We're rollin' along the river and having a great time. The Board is preparing for IAHCE conference in mid-March. We plan to take the items that won at the Cultural Arts
Event. Cross your fingers for our winners: Becky Marshall, Leatrice Helbling, Joyce
Kerkstra, Dorothy Weber, Genet Dixon, Donna Prahl and Nancy Mathis. Good luck to each
one.
The Nominating Committee is working on finding new members for the board. Please call
Pat Lacey (356-0412) or Mary Ann Rinkenberger (684-2823). Positions available are 1st VP;
Secretary; Cultural Arts; and Public Relations. The term is 2 years, but they can serve 4
years. Please call and help them. Thank you.
The Annual Event is coming up on April 28th. we're looking forward to having a good
time. Registration and refreshments will start at 9a.m. If you have any pictures to contribute
to our collage, bring them along. Need to add names and what the activity is. We will have a
Photo Op for each unit to take a group picture.
On my quest to visit each unit, I have been very fortunate to visit the following
units: Staley, Dewey-Fisher, Royal, Philo, and Homer Nights. Every unit is has been unique
and very interesting. Certainly have enjoyed myself tremendously. Thank you for having

FIRST VICE-PRESIDENT Things are starting to pick up for the new year. I hope you are all enjoying the craft lessons
we are offering. They are usually the 1st Friday of the month following the lesson. We are
learning how to make lots of neat items. Please join us. State conference is coming up in
March. We always come away with lots of information to share. April is our annual luncheon.
Again talk it up in your unit and plan to attend. I know we are all anxious for warm weather
to get out in our gardens and get those flowers planted. Look forward to seeing you at our

FAMILY AND COMMUNITY ISSUES Every year on March 17, the Irish and the Irish-at-heart across the globe observe St. Patrick’s Day. What began as a religious feast
day for the patron saint of Ireland has become an international
festival celebrating Irish culture with parades, dancing, special
foods and a whole lot of green. March always holds a special
meaning to me because I got married on March 18 and of course the
high school basketball games (March Madness).
There are many opportunities in our area to see some great
theatre performances. The Beef House Theatre will have “The
Boys in Autumn” April 15-17; Parkland Theatre will be doing
“Fiddler on the Roof “ April 14- May 1; Effingham Center in
March will have Rhonda Vincent and Gene Watson, Gaelic Storm,
and Honky Tonk Man Shake Rattle and Roll. Coming up will be
Mickey Gilley, John Anderson, The Fab 4, Crystal Gayle, Little
River Bank, Jeff Foxworthy and Casting Crowns.
Let me know what fun things your group has done or is planning.

SEWING DAY – there will not be a sewing day in March
because FBA was not available in March.
Next Sewing Day will be April 25 – 9:30 a.m. – 3:00 at the FBA.

INTERNATIONAL Happy St. Patrick’s Day! This month we will take a look at
the people of Ecuador where Spanish is the official and primary
language used in schools, government, and daily life. The 2008
constitution made the indigenous languages Quichua and Shur
official “intercultural” languages to show respect for the indigenous
groups and acknowledge the reality of life for many indigenous
people who learn their own, local language first and Spanish
second.
The Quichua are the single largest indigenous group in
Ecuador and are related to the Quechua in Bolivia and Peru. Most
live in the Sierra region, but some live in the Oriente.
Living in the Andes, the Quichua developed farming
methods to match the demanding landscape by creating irrigation
systems and learning to dry food in the cool mountain air. The
Quichua get much of their meat, wool, and leather from llamas and
alpacas which are hardy mountain animals with thick fur.
Quichua society depends on community members working
together. Their system of mutual aid is called anyi. Everyone is
expected to participate. If a house needs built, a bridge repaired, or
a road cut through the forest, the community members organize to
get the work done and everyone is expected to participate. In some
villages, people who don’t work on community projects must pay a
fine.
In Ecuador today, some Quichua can be recognized by
their traditional clothing. Women wear a long tunic or skirt, an
embroidered shirt, and a shawl. People from different villages wear
different colors of clothing. The beads women wear also
distinguish the region. Many men have stopped wearing traditional
dress, except for their distinctive ponchos.

the Shuar of Ecuador.

