial play may not be thebiggest spotlight-grabbers. Their attractions are often moresubtle and require a shopper to search past the dancing dollsmassed out in aisle one.

    Toys today, especially toys in the mass market, you push abutton and it does something it lights up or it sings or itturns around and does all kinds of things. But theyre not toysthat allow a child to be imaginative and creative, said JennicLaw, owner of KangarooBoo toy store. The child is playing andhaving a good time, but the toy is doing most of the actions orthinking for him or her.

    Law said classic problem-solving toys like puzzles and blocksare much better for children. She likes boldly coloured GreenToys Blocks (six months and up), which are made fromrecycled plastic milk containers and come in many shapes.

    Stick Em UpSweet and savoury ideas to turn the almost-finger-food into a stick-y party success

    Once reserved for state fairs andcarnivals, the food-on-a-stickconcept has made its way intothe upper echelons of chic eats.Even coffee giant Starbucks has gotten intothe game with its popular cake pops frosted cake bites on a stick.

    Matt Armendariz, author of On a Stick(Quirk Books, 2011), said food on a stick ismore popular than ever because, in thiseconomic climate, people are yearning forsimpler, fun times.

    Weve always had food-on-a-stickaround, but I think theres a desire to return

    to nostalgic flavours and ideas, Armendarizsaid. Plus theyre just so much darned fun!

    As the concept has become morepopular, the trend toward using non-traditional fare as on-a-stick treats has takenoff. If youre not opting for corn dogs andlollipops, Armendariz said to keep in mindthat youll need to apply a little bit ofcooking knowledge, engineering andscience to your kitchen mix to make itsuccessful.

    Think of different portions, ways ofmaking them bite-sized and, mostimportantly, the right type of stick to makethem stay put, he said.

    Experiment with the stick itself. Sprigs of

    thyme and candy canes can be flavourfulalternatives to popsicle sticks, skewers andtraditional pop sticks.

    Armendarizs go-to treat for the holidaysis ice cream sandwiches.

    For the holidays, I love making icecream sandwiches on a stick because I cantake advantage of holiday cookies provided theyre firm enough to use aswell as things like peppermint ice cream.You could also adapt the summerystrawberry shortcake on a stick to be moreholiday-esque.

    Chocolate Chip Cookies:1 cup light brown sugar3/4 cup sugar2 cups all-purpose flour1 teaspoon baking powder1 teaspoon baking soda1 teaspoon salt2 eggs1 cup (2 sticks) unsalted butter, softened1 teaspoon vanilla extract1 cup chocolate chips4 cups vanilla ice cream, slightly softened

    Preheat oven to 300 F. Line baking sheet withparchment paper.

    Make the cookies: Combine sugars, flour, bakingpowder, baking soda and salt in a large bowl. In aseparate bowl, use an electric mixer to beat eggs untillight and fluffy; add butter and vanilla and continuebeating until combined. Add dry mixture a little at atime to egg mixture, stirring with a wooden spoon.Continue stirring until ingredients are fullyincorporated.

    Drop dough by heaping spoonfuls (about 2 1/2tablespoons each) onto prepared baking sheet andbake 12 to 14 minutes. Transfer cookies to a coolingrack and let cool to room temperature.

    Top the underside of 1 cookie with 1 cup of ice creamand press a second cookie on top. Repeat withremaining cookies and ice cream. Tightly wrap eachice cream sandwich individually in plastic wrap andfreeze at least 30 minutes, or until ready to serve.

    Put down the smartphone, close thelaptop and bid adieu to that streamof Facebook updates for a few hours.When heading out to a holiday party,its time to focus on being a good guest face-to-face.

    First, being a great guest and having awonderful party experience start well beforethe day of the celebration. No matter howyou were invited, whether by regularinvitation or by email, RSVP to it even if itisnt requested, said Daniel Post Senning, ofthe Emily Post Institute, great-great-greatgrandson of Emily Post and co-author of theupcoming 18th edition of Emily Posts

    Etiquette (William Morrow, 2011). Even ifyou were invited to a party or to see aholiday movie with friends through an eventinvitation on Facebook, make sure they knowyou plan on attending.

    Once a commitment to attend has been

    made, Post said to make sure to arrive ontime. Its a small, but important courtesy, hesaid.

    Also, never arrive at an event empty-handed.

    Guests should always arrive with a gift fortheir host, even something small like a bag ofcoffee, and then send a thank you note afterthe fact, said Leah Ingram, author of TheEverything Etiquette Book (Adams, 2005).You can send a thank-you gift if youd like,too.

