Winter Warmers

CawlA thick soup from Wales, pronounced “Cowl”

1 Large onion2 Large carrots3 Leeks (white and tender green)2 Sticks celery 190ml / 1/3 pint milk2 Large potatoes50g / 2oz ButterParsley, choppedSalt and pepperGrated cheese (optional)1.2 litres / 2pt Chicken or vegetable stock

Melt the butter in a large saucepan. Add the choppedonion, cubed potato, peeled and sliced carrot,chopped celery, and sliced leeks.

Sweat together on slow heat for 15 minutes, then addthe stock. Bring to the boil, lower the heat and simmerfor 45 minutes.

Take out about 275ml of the mixture, add the choppedparsley and liquidise together with the milk, then returnto the pan. Season with pepper and salt and serve witha little grated cheese on top if required.

Pear Parcels

Per person: Multiply the ingredients as required

25g Butter at room temperature1 Comice or dessert pear1 Orange, halved2 Tbsp Soft brown sugarGenerous pinch of cinnamon

Cream the butter, sugar and cinnamon and set aside.Cut the pear in half, remove the core and top and tailbut don’t peel the pear.

Place each pear half, cored side up on a large squareof double thickness baking foil. Form half of the butter& sugar mixture into a ball and press into the pearcavity.

Gather the foil up around the pear half and squeeze thejuice from one half of the orange over pear. Close thefoil around pear and repeat with other half. Place thewrapped pears on a baking sheet and bake at 180°C /350°F / gas mark 4 for about 1 hour until very soft.

Remove pear from foil and place on a plate, drizzlewith caramel or chocolate sauce.

ABOUT FINANCE

Taxing Questions for the New Year

Many of us don’t give enough care and attention to

claiming what is rightfully ours as tax payers. While

financial, work and domestic circumstances may

vary considerably, there is nothing to stop you

making claims for any or all of the following items:

Mortgage Interest Relief - is available for the first 7

years of a qualifying loan after which you are no longer

entitled to TRS with effect from 1st May 2009. For first

time buyer(s) the maximum relief is significantly

greater than for non-first time buyers at up to €2,500

for an individual & €5,000 for a married couple

Rent Relief Credit - An individual paying for private

rented accommodation, excluding Rent paid to Local

Authority, tenancies can claim additional Tax Credits,

the level of which is determined by age and marital

status but could be up to €1,600.

Rent a Room Relief - Where an individual rents a

room(s)in a 'qualifying residence' and the gross rent

received, including sums arising for food, laundry or

similar goods and services and the income does not

exceed €10,000 - this income will be exempt from

income tax by including it in the individuals tax return.

Where more than one individual is entitled to the rent,

the limit is divided between the individuals concerned

Home Carer Credit - A married couple, where one

spouse is the Home Carer and cares for one/more

dependent persons, including school going children.

Conditions to Qualify Married couple - must be jointly

assessed Home Carer must care for one/more

dependent relative. The Carer’s income must not

exceed €5,080 for the tax year. Full tax credit due if

the Home Carer's income is less than €5,080 – Credit

= up to €900.

Third Level Fees - (excluding enrollment, exam fees

etc) tax relief is available in respect of tuition fees paid

by an individual in an approved third level college on

a approved course. If you have paid college fees in

respect of more than one individual attending college

in an academic year, relief is due to you in respect of

the fees paid for each person up to the maximum limit

per course. Tax relief at the standard rate of tax (20%)

for the academic year 2009/2010 is €5,000.

considered include

Incapacitated Child, Dependant Relative,

Blind Person

• Medical & Dental Costs, Pension Contributions &

Permanent Health Insurance

• Local Authority Service Charges / Independent

Family Law Mediation

Many people associate marital breakup with lettersbetween solicitors, trips to court, huge legal bills andan enormous amount of stress and emotional traumafor both spouses and, in particular, their children.

In recent years however there has been a move away fromthe traditional means of resolving family law disputes.

A number of years ago a family law resolution modelknown as collaborative law was developed here. Thisinvolves both solicitors working together with the twospouses and all four parties meeting on several occasionswith a view to the resolving in a mature and constructivefashion all of the issues which require to be agreed inrelation to property, other assets, maintenance, custodyand access, pensions, taxation and succession act issues.

In the last six months a number of solicitors in Dublin havetrained as family lawyer mediators. Mediation is a processwhere the husband and the wife attend a number ofsessions of mediation with a view to resolving their issuesand coming up with a set of proposals which is thenconverted into a binding agreement by their solicitors. Therole of the mediator is to facilitate the discussions betweenthe husband and the wife. The mediator can provideinformation but not legal advice. The mediator’s role is tomaintain a focus on the resolution of the issues and lookfor ways and mechanisms as to unlock the difficulties.