CRAFTING by HCE – Jean’s Craft Club
Come and Enjoy the Crafts that are offered
Following the suggestion by the Mahomet Unit, the craft club
has been renamed Jean's Craft Club in honor of Jean Swaim for
her long contribution to the arts & crafts.
It has also been suggested by several members that the craft club
continue during the summertime. "It is easier to attend in the
summer, than it is in winter." OK, we are going to try and set up
something.
For April, we are painting a flower pot—cost will vary between
$3-10 according to size selected. Come and get messy with us. We
don't have a huge crowd yet, but those that are there are having a
good time. Generally, we will have another small quick
craft. Thanks for attending. PLEASE RSVP if attending

Champaign County Unit News ************************************* BONDVILLE/SEYMOUR UNIT
The Bondville/Seymour HCE Unit met on Tuesday, February 9, 2016 at 1:30 pm at the Bondville Village Hall. Chairman, Pat
Meriedth, called the meeting to order. 9 members were present.
Luanna Olson will attend the lesson for April, “Superfoods to the
Rescue.”
Sue Christensen, Community Outreach chairman, reported that
the February sewing day is on the 29th.
Luanna Olson, Membership and Voluntary Hours Chair reported
that 10 people in our unit turned in their hours. The top two
volunteers were from our unit. Their names will be announced at
the Annual Meeting on April 28.
Jean Swaim, the Cultural Arts Chair, passed away on January
16th. Jean was a 66 year member of HCE. Members shared some of
their fond memories of Jean and her amazing talents.
Linda Meachum, Family Issues chair, brought members a list of
warning signs of stroke and heart attack. She also shared with us
teddy bears for her grandchildren that were made from her late
husband’s shirts that he was wearing on the day they were born.
The bears were very touching and heartfelt mementos.
New Business – Chairman, Pat Meriedth, read the Constitution
and Bylaws Report 2015 so that all members had a chance to
discuss the proposed changes which will be voted on at the Annual
Meeting in April.

EARLY RISERS UNIT The Early risers held their February meeting at the Family Resturant in Mahomet.
The meeting was called to order by Sam McCall with the Pledge to
the flag and HCE Aim said.
14 members answered roll. Every one ordered their food and we
continued with the meeting.
The minutes were read with the treasurers report given by Lois
Wood.
Our birthday girl was Erna Mennenga.
Volunteer hour sheets were passed out and explained about the new
procedure. Lois Wood
showed her crafts from the Jan and Feb craft club meetings. Mary
Lou Younger shared the March 4th craft project with the members.
Our schedule for the year was discussed. We will have a potluck at
Mary Lou Youngers in June with our spouses attending. The
December meeting was discussed, several suggestions were brought
up. We will decide at a later date on where we will be going. Our
March 17th meeting will be at Denny's. The meeting was
adjourned.

HOMER UNIT
Homer HCE met on February 19th at the Homer Community Building. We conducted our usual business meeting by opening
with the pledge to the flag and this time we read the collect for club
women together. Pat Varvel passed out a map and sheet of recipes
from Ecuador and also taught us more about Ecuador. Pat also
informed us about where our pennies go and how they are used that
we collect each month. Shirley Miller presented the lesson on
memory. It was a very valuable lesson and we all enjoyed it and
learned valuable skills from it. Our next meeting will be a surprise

HOMER NIGHTS UNIT The Homer Nights Unit met on 02/23/16 at 7PM, at the home of Kris Brown. The meeting was attended by Alice Kirby, Chair, Kris
Brown First Vice Chair, Kate Boyer, Second Vice Chair, and Diane
Boyer Secretary/ Treasurer, and guest, Jessica Sands.
Alice Kirby did the presentation of this month’s lesson,
“Staycation.” We began with a brisk ice breaker that led to lively
comparisons of places to visit both locally and all over the state. As
part of the lesson, Alice passed out” topical 3x5 cards, which
invited everyone to relate personal experiences, which we agreed
was very interesting and informative. She also taught us about
travel insurance, and that generated a lot of conversation regarding
the importance of details in planning and attention to all those
unforeseen problems that may happen on a vacation or “get
away.” Kris Brown will be attending next month’s lesson,
“Superfoods to the Rescue.”
Our group also discussed the next Homer Bulk Cooking Club
meeting that will be at the home of Alice Kirby on February
27th. We discussed the possibility moving the Cooking Club to a
larger location next month since we are outgrowing Alice’s

kitchen. Eleven women will be preparing meals in Alice’s kitchen
at the February gathering.
Our next group outing will be May7th, a day trip, which will be
a Vermillion Co outing to include: the Crows Nest, the Sugar
Shack Antiques, Ludwig’s Farmstead Creamery, Sleepy Creek
Vineyards, and Hobnob Spring Market.

