GE 20 Tastes of ThoughtsTwenty years of concocting gourmet tastes of thoughts…Hong Kong is a ‘hybridised city’, according to the well-known writers/critics Chan Koon-chung and Lee Ou-fan. We are living in spaces and histories amalgamated and conglomerated from a wide spectrum of cultures from old to new, from east to west. GE is also a hybrid. We are an academic unit, and we have been providing non-credit bearing programmes and courses for many years. This interest-driven and passion-based learning philosophy is the cornerstone of our work. Our hope is that it is also an essential component that supports your university life. We invite reputed and often renowned experts to share their wisdom and knowledge from various fields, and their stories and experiences from all walks of life. In the past twenty years, we have received thousands of these guest speakers. GE is the common platform to provide intellectual nourishment for all students at HKU. This is a repast to be both enjoyed and envied. We hope that you will savour the multiplicity of delectable choices, colours, and flavours on offer at the GE banquet.

Foreward Dr. Albert Chau, Director of General Education, and Mr. Edward Lam, renowned theatre director and GE instructor for almost twenty years, will recap two decades of development in the GE Unit and offer their projections into the future of GE, which will shed light on various issues related to whole-person education.

Dr. Ng Chun Hung, a frequent speaker and advisor to GE, and Prof. Eric Ma, scholar on popular culture and media studies, will scrutinize the trends and threads of various cultural phenomena and development in Hong Kong.

Acclaimed sociologist Prof. Lui Tai Lok will re-visit his idea of the ‘four generations of Hong Kong people’ and, by chatting with our undergraduate students, try to identify the traits of the newer generation.

Last but not least, Mr. Leung Man Tao will also return to continue his discussions on the cultural identity of Hong Kong from his perspectives of Marginalisation and Centralisation.

Our move to the new location at Pao Siu Loong Building affords us more space and gives us the opportunity to expand our GE Student Team. Project G (Gatherland) is where you can sharpen and contribute your talents as, for instance, moderators, interpreters, graphic designers, crafts people and artisans, video makers, bloggers, rooftop farmers, café managers, or gallery curators. In addition, our Book Club and Filmatic are also open for book lovers and film buffs.

Yes. It’s derived from Turtles’ song, ‘Happy Together’ (the American Rock Band of the 1960s), which was also the opening song of the summer movie, Minions. Learning with fun is our motto. HKU attracts students from around the globe; we hope to curate interesting programme for you to join with your new friends. Attractive group discounts are designed for mixed local/non-local combinations.

Since 2012, our signature festival has continued to combine the intellectual exploration of conferences with fun and excitement of festivals. Echoing the motif of the Milan Expo on ‘Feeding the Planet, Energy for Life’, our theme this year is FF: Food & Future. Through various talks and screenings, an exchange bazaar, workshops, and a concert in the village on 7/10 & 8/10, we hope to promote greater reflection on food and our future.

The HKU Rooftop Farm is now in its third year and it has continued to grow and bloom, thanks to many student farmers. It is now time for another new batch of urban farmers. Come and experience this holistic farming opportunity.

HKU is the first ‘Green Monday’ university. GE has previously organised successful Green Monday talks with free lunch and has received much positive feedback. On Monday 21/9 you will munch your way through many tasty vegetarian dishes, created by our on-campus caterers. The green talk will definitely provide you with food for thought too. Another exciting new event Fest Zero will join us as well.

The 11th GE Trail Walker is back by popular demand after the fully subscribed venture last year. Every year, hundreds of HKUers take up this 50 km challenge for a weekend. With four members in each team, for around 8 to 16 hours of hard work, you will go through an once-in-a-lifetime teamwork experience, going beyond your own comfort zone.

Other nature-oriented ventures about trees and literature, and photography of birds and plants will be hosted by maestros of the fields.

Under the umbrellas of Politics, Economics & Finance, Science & Technolog y, F:A:C:E: (Fascinating Arts and Cultural Experiences), you will find a wide spectrum of course series and stand-alone seminars, forums, salons, and field trips.

我城承載着豐富而多樣的中西文化,面對着新舊交替,既是衝擊、也是磨合,更是機會。GE雖然是一個學術單位,二十年來,港大通識一直堅持以不帶學分的原則,為同學提供興趣為本的學習機會,希望大家可以在沒有壓力的氛圍下,開拓更多更闊的知識。GE是滿載理想和夢想、追尋學識的混合體。

Enrolment Information

Students with proven financial need may apply for partial or full waiver of the non-refundable programme fees.