    Now that youve arrived, its time to mingle.If youre a bundle of nerves and dont knowhow to work a party, do not rush in andhead straight to the food or bar area, saidDorothea Johnson, founder of The ProtocolSchool of Washington and the author of Tea& Etiquette: Taking Tea for Business &Pleasure (Benjamin Press, 2009).

    Instead, Johnson said that a good guestgreets the host first but doesnt take up muchof their time. You have to be considerate thatthe host has other guests, she said. Then itsyour duty to mingle with the other guests andmake your presence known.

    Once youve greeted your host, its time toturn your attention to the other guests.Johnson said she learned a lot from watchingformer Secretary of State Henry Kissinger atparties. Kissinger would come in, move tothe right and look into the crowd, said

    Johnson. I always thought he was lookingfor someone, but he was making sureeveryone saw him. He would greet peopleand move his way around the room untileveryone was in the center with him. Hemade eye contact and never walked awaywithout saying excuse me. It was brilliant,and everyone should do that.

    If youre great at online chat, but talkingface-to-face leaves you tongue-tied, Johnsonsuggested going straight to someone youknow. But dont spend all evening withthem, said Johnson. You should expandyourself and your knowledge by talking topeople you dont know.

    While youre enjoying the party, Ingramreminds you that youre still a guest no matterhow comfortable you are. Understand thatyou are a guest in their house and dontmake demands of the host as if you werestaying in a hotel make my bed, turndown your music, et cetera, she said.

    If youre the one hosting the party, Ingramsuggested finding out ahead of time whatfood your guests like so you dont findyourself in uncomfortable situations wherethe guests arent eating or are complainingabout the food (a no-no) because there isntanything they like.

    Together, a great host and great guests areguaranteed to create a great party.

    No sooner do they walk in the door thanyour guests whip their cell phones out tocheck messages, text with their friends orcall friends and family. Its distracting toother guests and takes away from themingling you were hoping for, so how doyou handle the cell phone addict?

    Daniel Post Senning, of the Emily PostInstitute, offers these tips:

    1. The best line of defense is to modelthe behaviour you want to see. Dont haveyour cell phone in your hand when youanswer the door or engage your company.

    2. Ask guests to take calls in an areawhere there arent guests. In a restaurant,

    if someone is going to use their phone atthe dinner table, its appropriate for amaitre d to say something to them.

    3. If at all possible, your guests shouldleave their cell phones behind. If they dontsee a pressing need or use for their phoneand they are entering a social situation,lock it in the glove compartment.

    4. Whether you are the guest or thehost, take control of the cell phone deviceand dont let it control you.

    As you plan your holiday gatheringwith family and friends, yourerecalling the wonderful experiencesof previous years. But cooking thefestive meal, which some consider thehighlight of the celebration, may not be yourfondest memory. Maybe spending a day inthe kitchen is as stressful for you as a rootcanal.

    There is an alternative, and its not makinga dinner reservation for 24. Instead, you canorder a pre-cooked dinner from your localsupermarket.

    Imagine a roast turkey or baked ham.Mashed potatoes with gravy. Stuffing.Cranberry sauce. Sweet potatoes. Rolls.

    Dessert. All you have to do is warm thecourses before serving.

    Youll have a traditional menu on the tablein a fraction of the time it takes to make itfrom scratch. However, you may feel a twingeof guilt arent you supposed to work yourculinary magic?

    Maybe youre like Missy Chase Lapine,whos not comfortable unless she puts herown stamp on dinner.

    Thats why its fantastic to add yourpersonal touch, said Lapine, author of TheSneaky Chef: Simple Strategies for HidingHealthy Foods in Kids Favorite Meals(Running Press, 2007).

    Decide what you want to leave to thesupermarkets culinary team and what youdprefer to either prepare or embellish.

    For example, maybe youd like to free

    yourself from babysitting a turkey for sixhours. Many cooks consider the main proteinsource intimidating and time-consuming, saidLapine. Let a supermarket assume the turkey-roasting task while you exercise youringenuity with the side dishes.

    For some people its all about the bird. Ithink people need to be mindful of the thingsthat come along the sides of the plate, saidJulie Jones, Ph.D., professor emeritus of foodsand nutrition at St. Catherine University in St.Paul, Minn.

    If youre only seeing white stuffing,mashed potatoes, rolls ask for colourfulenhancements or add your own.

    Add the supermarkets green beans,cranberry sauce, sweet potatoes and carrotsto the order. Switch from white to whole-wheat rolls if you have the choice.

