Makro sells Nortan Capsuler to Halewood Wines & Spirits

Halewood Wines & Spirits has

been experiencing huge volume growth for its range of Spirits over the past two years. These increases for the premium spirits

have resulted in further investment, this time on Line 1 with Halewood having placed an order through Makro Labelling UK for a twin turret Nortan Shrink and Spin Capsuler.

The capsuler will apply either PVC shrink on capsules or foil capsules, with an 8 head turret for the shrink on capsules and a 12 head turret for the foil capsules. Both can be applied at 10,000 bph. The machine will be delivered in October with change parts for 3 different bottle types.

Richard Portman, Managing Director of Makro Labelling UK, said of this latest order at Halewood, “This is now the third Nortan capsuler we have sold to Halewood. The two earlier machines have gone on line really well and the client is very pleased with their performance and the support we give Nortan in the UK through after sales. I have always been impressed with the build quality of the Nortan units, which fit very nicely with the other agency equipment that we are selling to the ever-growing Spirit market in the UK. This order coming in at the end of June has made the first half of 2018 a really remarkable year.”

Best Specialist Food Packaging Manufacturers 2018 – UKDMD 2000 is an Aberdeen-based

packaging manufacturer, primarily supporting clients in the bakery trade and other food related areas. We profile the firm to learn more about the innovative solutions it provides.

Founder Fred McKechnie started in the bakery trade in 1973 when he left school to work at food ingredients supplier, Fleming Howden. In 1989 he was manufacturing for DMD (Thermoforming) Ltd, and in the year 2000 conducted a management buyout and DMD 2000 Ltd was born. Eighteen years later, he continues to develop the business.

Today, there are two key facets to DMD’s operational success that have been integral to the company’s development: Commitment to continuous product range improvement and focus on customer service. This approach is clearly evident with the launch of a number of new products which have strengthened DMD’s position as a leading manufacturer and supplier of thermoformed products within the UK, Ireland, and beyond.

Over the years the firm has achieved incredible success. In 2004, just four years after the firm’s management buyout, when it had outgrown its 6,000ft2 premises, DMD relocated to a new 16,500ft2 site in Aberdeen that enabled the business to develop and grow in accordance with BRC/IOP requirements and regulations.

Then, 2015 saw DMD diversify slightly, by purchasing our own CNC machine, which allowed us to do our own in-house tooling for its valued customers. The purchase was supported so well by our customers who ordered their own bespoke trays at very competitive prices, DMD had to invest again for the future. In 2016 DMD purchased a second additional CNC machine to keep up with demand, and our fast turnaround on new tools.

More recently, 2017 saw DMD reaching the finals of the Manufacturer of the Year award against heavy competition. Carrs Flour and MacPhie (of Glenbervie) were also in the final stages. DMD came out on top and was awarded the accolade. In addition to its emphasis on service DMD has also

been committed to continual investment in plant and machinery, an approach which facilitates faster reaction times in accordance with the needs and turnaround times of their customers.

Additionally, 2017 saw DMD purchase the property adjacent increasing the storage by another 12,000ft2 to further its expansion needs. Now in 2018, DMD has completed its £2 million-pound investment over the last 2 years, with the purchase of its third fully automatic, in line, form, cut and stack machine to further strengthen the firm’s position in the UK market.

Moving forward in the short term DMD will continue doing what we have done successfully: maintaining a steady pace of growth and giving the customer what they want, when they want it, or earlier, to ensure that the firm builds upon its current success over the years to come.

For all your labelling and barcoding needs

Food and Matters is incredibly proud to present RL Solutions as its selected Label and Barcode Solutions Company of the Month.

From simple labels to automated labelling systems, RL Solutions can provide you with the labelling solution to suit your needs. Backed with over 20 years of experience in the industry, the company was set up in 2012 as ‘Right Labelling Solutions’, with a promise to deliver the right solution for clients, regardless of specific brands or software.

Superior knowledge and expertise along with in-house software development, has allowed the company to excel in every project they are presented with. Whatever your requirement or budget, RL Solutions has the answer.

“A dedication to provide the ‘right labelling solution’ is the reason for our continued success over the years,” commented Labelling Solutions Managing Director, Lee Shroder. “We treat every project on an individual basis and take the time to really understand the clients’ requirements.

“What sets us aside from our competitors is our ability to offer brand agnostic off the shelf and customised solutions. Our in-house software developers have the expertise to tweak or change any software or even develop something entirely new. “If something isn’t quite right for you – we will create something that is.”

Specifically popular with the food and drink industry, RL Solutions have worked with many supermarkets, restaurants and both large and small food producers, offering both front and back of house labelling solutions. One of their most sought after products is the Food Rotation Manager. Developed to provide

an alternative to the tireless and time consuming process of food rotation, the system makes it easy for businesses to manage food rotation while reducing the disposal of out of date produce in a fast and convenient way. The standard procedure for food rotation is coloured dots which indicate the day of which produce must be thrown away.

Once opened, the member of the team must work out how long the item can be used for and apply the correct dot indicating the day of disposal. They must then search though the products on a daily basis to discover which must be disposed of. This process however, requires a great deal of knowledge of the products and their expiry dates and is highly prone to mistakes.

The new and revolutionary Food Rotation Manager does all the hard work for you. Once a product is processed in some way, for example opened, frozen or mixed, the team member can simply select the process and product for the innovative system to print out a label with all the details on including the use by date and even the time it can be used until. The system also logs the product and daily reports can be printed which outline which products in your kitchen are due to expire in the next few days. This empowers kitchen staff the opportunity to use food before its expiry rather than waste it.

Other developments from the company include an innovative app which allows food allergens to be highlighted on labels as well as an app to identify nutritional information on labels by entering ingredients by weight.

“These top class solutions save a great deal of time and money for busy businesses,” Lee continued, “as well as providing them with guaranteed accuracy, reliability, legibility and traceability, enabling them to run an efficient business which abides by set regulations.

“From our base in Essex, we provide unrivalled solutions worldwide with some of our main business in Bangladesh, China, Turkey, Germany and Netherlands. Our plan for the future is to continue our ongoing growth and expansion and become the go to company for bespoke labelling solutions. We have some exciting developments on the horizon which we feel have the potential to revolutionise the labelling industry and cannot wait to introduce these to our customers.”

Unlike compressed air applications,

where there are rigorous standards that dictate the quality and specification of air used during the process, there are no current standards in place for exhaust air quality from vacuum pumps. Melissa Kelly-Jones (pictured), UK

F&B Vacuum Solutions Expert at Gardner Denver, outlines key considerations that should be taken when looking at vacuum technology.

Keeping compressed air cleanISO8573 is the group of international standards stipulating the quality of compressed air. Consisting of nine separate parts, part one highlights the amount of contamination allowed in each cubic metre of compressed air and the remaining eight specify the methods of testing for a range of contaminants. This ranges from oil aerosol content

and humidity, to solid particle and oil vapour content.

Naturally, air quality is particularly important in a food and beverage manufacturing environment. Most sites will follow the recognised principles of the Hazard Analysis Critical Control Point (HACCP) to ensure they are complying with hygiene legislation, removing any potential hazards or reducing these to an acceptable level. Yet, while product manufacturing process are scrutinised in great detail, ancillary processes and utilities can

often be omitted. Crucially, this can mean potential risks from equipment such as vacuum pumps are

overlooked.

Identifying potential risksWith vacuum systems generally located around the production environment, contaminants from or passed on via a pumps exhaust can be hazardous and, as a result, this equipment should be included within a facility’s HACCP assessment.

The majority of vacuum pumps currently in use are oil-lubricated and many applications will operate without any problems arising. Nevertheless, there is the potential risk of oil discharging from the exhaust, which presents a particularly significant problem in a food and beverage manufacturing plant.

In addition to oil discharge from the exhaust, there are a number of other issues that operators need to be aware of. Operating at high temperatures and an open-ended inlet port could result in oil carrying over from the pump, while a separator element may fail due to misuse or through the use of non-genuine spare parts. For this reason, it is important to work with a trusted and experienced maintenance partner, who can help and offer support should these matters arise.

The potential risks from leaks from an oil-lubricated vacuum pump can be avoided through a range of measures. These include using a food grade lubricant, fitting a downstream exhaust filter or remotely piping the exhaust air.

Gardner Denver offers a free six year warranty called Assure on all new and existing rotary vane vacuum pumps for complete peace of mind, as well as an extensive network of qualified engineers that can deal with any on-site repair and maintenance should an issue arise. A professional service centre is also available, should a pump require a more comprehensive overhaul.