No deposit or fee is required for the other programmes. Upon satisfactory completion of around 80% of the activities of each GE programme and other specified requirements (please refer to the individual programme details), the deposit will be refunded by mailed cheque or autopay to the student’s bank account registered with the University. For smooth transaction, students are advised to update the bank account information via the HKU Portal (hkuportal.hku.hk).

Each student may submit the enrolment form for himself/herself and one other student only.

General Education Programmes are non-credit bearing and open to all current HKU students. Enrolment is on a first-come-first-admitted basis unless otherwise specified. To enrol, students should complete and submit the enrolment form, together with the payment if required, to the enrolment counter. Copies of the form can be collected at the counter and downloaded from the website of the General Education Unit. Besides, online registration is available from Sep 11 (Fri) onwards for the programmes that do not require a deposit or fee.

Students have to pay a REFUNDABLE deposit (in cash) and/or a NON-REFUNDABLE fee (in cash) for the following programmes which have quotas:

*Discounts on course fee are available for group application with a combination of local and non-local students.

Enrolment Information

A personalised certificate will be awarded to enrolled students who have completed the programme satisfactorily. If there is any unauthentic attendance reported, GE will withhold the certificate, forfeit the deposit if any, and reserve the right to take any further action.

Simultaneous interpretation will be available in English or Putonghua for activities conducted in Cantonese, and English for Putonghua activities. Non-Cantonese speaking students may request the service by checking the relevant box at the bottom of the enrolment form. All requests should reach GE at least seven days prior to the first session of the programme.

Mr. Edward Lam 林 奕 華 先 生Founder, Edward Lam Dance Theatre

林奕華,劇場導演。中學畢業前曾任職前麗的電視及電視廣播有限公司編劇,後與友人組成前衛劇團進念.二十面體。1989年至 1995年旅居倫敦,期間組成非常林奕華舞蹈劇團,至今創作 55齣作品。1994年憑電影《紅玫瑰白玫瑰》獲台灣金馬獎最佳改編劇本獎。2010年與 2012年分別憑《男人與女人之戰爭與和平》與《紅娘的異想世界之在西廂》獲上海現代戲劇谷「壹戲劇大賞」年度最佳導演獎。最新作品為四大名著系列最終章《紅樓夢》。最新著作《是銀幕不是熒幕,是放映不是播映——當女性明星還是大女明星》。

The Art of Non-credit Learning不計學分課程的藝術

The academic year of 2015-16 marks the 20th Anniversary of GE. Over the past two decades, thousands of speakers have been invited to deliver insightful speeches in their respective areas. Their words stimulated our students to critically reflect on themselves. Some distinguished guests will return as GE begins this celebratory year. Have they been 're-enlightened' after years of life experience? Their own stories seem independent but they inadvertently map the past, present, and future of the Hong Kong landscape.

站在時代巨輪前,港大通識見證了五分之一個世紀的變遷。過去 20年曾為通識主講的嘉賓不計其數;他們過往的一些想法,經歲月洗禮下會否被「再啟蒙」?當中幾名星級講者將再度登場,重臨港大通識「復刻」當年話題。他們的故事,彷彿各自獨立,卻又無意間勾勒出一幅對照着過去、現在與將來的圖像。

周偉立博士為現任香港大學學生事務長及通識教育總監。周博士於 1983年取得港大工程學士學位。隨後負笈美國威斯康辛大學麥迪遜分校,於 1992年獲授心理學博士學位。同年任教於香港大學心理學系為助理教授,及後升任為副教授。自 2002年起,受聘為通識教育總監,並於 2005年獲聘任為學生事務長。

現職香港大學社會學系副教授,專長流行文化及香港社會研究,曾定期為《明報》和《信報》的文化版寫作。2005 年,他與多位關心香港流行文化的學者、藝術工作者及傳媒工作者發起「流行文化存香港──黃霑書房」的長期計劃。

早年研究影視媒體與文化認同,九七後研究課題轉為中港文化互動及城市生態,並實驗各種視覺民族誌研究方法。近年為國內傳播學者引入社會學概念,出版《媒體現代:傳播學與社會學的對話》一書,在國內年青傳播學者群流傳。

