PAN FRIED VENISON CUTLET

Cut loin in 1/4 inch slices. Gently pound them out slightly. Whisk the eggs in a small bowl. Dip the meat into the egg wash. Season breadcrumbs to taste. Remove the meat from the egg wash & coat w/ breadcrumbs. Pan fry cutlets until golden brown. Place the cutlets on paper towels to catch excess grease. Plate & serve.
