A day did not go by that there wasn’t a familiar face visiting the restaurant. Time and time again, you’d hear, “I didn’t know this place existed.” In some ways, it doesn’t anymore. There are still plenty of vibrant busi- nesses here. In the Light Gallery, Lee Be Fish, the Artists Co-op, Simply Cup- cakes, just to name a few! There are even more on the way! However, it will be awhile before anyone will have the cap- tive audience which Anne and Chef’s Ex- press built and nurtured. One guest came this season to have lunch with a friend. After his meal, he stopped at another table to chat with friends. Then he moved to another group to greet even more ac- quaintances and then on to another. Be- fore he left the patio he had visited half the tables in the courtyard. He must have had time to spare because he was here for several hours! Remember the TV sitcom Cheers with Ted Danson, ‘ where every- one knows your name?’ Anne has left some big shoes to fill at the Shops of Old Marco. She has been flourishing at this location for more than six years. It will not be an easy task. It’s difficult to leave behind a labor of love to which you have dedicated all your time and talent. Anne is already drawing re- solve from family, friends and loyal pa- trons who know that Chef’s Express is anywhere Anne is cooking and seeing to her guests. For those of you who love The Chef’s Express, you can still visit and enjoy your favorite dishes as soon as the City com- pletes the permitting process. The Carlson family was happy to have lunch at Chef’s Express. B ioluminescent. A big word for tiny organisms. Each summer, a few locations in the Marco Island canals glimmer and twinkle in the night. Boat wakes, fish movement and jelly fish paths sparkle as the bioluminescent or- ganisms are agitated in the water. Not just the fireworks were lighting up our Island on the 4th of July, but there was a bloom of bioluminescent algae that doubled the pleasure of the fireworks for a few resi- dents. Studies at Scripps concluded that bioluminescent dinoflagelletes thrive in calm waters which most likely results from their extreme flow sensitivity that triggers luminescence. These glimmering organisms, vary in size and shape but are generally very small, unicellular phytoplankton (micro algae), called dinoflagelletes, and are found worldwide in warm subtropical and tropical waters. About two thousand species of dinoflagelletes are found in ma- rine waters and it has been estimated that about 30% of these species are biolumi- nescent. They typically have two “tails” called flagella that are used to propel the single cell algae organism through the water. Dinoflagelletes species are food sources for larger marine animals but they can also live symbiotically with other species. One the best known symbiotic relationship of a dinoflagellete exists with coral in reefs. The zoosanthellae dinofla- gellete, a micro algae species, for protec- tion lives within a coral polyp. It symbi- otically photosynthesizes food for both themselves and the coral and at the same time gives the coral its beautiful colors. So how does this single cell algae light up?