The training which was conducted through a U.K. modelknown as Resolution which has been operating successfullyin the U.K. for the last fifteen years is based on a childcentered approach to the resolution of family law issues.The experience in the United Kingdom has demonstratedquite clearly that the impact of family law breakup onchildren is greatly alleviated if the parties can reach aresolution of the issues between them in a constructiveand mature manner, without having to engage in lengthyand confrontational legal proceedings.

There is little doubt that by engaging in a mediatedprocess the parties will reduce their legal costs significantlyfrom the costs that would be incurred if they went tocourt. There is also the added advantage of retainingcontrol of the outcome as mediation can only besuccessful if the parties themselves reach an agreementwhich is obviously much better than asking a judge toimpose an outcome on the parties.

I myself have extensive experience in the area of familylaw, having advised on all aspects of family law for manyyears and trained as a family law mediator.

Bank of Ireland Dundrum recently ran a 'Show

your Business week' which was a huge success.

Show Your Business Week follows the success of our

first ever National Enterprise Week last May, and is

Round The Garden in January

PrepareIf you have some mildish weather this month, take theopportunity to dig over your ground. This will expose anygarden pests and provide a snack for birds.

It’s a good idea to check all tree stakes and make suregreenhouse glass is secure against high winds. When youharvest cauliflower, cabbage, Brussels sprouts, broccoli,swedes or turnips, turn the ground over, burying thestems in the bottom of a trench to prepare a perfect spotfor runner beans.

PlantSeed potatoes benefit from being "sprouted" beforeplanting. Place the seed potatoes in a warm and light areato let the eyes sprout. The potatoes will then grow quicklyafter planting.

Hotbeds can be used to force asparagus, broad beans,carrots, onions and radishes. Early cucumbers can beseeded under glass or in a hotbed.

Avoid planting trees this month unless absolutely necessaryand then only do so from pots. If you have to do so, protectbase with a covering of well rotted manure.

PrunePrune apples and pears as soon as you have a milder dayand remove old fruit, either hanging or on the ground, asthese encourage pests.

Now is the time to prepare grafts by cutting trees back.After cutting, scions for should be labeled and heeled intothe ground ready for use. Use lime wash or a caustic sodaspray to treat the stumps of old fruit trees, making sureyou remove all dead bark. Do not be tempted to prunesoft fruits, such as apricots, cherries, figs, nectarines orpeaches.

In September last year I hosted a Style Night inGiddy Studios in Rathfarnham and many of youcame and had a fun time looking at the issues thatarise when we try to figure out the differencebetween style and fashion.

I discovered on that night that a question almosteveryone wanted an answer to was on body shapeand how to dress to enhance or disguise whatnature had endowed us with. I have therefore setanother date for Tuesday the 2nd of February.I hope to take more time to discuss different bodyshapes and allow time for questions relating to this.

The key words to keep in mind when we aremaking decisions for ourselves on what to wear andhow to wear it are “balance” and “proportion”.How to bring balance to your own shape andsilhouette will depend on your height and theproportions of your body. Two people of similarheight and body shape can still be differentlyproportioned and therefore would need to bemindful of this when choosing clothes.

This can explain how, if you are shopping with afriend of similar size and colouring to yourself,an outfit can look great on one of you and notthe other.

Finding out what our best features are andenhancing them with both the style or length ofour clothes as well as the clever use of the correctaccessories can open up your existing wardrobe innew and interesting ways. This need not cost theearth either, as eye catching necklaces and beltsare particularly popular at the moment. We shallhave a closer look at how to use accessories in thebest way for your body shape and discover thesimple answers to the question of updating a lookwithout breaking the bank.

Give Your Body a Service!

January often makes people think about their

bodies and their general health. Often the subject

only gets attention when something goes wrong.

But just like your car, our bodies benefit from

regular servicing and the correct fuel to keep it

running at peak efficiency.

Starting with fuel, not many will be ignorant of the

recommended five portions of fruit and vegetables

per day. But even if you reach that quota, if you top up

your diet with saturated fats, sugar and caffeine

you are not going to be doing the best for yourself.

Realistically, you need to start by making small

changes and re-educating your taste buds. For

example, you could consider drinking decaffeinated

tea or coffee during the day, changing to wholegrain

rice, pasta and bread, and just making yourself a

sandwich with one slice of bread rather than two.

