Semester II

Students will undergo industrial training for 17 weeks in different Hospitality & Tourism Units

and after successful completion of training, students will submit training report followed by

presentation. The total marks will be 500 out of which 350 marks would be for Training Report

and 150 marks for Presentation in the ratio of 70: 30.

Objective: To familiarize the students with theoretical concepts related to Food and Beverage

Services. To make students aware about the Food and Beverage Services in various hotel and

Restaurant settings .

Unit-l: Brief knowledge of Development of catering industry, job prospects and careers in the catering industry. Different types of catering establishments. Relationship of the waiter with Customer, ii) Kitchen. Unit-2: Types of catering establishment and modern Trends in Hotel and Catering

Industry.

(ii) Disco (iv) Ecotels.

(V) Fast Food outlets. (vi) Adventure Tourism. (vii) Theme Restaurants (viii) Welfare Catering.

Unit-3: Types of Catering , Preparation of the Restaurant- Mis-en- Place, & mis-en-scene, rules

for lying of table and waiting .

Unit -4: Different forms of service - Russian, American, French, Indian and English. Staff organization of F&B Department, and inter & intra departmental co-ordination with other Department. Menu Planning and catering. Unit-5: Kitchen stewarding. Broad specifications of light and heavy duty equipment, Restaurant, Pantry and Still room equipment. Waste Disposal. Note for Paper Setting:

The question paper will be divided into two sections. Section A will be compulsory and will

contain 10 very short answer type questions, two questions from each unit which elicit answers

in not more than 20 words and/or multiple choice and/or fill in the blanks, each carrying 1 mark.

Section B will contain 10 long answer type questions, two from each Unit. The candidate will be

required to answer 5 questions one from each Unit. Each question carries 10 marks.

Course Title: Principles of Accounting University Examination:60

Examination Duration: 3 Hours

Objective: To help students to understand the tools and techniques of financial management and to provide

them basic knowledge about accounting procedures. To Augument the understanding of the students related

to accounting procedures in hotel Industries.

Unit-1: Definitions; basic terms used in accounting, book-keeping and its objectives. Principles of

double entry system of accountancy and its advantages.

Unit-2: Book of original entry – Journal, rules and practice on journalising transactions.

Cash book – simple, 2 columns and 3 columns, handling cheques, endorsement, crossing of

cheques and dishonouring. Bank reconciliation statement.

Unit-3: Subsidiary books – records of credit purchases, credit sales purchases returned, sales

returns, debit note, credit note, journal paper.

Ledger : Its posting, balancing and closing of accounts practice on posting entries.

Unit-4: Preparation of final accounts – trial balance, trading and profit and loss account, balance

sheets, adjustment of closing stocks. Depreciation - meaning, causes, fixed instalments and

diminishing balance method.

Unit-5: Capital and revenue, calculations relating to percentage exchange, conversions, discounts,

allowances.

Objective: English is a global language, spoken, written and read by millions of people all over the

world. The current trend of globalization in business and the revolution in communication cannot

be ignored by the business houses today. The main obje

ctive of teaching English language to Management students is to improve the communication skills

as their poor expression is a major hurdle in their job prospects in India and abroad. This course

will also lay emphasis on personality development by exercises and simulation.

Unit-I: Meaning, Role, Functions, Importance and essentials of Communication in Business

Organizations, Process of Business Communication, Barriers to effective communication.

Importance of Communication in: Negotiation, Conflict Management

Unit-II: Classification of Communication – Formal & Informal, Personal, Inter-personal, Group