For those concerned about the risks of oil-lubricated vacuum pumps, Gardner Denver can help identify and reduce any risks through a free site survey, which may extend to working with the production team to ensure the equipment is included in the HACCP assessment.

A clean solutionThe most efficient and assured solution would be to use an oil-free vacuum pump. These have been specifically developed to meet the needs of manufacturers that require only the highest air purity environments. Oil-free technology does not require the same level of maintenance as oil-lubricated, as there is no requirement to replace oil or filters which significantly reduces whole life costs. Additionally, the fact the pump does not have to be removed to carry out routine maintenance servicing means there is no additional unnecessary production downtime, as well as any indirect costs from lost pump uptime.

There is also the benefit of the, now avoidable, cost of oil, waste oil disposal and labour. With potentially increased outputs and greater uptime, the benefits of an oil-free technology are clear.

Gardner Denver offers a range of oil-free vacuum pumps, each suited to the particular requirements of individual applications. For instance, the S-VSI dry-running vacuum pump for packaging under protective gas needs no coolant or sealing medium in the suction chamber. This particular pump is water-cooled and offers low heat emission into the environment.

There is potential for food producers to reap the rewards of oil-free vacuum technology. Investing in oil-free technology will ensure the improved standards of air quality, as the food and beverage sector continually seek improvements in process efficiency and quality across all of their processes.

Loading Systems’ High Speed Doors – The all in one solution!

After proving its qualities at home in the UK, European

food manufacturers are next in line to benefit from Cerulean’s accurate, sustainable, non-destructive equipment.

Maintaining an optimum temperature range has always been critical for food

manufacturers the world over, as the reproduction of harmful micro-organisms or the formation of toxins can occur in either cold or warm ambience.

All food naturally emits tiny amounts of electromagnetic radiation, so using the Faraday cage principle, Celsius detects the radio energy from samples and converts these readings into temperature values. This process only takes a few seconds and any item can be measured between -30°C to +30°C. The equipment has an easy to follow

GUI and the operation process is quick and simple.

SCS SL, a private company located in Irun (North Spain), are one business who has recently become a distributor of Celsius. Focused on niche engineering products, the company provide quality control and engineering solutions for the packaging sector and most of their customers are FMCG and private companies on the Iberian Peninsula.

The latest range of Celsius instruments, Midi and Maxi, have evolved in recent times to offer larger and more responsive screens and upgraded operating platforms. Consequently, food manufacturers across Europe can rest assured they now have the capability to achieve the optimal, accurate insight needed to produce the results required by many market sectors, including all those regulated by HACCP.

T 01908 233833

Non-invasive thermometry system, Celsius, set to reach into the European market place

Ian Tindall, Director of Innovation and Marketing

at Cerulean, explores the importance of temperature in the food manufacturing sector.

The size of the chilled and frozen food market shows the importance of maintaining food quality. In the ready-to-eat sandwiches

sector, one provider alone makes 600 million sandwiches every year!

The WRAP organisation quotes mind-boggling data that the food sector produces 10 million tonnes of food waste a year. However, with non-invasive

temperature checking technology there is little stopping manufacturers from protecting food quality and reducing waste.

Our sophisticated equipment, Celsius, delivers accurate temperature measurement in minutes, without specialist operator training, offers food manufacturers reassurance about the products they sell and enables protection of production rates at no costs to quality.

Media commentators often refer to “taking the temperature” of a market. In this case the importance of temperature is more than a metaphor; it’s a matter of protecting an industry’s future.

Roquette is ensuring the highest standards of food safety and product quality with a bespoke double row magnet

from Eclipse Magnetics. The unit consists of a double row of magnetic bars which has been installed as part of a new sifter installation for powdered gluten at its plant in Corby, Northamptonshire. As a global leader of natural-based ingredients for the Food, Nutrition and Health market, Roquette supplies gluten to a variety of blue chip food manufacturers.

Roquette needed to pass the powdered gluten product over an offset double row magnet with a minimum strength of

8000 Gauss, and approached experts in foreign body removal, Eclipse Magnetics, to meet the highest standards of safety and quality.

Eclipse Magnetics supplied Roquette with a bespoke double row magnetic unit with magnetic bars, which are not only withdrawable, but also easy to clean. A catchment tray was also included to effectively contain any residual gluten which can be dislodged from the bars as they are withdrawn for cleaning. The unit has been installed at the end of the process, before the product is filled into tankers or tote bags, and the residual product captured by the magnets is collected in clearly

marked bags and disposed of.

Foreign body removal systems from Eclipse Magnetics contain magnetic cores which can be pulled from stainless steel tubes to ensure that contamination falls away. They are extremely efficient at removing fine iron contamination from dry free flowing products such as sugar, grain, flour, granulates and powders.

With their tasty biscuits being sold in over more than 41 countries

worldwide, this customer needed to update their facility in order to meet the ever-increasing demand for their sweets. In this specific case, the customer had two lines coming together just before having to cross a critical logistic pathway, after which they each had to split again in order to get to their separate packaging machines.

With an existing facility that’s already running various other projects, it’s always tough to find the most efficient way to increase the number of lines without sacrificing safety and accessibility. Especially so if the product being transported is unstable and fragile, like these biscuits.

As the customer has already had many positive experiences with AmbaFlex products they trusted them to come up with the best possible solution and they found it in the patented Portal ONE.

This solution solves two problems in one go: First, it creates a portal function which will keep the critical logistics paths open and safe. Second, using only one belt along the whole path, it cuts the number of needed transfers by half. Removing those transfers that would otherwise be suspended up in the air and hard to reach, ensuring a safe and stable journey of the products.

Taking the portal one solution and customizing it to our customer’s needs resulted in a one of a kind three-way portal solution, made to solve the customer’s challenges in the most efficient way possible. After it elevates the two streams of biscuits with only a single dual-lane spiral, the two streams separate at the upper end where they each continue to their own spiral to transport them down again and deliver them to their respective packaging machine.

Creating one three-way portal instead of a traditional portal system for each line cuts down on total costs and floor space used. The end result, a happy customer with an efficient and safe upgrade to their facility.

cartridges are the perfect solution for ensuring only culinary-grade steam is used in food, beverage and dairy production process.

Steam that will come into direct or indirect contact with food and beverage products must be of culinary grade (3A-609-03). This standard stipulates that in addition to using only FDA approved boiler additives, the steam should be filtered to remove 95% of 2micron particles.

The difference between typical steam filters and the new SupaMesh is that the Supamesh will guarantee this quality under worst case conditions i.e. flooded with condensate. This is important, as all steam systems running at a typical 95% dryness fraction will have a degree of condensate present.

The exceptional flow rate of the stainless steel metal fibre filtration media ensures that flowrates aren’t compromised if retrofitting into an existing system to upgrade to the culinary standard.

All SupaMesh cartridges are manufactured from 316 stainless steel throughout. They are available in

both plain cylindrical and pleated configurations to provide the closest match to steam flow requirements ensuring that the most cost-effective installation is always achieved.

Nitrile antimicrobial gloveMarket

leaders Unigloves and BioCote have combined their expertise to create what is said to be Europe’s first antimicrobial nitrile gloves.

Unigloves’ new Fortified single use gloves incorporate silver ion technology from BioCote, which has been scientifically proven to destroy 90% of bacteria within just 15 minutes and 99.5% in only two hours. Ideally suited for food, drink and meat processing and manufacturing environments, BioCote is also proven effective against E.coli and Salmonella, antibiotic resistant superbugs like MRSA, VRE, CPE and CRE, invasive fungi species such as Candida auris, plus H1N1 influenza, H7N9 and the current Aussie flu strain.

Meeting the medical standard for pinholes (AQL 1.5) the new Fortified gloves are tested in accordance with EN455 (medical grade). They are also latex and powder free, chemical resistant and available in sizes small to X Large. The BioCote technology incorporated within the new Fortified gloves prevents microbial colonisation and also renders them non-infectious, through protein & oxidative damage, membrane disruption and DNA interference.

Ionic silver particles impregnated into the Unigloves synthetic nitrile during the manufacturing process are dispersed throughout the rubber polymer. As a result they will not wear off, wash off or leach out, meaning antimicrobial protection lasts for the lifetime of the glove. Silver is an ideal antimicrobial agent due to its effectiveness against a wide range of microorganisms.

popular line of coconut flour tortilla chips this September in the UK having successfully flourished across the US only one year ago.

