1 TABLESPOON BUTTER

½ MEDIUM ONION, CHOPPED

1 (16-OUNCE) CAN DICED TOMATOES, DRAINED

1 CLOVE GARLIC, MINCED

¼ TEASPOON OREGANO

¼ TEASPOON GROUND FENNEL

¼ TEASPOON SALT

¼ TEASPOON FRESH CRACKED BLACK PEPPER

1/4 CUP HEAVY CREAM

DirectionsIn a small skillet heat the butter over medium heat. Once melted, add the onion and cook until tender, about 4 minutes. Then add the diced tomatoes, garlic, oregano, fennel, salt, and pepper and cook until fragrant, about 1 minute. Transfer the mixture to the Personal Power Blender along with the remaining ingredients and blend until smooth, about 30 seconds. Serve immediately.

DirectionsIn a medium skillet over medium heat add the butter. Once it melts add the onion, celery, and carrot and sauté until tender, about 5 minutes.

Transfer the sautéed vegetables to the Personal Power Blender along with the remaining ingredi-ents. Blend until smooth, about 20 seconds, then pour the soup into two microwave safe bowls and heat for 1 minute. Stir well, then heat for 1-2 minutes more, or until hot.
