Calling all Byron Women of Today members! Are you

ready to make some magic with me? I have a challenge

for you in the second trimester. If you complete this

challenge you will receive and incentive. If 12 or more

Corn and Black Bean Salsa

1 bag frozen white corn, thawed or 1 can of corn 2 tbsp. red wine vinegar

2 tbsp. olive oil

1 can black beans, rinsed and drained

2 tbsp. lime juice

1 jalapeno, chopped or to taste

¼ cup chopped fresh cilantro

1 red pepper, chopped

Salt and pepper to taste

2 large garlic cloves, chopped

Mix together and refrigerate, overnight is best

I almost always double this recipe

Big Mac Casserole

1 cup(s) (sliced) uncooked Spanish onion(s)

4 oz. Heinz Dill Pickle(s)

1 Tbsp. Fat Free Thousand Island salad dressing

1 1/2 pound(s) uncooked 93% lean ground turkey

10 slice(s) Kraft 1% milk reduced-fat singles

8 roll(s) reduced-fat crescent roll dough Sauté onion and chopped pickles with turkey, brown. Layer in Casserole dish. Place 10 cheese slices over meat mixture. Unroll sheet of crescent rolls and place on top of cheese and meat mixture. Bake at 350 until crescent rolls are done. Serve over a bed of lettuce and top with Thousand Island dressing. Yummy Squash

1 large butternut squash 2 large red apples 1/3 bag of cranberries

Microwave whole squash on high for 7

minutes. Rotate some to keep heat even.

Peel squash and take out seeds. Slice squash and apples In 9x13 pan, alternate apple and squash slices

Mix:

1 c. brown sugar ½ c. butter 2 Tbsp. flour

½ tsp. salt ½ tsp. cinnamon

Microwave 30 seconds. Stir and spread over squash and apples

Top with 1/3 bag of cranberries. Bake at 350° for 45-60 minutes.

Serves: approx. 10

Rochester Women’s Shelter

Wish List Drive

(Items will be collected at our November 6, 2012 meeting)

Following is a list of items that they are looking for at the Women’s

Shelter:

• Twin size sheets and blankets

• Pillows

• Towels

• Paper products: paper towel, plates, cups, spoons, forks,

knives, toilet paper, napkins, tissue

• Household cleaning products

• Laundry detergent (pods preferably) for HE machines

• For the holiday, sets of shower gel, lotion and loofas.

perfume sets, watches, manicure sets, Bath Robes and

Pajamas all sizes (all preferably new)

Please bring all of your donations to the November meeting. If you

are unable to make the meeting please try to get the items to

another member. Stephanie will deliver them to a Women’s Shelter

representative that week.

Future Directions: What’s it all about? The definition in the State Plan of Action states the following: “Future Directions – a state standing committee that studies where the future of our organization should go. It evaluates how we operate, our programming areas, and what we have to offer to better improve our organization.” Doesn’t sound too interesting does it? Contrary to the dry sounding definition above, the meetings are quite lively, full of interesting discussion and very productive. These meetings provide a format for the staff, committee members, and guests to discuss issues that are vital and important to our organization. Input from everyone at the meeting is important and encouraged. After attending a meeting, many guests feel so much more informed about the organization as a whole. They feel that they have gotten a look “behind the scenes”. Many important projects come out of Future Directions. The committee looks at our Strategic Plan and develops action plans to focus on the objectives of the plan. Another great feature of Future Directions is that you get to hear updates from the chairs of the following committees: Foundation, Marketing, Membership Management, and Finance. That’s five meetings in the time of one! These meetings are open to all members and your input is always welcome. The next Future Directions meeting is being held on December 8th in Blaine.
