SFOGLIATELLE PASTRY
Almost 70 years of experience has allowed us to perfect this traditional
favorite. Our flaky, clam shaped, multi-layered shell is filled with moist
ricotta cheese and finely diced fruit. As unusual as the pastry itself, it
can be served at breakfast or lunch or as an after dinner delicacy.

NOTE - Sfogliatelle Pastry must be baked off frozen.
Lobster Tail Pastry must thaw completely before baking off. For best results, we suggest baking
entire contents upon receiving to ensure maximum growth of pastry. Once baked, store in
freezer until ready to thaw and fill.

Similar to our Sfogliatelle, this triangular shaped pastry has a deliciously
flaky, multi-layered shell and is ready to be filled with a cream of your
choice. Chefs may also use this pastry as a dinner novelty for some of their
favorite entrees, such as cold salads, chicken and fish salads, potato fillings
and cold cut sandwiches.
LOBSTER TAIL PASTRY
Combine 2 parts Bavarian cream with 3 parts prepared whipped topping and fold together
gently. Using a pastry bag with a medium star tip, fill the Lobster Tail through the large
end of the pastry. Wipe away any excess cream. Dip the large end (approximately 1 inch)
in melted chocolate of choice and allow to cool before dusting with powdered sugar.
Your Lobster Tail is now ready to serve!