    Always add your own fresh salad. Its easyto do and will be a welcome addition forthose who dont want to fill up on starches.

    Buy a bag salad; add feta cheese, spinachand walnuts for crunch, said Dee Sandquist,a registered dietitian spokeswoman for theAmerican Dietetic Association. Pick up raw,prepared vegetables in bags; add a yogurt dipand youre adding nutritional value to themeal, she added.

    Although packaged meals usually include adessert classic, such as pumpkin pie or fruitcobbler, your guests will appreciate a freshand light alternative. Offer sliced pears,drizzled with honey and walnuts, or vanillaice cream or frozen yogurt with thawedfrozen blueberries.

    TURKEY WITH A TWISTIf the meal-in-a-box approach is too outside-the-box for the holiday main

    course, perhaps a new-look turkey is in order. Preparing a fancy turkey andbuying pre-made side dishes will still save time, but also keep it verypersonal. Try this recipe for Orange and Maple Roasted Turkey, which addsthe traditional citrus and maple flavours of winter to the bird. Matthew M.F. Miller

    ORANGE AND MAPLE ROASTED TURKEYRecipe created by: Marc Van Steyn, executive chef, Rigsbys Cuisine Volatile

    Brine1/2 cup sugar 1 medium orange, peeled and juiced 1/4 cup salt 1 gallon cold water 10 black peppercorns, whole 1 12-pound whole turkey, fresh or thawed

    1. Combine all ingredients, except turkey, in large pot and simmer over lowheat for 1-1 1/2 hours.

    2. Chill brine in ice bath until cold. 3. Place whole turkey into foodservice-safe grade container. 4. Pour chilled brine over top to submerge. Close bag and cover. 5. Marinate for 24 hours in the refrigerator. 6. Remove turkey from brine, drain excess liquid.

    Turkey Prep 2 bay leaves 2 celery ribs, peeled, cut into two-inch pieces2 sprigs fresh rosemary 2 medium carrots, peeled,

    cut into two-inch pieces4 sprigs fresh thyme 2 medium white onions, peeled,

    cut into two-inch pieces

    1. Place herbs and vegetables in body cavity and secure.

    Cooking Procedure 1 pound unsalted butter, softened 1/2 cup maple syrup 2 medium oranges, juiced 1 tablespoon fresh rosemary, chopped 1-1/2 teaspoons salt 1/2 tablespoon fresh thyme, chopped 1/4 teaspoon pepper 2 cloves garlic, finely chopped

    1. Combine butter, orange juice, salt, pepper, maple syrup, rosemary, thymeand garlic in a large bowl.

    2. With fingers, slowly massage the compound butter into the skin of theturkey until well-absorbed.

    3. Fold wings under the back of the turkey and return legs to the tuckedposition. Turkey may be cooked in a 325 F oven or on a rotisserie.

    4. If roasting in a thermal oven, cook on a rack for approximately threehours, or until the internal temperature of the turkey reaches 170 F inthe breast and 180 F in the thigh.

    5. If cooking by the rotisserie method, thread turkey evenly on therotisserie-spit fork using a counterweight to achieve an even balance.Place a drip pan in the center of the grill beneath the area where theturkey juices will drip. Cook the turkey over indirect, medium heat in acovered rotisserie.

    6. If cooking with charcoal, replenish briquettes with about 15 briquettesevery hour, as needed, to maintain medium heat. Cook until the internaltemperature of the turkey reaches 170 F in the breast and 180 F in thethigh (about three hours).

    7. Allow turkey to rest for about 15 minutes. Remove vegetables and herbsfrom the cavity prior to carving. Place slices on a platter and garnish withoranges.

    DRESSING UP THE MENUThink of a supermarkets holiday meal as the plain

    white T-shirt. It covers the essentials, but, with some

    adornment, it can be a knockout.Accessories include nuts, herbs, olive oil, cheese,

    wine and/or spirits, honey and fruit.Start with appetizers, the course that sets the tone.Your simple but elegant opening gambit is fresh

    figs, stuffed with a little cheese, maybe Gorgonzolaor Camembert, and wrapped in sliced prosciutto.

    You can heat it just until the cheese melts, saidJulie Jones, Ph.D., who works with the California FigAdvisory Board.

    Dinner rolls dont have to be an afterthought, not ifyou follow a tip from Missy Chase Lapine, author ofthe upcoming book,The Speedy Sneaky Chef. Ialways warm them, no matter what. It makes themtaste better, said Lapine. She recommends heatingrolls in a conventional oven, not a microwave.