Daniella is eager to introduce her sustainable approach to eating and innovative alternative flour snack line to Europe. These game changing, non-GMO tortilla chips are free from gluten, grains, dairy and refined sugar and are available in Himalayan Pink Sea Salt, Sea Salt & Vinegar, Beach BBQ, Golden Curry and Original (£3.99 per 155 gram bag).

Daniella, who was born and raised on UK soil but now splits her time between Tulum, Mexico and Los Angeles, was inspired to examine her day-to-day diet after a lifelong struggle with severe asthma and poor health.

Her perseverance to live a full life without restriction led to experimenting with a variety of diets and nutrition programs well before it was widely accepted that nutrition and health were closely linked.

Aroma Academy states, “Although a significant level of excellent general education and training has historically been available for wines, beers and spirits, the Aroma

Academy recognised that a key missing foundation stone has typically been the training and development of the vital practical sensory skills that are so important to the drinks business – be it in Product Development, where companies are aiming to develop new and interesting flavour profiles, in Production Quality Control where consistency of flavour profile from batch to batch is key or in Sales and Marketing where, in an increasingly crowded market, brands are striving to differentiate themselves by their flavour profiles. In addition, sommeliers, professional bar tenders, other drinks professionals and drinks enthusiasts have an incredible ‘thirst for knowledge’ regarding sensory skills.”

The Aroma Academy has become established as a global leader in the Training and Development of these Sensory Skills and is on a mission to promote their importance to drinks professionals and enthusiasts globally. Located in Scotland, it now counts many of the leading international drinks companies in its customer portfolio.

Based on the premise that the vast majority of the flavour experience comes from the Sense of Smell, Aroma Academy focuses on the training and development of the fundamental Sensory Aroma

Recognition Skills vital for spirits, beers and wines development, production and appreciation.

A range of “self- learn” Aroma Training Kits for Wine, Whisky, Bourbon, Gin, Rum and Faults is available, in addition to Aroma Recognition Skills Training Programmes (both online E-Learning & Classroom) and Sensory Competency/Proficiency Systems.

Have you always wanted to develop your Sensory Skills but were not sure how?

Here on the Southwest coast of England, we’re surrounded by

things made more beautiful because of what nature takes from them.

The sea glass pebbles we find on the beach are more beautiful without their sharp edges. Smooth, bleached driftwood is even more beautiful without its bark. And the impressive sea arches that rise out of our waters are most definitely more beautiful without.

These gifts of nature have been our inspiration for creating Sea Arch. It’s a gin spirit that is more beautiful without, because we have removed the alcohol from it.

We all have times when we can’t – or just don’t want to – drink alcohol. They’re the special events, parties and working lunches. Or times when we’re relaxing after work or catching up with friends. These are Sea Arch moments – times when you want a grown-up, sophisticated drink, without the alcohol.

Created with a blend of botanicals including sea kelp, juniper and cucumber, Sea Arch is delicious in a classic G&T – and in a range of cocktails. So why not make time for your own Sea Arch moments? Kick back, sip slowly and enjoy every moment.

Greensand Ridge specialises in Gin, Fruit Brandies and Rums, making spirits with a local

influence, using sustainable practices and turning surplus produce from local growers into fine spirits.

They aim to have the smallest possible environmental footprint using 100% renewable power and aiming to be waste, chemical and plastic

free in the distillery, with all organic waste going to local smallholdings which also supply the distillery for events.

One of the unique things about Greensand Ridge is that also aim to have a positive impact on the environment by working with local farmers and food distributors to take surplus produce to turn into fine spirits. Raspberries become a raspberry vodka, apples and plums become brandies, and surplus bread a whisky wash.

As with their other spirits, their Gins echo the produce found in the lands around the distillery. Their classic London Dry contains cobnuts, oak moss, gorse flowers, honey, rosehips and bay, among others. It is a multi award-winning gin of remarkable smoothness with a luxurious silken mouthfeel.

Imbibe Live 2018 was our first opportunity to showcase

our product to a London trade show. It was an incredible couple of days from us and we’ve had some really exciting projects as a direct result. Bottomley Distillers Ltd is the creation of team Alan & Amy.

Alan learnt the skills of distilling from growing up, watching his dad distilling whisky. From that point he had stored these learnt techniques, backed up by a career in engineering. One day at the cusp of the Gin Revolution, Alan announced to partner Amy, that they were going to

‘make gin & grow Christmas trees’! Shortly after, discovering there were no other commercial distilleries in Lincolnshire, they began the journey to

put Lincolnshire and it’s gin production on the map!

The name Pin Gin came from Alan’s idea to grow Christmas Trees – pine needles – needles & pins – Pin Gin was born! Pin Gin is a 40% London Dry Gin, a classic juniper dominant gin with a twist. To taste neat, we have a spicy warm feeling from the cinnamon and peppercorns, with a sweet liquorice finish. Add in a simple Indian Tonic and the citrus comes alive, with the zesty flavours of the lemon and orange shining through.

The Moorland Spirit Company was founded in one of Britain’s last

wild sanctuaries in the remote moors of Northumberland, to create spirits in high fidelity. Bringing together an exceptional team of talent: food writer, Valentine Warner; world-renowned barman, Nick Strangeway; drinks developer, Cairbry Hill; countryman, Walter Riddell; and master distiller, Chris Garden. Together they have created an expressive and experimental laboratory seeking to distil the tastes of nature with their innovative triple technique.

Their revolutionary method is able to reveal more complete, delicate flavours than is possible with conventional spirit making methods alone. Launched three years ago they released their first spirit Hepple Gin which garnered praise and awards for its fresh and invigorating taste. Through a combination of outstanding

technology and exceptional sensitivity to the environment their aim is to make spirits that taste as alive in the glass as in the wild. In 2018 they will launch two new limited edition spirits.

Since launching Hepple Gin the Moorland Spirit Company has won the prestigious Double Gold Award at the San Francisco Spirits Awards in 2017 to add to their first Gold medal in 2016. The distillery has also developed a forward-thinking sustainable juniper propagation programme on the moors

around the distillery in association with Northumberland National Park, Newcastle University and Hepple Whitefield Farm.

Double Hedges two still white wines are produced by R,W,

Buckingham & Son. We are delighted our 2015 Solaris won a Sommelier Wine Awards gold medal, avocado on toast food match trophy and best of all, Gastropub Wine of the Year. We believe the SWA wine of the year award is the highest accolade achieved to date by an English still winein an international competition. It was fantastic to be able to introduce our wines to new customers at the Imbibe event. We grow the vines, to produce the grapes and make the wines, in our Griffin Farm vineyard in Toddington, Bedfordshire. The

vineyard, which is situated on a south-facing slope at 52 degrees latitude, between 110m and 130m above sea level, is planted to Bacchus and Solaris. The Bacchus (0.5 ha) is planted in the most sheltered part of the valley whilst the Solaris (0.4 ha) is planted in the most exposed section towards the top of the hill. The Solaris grape is remarkable in that it is resistant to both downy & powdery mildew while being able to ripen in cool climates thanks to its large, disease-resistant leaves. This means it requires minimal intervention, thus reducing the impact on the environment and production costs. There is no need to chaptalise or de-acidify as the

grape ripens to close to ideal sugar levels and acidity for a, world beating still white wine, here in Bedfordshire.

Long Tail Mixers are an emerging and unique brand dedicated to providing rums, bourbons

and whiskies with the ideal pairings and help consumers discover dark spirits in a new light.

The mixers have been created by two lifelong friends, Alex and Tom, who share a passion for dark spirits. On their travels they fell in love with the amazing flavours and cultures that come withdrinking dark spirits and set about creating their own mixers to pair perfectly. The mixers, whichcome in three flavours – Blood Orange, Island Spice and Ginger Lime – created and designed to enhance and complement the flavour notes of your favourite dark spirit.

Alex and Tom comment “Long Tail is born out of a true passion for drinking dark spirits, we foundit hard to find the right mixer for our favourite spirits other than the standard soft drinks and mixers that you would ordinarily add. We wanted to find the balance in mixers that are fresh, but not overpowering, invigorating, but not over-sweetened, and to produce drinks that harmonise with dark spirits, rather than mask their unique flavours. We

believe we have created mixers truly unique to the market and products we think our customers and lovers of dark spirits will enjoy time after time.”