MAHOMET UNIT
The Mahomet Unit met at 1:30 p.m. on February 17th. Meeting
opened with the Pledge and Aim.
Roll call was answered by eleven members and on guest, Mary
Lou Younger.
The lesson “Hold That Thought” was given by Rickey
Vanderspool. Her lesson concerned all especially older people. It
was interesting, amazing, and a fact of life. Her presentation was
easy to understand and brought up a lot of discussion.
Elizabeth Michael thanked the ladies that helped with her sewing
project and how she distributed the weighted blankets they make.
Donna Shirer gave the Cultural Arts report. Bonnie Cook was
pleased that so many members showed up to fold the Chatter.
Our unit lost a very nice and active member, Mary Freece,
recently passed away. The unit decided to wait till next meeting to
decide on a memorial for her.
Refreshments were served by Elizabeth Michael and Bonnie

MAYVIEW UNIT Mayview H.C.E. met on February 2, 2016, at the home of Gerry Ann Windler with 13 members present. We celebrated our
90th birthday of our club with cake and ice cream, nuts and
mints. We said the pledge and H.C.E. Aim, and Pat led the singing
of "Let Me Call You Sweetheart".
Joyce Smith gave the lesson on "Hold That Thought", and she
handed out an activity lesson for us to participate in and read. The
minutes were read and approved, and Pat gave the treasurer's report
as $203.38 as the balance.
Carol Froeschl thanked us for the cards and donations to her
husband Frank's passing to SIU Foundation, from the club, and
thanked Gerry for having the meeting. Ruth Ann Shurts, our new
member, is to take the March lesson. Carol said that "at large
members", would get books. Linda Flessner said Elizabeth
Michaels is having a sewing day Feb. 29, 2016 at F.B., 9:30-3:00,
bring a sack lunch.
Velma Olson is the new Cultural Arts Chairman, and mentioned
Logan Kirby is playing at the K.C.'s in Danville, Feb. 13. Barb
Leach gave us a report as the International Chairman on Ecuador,
they have "walking trees", that don't really walk.
April 28, 2016 is our annual meeting at the Savoy Methodist
Church, and Carol gave a paper with the constitution, and said we
would be voting on some changes that day, and to read it.
Carol asked if we would like to do a Christmas project again this
year in Oct.-Nov., had some discussion on the subject.
We sang "Happy Birthday" to our club, which started on
Feb.19, 1926. Ladies came in horse drawn buggies, Carol's
Grandmother was a charter member and was there at that first
meeting, and Carol had a few program books from many years
ago. They always started their meeting with the "Lord's
Prayer". Carol asked if the club would like to do something special
this year for the birthday and Velma suggested to have a committee
think of something to do. The birthdays in our club this month are,
Linda Flessner, the 3rd and Gerry Ann, the 25th.
The next garage sale is July 29 and 30.
The March 1st and April 5th, meetings, will both be at Perkins
Restaurant in Urbana at 11:30 A.M.

PESOTUM UNIT
The January meeting of the Pesotum HCE was held on January 21,
2016 at 1pm with 9 members answering roll call to "How many
times have you written 2015 instead of 2016 on documents so far
this year?". Those present were Nancy Blackburn, Betty Samson,
Joyce Rose, Karen Russell, Joan O'Bryan, Betty Schweighart,
Bridgie Cler, Dorothy Rogers and Ruth Willamon. I was unable to
attend due to a scheduling conflict. Thanks to Joyce Rose for
taking notes on the meeting.
Nancy Blackburn, Chairman, handed out our new HCE
constitution and club booklets. Ruth Willamon, Cultural Arts, read
an article about birthdays. Karen Russell gave the lesson on "Small
Changes, Big Impact". Next month's meeting will be February 18,
2016 at the Community Building at 1pm with Dorothy Rogers and
Karen Russell as hostesses and raffle bringers. The lesson will be
"Hold that thought" by Mindy Bragg.
The February meeting of the Pesotum HCE was held on
February 18, 2016 at 1pm with 14 members sharing their special
valentine's for roll call. Minutes and treasurer's reports were read
and approved. Our club booklets were filled out with only a few
hostessing and lesson positions left unfilled.
Nancy reminded everyone that on May 5th our unit is scheduled
to fold the Chatter.
Ruth Willamon, Cultural Arts, lead a discussion on what woman
you would want on the new $10.00 bill. Anita Gilliland gave an
update on the volunteer project of making stocking for the troops
which will now include Christmas cards to be filled out. Bridgie
Cler, Community Outreach, reminded members that there is a craft
class offered at the Farm Bureau building after the lessons are
given. All are welcomed to attend and the Craft Club will be
named "Jean's Craft Club" in honor of Jean Swaim. Check the
chatter for dates, projects planned and materials you might need to
bring.
Mindy Bragg gave the lesson "Hold that thought" which detailed
our different kinds of memory. She also lead the members in
several memory games. Great job, Mindy!
After the meeting was adjourned, Dorothy Rogers and Karen
Russell served a delicious cherry dump cake. Raffle winners were
Betty Samson and Ruth Willamon.
Our next meeting will be held March 17th at 1pm at the
Community Building. The lesson will be "Staycation and Vacation
Planning" given by Betty Schweighart. The Hostess will be Anita
Gilliland. Elizabeth Barnhart
PENFIELD UNIT. Penfield met on Feb. 16 at the home of Judy Foster with 5 members
present. The Pledge and Homemaker Aim was said.
Our meetings will start at 7:00 p.m. from now on and they are