    For another layer of flavour, brush the rolls witholive oil, sprinkle with a little coarse salt and choppedrosemary before putting them in the oven.

    It gives [the roll] a wonderful homemade taste,added Lapine.

    Switch to an elegant fig and port reduction inplace of the gravy, suggesed Jones.

    If you prefer an easy approach using the gravythat comes with the prepared meal, you can enliventhe flavour. Pour the gravy into a small saucepan.Add a generous pinch of minced fresh sage and asplash of dry vermouth. Simmer for five minutes, oruntil your company crowds the kitchen.

    We all know nuts are delicious, but theyre evenbetter after toasting.

    If youre serving nuts of any kind, toast them in adry skillet for two to three minutes, adding a littlerosemary, said Lapine, who recommends herb-toasted nuts as an appetizer.

    Although you may not expect guests to clamourfor vegetables, you can change that.

    Stir minced chives into the mashed potatoes;drizzle a little balsamic vinegar over baked squash,sprinkle toasted nuts on green beans or broccoli andsprinkle Parmesan cheese on baked potato wedges.

    MAKE WAY FOR TURKEYThe day before your festive meal, your refrigerator is about

    to get very full. Make sure you have room for the food. If the dishes you bring home are still hot from the

    supermarket, divide the items into smaller amounts and packin separate covered containers for faster chilling in therefrigerator. If the food was cooked and chilled at the store,place it in covered containers and refrigerate.

    Your supermarket may offer the option of a cooked, stuffedturkey. If thats your choice, you should buy it hot to eatimmediately, according to food safety experts. Otherwise,purchase a cooked, unstuffed bird to reduce the risk food-borne illness.

    To reheat a turkey, preheat the oven to 325 F. Place the birdin a shallow roasting pan. Add a small amount of chickenbroth to keep the meat moist and lightly cover the bird withheavy-duty aluminum foil to prevent it from drying.

    Insert a meat thermometer into the thigh, not touchingbone. When heated through, the birds internal temperatureshould reach 165 F.

    To reheat a spiral-sliced baked ham, preheat the oven to325 F. Place the meat in a shallow roasting pan, cover withheavy-duty aluminum foil and heat for about 10 minutes perpound of ham. A meat thermometer should read 165 F.

    Heat vegetables and stuffing in covered containers either ina microwave or a conventional oven, using appropriatecookware. Soup and gravy can be heated in a microwave ovenor on top of the stove over low heat.

    Networks Paulas Home Cooking. Afterthat, she was commissioned to make aspecial replica of a Springfield, Ill., traindepot to be displayed at the AbrahamLincoln Presidential Library & Museum.

    All this exposure attracted the attentionof Bobby Flay, who (unwisely) decidedto challenge her to a gingerbread battleon Food Networks Throwdown withBobby Flay. Needless to say, thegingerbread queen held on to her crown.

    In a typical year, construction seasonfor Rosson begins around midsummer,when many of the magazines she workswith are completing their holiday issues.

    Whenever I make the first gingerbreadhouse of the season, it just brings meback to life, Rosson said. I actuallylisten to Christmas music to get myselfinto it. Last year, when I was working ona house, my air conditioning went out and it was more than 100 degreesoutside!

    Her busiest season hasseen her build about 50houses. There was an eight-year period where I didntsleep at all during the fall,said Rosson, who works inmarketing.

    Rossons culinary foundationwas laid early on, as she wasgrowing up. Ive always baked. Ibaked with my grandmother andmy mother. It was a part of at leastevery week almost daily, she said.

    She married at 19 and her husband,Steve, immediately entered the military.With that, she began moving about withthe Army officer. He is currently servingin Afghanistan.

    Wherever Rosson was stationed, shewould take baking classes.

    Rosson spent some time in Germanyin the early 1990s, where she becameenamoured with the gingerbreadhouses displayed in bakery windows.

    I was fascinated with them. Iwanted to know how to makethem, she said.

    She cracked open a book ongingerbread houses, tried a fewrecipes and started to build areputation.

    creations. I started donating thehouses for military fundraisers,she said. I knew that peoplewould be buying raffle tickets forthem. I wanted them to be worthdonating money to.

    Rosson cultivated a specialty inreplicas of famous and historicalstructures. Her first was a 2005recreation of the Richmond Hill,Ga., mansion of Henry Ford thatwas displayed at a retirementvillage. As a contributing writer forCooking with Paula Deenmagazine, she has also renderedthe Southern celebrity chefs homein gingerbread.