“To Friar John Cor, Eight Bolls of malt, wherewith to make aqua vitae for the King” –

Exchequer roll, 1494

The first release from this historic site in Fife, Scotland, is a tribute to the origins of Scotch as we know it today. Inspired by the earliest “aqua vitae” that was made at Lindores Abbey as long ago as 1494 as shown in this extract from the Exchequer Roll addressed to the abbey’s head abbot.

The distillery site artfully balances the old and the new with the impressive still house overlooking the ancient abbey ruins and this is something we strove to embody in our first spirit. We bring together the rich history of distillation at Lindores with modern serves and twists to ensure a drink that is appealing to seasoned whisky drinkers and amateur tipplers alike.

Distilled in pot stills, our malt spirit is then infused

with a blend of spices and herbs including cleavers, lemon verbena and sweet cicely, which all grow in our gardens amidst the grounds of the ancient Abbey. Entirely natural, with no added sugars, it is delicious as an aperitif over ice with a twist of orange.

Fruitful, herbaceous and infused, Nonsuch

Shrubs are a deliciously complex, all-natural blend of fruit juice, savoury herbs, sparkling spring water and apple cyder vinegar with no added sugar.

Traditionally known as ‘shrubs’, this age-old, once globally celebrated drink has been reimagined into a sublime, slow-sipping, modern-day elixir. With intelligent, sometimes

surprising combinations of fruit, herbs and apple cyder vinegar, used to create unique harmonies of savoury, sweet, bitter and sour.

Founder and creator Henry Chevallier Guild (of Aspall’s Cyder Vinegar fame) had originally set out to find a drink that would be interesting, full-bodied and most importantly, delicious, for when he was choosing not to partake.

After years of extensive research, apple chopping, flavour experimentation and general trial and error, Nonsuch Shrubs came to fruition. The first three flavours; Peach & Basil, Blackcurrant & Juniper

and Sour Cherry & Garden Mint, launched to market in January 2018 and have quickly become a favourite with food and drink connoisseurs alike.

Nonsuch Shrubs are ready to drink and specifically designed to be enjoyed slowly, in moments of relaxation, conviviality and occasion. Best served chilled, they behave excellently both with and without food.

Hattingley Valley is a family-owned business located in Hampshire which specialises

in making premium English sparkling wines using the traditional method. The Robinsons established Hattingley Valley in 2008 planting the first vineyard with Chardonnay, Pinot Noir and Pinot Meunier. Currently, we manage over 24 hectares of vines across two well-situated sites.

Our custom-built, eco-friendly winery was completed in 2010. Equipped to the highest standard with the latest technology and equipment from continental Europe, it was the

first UK winery to adopt solar power.

At Hattingley, we use the traditional method for making our wines. A key element of our style is the subtle use of oak barrels to ferment a small proportion of the wines each year, as well as ageing on lees in stainless steel tanks. This helps to soften the wines before they go into bottles for the second fermentation.

Our talented wine making team is led by Emma Rice, two-time winner of UK Winemaker of the Year.

Since launching its first release in August 2013, Hattingley has been recognised in competitions across the globe and developed into one of the most respected producers of English sparkling wines in the country. Hattingley has garnered two ‘World Champion’ trophies from the Champagne and Sparkling Wine World Championships for its 2011 Blanc de Blancs and 2011 Rosé.

Neckstamper Brewing is a craft brewery based in East London with an obsession

for making delicious tasting modern and traditional beers.

We love the history of London and that it was historically the beer centre of the world – this inspired us to name ourselves after the neckstamper. This was nickname given to the pot boy of the local alehouse in 17th century

London. The one that helped ensure local beers could be enjoyed away from where they were brewed.

This year we were thrilled to be recognised in the national craft keg competition at SIBA’s Independent Beer Awards 2018 – with our Session IPA “Elbow Crooker” picking up overall national Silver and Gold in its category.

We have 5 core beers, ranging from Squencher – our juicy IPA to Bonebox Cooler – a traditional London porter. Both taking their names from historic terms, e.g. “squencher” was the name Victorian workers gave to their first thirst-quenching beer after a hard day’s work.

We also brew small batches of one-off seasonal specials.

Our full range of beer is available in keg and our offering in cans is expanding. For direct sales email [email protected], and nationally our beer is available through Eebria Trade.

Kingsdown is synonymous with quality and style and is available in elegant 1ltr, 750ml, 500ml, and 330ml glass bottles, still and sparkling.

The business has diversified in recent years and built on the Kingsdown brand by launching our new range of Kingsdown Sparkling Pressés. These drinks are made from Kingsdown Sparkling Spring Water and meticulously

sourced natural juices – hand picked Sicilian lemons, Spanish oranges, British rhubarb, apples, elderflowers, blackcurrants and ginger – and blended to produce high quality sparkling pressés.

Kingsdown Water

A gin meticulously crafted from 15 botanicals sourced from the secluded isle of Jura, off

Scotland’s Wild West coast; Lussa Gin tastes as fresh as the maritime temperate climate it originates from, and is as much an adventure in flavour as it is an adventure in creation in the distillery at Ardlussa.

A true labour of Lussa, this gin has been crafted by artisans Alicia MacInnes, Claire Fletcher and Georgina Kitching; and since its inception in 2015 has won numerous taste awards including the Gold 2018 award at Scotland’s Speciality Food Show. This is thanks to the fact that each of the 15 botanicals that infuse to create Lussa Gin’s distinct flavour are grown and foraged from the Isle itself, making Lussa Gin a true product of the isle.

The success of Lussa Gin continues, as they recently made it in to the Top 20 exhibitors at this year’s Imbibe Live at London’s Olympia exhibition centre, on the 2nd-3rd July 2018, where attendees and exhibitors alike were incredibly impressed by the fresh, zesty, smooth gin taste with a subtle, aromatic finish on the pallet. To be recognised at Imbibe Live, Britain’s leading trade event for providers, buyers and

servers of alcoholic drinks, is an outstanding achievement, and truly a sign of things to come from Lussa Gin – An Adventure in Gin.

For greater insight into the backstory and inspiration that went into this stunningly crafted, flavoursome Lussa Gin, visit the below website, or if you’d like to get in touch with the distillers directly and learn more about stocking Lussa Gin, or maybe enquire about visiting their distillery, call or email today.

An Adventure in Gin

CEDER’S is an exciting new drink for those looking for a non-alcoholic

alternative to the much-loved G&T. A wonderfully tasting ALT-GIN offering an everyday escape from busy modern life.

Created by husband and wife – Craig, from South Africa and Maria, from Sweden – the idea for CEDER’S was born in the beginning of 2017. Inspired by nature and fusing together their Swedish and South African roots the duo created CEDER’S to offer consumers a non-alcoholic yet sophisticated adult drink experience.

Handcrafted and bottled in Sweden, CEDER’S is made from classic gin and exotic South African botanicals found only in the inspirational Cederberg Mountains. These botanicals are combined with pristine Swedish water to create a unique drink that provides all the flavour of gin without the alcohol.

The range includes three flavours: CEDER’S

Classic (akin to a classic gin, mostly juniper but also floral hints), CEDER’S Wild (juniper combined with ginger, clove and rooibos) and CEDER’S Crisp (juniper combined with citrus, cucumber and camomile).

With three district juniper-led flavoured variants to enjoy, there’s a perfect serve for every occasion. Enjoy your everyday escape with CEDER’S.

The inaugural intake of service leavers and veterans to graduate from the Forces Media Academy were

congratulated by His Royal Highness The Duke of York at a graduation ceremony earlier this month. The event took place in west London where security is provided by a team from TC Security Services.

The Forces Media Academy offers service veterans the opportunity to study for a Higher National Certificate qualification in Creative Media Production, to gain access to an industry where historically people with a military background have been under-represented.

The Services Sound & Vision Corporation (SSVC), of which HRH has been Patron since 2003, established the Academy last year at its headquarters in Buckinghamshire, which was opened by the Duke in October 2017.

Satia Rai, Senior Operations Manager who leads the team from TC Security Services said, “It was a great privilege for our team to welcome His Royal Highness The Duke of York along with the graduates and many guests who had gathered at the venue to celebrate their graduation from this programme.”

Satia was particularly pleased to learn of the positive feedback from one of the key organisers Howard Lambert, Audit Manager at SSVC.

Howard said, “The only feedback I can offer up was positive! Everything went like clockwork and we were all extremely happy with the day. Many thanks to you and your team for your support during the day. It was greatly appreciated and contributed to the smoothness of the day.”

