    Carefully read all instructions before operatingand save for future reference.

    Do not place the 800 Class Espresso Machinenear the edge of a bench or table duringoperation. Ensure the surface is level, cleanand free of water.

    Remove any promotional stickers beforeusing the 800 Class Espresso Machine forthe first time.

    Do not place the 800 Class Espresso Machineon or near a hot gas or electric burner, orwhere it could touch a heated oven.

    Always make sure the 800 Class EspressoMachine is properly assembled beforeconnecting to power outlet and operating.

    Use only cold water in the water tank. Do notuse any other liquid.

    Never use the 800 Class Espresso Machinewithout water in the water tank.

    Ensure the filter holder is firmly inserted andsecured into the brewing head before usingthe machine.

    Never remove the filter holder duringthe brewing operation as the machine isunder pressure.

    Do not leave the 800 Class Espresso Machineunattended when in use.

    Do not touch hot surfaces. Allow the800 Class Espresso Machine to cool downbefore moving or cleaning any parts.

    Do not place anything, other than cupsfor warming, on top of the 800 ClassEspresso Machine.

    Always switch the 800 Class Espresso Machine

    off, then switch off at the power outlet andthen unplug if appliance is to be leftunattended, if not in use, before cleaning,before attempting to move the appliance,disassembling, assembling and when storingthe appliance.

    Keep the appliance and accessories clean.Follow the cleaning instructions provided inthis book.

    Unwind the cord before use.

    To protect against electric shock, do notimmerse cord, plug or appliance in water orany other liquid.

    Do not let the cord hang over the edge of atable or counter, touch hot surfaces, orbecome knotted.

    ASSEMBLING YOUR BREVILLE 800 CLASS ESPRESSOMACHINE

    Your 800 Class Espresso Machine will have

    the Drip Tray, Storage Tray and Water Tank

    in place when you unpack it from the box.

    The Storage Tray is located at the base of the

    machine against the back wall. The Drip Tray is

    located in the base of the machine in front of the

    Storage Tray. The Water Tank is located over theDrip Tray, in the front opening of the machine.

    The 2 stainless steel Filters, Cleaning Tool,

    Measuring/tamping Spoon, Filter Holder and

    Frothing Jug will all be packed inside the foam

    packaging. Ensure you have located all parts and

    accessories before throwing out the packaging.

    The Storage Tray is a convenient location to

    store the Cleaning Tool, stainless steel filters

    and Measuring/tamping Spoon when not inuse, so they are not misplaced.

    Remove the Drip Tray, Water Tank and StorageTray and wash all parts and accessories in

    warm, soapy water using a non-abrasive

    washing liquid. Rinse and dry thoroughly.

    TO REASSEMBLE: STEP 1Insert the Storage Tray into the base of the

    machine and slide in towards the back wall.

    This is a convenient location to store the

    Cleaning Tool, stainless steel Filters and

    Measuring/tamping Spoon when not in use,

    so they are not misplaced.NOTE: Do not clean any of the parts oraccessories in the dishwasher

    STEP 2 - PREPARING THE COFFEE Place the 1 or 2 cup filter into the Filter

    Holder (use the smaller filter for 1 cup andthe larger filter for 2 cups). Or for producing alarger extraction for a mug of coffee alwaysuse the 2 cup filter and only extract 60ml.Should you require a larger coffee, add thehot water first and then extract the coffee.

    When using a 1 cup filter holder, for optimumflavour, you should only extract approximately30ml. When using a 2 cup filter holder, foroptimum flavour, you should only extractapproximately 60ml.

    Use 1 level measure of ground espresso coffeefor the 1 cup filter and 2 level measures forthe 2 cup filter. It is important to use thecorrect amount of coffee for each Filter as thefilter perforations have been constructed toutilise the pressure in the machine to extractoptimal flavour with each brewing. (Refer toThe Grind on Page 21).

    STEP 3 - TAMPINGTHE COFFEE

    Distribute the coffee evenly in the Filter andpress down lightly with the tamping end ofthe measuring spoon (Refer to Coffee MakingTips on Page 21).

    Clean any excess coffee from the rim of theFilter holder to ensure a proper fit into theBrew Head.