    Her favourite creation? That wasthe train depot for display at theLincoln library. Rosson put about400 hours into it: a labour of love.

    Im an Illinois girl. I love mesome Abraham Lincoln. It was ahuge honour for me, she said.Were a patriotic family, anyway.

    Family members frequently lenda hand to Rossons projects. Herfather designed a specialfoundation board to facilitate thebuilding of the Lincoln depotstructure. Her mother has lookedafter her children while shecompleted high-profile jobs. Heroldest son, 13-year-old Joshua,crushed up candy to make coal for

    the depot replica.All of Rossons kids (besides

    Joshua, theres also Scott, 11, andWilliam, 8) are naturals atgingerbread building. Each createsan individual house each holidayseason.

    I think, for the longest time,they thought every mom did it.That was normal to them. Theydidnt think it was that big of adeal until I was on Bobby Flay,she remembered.

    That 2007 Throwdown episodesaw judges declare hergingerbread recreation of AbrahamLincolns Springfield, Ill., homesuperior to Flays Empire StateBuilding replica.

    In recent years, Rosson scaledback the number of houses sheproduces annually to about 20,mostly for fundraisers. She saidshes careful that it doesnt engulfher holiday celebrations and familytime.

    Nowadays, I put off allgingerbread making to around thefirst week in December, she said.For so many people, it kind oftakes over your whole holiday. Idont want to be stressed out overthe holiday.

    Even the Gingerbread Queenherself admits, You cant letgingerbread get in the way.

    Kids should definitely be brought into thegingerbread building, experts say. Here aresome tips from the pros when it comes tothis fun, educational (and messy) familyactivity.

    Be prepared for a two-day project ifbuilding from scratch, said JohannaRosson, whos appeared on several FoodNetwork television shows. Bake thegingerbread and start construction one day;decorate the next.

    Even when using a kit, allow for plenty oftime for the house to dry before decorating,Rosson said. Its also a good lesson inpatience for a kid.

    Use the opportunity to teach otherlessons as well, said Suzanne Kanaly, 2008winner of the National Gingerbread HouseCompetition hosted by The Grove Park InnResort & Spa in Asheville, N.C. Her boysstarted on houses when they were aboutfour years old.

    What better way to teach your kids mathat an early age? Kanaly said. Why not getthem involved right from the beginning? Itteaches them how to count and how to do

    fractions: a half cup of this, a quarter cup ofthat.

    She also suggests having children keepan eye out for candy and other items withwhich to decorate. It could be pastashapes or cereal. You can teach themshapes at the same time, Kanaly said.

    Try to have fun with it, and dont stifle thekids creativity. You dont want to putpressure on kids when theyre learning. Itsall about good memories, Rosson said.Dont take over. What they create isbeautiful to them. You should also think so.You should not pressure them to do thingsa certain way.

    Kanaly suggested soliciting input fromlittle ones early on. Id ask them, Whatare some ideas? Draw me a picture.

    Dont fret the mess, Kanaly said. Messycan be fun. You think about how busyfamilies are nowadays, she said. You getflour on your face, or drop an egg on thefloor; its nothing compared to the time youspend with your children having fun.

    Growing up in the Midwest, therewasnt a holiday that didnt get alittle merrier courtesy of a scoopof homemade ice cream. Asidefrom the Cool Whip-topped pumpkin variety,there wasnt a pie baked in the twelve-monthcycle that didnt receive the hand-cranked la mode treatment.

    Christmas was no exception. Sure, 12inches of snow blanketing the cornfields wasenough to freeze your outsides, but has yourtongue ever really been too cold for icecream? Really? On top of pecan pie?Nonsense.

    Now that I have my own children, I try notto make ice cream the household staple itwas in my youth. Since its not a regularoccurrence (I prefer to see my feet when Ilook down) theres really no way to justifybuying and storing an ice cream maker toproduce two to three batches a year. At leastthats what my wife tells me.

    Thus came my inspiration for EasyPeppermint Ice Cream, a three-ingredientrecipe for the creamiest, fluffiest, richest and frankly cheapest ice cream around. Ifpeppermint isnt your flavour, feel free to useany hard sugar candy in its place.

    28 candy canes4 cups heavy whipping cream2 cups half and half

    1. Unwrap candy canes andplace in a freezer bag. Seal bagand use a rolling pin to beatcandy canes into tiny pieces.Pour candy cane bits into thebottom of an eight-quartfreezer-safe container.