Jeff Lloyd-Jones, Contract Director for TC Facilities Management received a call from the Store Director

in Hornchurch saying that the store was unable to open for trade due to a burst water pipe that had flooded the store. Mohamed, Cluster Facilities Manager for TC Facilities Management responded immediately, rallying some of his cleaning managers to come and provide support, getting to the site within half hour. They worked with the store staff to get the store open for trade within a couple of hours.

Those who came to the rescue and deserve a particular ‘Thank You’ are:

● Ahman-Haastrup (In-Store Manager, Hornchurch) ● Germaine (In-Store Manager, Rainham – Essex) ● Ibisola (In-Store Manager, Romford) ● Sabastine (In-Store Manager, Romford Gallows

Corner)

Jeff said, “It’s a huge ‘well done’ to Mohamed, cluster facilities manager at TCFM, who was able to rally the troops, pulling out all the stops to help the Hornchurch store be back up trading again within

a couple of hours. It’s also deeply gratifying to be appreciated by our client at a local and national level with both managers sending personal notes of thanks to Mohamed for the great job he and the team have done. It makes me feel very proud of what my team has achieved for our client.”

A hat trick that our clients will tell you is well deservedTC Security Services, part of TC

Facilities Management (TCFM), have not only been placed in the top 2% of all SIA listed companies within the Approved Contractor Scheme in the UK, they have also passed the ISO 9001 and 14001 management systems audits which come in to force next month.

The 4-day visit by both auditors involved full scrutiny of the TC Security Services operation and for the ACS audit included visiting both the Head Quarters and satellite offices along with a mix of varied customers.

The maximum overall score on the ACS audit that can be achieved is currently 175 points. TC Security Services’ score of 164 places them

not only in the top 2% of all SIA listed companies within the Approved Contractor Scheme, it also showed an increase in the score awarded by the auditors in 2017. All this shows TC Security Services as one of the very best security companies in the entire country.

Coupled with this was passing the ISO 9001:2015 and 14001:2015 management systems audits. This was the fourth time these new quality standards, coming in to effect on September 14th, 2018 have been audited and passed each time.

Both achievements mean that potential and existing customers have the confidence that not only has our service been independently

assessed against recognised standards and procedures, it also offers added peace of mind that all the security personnel have been correctly trained for the role they are performing and our quality and management systems meet these ISO standards.

Natural and Organic Products Europe is the leading event for buyers of natural health

and organic products and is proud to be one of the largest trade exhibitions for organic food.

Earlier this year the show returned to ExCeL’s convention centre, bringing exhibitors and visitors together for two days of sampling, trade and exhibition.

Amongst the shows top 20 exhibitors, Camp Food and Co showcased their innovative online-market service to monumental praise. The company’s online platform brings buyers and producers together, to give authentic Italian producers a platform to sell their high-quality cuisine, and buyers an opportunity to purchase it.

Visitors were captivated by the idea and overwhelmed with the company’s commitment

to ‘go the extra mile’, sourcing specific products on request and offering clients the option to order samples before they make any purchases. Moreover, visitors were also impressed with the websites ease-of-use, offering access to buying options after an initial client registration.

Award winning cultured probiotic kefir drinks. Our refreshing

healthy Kefir drinks are made with Greek tradition! Using free-roaming Greek goats’ / Cows’ milk and Water, we lovingly ferment the milk /water with live kefir culture, resulting in a creamy, subtly tart drink with billions of probiotics per serving. Kefir is a more potent source of beneficial bacteria than yoghurt/supplements and contributes to a healthy gut and strong immune system. It also contains B vitamins, calcium, magnesium, vitamin K2, phosphorus and easily digestible proteins.

One of the great things about kefir is that it is usually well tolerated by lactose intolerant people, because the microorganisms consume most of the lactose (sugar) in the milk during the fermentation process.

Kefir is far more powerful than taking a dried microbiotic and tastes better too! Kefir contains many different strains

of live bacteria, thriving in their own environment. If you have been taking a powdered or pill-based microbiotic, you may stop – you will no longer need it!

Delicious on its own, in smoothies, or in any recipe calling for buttermilk, our kefirs are a new essential for any kitchen

steady changes in health, mood, happiness and overall wellbeing from having a more nourishing and vegetarian friendly diet, Ineke decided to set up Nourish – Grow Cook Enjoy. Ineke started small, originally creating a handmade product from her own kitchen.

The Natural & Organic Products Europe exhibition is one of Europe’s biggest shows for natural and organic

products. With over 700 exhibitors, this event showcased everything from natural and organic foods to beauty and eco-household products.

The event took place on the 22nd and 23rd April 2018 at London’s ExCeL, bringing to view an extensive seminar

programme, along with thousands of new products and networking opportunities.

One of the biggest networking opportunities at the show was the shop talk lunch, allowing health store retailers to discuss the latest advice and ideas with leading BIRA retail experts. Involved in this was the ‘meet the experts’ lunch, where visitors listened to topics on digital influences, future prospects and problems in retail crime. This session also celebrated the new partnership between NAHS and the British Independent Retailers Association (BIRA).

Visitors of the show truly experienced the future of health. Focusing not only on natural products but also food, drink and even beauty products, the Natural & Organic Products show had it all covered. It will be making a return to London next year from 7-8th April 2019.

This is our pick of the best exhibitors from this year’s show. Further details can be found on this page and the following two pages.

Research and history has shown the therapeutic

and beautifying properties of beehive foods promoting optimal health and longevity.

Raw Pot is a small family company, bringing on the UK market the only raw, organic and by European origin bee pollen and royal jelly.

Raw Pot is 100% ethical, we never overharvest and strongly believe in nurturing a great awareness for saving the bees, practicing sustainable beekeeping and ensuring that the bees are strong and healthy as only happy, healthy

bees would create the greatest quality beehive foods!

Our raw bee pollen and royal jelly are artisanal, we don’t use any machinery or technological aid in any of the steps from the beehive to the pots, just to keep their nutritional value as nature intended.

Once harvested, we never process or dry our bee pollen, it is 100% raw and natural, as found in the beehive. Once collected must be kept frozen at all times, this being the only way to maintain its nutritional value. It could be consumed straight from the freezer as it doesn’t get frozen, still remains very soft, flavourful and just melts in the mouth!

Our royal jelly is also raw, we never pasteurise it or expose to heat, and because

it is very perishable has to be deep frozen immediately after collection.

It can last 6 months refrigerated or 2 years kept frozen, never in an ambient temperature.

In this issue of Food and Drink Matters, we will be looking at the transformative organisational abilities of The Only Way To

Go, our chosen Management App Company of the Month.

The Only Way To Go, or Togo, was set up almost 10 years ago in Halifax by Mark Hayhurst, who has extensive experience in the hospitality industry. Although originally focusing on marketing, after the release of their innovative booking system three and a half years ago, which saw skyrocketing demand, the company name eventually changed to Togo in order to reflect their standout product.

We spoke to Founder and Managing Director Mark about their software, to which he explained, “Our superb management system can be used in a number of different applications, whether for hotels, restaurants, bars, cafes and more. Essentially, the software maximises efficiency for table planning, the flow of

people, staff shifts and many more variables. It completely takes care of all bookings, reservations and even marketing, leaving clients able to focus on their actual jobs. Essentially, Togo acts as a whole member of staff that is completely competent with all things business – and who never takes a day off!”

Togo was built using years of research from a range of different businesses and eateries, with all of the data carefully analysed to see how changes in organisation could improve profits. For example, a restaurant owner may believe that his restaurant is full, with each table occupied, however after checking Togo, he may discover that by shifting tables, he can squeeze out another 20% worth of profits. As another example, a typical bowling alley with 10 lanes that makes £60 an hour for each lane, may find their lanes unused for ten or fifteen minutes at a time. Instead of losing money, with Togo installed, the system can figure out a way to manage bookings and customers to maximise the usage of each lane

and hence increase profits.

Table planning is just the beginning however, as Togo can collect deposits, manage social media, organise a whole day’s worth of online bookings, manage waiting lists, assist with marketing, and even run promos, loyalty schemes and sell tailor-made deals. Mark added, “As each business, set up and system is different, our bespoke Togo systems come in incredibly handy as clients can create the perfect organisational tool just for them. Better yet, Togo is easy to install, user friendly and can even be installed online if the business is in a remote location.”