    STEP 7 - BREWING THE COFFEE The red Heating light cycles off when the

    machine has reached the correct temperaturefor brewing.

    Ensure the Drip Tray and Grid are in place.

    Place one or two pre-warmed cups beneaththe Filter Holder outlet.

    Set the Selector Control to the Espressoposition.

    After a few seconds*, aromatic coffee willbegin to brew into the cups. A pumping noisewill be heard in this operation.

    When sufficient coffee has flowed into thecups, set the Selector Control to the Standbyposition. This will stop the flow of coffee.

    If the steam function is not required, leavethe Selector Control to the Standby position,unplug the power cord and allow the machineto cool.

    PRE-BREW FUNCTION When the Selector Control is set to the

    Espresso position, the 15 bar pump pumpswater momentarily, followed by a pause, thencontinues to pump the water through to theground coffee in the Filter Holder. The groundcoffee is moistened by a small amount ofwater before full extraction and expandsresulting in greater pressure build-up toextract all the oils and full flavour from theground coffee. The ground coffee expands andwhen greater pressure is built up, the brewedcoffee is extracted with its full flavour.

    STEP 8 EMPTYING THE FILTER HOLDER Remove the Filter Holder from the Brew Head

    by turning the Filter Holder to the left until itreleases. To empty the used coffee grounds,turn the filter holder upside down in a binand gently tap out the coffee (used coffeegrounds should be thrown away withdomestic waste and not down the sink whichmay block drains). Remove the Filter by usingusing the indents on the side of the FilterHolder. Rinse the Filter and Filter Holder withwater and allow to dry.

    NOTE: The machine remains ready forbrewing and maintains aconstant heating temperaturewhilst the Power On/off buttonis in the Onposition. If thetemperature lowers, the heatinglight will illuminate and theThermoblock Heating Systemwill automatically reheat to thecorrect brewing temperature

    When the red Heating light stops flashing,quickly insert the Steam Wand into the jug ofmilk so that the Froth Attachment is justimmersed into the milk.

    Hold the frothing jug at an angle so that theFrothing Attachment sits just below thesurface of the heating milk and the steam willmove the milk around the inside of the jug ina circular motion.

    When the milk starts to increase in volume,immerse the Frothing Attachment deeper intothe jug to heat the milk.

    Hold the jug at an angle with one hand andplace your other hand on the outer base ofthe stainless frothing jug.

    When the base of the jug becomes too hot totouch, set the Selector Control to theStandby position, stopping the steamingfunction before removing the jug. A pumpingnoise will sound for a short time, do not bealarmed as there will be a five second delayprior to the machine carrying out the Auto-

    purge function.

    Pour the steamed milk into each cup offreshly brewed espresso coffee and spoon inthe frothed milk, in the following ratios:Cappuccino - 1/3 espresso, 1/3 steamed milk,1/3 frothed milkLatt - 1/3 espresso topped with steamed milkand about 1cm of frothed milk, traditionallyserved in a glass)

    NOTE: When the 800ES is creatingsteam a pumping noise can beheard. This is the normaloperation of the 15 Bar pump.

    NOTE: If steam starts coming fromthe Steam Wand before it isimmersed in the milk, pause thesteam by turning the SelectorControl back to the Standbyposition. This will avoid thesteam pressure blowing milkout of the jug.

    NOTE: The 800ES features a SwivelSteam Wand assembly sothe position of the SteamWand can be changed to acomfortable angle.

    The 800ES features a separate Hot Water

    function that can be used for making tea, hot

    chocolate and other warm drinks. The hot wateris dispensed from the Steam Wand.

    To use the Hot Water function, remove the

    Frothing Attachment from the Steam Wand.

    Press the Hot Water button then turn theSelector Control to Steam . The Hot Water

    button surround will illuminate when selected.

    Place a jug or cup underneath the Steam Wand

    to collect the hot water).

    To turn the hot water off, turn the Selector

    Control to the Standby position.

    Limit the extraction of hot water to 2 litres

    each use.

    The machine is not designed to make whole

    pots of coffee and tea. The more the amount of

    water is extracted the cooler it becomes.

    TAMPING THE COFFEEAfter measuring the ground coffee into the Filter

    it must be tamped (pressed down) using the flatend of the measuring spoon. The ground coffee

    should be tamped quite firmly.