    2. Pour whipping cream andhalf and half on top of candycane bits. Stir until well mixed.Cover and refrigerate for 12hours, stirring occasionally.

    3. Remove from fridge and stiruntil blended. Pour mixture intothe bowl of an electric mixer.Whip until soft peaks begin toform.

    4. Place cream back intofreezer-safe container andfreeze until setup, about 8 to12 hours.

    TART SHELLS:8 oz. cream cheese1 1/2 cups margarine3 cups flour

    FILLING:1 1/2 cups brown sugar1 1/2 cups ground walnuts or pecans2 eggs2 tablespoons margarine2 teaspoons vanilla2 dashes saltNote: For best results, double the filling

    recipe. We do every time.

    Mix together ingredients for crust. Presssmall balls into mini tart tins. (Tins are onlyabout 1 1/2-inches in diameter.) Place tinson baking sheet with lip. (We use 118 minitart tins.)

    Fill tarts two-thirds full with filling.Bake at 350 F for 25 to 30 minutes.

    Remove tarts from tins while hot. Do notcool tarts in tins, or theyll stick.

    Cool tarts on tray lined with papertowels.

    Optional: Lightly dust with icing sugarwhen ready to serve.

    Sticky Onthe InsideStuffing the bird wih stickyrice, a traditional Asian dish,is a gluten-free alternative tobread-based stuffing.

    Sticky rice. Hot pot. Long-life noodles.They might not sound like holidaydishes, but these are the types ofentres that graced my familys holidaytable when I grew up, both out of necessityand as a tribute to my parents home country.

    Our problem was that of many immigrantfamilies while we want to celebrate thisultimate North American holiday as NorthAmericans do, we have our own traditionsand (especially before the internet and FoodNetwork) didnt know how to make the foodswe saw in the movies. Thats why my familysettled on sticky rice instead of stuffing thatglob of cubed bread that my mom couldntfigure out how to make, nor find appetizing.

    Years later, I asked my mom to explain thetradition behind sticky rice. In Taiwan, shesaid, it is customary for a family to give stickyrice with a hard-boiled egg that is dyed red(for good luck) as an announcement of a newchilds one-month birthday. When thereceiving family finishes the food, they returnthe plate, filled with uncooked rice as asymbol of plenty.

    Nowadays, sticky rice is considered acomfort food that is often served atcelebrations and family gatherings. CarolineTsao, owner of 527 Caf, a Taiwaneserestaurant, said that the dish is a symbol oftogetherness. The rice itself is sticky, andthere are many ingredients that all combinetogether for a flavour that everyone loves,she said. It means that everyone can stay

    together and enjoy eachothers company.

    The Taiwanese dish isunlike Chinese iterations because of the useof fried shallots, Tsao said. The rest of theingredients, which typically include driedshrimp, shiitake mushrooms and pork, canvary, based on taste and preference.

    Jen Che, author of the award-winning foodblog, Tiny Urban Kitchen, said that the recipeis particularly forgiving and open toexperimentation. Theres a lot of room formistakes and flexibility, she said. The stickyrice itself, the texture is so good. You can addmore soy sauce or pork, or Chinese sausage ifyou want.

    Although the traditional recipe may call foringredients that are only available at Asiangrocery stores, substitutions are easy to make.Che recommends shortcuts for people afraidof the multi-step process. The easiest way isto just make the sticky rice separately [in arice cooker], then saut the other ingredientsand mix it all together, she said.

    As with all types of comfort food, the bestrecipe is always the one youre used to. Imsure hers tastes great! Che said to me as wecompared recipes. My mom maximizes theshallots and dried shrimp so she can cutdown on salt and soy sauce. Her mom goesfor the low-fat option, using less oil andcutting off the fatty parts of the pork. "At theend of the day, we like our moms food thebest, Che said.

    SPICYGARLIC LEMONSEAFOOD LINGUINI

    A delicious healthy holiday meal made with fresh seafoodthat takes no more than 30 minutes. Since all the ingredientsare fresh you will be able to adjust on the spot to your desiredtaste. Some people may like a spicier dish while others astronger garlic taste.

    Heat a large pan with olive oil and add the seafood. Seasonthe seafood with salt and pepper then add the chilli, garlicand lemon juice. Let the ingredients cook together for abouta minute then deglaze the pan with white wine. Finish the dishwith a spoonful of olive oil butter to help thicken the sauceand season with salt and pepper for taste. Cook the pasta andtoss with the seafood/sauce.