every 3rd Monday of the Month.
Judy Foster will give the lesson for next month. Jane Piatt will
host next month’s meeting.
Our officer for 2016 are: Chairman, Roxie Sage; 1st Vice
President, Jane Piatt; 2nd Vice President, Lisa Pence; Secretary,
Clarissa Schluter; Treasurer, Rosetta Suits; Int’l Chrm, Judy Foster;
Volunteer Hrs. Chrm., Judy Foster; Special Activities, Rosetta Suits
and Jane Piatt.
Our lesson “Hold That Thought” was very interesting and fun,
Roxie was in charge.
Meeting adjourn followed with a refreshing lunch and a good time

PHILO UNIT The February 19, 2016, Philo HCE meeting was called to order at

Connie Hart was hostess and served Red Velvet cupcakes at 1pm. Seventeen members and two guests answered roll call with naming
their favorite brain games. Guests were Margaret Khachaturian's
sister, Mary Farringer, and County HCE President, Mary Lou
Younger. The Treasurer and Secretary reports were read and filed as read. Virginia Lauchner gave the lesson on “Hold That Thought” and
gave us some fun quizzes to test our memory. 1st Vice Chairman-Connie Hart, asked for volunteers to give lessons
in April and October 2016, and January 2017. Marlene Evans and
Betty Rice will give the 2016 lessons needed. 4-H Chairman, Barb Kleiss, by way of Betty Rice, has asked us to
each donate a bag of candy to the Easter egg hunt at St. Thomas on
March 26. Individually wrapped candy with no chocolate or nuts.
Have these taken to the Philo Library by March 18. Marlene Evans informed us about Farm Safety and the huge
statistics in deaths and medical dollars involved. Mary Lou Younger told us about the exciting future plans she has
for us in HCE. Meeting adjourned at 3pm. Mary Ann Rinkenberger, Secretary
RANTOUL UNIT. Thursday Feb. 11th, we met at the Rantoul Recreational Center
for our monthly meeting. President Betty Hadler called the meeting
to
order. "The Pledge to the Flag" and "Homemaker's Aim" were
recited. Led by Carolyn Phelps, we sang "Let Me Call You
Sweetheart" and "Love's Old Sweet Song". The roll call theme was
'Name your favorite brain game(s)', Some great games and ideas
were mentioned. Present were 12
members.
Lesson: "Hold That Thought" was interestingly presented by
Rita Seaton. We enjoyed working the projects in the lesson
pamphlet. It was a great lesson and fun.
The minutes of Jan. 14th meeting were read. Treasurer Genet
Dixon gave the financial report. A collection was taken for 'Pennies
For Friendship' and also, Feb's. birthdays. We sang "Happy
Birthday".
Cultural Arts Chm. Judy French spoke about Ellis Island and
the Statue of Liberty. She had some interesting and knowledgeable
facts and information. International Chm. Carolyn Phelps spoke
about the country of Ecuador, as to it's political leaders, politics and
the climate.
Family Issues Chm. Gerry Young told some cute little
stories. Vol. Hrs. Chm. Vera Grovier reminded us to keep track of
our Vol. Hours.
Betty Hadler spoke about the Friday craft projects at the F. B.
and how much they are enjoyed. She said that the next one is
March 4th and to call her if you plan to attend.
Betty adjourned the meeting. It was an enjoyable
afternoon. Hostesses were Vera Grovier and Rita Seaton.
They had a Valentine Day decor and served Vera's veggie pizza and
spice cake with her butterscotch frosting...all was