One of the best things about Togo, which sets them apart from similar booking management providers, is that Togo takes zero commission. Instead, they only charge a set-up fee and monthly subscription. Right now, the team at Togo are working on expanding the company and widening the scope of applications that Togo can be used for. In particular, they are researching activity venues and hotels that run multiple events.

Next year, you can catch Togo exhibiting their unique software at the upcoming Northern Restaurant and Bar Show during 19th-20th March at the Manchester Central Convention Complex. If you would like to find out more about how Togo can make your business run more efficiently and bring you greater profits, be sure to give them a call on the number below or why not check out the website for more information.

Nouri is a new brand of healthy balls:

vegan, sugar free and gluten free. They are sweetened with dry fruits only, but taste really indulgent (no dates or dry fruits taste!)

and are offered in a luxurious pack of 3 or 10 balls or in a gift box of 16.

The 3 flavours of nouri are very intense and distinctive from one another: Chocolate & Hazelnuts, Coconut and Chia and Matcha Green Tea.

The inspiration behind the brand was to create a treat that is as delicious as the main stream sweets, while being is also healthy (vegan, sugar free, gluten free). Proof of the success of this concept is the recognition that was just awarded

to the brand at the largest international food show SIAL Paris.

Nouri has been selected amongst thousands of products from around the world as an innovative product that gives ticks all the boxes for a health conscious consumer, while offering superb taste. The products can be ordered directly at [email protected] or through Tree of Life.

A native of Ethiopia, Teff is the smallest and one of the most

ancient super grains in the world. As well as being naturally gluten free Teff offers many unique health benefits:

● High in Protein, Calcium, Iron, Magnesium, and Copper

● Not only a source of B vitamins Teff is the only grain known to contain significant amounts of Vitamin C

● Teff is high in prebiotic fibre (a key benefit for IBS sufferers)

● Whole grain, with high resistant starch (low GI)

Lovegrass Ethiopia is a company on a mission to share the benefits

of Ethiopian Teff with the world. In doing so we aim to create opportunities and a source of badly needed hard currency to small scale Ethiopian Teff farmers through direct access to the global market.

our grain. This new product offers a highly nutritious and delicious alternative to any other gluten-free & conventional pastas on the market.

In addition to Pasta we are also proud to launch our range of Teff based bakery products. Due to the versatility of Habesha Teff, the flour can be used in a wide variety of sweet and savoury recipes. Our baking range includes Teff Grain, Flour and Pancake & Waffle mix.

Every business has a brand; it’s what sets your goods or services apart from your

competitors. It’s how your customers know they are buying your product from you and not an inferior one from a rival. It’s what brings your customers back to you for more, again and again.

Every brand has a value. Over time, some, such as Apple, have become so valuable it’s almost impossible to calculate their worth.

Your brand will be a significant asset for your business which you should give serious consideration to protecting, wherever it’s the basis for your trade.

Every day we are subjected to hundreds of Trade Marks. We don’t order a pint of lager but a pint of Foster’s, it isn’t a packet of mints it’s a packet of Polos.

Brand awareness is all important.

Because of this, business owners spend a considerable amount of time and money building the value of their brand. Money spent developing a name or a logo which is then ‘marketed’ to the public, building awareness of the product, increasing the goodwill. It’s not just the buying public who become aware of you and your success; your competitors do as well.

As awareness of your brand grows so do the

risks associated with infringement.

Having put time and money into developing the brand the last thing you need is for another party to try to trade off the back of your efforts and your cash, causing confusion amongst your customers and damaging your sales, your business and your hard-won reputation.

We often hear business owners say “I have my Company name registered, that’s all the protection I need”, unfortunately this is not the case. In a Trade Mark dispute, having a company name registration is of little practical help. A Domain Name is similarly of limited value. Defending your brand without the security of Trade Mark protection is difficult and expensive.

Worse still, if your rival registers your Trade Mark for their business they will own the rights and very often the only solution is a complete re-brand, with all the associated costs and whilst the value previously built up in your original brand is lost completely.

The answer for all business owners is to seek advice regarding appropriate protection for their brand before there is a problem. Get your brand protected by filing Trade Mark applications in those countries where you trade already or may do so in the future, giving you exclusive rights to your brand for your goods or services in the countries covered by your registrations.

We have been protecting clients’ Intellectual Property rights throughout the world for over 130 years. Delivering value to clients through understanding their issues and looking at the wider context in which they operate, enabling us to create commercial and innovative solutions designed to protect their brands and their business at a price they can afford.

Trade Mark protection is not expensive. If you don’t already have this in place talk to Nucleus IP today…before it’s too late.

BBC Good Food Show Summer Review Top 20

From Idaho, America’s potato stateHi, we’re Idahoan Foods and we sure enjoyed being a

part of the BBC Good Food Show Summer.

We know that most hard-working British families really appreciate a mid-week meal shortcut. Today you’ve got quinoa, couscous, taco kits, and all the rest. But there’s a major gap on the supermarket shelves.

Potatoes are still the UK’s number one side dish. In fact, the average Brit eats 120kg per year - so how come all the convenient potato options are still stuck in the 1980s?

You’ve probably heard of Idaho, but you probably don’t know that it’s America’s potato state; it’s even on our license plates. We’ve had a community of Idahoan growers since 1960. In that time we’ve refined and perfected a dehydration method to preserve the flavour, texture, and goodness of each potato.

Idaho’s rich, volcanic soil and clear mountain water are the perfect ingredients for potato growing. With a light, fluffy texture, you can enjoy real mashed potato that’s perfect in one minute. Nature puts the time in so you don’t have to.

Tasting is believing and Idahoan has five great flavours to choose from. Whether you prefer Cheddar Cheese or Butter & Herb, Idahoan has your meals covered. Available in most major supermarkets in the Tinned Veg aisle.

Inspired by the craft beer and gin movement, and motivated

by a massive fire on their farm, Burning Barn set about creating a craft offering for rum drinkers.

Walk into any bar or pub, as a beer or gin drinker and you can find an array of amazing, small batch drinks; booze that has been created by cool people, with passion and quality ingredients.

Burning Barn believes that you shouldn’t have to compromise because you’re a Rum drinker. Taking inspiration from the fire for their innovative flavoured

rums, Burning Barn Rum created the UK’s first Smoked rum. The finest dark rum from Guyana and Jamaica is cold-smoked with local apple wood. The apple wood not only works perfectly with the rum, but it also provides a new use for old apple trees found in the orchard on the farm.

Katherine Jenner on their unique Smoked rum: “A love of smoky flavours led us to experiment with smoking rum, and we couldn’t believe how delicious it turned out! Burning Barn Rum was pretty much born from the conviction that we just couldn’t keep it to ourselves!”

Burning Barn Rums are stocked nationwide in Harvey Nichols, as well as multiple online outlets and independent shops, bars and pubs.

Zoedale Ltd, which supplies breweries

with valves and pumps, has added a range of small brewing systems from 23L to 400L, made by Italian company Camurri, to its product list.

Zoedale decided to put the Camurri Brauer 23 Litre brewing system through its paces and arranged a ‘Brew Day’

with Manchester-based brewery, Beer Nouveau. The CB 23 is a ‘one pot’ brewing system for mashing, sparging and boiling, with no need to pump the liquid to a different vessel for the boiling stage.

It was decided to brew a dark hoppy beer, similar to a Black IPA. The Camurri unit was filled with 20L of cold tap water then the PLC embedded computer was set to pre-programmed recipe number one (64°C for 90 minutes, then 75°C for 5 minutes, then 99°C for 60 minutes.) You can programme 4 different recipes and the CB needs minimal manual intervention once the cycle has started.

The CB 23 heated the water to 64°C in around 30 minutes ensuring a consistent heat with the mixing blades turning. Once at the set temperature, the PLC gave the message: “Step Works. Add Grain for Mash.” Grain was added – 5.6kgs of a mix of English and German grain for the Mash. The instruction on the PLC was then press the ‘Push’ button which started the Mash cycle temperature controller and timer.

The mixing blades were turned off after 30 minutes to avoid breaking up the grain too much and long spoon was used to manually mix every few minutes. The cycle finished, and the Camurri Brauer’s PLC advised to prepare for the Sparging stage, then press ‘Push’ to resume.

The Camurri units have a basket that can be lifted and clamped in place to allow recirculation and sparging. Some dark chocolate malt was added for colour and the recirculation process began using the tap to fill a jug then tipping the wort onto the mash bed. Then the sparge took place using 4 litres of pre-prepared liquor at 70°C to extract more sugar from the mash.