    If the coffee is not tamped firmly enough, the

    water will flow through the water too quicklyand the coffee will be under extracted. If the

    coffee is tamped too firmly, however, the water

    will flow through the coffee too slowly and the

    coffee will be over extracted.

    22 COFFEE MAKING TIPS

    NOTE: The taste of your coffee will, ofcourse, depend on personalpreference and on many otherfactors such as the type ofcoffee bean used, thecoarseness or fineness of thegrind and the tamping pressure(pressed down). We recommendexperimenting by varying thesefactors to achieve the coffeetaste of your preference.

    26 CARE AND CLEANING

    CLEANING THE FILTERS, FILTER HOLDER AND

    BREWING HEAD The stainless steel Filters and Filter Holder

    should be rinsed under water directly afteruse to remove all coffee particles. Should thefine holes in the filters become blocked, thefine pin on the Cleaning Tool can be used toclear the holes.

    The Brew Head interior should be wipedwith a damp cloth to remove any groundcoffee particles.

    Periodically run water through the machinewith the Filter Holder in place, but withoutany ground coffee, to rinse out any residualcoffee particles.

    CLEANING THE OUTER HOUSING /CUP WARMING PLATE The outer housing and cup warming plate can

    be cleaned with a soft, damp cloth (do notuse abrasive cleansers, pads or cloths whichcan scratch the surface).

    CLEANING THE DRIP TRAY The Drip Tray should be removed, emptied and

    cleaned at regular intervals, particularly whenthe Drip Tray Full Indicator is showing full.

    Remove the Drip Tray Full Indicator and Gridfrom the Drip Tray, wash with warm soapywater, using a non-abrasive washing liquid,rinse and dry thoroughly.

    If further cleaning is required the full indicatorcan be removed from the drip tray byreleasing the side snaps.

    CLEANING THE STORAGE TRAY The Storage Tray can be removed after the

    Drip Tray is removed then cleaned with a soft,damp cloth (do not use abrasive cleansers,pads or cloths which can scratch the surface).

    NOTE: Do not clean any of the parts oraccessories in the dishwasher.

    two heaped teaspoons of quality chocolate bits

    into a double shot of espresso. Add 12 cupcold milk and 9 ice cubes and process in

    blender on a low speed to a smooth, velvety

    consistency. Pour evenly into two glasses and

    serve immediately.

    ESPRESSO AFFOGATOTotally irresistible, this sweet temptation is

    simply a single scoop of premium vanilla bean

    ice cream, drenched in espresso and if desired,

    your favourite liqueur. To create a sense ofoccasion, serve ice cream in a martini glass with

    shots on the side.

    CON PANNAMeaning with cream this heart warmer

    is a chic variation on old-fashioned Vienna

    Coffee. In a 90-120ml cup, dress a double shot

    of espresso with a dollop of fresh cream,whipped until glossy. Dust with cinnamon

    and serve immediately.

    COFFEE, CINNAMON AND WALNUT MUFFINSMakes 12

    212 cups plain flour

    2 teaspoons baking powder

    1 teaspoon ground cinnamon34 cup caster sugar

    1 cup sour cream

    2 x 60g eggs

    1 teaspoon finely grated lemon rind13 cup olive oil34 cup strong espresso coffee, cooled

    1 cup roughly chopped walnuts

    1. Sift the flour, baking powder and cinnamoninto a large bowl and stir in the sugar.

    2. Place the sour cream, eggs, lemon rind, oiland espresso coffee into a medium bowl, stiruntil well combined.

    3. Fold creamed mixture and walnuts into thesifted ingredients, do not overmix.

    4. Spoon the mixture evenly into 12 lightlygreased and base lined muffin tins until twothirds full.

    5. Place into a preheated oven 180C for 12-15minutes or until cooked when tested.

    8. Serve warm, or cooled and spread with RichCoffee Icing. Delicious with a Cappuccino orCaf Latt.

    RICH COFFEE ICING

    2 cups icing sugar, sifted

    1 tablespoon butter, softened14 cup strong espresso coffee, warm

    1. Combine icing sugar, butter and half thecoffee in a bowl, stir well and graduallyadd remaining coffee until a spreadableconsistency is achieved.
