Way back in 1999 when I wrote the first Rough Guide to London

Restaurants, the Docklands section was pretty threadbare. There

was the MPW Brasserie in Cabot Place and a floating Chinese

restaurant in Limeharbour, but that was about it. Fast forward a

dozen years and Canary Wharf has become a great place to eat.

As the Wharf has matured so has the restaurant choice on offer –

honest British food at Canteen; modern Japanese food at ROKA;

peri peri chicken at Nando’s; classic dim sum at Royal China; pasta

from Jamie’s Italian and Carluccio’s; burgers from GBK and Byron;

noodles from Wagamama; sushi from Itsu. And now we have the new

and enormous Boisdale of Canary Wharf. If you had told me in 1999

that a huge jazz bar and restaurant with a Scottish theme and serving

haggis would be opening in E14, I would have questioned your sanity.

The days when a convoy of taxis would turn up at noon to ferry

people out of Canary Wharf and off to lunch in the West End are long

gone, and today there is good food to be had at all price levels and

within strolling distance. What is more, the Wharf’s restaurants and

bars are busy and buzzy in the evenings and at the weekend. Times

change, and in this instance they have changed for the better.

Jamie, do you do anything differently to meet the needs of the often time-pressed locals?

What dishes and drinks are popular at Canary Wharf? GigliPrimaverafromthespring/summermenuisverypopularbutotherthanthat,it’sthesameasatmanyofourotherrestaurants–chickenunderabrickfliesoutofthekitchen,asdoesspaghettibolognese.

What are your personal favourites? IusuallytrythespecialswheneverIvisit,butIalsogoforthemeatantipastiplanks.

Why did you decide to go down the italian route? I’vealwayslovedItalianfoodandwhenIfirststartedworkinginLondonIwastaughtbytheincredibleGennaroContaldo(showntopright),whonowtrainsourchefs.Ipromisedhimthatonedaywewouldhaveourownrestaurant.Ididn’tknowthenthatwe’dbelucky

enoughtodoJamie’sItaliantogether,butourloveofItalianfoodisreallyattheheartofthisbusiness.

so what is it about italian cuisine you love? Formeitsallaboutthevariety,theflavoursandthebeautiful,freshproduce.WhenIvisitedItalyformyTVseriessixyearsago,IwasjustblownawaybytheamountIlearnt.

IthoughtIwasprettygoodbutIhadnoideathateveryItalianvillagehasaslightlydifferentwayofcookingclassicdishes–andtheyallthinkthattheirsisthebestway!

– what is it that you do better

than the rest? It’salwayshumblingtowinanyawardandthewholeteamismassivelygratefulforthatone.Whatdowedodifferentlytoothers? Ithinkit’sallthelittletouchesthatgotomakediningwithusaspecialexperience.Wheneverweopeninatownorcity,withindayswe’vegotpeoplefromourlocalcompetitorsallcomingfordinnertoseewhatwe’reupto,andsometimeseventoseeiftheycanstealanideaortwo.

Your staff all seem to know their stuff – how do you ensure continuity across the board? Lotsoftraining–beforeweopen,ourteammakesurethateveryone’suptospeedonallthedishes.Gennarogoesinandhelpsthekitchentomoveuptofifthgear,becauseformostofthestaffit’sthebusiestjobthey’veeverhad,evenforsomeoftheexperiencedchefs.

Where do you source your products – how ethical are you? Asethicalaswecanbe.WeimportalotfromItalybutthat’sbecausewe’reanauthenticItalianrestaurantandsowecan’tgetcertainingredientsfromanywhereelse.Butallthechickenishigherwelfare,andourfishcomesfromsuppliersthatwe’vecheckedanddouble-checked.

What might we find in the oliver fridge? Freshvegetables,cheeses,butter,whitewine–muchthesameasyours,Isuspect.

and finally, who would be your dream dinner party guests? ElvisPresley,PaulSmith,Gennaro,mymissus,SophieDahlandJamieCullum.

But i have a confession. regardless of fluid fashion, i crave

Chardonnay when it is the vinous equivalent of a V8 pickup.

Brash, with so much wood character that it deepens in colour and

practically imparts splinters, nothing butters me up more than a

dirty weekend of a napa Valley Chardonnay. with it, i could rinse

down a last meal of whole, butter glossed lobster, plump Dutch

veal chop and heaped hog roast.

For those seeking lighter wines, elegant Chablis offers a cool

breath of minerals. For the best renditions, vines are sewn on

gentle slopes of fingernail sized fossilised oysters. This ultimate
