    HISTORY

    What kind of oil featured in these ancient

    records?

    It must have been olive oil, since the

    history of the olive tree is closely linked

    with the history of agriculture and of the

    mediterranean basin.

    This surviving ancestor of the olive tree is

    not found at all in the new world.

    Wild olives were collected by neolithic

    people as early as 8thMillennium BC.

    3000 b.C.

    Followed by the Chinese & Japanese(soya oil) as early 2000 b.C.

    Grading of Olive Oil

    According to International OliveOil Council, there are severalgrades of olive oil. There are:

    Extra-virgin olive oil

    (sometimes called EVOO) comes from the first pressing

    of the olives, contains no morethan 0.8% acidity, and is

    judged to have a superiortaste.

    There can be no refined oil inextra-virgin olive oil.

    Oils labeled as Pure olive oilorOlive oil.

    Olive-Pomace oil

    is a blend of refined pomace oliveoil and possibly some virgin oil.

    It is fit for consumption, but it may

    not be called olive oil. Olive-pomace oil is rarely found in

    a grocery store.

    The Processes:

    1-HARVESTING

    -The olive harvest occurs every year when

    the olives achieve their maximum weight,

    gently ripened and plump with oil.

    - Olives are harvested by many means,

    from hand-picking to automated

    processes; the most appropriate harvest

    technique is used for each individual

    grove.

    - Olives are collected in nets spreadbeneath the olive trees, and are taken to

    the mill the same day they are picked.

    The Processes

    2-CRUSHING

    - Within 24 hours of harvest, the

    olives are taken to a mill for

    pressing.

    - At the mill, an olive paste is created

    by crushing the whole fruit; the

    paste is then pressed again torelease the oil. (This process

    requires no heat, and is thus called

    "cold-pressing.")

    - After undergoing a natural filtrationprocess to remove sediment and

    water, the oil is ready for the next

    step.

    - Received samples from the finestolive producing areas in Italy and

    throughout the Mediterranean.

    - Only the best oils are selected.

    - After the final selections are made, theoils are ready to be tasted.