ROYAL UNIT Royal HCE met on February 17, 2016, at the St. John Lutheran Church with Janis Loschen as hostess and Erna Amerman as co-
hostess. There were seven members and one guest present. Our
guest was Mary Lou Younger, President of the County HCE Board.
The meeting was opened by Janis Loschen, First Vice-President.
The pledge of allegiance and the Homemakers aim were recited.
Roll call was answered with “Name your favorite brain game”.
The minutes of the January meeting were read and approved.
Pennies for Friendship were collected. Ella Osterbur reported that
the bank balance is now $174.14.
Janis went over some changes for the program book. Those
were noted by the members. Any one not in attendance can receive
those from Janis. She also noted a change in the constitution which
was noted in the Chatter. She also reported that Doris Osterbur had
decided that she was unable to give the lesson in September and
asked for a volunteer. Betty Gronewald volunteered. Please make
that change in your Program book.
The lesson was given by Janis Loschen in the absence of Alice
Duitsman. It was a fun lesson entitled “Save That Thought. The
March meeting will be at the home of Janis Loschen with Betty
Ross as co-hostess.

SAVOY UNIT The Savoy Unit met on Wednesday, February 17, 2016 at the
Tolono Library. President, Joan Stanley called the meeting to order
and led the group in the pledge and saying of the Homemakers Aim.
Members responded to roll call by naming their favorite brain
game. There were nine (9) members present including our newest
member, Rebecca Gatewood. Rebecca is Joan Stanley’s daughter.
Joan shared three questions from the new county president which
we discussed and gave responses. We also went through our HCE
“book” and filled in dates and times of our meetings and county-
wide events for the 2016 year.
Joan presented two lessons. Small Changes, Big Impact, was all
about thinking ahead. Don’t concentrate on the PAST as you
cannot do anything about yesterday. Don’t worry about the
PRESENT, as you are in the middle of it. Just concentrate on the
FUTURE as that is what is ahead! The second lesson, Hold that
Thought, was a look at memory and helpful strategies for every day
forgetfulness. If the game or activity in which you are currently
participating gets easy, then switch to a harder level or different

activity!
Jan and Joan passed out cookies and a drink while the rest of us
tried our hand at a brain game! The game was FUN and the cookies
were YUMMY!
Instead of a quote this month, I found a recipe in one of my
mom’s many recipe boxes that I thought might be fun to share with

ELEPHANT STEW

1 medium sized elephant, 2 rabbits(optional) salt &
pepper to taste, lots of brown gravy Cut elephant in small
pieces. It will take about 4 months. Season with salt and pepper.
Cover with gravy. Cook over kerosene fire (450degrees) for 4
weeks! Serves 3,800. If more are expected, add the two rabbits.
But don’t add if not necessary as no one likes to find hare in their
stew !
ST JOSEPH UNIT Nine members attended the February 4, 2016 meeting of the St. Joe HCE. Barbara Lane, acting chair opened the meeting by leading
the group in reciting the pledge and aim. Roll call was answered by
each person telling their favorite brain game.
The lesson “Hold That Thought,” was presented by Dorothy
Vinson. Everyone had a fun time jogging their memory with
activities such as, What are You Watching,Connect the Boxes,
and What Do You See. A drawing was held and Wanda Bohlen was
the winner. She was presented with a game called “Senior
Moments”.
Hostesses Dorothy Vinson and Doris Marsh decorated the
refreshment tables with cute little pots of paper flowers made at
Craft Club. They also made sachets for every one. Both ladies
remarked that they had a fun time at Craft Club and encouraged
others to attend. Refreshments consisted of chicken salad
sandwiches, heart shaped brownies, and sugar cookies to go along
with the Valentine theme.
IN MEMORY
Everyone was saddened by the report of Maria Jeske’s passing. She
was born in the Ukraine on Jan. 31, 1910, one of 10 children and
immigrated to the United States in 1952. She joined HCE in 1990.
Maria was a very talented needle worker. Over the years
she crocheted hundreds of hats for Crisis Nursery and young school
children in need. We will miss her.
A white elephant sale followed adjournment of the meeting.