Founder, Wontonmeen

本身是室內設計師和大學教師的蔡珮兒 Patricia,亦是一個熱愛旅行的背包客,她尤其喜歡在不同國家的青年旅舍與其他年輕旅客交流。十年前 Patricia觀察到香港的青年旅舍不多,而便宜的住宿選擇來來去去好像只有重慶大廈,便萌生在香港開辦青年旅舍的想法。雲吞麵位於深水埗,一個最具地道香港味和街坊人情的社區,樓高11層,提供 30間月租套房,原意為本地和在港發展的外籍創作人在高昂租金的環境下提供價格相宜的安樂窩,得以專注創作。時至今天,雲吞麵已成為各式各樣藝術文創發生的地方,地舖不時舉行展覽、電影放映、小型音樂會等。雖然雲吞麵開業後大小事情 Patricia都要親力親為,亦不很賺錢,但對 Patricia而言,住客的一句「This is my landlady」已令她十分窩心。

「談風 :vs:再說」是香港樂團 tfvsjs創辦的餐廳,位於觀塘大業街的工廈之中。 寬闊的多用途空間設有專業錄音室、鼓樂銷售店 Battle Stage及 tfvsjs樂團排練室。「談風 :vs:再說」的源起是近年「老生常談」的迫遷,觀塘舊居雖被摧毀, 但他們深信創造是抗衡破壞的最佳方法。於是 tfvsjs決定再踏出一步,演示他們音樂以外的專業──料理、設計、電影、錄音。4000呎的空間,由裝修到傢俬,他們都親力親為,希望創造一個文化平台,讓觀塘區的音樂人、電影工作者、上班族、 設計師、藝術家有一個分享的空間,更重要的是培育新的觀眾。

How does a tiny city embrace different corners of the world? How does one empty room shelter different dreams? In this exercise of space re-imagination, we have invited the founder of creative hub ‘Wontonmeen’ and the indie band tfvsjs guitarist, who is also a co-founder of Italian restaurant, Syut, to share their ideas

on how to re-define space.

一個擠迫的城市如何容納世界? 一個工廈裏的空間如何容納不同夢想? 在空間再想像的練習裏,我們邀請了本地青年旅舍雲吞麵的創辦人 Patricia及身兼獨立樂隊結他手與意大利餐廳創辦人之一的 Adonian和大家分享如何為空間重新定義。

Every inch of space in Hong Kong is as precious as gold. We struggle constantly with problems like high rents, high property prices, sub-divided flats, and cramped living conditions. Yet, the Occupy Movement last year seemed to open up a lot of possibilities and visions through which to re-imagine space. In this lifelong struggle for space, young people try to overcome their lack of resources by discovering unlimited possibilities in limited space and resources. Since the summer of 2014, GE has engaged with various creative units and students to kick-off a series of Project G (for Gatherland) activities, aiming to turn 2/F, Pao Siu Loong Building into a space for students to co-create, imagine, and to define by themselves. These activities include the Touchwood Workshop with Start From Zero, the Graffiti Workshop with MC Yan, the Lighting Project with creative duo, Yuen Yeung, as well as a multiplicity of cultural activities to allow Gatherland to flourish with arts and culture. As we approach the new semester in 2015-16, Project G extends our spirit of ‘define our own space’ and invites all creative young

people to join us and play with the notion of space in Gatherland.

在寸金尺土的香港地,我們沒有一刻不與租金、樓價、劏房、蝸居等問題角力,一場佔領運動卻開啟我們對於城市空間的想像。在這場與土地問題角力的持久戰裏,年輕人不再只是盲目地埋怨沒有開 Café的本錢,而是在有限的空間和資源裏面尋找無限的可能性。自去年暑假開始,通識結合不同創作單位和同學的力量,開展了一連串 Project G(for Gatherland)系列,希望令包兆龍 2樓成為一個讓同學發揮想像力、自己定義、自己享用的空間。當中有 Start

Start From Zero是由 Dom於 2000年創辦的街頭藝術組織,最初由 start from zero這張貼紙開始,之後延伸到 stencil、wheatpaste及其他媒介以街頭文化的形式將其座右銘 start from zero宣揚開去。Start from zero有兩個含意,第一是想告訴街上的朋友自己由零開始做街頭藝術,亦希望影響到街上看到這句話的途人,跟他們一樣開始做各類型的街頭藝術,開始不一樣的人生。第二,start from zero是句激勵語句,他們希望以街頭藝術傳播這口號,提醒人們當情緒低落、失落、失去目標時可以由零開始;世上沒有徹底的失敗,也沒有甚麼大不了,start from zero!