We know we should exercise but how much does it

really matter? The short term benefits of regular

exercise include a healthier heart, healthy muscles,

bones and joints, and more energy. Regular activity

over the long term reduces your risk of developing

heart disease, diabetes, high blood pressure and

obesity. If you only exercise to lose weight by the

way, you are unlikely to stick at the regime. If you take

a 30 minute walk and reward yourself with tea and

biscuits upon your return you will be eating more

calories than the exercise used up. So focus on exercise

for overall health improvement and think of weight

loss as just one of the potential benefits.

Regular eye health checks are important, particularly

for children and older people. For adults many eye

diseases are picked up during routine eye examinations

and the earlier your optometrist catches problems, the

easier they are to treat.

From eyes to feet, probably the part of our body to

which we give least consideration. Are you on your

feet a lot during the day, overweight, into sports or

diabetic? Do you have flat feet, high arches and pain

in your Achilles tendon, corns, calluses, bunions or a

history of ankle injury? If the answer to any of these

is yes (and I'm betting you said yes to at least one)

then you would benefit from a consultation with a

podiatrist.

Finally, if you are already feeling that you have a

niggling health problem that doesn't necessarily

need a doctor's visit, consider alternative medicine.

From hypnotherapy to acupuncture there was a time

when any treatment not part of mainstream medicine

was considered ‘alternative'. Nowadays, most are

considered complementary and valuable tools in

maintaining general good health.

Ultimately this is what we should be thinking about;

taking responsibility for and investing in our own good

health. After all, the person who will benefit most is us.

‘The Age of Stupid’

Rathfarnham Parish Eco Group invited members ofthe local community to a screening of The Age ofStupid film, the new cinema documentary from thedirector of McLibel and the producer of the Oscar-winning One Day in September. In The Age of StupidPete Postlethwaite stars as a man living alone in adevastated future world of 2055, looking at oldfootage from 2008 and asking: Why didn’t we stopclimate change when we had the chance?

Introducing The Age of Stupid, which was held inRathfarnham Parish Centre, Sylvia Thompson of TheIrish Times, said that the film told the story of “planetaryneglect”. It had inspired a movement of people to takeaction against climate change and its director, FannyArmstrong, had become known throughout the world.She was behind the international 10:10 movement,which challenges people, churches, businesses andorganisations to cut their carbon emissions by 10 percent by the end of 2010.

In the thought-provoking film, the character playedby Pete Postlethwaite, ponders, “We could have savedourselves, but we didn’t. What state of mind were wein to face extinction and simply shrug it off? … Is theanswer, on some level, that we weren’t sure if we wereworth saving?”

The film, described by The Guardian as "the firstsuccessful dramatisation of climate change to hit thebig screen" presents a bleak view of the future ifnothing is done to prevent runaway climate change.Ms Thompson chaired a lively question-answer session

following the film in which a wide range of issuesaround climate change were discussed. People werealso invited to take part in an eco quiz and were givena list of eco tips, action ideas and recommended ecobooks to take home.

Rathfarnham Parish Eco Group was started a yearago by a group of parishioners concerned aboutenvironmental issues.

They include an eco tip in the monthly parishmagazine and last summer they held a Walk/Cycle toChurch Sunday when the two people who walked/cycled the furthest to church won a prize of a trip toOxfam with their own personal shopper! In December2008 and 2009 the group took part in the StopClimate Chaos annual bell-ringing event to raiseawareness about climate change.

The Group is an initiative of Eco Congregation Ireland,an inter-denominational project that encourageschurches and communities to pursue eco-friendlylifestyles. People from throughout Ireland attended anecumenical service for the UN climate summit held inChrist Church Cathedral in December, which wasorganised by Eco Congregation Ireland, Trocaire andChristian Aid. The speaker was Mary Robinson,former President of Ireland and former UN HighCommissioner for Human Rights. She said faith-basedcommunities were a critically important part oftackling the problem of climate change.

It’s January, so you may be short on cash or lookingto offload some unwanted gifts. So, how aboutselling them on eBay? Here’s a few tips to help youto maximise your sale.

• Include a photo. More than any other single factor,the photo that you include with your auction willdetermine the final value for which your item is sold.Take the photo yourself against a white background.

• Use HTML to make your listing clean and readable.Bidders will bid if and only if they can figure out whatyou're saying. Make your auction listing readable anduser friendly so that you don't chase bidders away.

• Start auction format listings at €1.00 unless youhave a reason not to. For most common types of itemsyou'll receive more bids in the end if you begin yourlisting at €1.00, and you'll ultimately save on listing feesas well.

• Clearly list the items included in the sale. If you'reselling a product that includes additional accessories ormaterial when sold at retail, be sure to mention in yourlisting that these are included using phrases like"Includes all original accessories!" If item(s) that buyersmight expect to be included actually won't be includedin the sale, be sure to mention that as well.