STALEY UNIT Staley Unit met Friday, February 19, 2016, at Good Shepherd Lutheran Church with twenty-eight members present. Co-chairman
Ceil Costello called the meeting to order and introduced our two
new members, Kathy Witte and Shirley Williams.
Joanne Cahill, Community Outreach, reminded us that Adult
Literacy is our focus for 2016 and a public forum on dyslexia will
be held on February 23.
Nancy Benz, a member of the Champaign County HCE
Constitution and Bylaws Committee, led a discussion of the
proposed bylaws changes. Then Pat Lacy, a member of the
Champaign County HCE Nominating Committee, explained the
upcoming election to be held at the HCE Annual Meeting in April.
Alice Espenschied introduced Frances Simpson who gave the
Hold That Thought lesson. Frances also led us in several memory
games. Then Alice asked for a volunteer to take the Flag Etiquette
lesson in April. Kathy Witte and Mary McGuire volunteered.
Donna Prahl, 2nd Vice, reminded the members that the
Champaign County HCE is offering Craft Club after the lessons at
the FBA. In March the craft will be fabric flowers.
Eva Frayne, Cultural Enrichment, led an interesting discussion of
foreign phrases, abbreviations, and expressions from the book
“Talking Your Way Around the World.”
Marie Reeves, 1st Vice, thanked the February hostesses Joanne
Cahill, Mary McGuire and Jan Weber for the St. Patrick’s Day
decorations, drinks, and dessert. Hostesses for March will be Pat
Beaird, Ethelyeen Holy, Eileen Miller, and Jolie

IN MEMORY Mary Freese – of Seymour, passed away on Feb., 12, 2016. Mary was born in Weldon and married John Freese on Mary 13, 1949
in Weldon.
Mary graduated in 1948 from the Menonite School of Nursing and served in the Wartime Cadet Nursing Corps. He later worked at
the dr. John Warner Hospital in Clinton. He was a member of the Mahomet American Legion Auxiliary. She was very active in 4-
H activities and was a member of the Mahomet Unit of the Home and Community Education. Mahomet Unit since 1971. She
enjoyed ballroom dancing, golfing, and gardening.

Thelma Turner – Mahomet, passed away on Feb.22, 2016. Thelma was born in Mahomet and married Keith Turner on Jan. 7,
1935. They had been married for 72 years before her husband’s passing in 2007. Thelma joined HCE in 1962 was an active
member of the Mahomet Unit and Hensley 4-H.

We have a special day plan for Friday, May 6th, traveling to the “Warm Glow
Store” in Centerville, Indiana.. Offering so much – gifts, jewelry, chocolates,
wines, gourmet foods and their own candles they are known for – “over 60 scents.”
Next door is the “Watering Can” Garden Center, offering
beautiful patio and garden décor. Also introduce you to and
learn about “Fairy Gardens” from their display. This area
combined is one to enjoy.
LUNCH at the “WARM GLOW” – choice of 3 mini B-Que
sandwiches and chips or chicken salad with chips plus drink,
pie or cobbler. You will have a voucher for the food.
If time permits, we will visit the “Antique Mall”.
On our way home, dinner stop at one of our favorite places “The Beef House”. We will have a
choice of (1) of 41 entrees, 1 side, soup, salad bar, and dessert.

KITCHEN CORNER March 2016 Butterscotch Frosting - Vera Grovier, Rantoul Unit
1 - 3oz. pkg. instant butterscotch pudding
1/2 tsp. pumpkin pie spice
1 cup apple juice
1/2 of 8oz container of Cool Whip (4oz)
Mix dry instant pudding mix and pumpkin pie spice.
Gradually add apple juice. Whisk together completely.
Let stand for a few minutes. Fold in the 4oz of Cool Whip –
Delicious on a Spice Cake
CHERRY BARS – Elizabeth Michael
1 C butter, softened
2 C sugar
1 tsp. salt
4 eggs
1 tsp vanilla extract
1/4 tsp almond extract
3 C all-purpose flour
2 cans (21 oz.each) cherry pie filling
Glaze
1 C. confectioner’s sugar
½ tsp. vanilla extract
½ tsp. almond extract
2 to 3 Tbsp. milk
In a large bowl, cream butter, sugar and salt until light and fluffy.
Add eggs, one at a time, beating well after each addition. Beat in
extracts. Gradually add flour.
Spread 3 cups dough into a greased 15x10x1-in. baking pan.
Spread with pie filling. Drop remaining dough by teaspoonful over
filling. Bake 30-35 minutes or until golden brown. Cool completely
in pan on a wire rack. In a small bowl, mix confectioners’ sugar,
extracts and enough milk to reach desired consistency; drizzle over
top. Over set 350 degree.