Hawking in Hong Kong can be seen as a tactic employed by ordinary people as a creative resistance to power structures that dominate space. Throughout the years, hawkers have been explorers of city space and icons of local culture. However, in recent years, government policies have pushed local hawkers towards extinction because of considerations for safety and hygiene. GE decides to bring a wooden cart into the HKU campus and allow participants experience an alternative way of utilising space. In this workshop, local street art unit, Start From Zero, will teach you to create a DIY wooden cart. Participants in this workshop can also join GE's 'The Makers' group and continue to explore and re-define space together.

有人形容「流動」是一種與空間權力博弈的方式。多年以來,街頭小販一直扮演城市空間的開墾者,也成為香港本地特色之一。但隨着政府為改善環境安全及衞生立法,流動小販漸漸消失……通識希望將擁有無限機動性的木頭車帶入港大校園,一方面向小販的民間智慧致敬,另一方面讓同學在校園內探索另類空間的可能性。這次工作坊我們請來街頭藝術團體 Start From Zero 教大家落手落腳製作木頭車。參與工作坊的同學可成為通識 The Makers成員,延續為空間重新定義的使命。

every tale of seduction is a morality tale, though it is more readily appreciated in literary (or cinematic) form than as a sermon from the pulpit.

The two books in this book club session address the theme of seduction from different perspectives, one English (British) and the other French (although we read it in English translation). Despite the vast time difference between the two books – the former written in the 20th century, the latter in the 18th century – both provide insights into human frailties. We face similar temptations today to those of our forebears over the past centuries – sex, greed, hubris, revenge, and hedonistic pleasures. One tale ends in tragedy; the other, well, with some hope – one might ask in this case, ‘What is the saving grace that leads the protagonist to step back from the precipice in one case, but to plunge into the abyss in the other?’

After graduating with first class honours at HKU in 1973, Mr. Lai joined the Hong Kong Government as an Administrative Officer. From 1985 Mr. Lai was almost continuously engaged in Sino-British negotiations on the future arrangements for Hong Kong and was appointed a Member of the Sino-British Land Commission in 1991-94. In late 1994 he was appointed the first 'local' Secretary for Security of the Hong Kong Government. He left the civil service on 1 August 1998. Mr. Lai is an Honorary Professor at the Department of Politics and Public Administration, HKU.

While Taiwan has become an ideal migration destination for some Hong Kong people, how much do we really know about this place? Koey Lee, who lived in Taiwan for six months during her gap year, interviewed a number of Hong Kong people living in Taiwan and has written a book about their stories. Xavier Dolan, Quebec-born director, is a rising star across international film festivals and award ceremonies. In his twenties, he surprises cinephiles with his wild talent in portraying youth, passion, and deep human emotions with beautiful and carefully framed shots in his signature style. Openly gay, he depicts LGBT themes in most of his works, and with his dashing good looks, he often acts in his own films as well. A first time for Filmatic to feature a specific director, this time, we will collaborate with ‘Movie Movie’ and screen three of Dolan’s outstanding works for a close comparison. On the first screening, we will invite veteran film critic to join us for a post-screening discussion.

The prevailing fast fashion industry is producing low cost products, usually with chemicals that are harmful to our health and nature. Traditional dyeing methods are more environmentally-friendly. Dyeing with indigo is a well-known, natural dyeing method that uses a plant called Indogofera and other organic ingredients. Soaking the cloth with different tie-dye techniques can create all sorts of patterns.

In this workshop, we will learn the natural dyeing technique at a quiet and beautiful place in the Big Wave Village on Lantau Island. Each participant will take home a piece of tie-dyed material with their own unique pattern on it at the end of workshop.

Homemade fermented/pickled vegetables carry the traditions and characteristics of their different origins. HKU students and staff members coming from over 100 countries worldwide are invited to exchange the local food, especially fermented/ pickled vegetables, that represents their own culture .

Food is indispensable to our survival but not everyone gives a thought to the looming food future, especially many of us who are living in the well-fed world. While EXPO Milan 2015, themed ‘Feeding the Planet, Energy for Life’ has tried to facilitate dialogue and raise public awareness about food security and sustainable development, these concerns amongst many others are needed to be turned into action NOW.