Now for the boil – the CB23 got up to 99°C temperature in another 30 minutes and gave the message to “Add hops.” They used 200g of dry leaf Brewers Gold hops and left for 50 minutes to boil with the lid off. With 10 minutes left, some French

Fugles hops were added along with a Protofloc tablet. The cycle finished, and the Camurri unit could be powered off.

Now comes the bit the brewery was most impressed with. They used the steel cooling coil from Camurri, connected to mains water. The Wort cooled from 98°C to 67°C in 4 minutes, to 38°C in 15 minutes and all the way down to 19°C in just over 30 minutes. This was very efficient and helped create a lovely visible cold break in the wort.

All that was left to do now was to open the valve and transfer the wort to the conical fermenting vessel (also from Camurri) using just gravity and a bit of help to stop the hop leaves blocking the valve. The OG of the wort was 1.058 Gravity and the estimated efficiency of the unit was around 70%.

There was only just over 17 Litres of wort transferred instead of the desired 20L, partly to do with the amount of loose leaf hops and unusable wort at the bottom of the unit.

The OG was quite high so the guys agreed to Liquor Back another 3L which gave a new OG of 1.047. The yeast was pitched and the fermenter was sealed.

Overall, Beer Nouveau was impressed with the Camurri Brauer CB 23, particularly the pre-set programmes on the PLC meaning you can go off and do something else without constantly checking what the unit’s temperature is doing.

The beer was bottled, primed and left to condition for 2 weeks, resulting in a very decent tasting dark beer of

around 5%.

The Camurri Brauer is available in 23L, 50L, 200L and 400L versions and is ideal for serious home brewers, brew pubs or breweries looking for a separate pilot kit on which to run small batches.

Big buyers out in force

Here at Food and Drink Matters, we are all about shining a spotlight on the most outstanding companies the industry

has to offer. As such, we are proud to present Catapult Cat Ltd with our esteemed Food Supplement Company of the Month profile.

Catapult Cat Ltd is one of the world’s leading providers of food supplements specifically designed to prevent hangovers. The company was originally created by 4 Finnish private entrepreneurs in 2016, although product development on the innovative supplement began in 2010. The Catapult Cat supplement is gaining fast recognition around the world for its ability to target the cause of hangovers before they get a chance to occur.

To get a better understanding of how this works, we spoke to CEO Pekka Hokka, who explained: “Catapult Cat removes the source of the hangover, instead of trying to cure it the following morning,

by neutralising Acetaldehyde whilst the consumer is still drinking. Acetaldehyde is a highly toxic substance found in all alcholic beverages and produced through the metabolism of alcohol. Based on recent Finnish research, it’s the main cause of many adverse effects of alcohol consumption, including hangovers. Our supplement contains L-cysteine, Vitamin C and seven different B vitamins to replenish those lost through alcohol consumption. All Catapult Cat ingredients are natural to humans, containing only those which are necessary to prevent toxication.”

Catapult Cat, which is patented in over 150 countries, has exploded with popularity since hitting the market, allowing adult drinkers the ability to enjoy healthy alcoholic consumption. The company are extremely proud of their supplement and believe it has the ability to change drinking culture entirely. The supplement is also incredibly easy to use. All drinkers need to do is take one tablet before beginning to drink, then take follow up tablets every 1-2 hours for as long as they are drinking.

Catapult Cat is already available in over 10 countries, with new business soon to come across Asia. Most excitingly, the company will soon be opening up their China office in 2019 in order to better accommodate the Chinese market. As for us here in the UK, you can get your hands

on the supplement via CLF Distribution or even through Amazon.

As one of the most innovative and beneficial supplements to hit the market, you can expect to find Catapult Cat Ltd at a number of trade shows. This includes Natural Products Scandinavia in Sweden, and Natural and Organic Products Europe in London. Not only that, but they will also be attending Natural Products Scandinavia again in November

2018, with more shows planned across Asia during 2019 to coincide with their Chinese offices.

Pekka added, “We were awarded as the most innovative product in Sweden and have since been

internationally recognized. According to show visitors, Catapult Cat was the most interesting brand in attendance, and our product was found to be the most appealing. During our trade shows appearances, we gave away hundreds of Catapult Cat supplements for visitors to test for themselves. Many of them visited our stand again the following morning and told us how impressed they were.”

Food Safety & Testing Matters

Center Parcs, the leading UK short break provider, has adopted Checkit’s Real-Time Operations

Management solution as an important step towards optimising its operations across its 5 UK locations.

Center Parcs teams are now using Checkit for critical food safety compliance procedures, freeing up valuable time and boosting efficiency.

“Checkit was chosen not only because it provides a single-vendor solution that delivers both monitoring and paperless work management, but also because it can scale to meet our longer term needs. This will allow us to progress from an initial scope of food safety management to also streamlining and improving front-of-house operations and exploiting business intelligence reporting. It’s a partnership with a bright future,” said Gavin Riley, Food, Beverage and Retail Manager.

Already implemented and extensively evaluated on two villages – Woburn Forest and Whinfell Forest – Center Parcs is now introducing Checkit to its remaining UK locations, plus a new one in Ireland that is expected to be completed by the summer of 2019.

According to Gavin: “Our experience so far suggests that, when all the UK locations are complete, we will be freeing

up more than 20,000 hours per year. That is important time we can reinvest in the business, improving processes and training.”

According to David Davies, Checkit’s Director of Product and Marketing, “Center Parcs has really put Checkit through its paces before deciding to deploy at scale. We are very pleased to have been able to meet this challenge and are excited to be now involved in such an ambitious roll out with clearly defined benefits.”

It may sound surprising to many but Austria and algae are a good match. Some considerable time ago, eparella

GmbH, a subsidiary of ecoduna AG, took a pioneering step in producing microalgae on an industrial scale in Bruck/Leitha near Vienna. This May the global technology leader showcased its technical innovations along with the products and market opportunities to interested trade visitors at Vitafoods Europe 2018.

Growth markets Worldwide, the microalgae business is already generating billions of euros in sales. Owing to microalgae’s extraordinary content of high-quality fatty acids (omega-3 and -6), natural colour and valuable proteins, the product’s potential is nowhere near exhausted.

Largely contamination-free system The patented process of ecoduna allows the production of microalgae with a massively improved quality: the microalgae proliferate within a high-purity environment in a closed, largely contamination-free system – a crucial factor that is especially appreciated by demanding customers.

“This clearly sets ecoduna apart from its competitors,” says Karmel. Furthermore, the plant can produce various types of microalgae according to the respective customer requirements.

ecoduna technology The inventors of the ecoduna technology have always sought to avoid sources of error of existing photobioreactor (PBR) systems. In turn, they have converted them into production advantages. After several years of continuous development work, a groundbreaking decision was made in 2015: switching to a new material – by replacing plastic with glass – signified a turning point for the company.

This conversion allowed ecoduna to optimise the service life of the modules while at the same time increasing the system’s productivity. This last step made ecoduna’s technology ready and suitable for mass production. www.ecoduna.com/?lang=en

Christeyns Food Hygiene, based in Warrington, has partnered with H&M Disinfection Systems to launch

a new, bespoke containerised CIP system for optimising cleaning equipment in the food and dairy industry.

Container In Place is a bespoke, containerised Cleaning in Place (CIP) system which comes fully loaded and self-contained, ready to be connected directly to existing pipework, tanks and associated equipment, providing an immediate and cost-effective upgrade to cleaning requirements.

In many plants CIP equipment can be old and those responsible for its specification, installation and setting of parameters may no longer be with the business.

In addition, modifications to the CIP set may have taken place over time, changing the original operating parameters or flow dynamics, which can affect the efficacy of a clean. Emerging food safety challenges in recent years, such as allergen management and species control, may have also placed additional burdens on the equipment.

Modernising or replacing a CIP set itself requires capital expenditure which may be difficult to secure. There is also the challenge of being able to assign a sufficient break in a production schedule to actually replace pumps, tanks, heat exchangers and control equipment.

This new Container in Place system is completely self-contained with its own heating system and as it only requires a water and power source it can be flexibly

situated. The system also provides full PLC control, CIP printed reports and remote access.

The full system fits inside a standard 20 foot shipping container and can be built to order in around three months. The Container in Place not only frees up factory space but also allows a CIP system to grow as business grows, without any interruption in production. It also acts as a back-up system during breakdowns or maintenance.

Providing flexible solutions for cleaning and sanitising, tailored to individual needs is what Christeyns Food Hygiene does best. With around 30 years of experience, it is one of the UK’s most trusted providers of industrial hygiene solutions, working across the food, beverage, brewing, dairy and pharmaceutical industries.

For further information, please contact our Engineers on 01925 234696 or Andy Bethel on 07912 084220

Christeyns Food Hygiene launches the ultimate CIP Solution

For food producers, the biggest priority

is always the health and safety of their customers. High standards of hygiene and sanitation are imperative at every stage of production, from the sourcing of ingredients, to the time the finished product reaches the consumer. We have outlined five key areas of

food packaging hygiene gives for consideration, adhering to which will significantly lower your contamination risk in your food packaging process.

5 ways to avoid this potential contamination include

1. Fit downstream oil filters and check them regularly Downstream filter act as another safeguard against accidental food contamination whilst, blocked filters have the potential to fail and allow carryover of oil into the process.

2. Carry out regular and timely maintenance Poor Maintenance can lead to oil contamination from oil-lubricated vacuum

pumps. Regular preventative maintenance is your best option to avoid potential contamination. Poor maintenance practices or minor equipment faults can risk oil discharging from the exhaust. This presents a big problem for sites where air quality can’t be compromised. Whereas, correct and regular maintenance not only ensures optimally running pumps that have little or no oil carryover, but increases pump efficiency and pump life expectancy.

3. Use food grade lubricant Even with a high level of carefulness and due diligence, the transfer of trace amounts of lubricant to a food contact surface, food packaging or the food itself can happen, regardless of procedures. Food grade or incidental contact lubricants are specifically designed to meet strict regulatory limitations.

4. Always use genuine parts Oil-lubricated vacuum pumps run the risk of oil being discharged from the exhaust, and there is the chance a separator element may fail due to misuse, a poor fit or poor quality. Genuine parts will dramatically reduce the risk

of this happening, ensuring a longer lower risk operational life than if non-genuine spares and parts are used.

5. Go Oil-Free Another option is to choose an oil-free vacuum pump. These have been specifically developed to meet the needs of manufacturers requiring only the highest air purity standards. Oil-free vacuum

pumps don’t require the same level of maintenance as oil-lubricated

models, as there is no need to replace oil or filters. This also provides the added benefit of cutting down on costs over a pump’s lifetime. Another major advantage to an oil-free

vacuum pump is that it doesn’t have to be removed to carry out maintenance. This means a dramatic reduction in equipment downtime and associated costs from oil, waste oil disposal or labour. With the focus on air quality only likely to increase as time goes on, there’s real potential for those operating in production sensitive environments to reap the rewards of oil-free vacuum pumps.

Five ways to improve your vacuum packaging hygiene

Simple way to reduce risk of food product recallsLabcell Ltd, the UK distributor

for Decagon Devices (Meter Group), is pleased to introduce the AquaLab Series 4TE water activity analyser which is ideal for Quality Assurance and Research and Development applications.

A quick look at the ‘Food alerts’ section of the Food Standards Agency’s website shows how many products are recalled – in the last twelve months there have been approximately 80, almost half of which were due to the possible presence of moulds or bacteria such as Salmonella, E. coli, Clostridium Botulinum and Listeria. Every recall is costly to the manufacturer, for their finance and reputation.

Labcell is reminding food producers that maintaining water activity

(also referred to as Equivalent Relative Humidity or ERH) within acceptable limits can inhibit microbial growth without compromising shelf life, colour, flavour, texture or odour, and without recourse to artificial preservatives.

The company offers the latest AquaLab Series 4TE water activity analyser as a simple, quick and cost effective way to obtain quantitative data that provides an invaluable indicator of safety and quality of both ingredients and food products.

Different ingredients and food types have water activity thresholds below which microbial activity is inhibited; above this level there is a significant risk that the ingredient or food product can

become unsafe. For example, by maintaining the water activity below 0.91 aw in products such as cheddar cheese, cured meat and bread, it is possible to inhibit the growth of microorganisms including Salmonella, Clostridium Botulinum and some moulds.

Further information is available from Labcell’s website at: www.labcell.com or by contacting the company via phone on: 01420 568150 or by email: [email protected]

Here at Food and Drink Matters, we are proud to present PTV Group with this issue’s Logistics Company of the Year

profile. The PTV Group have been specially selected as a result of their demonstrable commitment to providing the world with outstanding logistical and traffic solutions.

PTV was first set up back in 1979 in Karlsruhe, Germany, specialising in providing mobility and transport services. The company saw rapid success and began expanding their footprint within years, eventually setting up a branch in the UK in 1982. Today, the company have two offices in Halesowen and London, which operate across the whole of the UK, and have clients and customers in over a hundred countries with 700 employees worldwide.

PTV offer logistical solutions and transportation software for a wide range of different client industries. With four decades of experience behind them, their world-leading software has become renowned across the world for helping clients reduce costs, wait times and even their carbon footprint. The highly powerful software can calculate dozens of variables in order to create the most seamless route for vehicles and so far, have allowed clients to save on average 17% on their transportation costs.

The specially crafted PTV software is capable of doing everything from scheduling transport routes to planning distribution, managing fleets, and assisting with truck navigation and parking, plus much more. Almost anyone with a business that has a

fleet of vehicles can make use of the software, using it to optimise the movement of their vehicle so that they get to their destination in the quickest time, encountering the least amount of traffic and roadworks, and with the smallest carbon footprint possible. In fact, data shows that PTV are able to save 40,000 tons of CO2 on a daily basis.

For this issue, we spoke to Managing Director James De Roo about what the company can offer. He explained, “At PTV, we take into account every variable that could affect a vehicle’s journey. This includes live traffic, the specific vehicle type, the vehicle’s load capacity, the time it’s leaving, travelling and due to arrive, how long the journey will take, how long the vehicle might stop once the destination is reached, and much more. Not only that, but we can take care of everything from planning straight through to execution, giving clients a fully comprehensive and thorough service.”

The software has been utilised all around the world by everything from truck fleets service engineers, sales forces and even cities looking to improve the efficiency of their roads systems. In fact, there are currently 2500 cities across the globe using PTV technology, with 1 million vehicles operating their first class software. PTV have even supplied their software for use in the European transport model, influencing the way passenger

transport and freight movements operate across Europe, as well as for the London 2012 Olympic Games.

One of their most notable launches includes their MaaS solutions, for mobility as a

service. This special programme has been designed to assist city administrations in developing innovative technology led transport services. Emphasising the importance of mobiles phones, electronics and the general Internet of Things, MaaS aims to provide solutions for both vehicle manufacturers and transport officials in integrating ride share services, taxi apps like Uber, and even car and bike app companies, into the typical traffic system.

PTV have a whole host of products available, including the PTV Visum for multimodal transport planning, the PTV xServer for integrated route optimisation and geocoding, and the PTV Optima which has been built to provide live traffic forecasts, as well as detect congestions ahead of time.

The PTV Vissim, widely regarded as the most advanced traffic simulator, has been praised around the world for its unbeatable flexibility. Used by everyone from Atkins to Nissan, the software is able to provide advanced model demand, supply and behaviour in great detail, simulate complex vehicle interactions, take into account new and emerging services such as CAV and MaaS and much more.

Another software example that deserves mentioning is the PTV Drive&Arrive solution, a cloud-based service that automatically informs users of the live ETA, thus allowing transport managers to take action accordingly. This is highly beneficial for both user and customer as everyone is made aware of lorry arrivals with ample time beforehand, meaning docks can be prepared to receive stock and deliveries can be tracked

all the way from production to warehouse to road to the hand of the recipient.

The past 12 months have been particularly successful for the company, with record sales and industry renown growing month by month. They were also recently acquired by Porsche SE, the holding company which includes the VW Group, in a move which has allowed PTV to further invest into software development and infrastructure.

In line with this, James added, “Most recently, we have introduced new functionality features to our logistics product portfolio which have enhanced the on-time capabilities for routing and optimisation of the movement of goods and vehicles.”

Upon receiving our coveted Company of the Year award, James enthused his joy whilst letting us in on his future plans, “We are tremendously honoured that the industry recognises the uniqueness and success of our product offering. Going into the future, we have exciting plans to continue our double-digit growth as well as further enhance our real-time capabilities.”

If you would like to find out more about PTV’s unrivalled transport services, then don’t hesitate to get in contact today. Alternatively, to find out more information about how they can help optimise your route to help save on costs, time and emissions, please feel free to contact PTV Group directly.