To make this happen, GE ConFest 2015 invites you to play a vital role in contributing to the sustainable future of food by exploring more possibilities in agriculture, sustainable use of

natural resources and food consumption from communal to global levels.

人活着便需要進食,卻並非每個人都在意吃進肚子的食物從哪裏來、深思食物生產背後環環相扣的議題,尤其當我們生活在食物供應充裕的地區。隨着全球人口持續上升,糧食供應已成為國際關注議題,今屆於意大利米蘭舉行的世界博覽會,亦特意以「滋養地球,生命的能源」為主題,從「吃」的各種觀念,探討現代糧食危機與永續之可能。

面對日益嚴峻的糧食危機,我們必須反思食物從生產到餐桌的過程中,對自然環境、生態及人類帶來的各種影響。就耕種而言,大規模工業式種植對物種和土地帶來無法修復的惡果──基因改造和農藥使用加劇生態失衡。此外,全球化、過度消費和浪費也導致糧食分配嚴重不均。

GE ConFest 2015以「FF: Food & Future」為主題,嘗試透過反思食物生產、農業及土地政策、消費、飲食文化等各方面,探索一個與大自然和諧共存、多元而永續的生活模式,以行動改變「吃」的未來。

Seeds of Time

This is the story of a revolution, a revolution at a snail's pace. Carlo Petrini is the man who invented Slow Food and Terra Madre. In 1986 Carlo founded the ArciGola gastronomic association in Italy and, three years later in Paris, launched Slow Food, an international anti-fast food movement. It's a story of pranks and political passions, of restaurants and rediscovered peasant rites, of wine and journeys and gambles, some won and some lost but all taken with the same unsinkable, grouchy irony.

A 'perfect storm' is brewing as agriculture pioneer Cary Fowler races against time to protect the future of our food. Seed banks around the world are crumbling, crop failures are producing starvation and rioting, and the accelerating effects of climate change are affecting farmers globally. Fowler and the farmers embark on passionate and personal journey that may save the one resource we cannot live without: our seeds.

The HKU Rooftop Farming Project, started in July 2013, aims to foster a sense of responsibility and connection to the natural environment by reconnecting people to farming. It also aims to explore the potential value of rooftops in a high-density city. By working closely with Bijas Vegetarian Restaurant, this project has demonstrated how one may put into real practice a sustainable food cycle that encourages consumption of local produce with reduction of food waste and a minimal carbon footprint. Students and staff members are welcome to be our volunteer farmers.

Green and sustainable living has become a growing trend - green columns and programmes are found in newspapers, magazines, and on television. We realise the alarming consequences of environmental degradation and need to take immediate action before it is too late. In this lunchtime sharing session, guest speakers are invited to discuss how to live a greener and more sustainable life. Catering outlets on campus are also invited to serve vegetarian food and drinks, free of charge.

Small actions make a big difference. Make a start by bringing your own utensil and bottle to the event.

Build Your Own Micro Garden

Do you want to learn how to grow your own vegetables and herbs, but have limited time and space? In this hands-on workshop series, we will grow lettuce and basil, create Micro Gardens, and enjoy a delightful farm-to-table experience.

You will learn the secrets of growing your own produce in small urban spaces, and have the opportunity to practise your newly acquired skills on the HKU Rooftop Farm. We will then build Micro Gardens from upcycled plastic bottles and waste wood. These innovative, time-saving Micro Gardens are perfect for growing your own herbs and leafy greens on a sunny windowsill. Finally, we will share a farm-to-table experience by preparing and enjoying the produce we have grown.

He graduated with distinction from the University of Toronto (Economics and Philosophy) and earned a law degree from the University of British Columbia. His environmental initiatives have been featured on CNN's Eco Solutions and in the South China Morning Post and Ming Pao.

Trees are essential to the terrestrial ecosystem and are intimately bound to human beings. Mexicans believes that their ancestors were born from old trees; Kenyans seek comfort and solace in the forest during times of sorrow. Recent incidents of old trees collapsing in Hong Kong have grieved many hearts, as if a part of the city's memory has been torn away. Let us make friends with old trees in our city and help them live on healthily before more of them disappear. In this course, Arborist Dr. Alvin Tang will take you to visit some old trees in

Hong Kong's natural resources are considerably richer than we may have imagined. The mountains, waters, wildlife, or sunsets can look amazing in photographs if you know the right way to observe, compose the shot, and get the best out of your equipment. This workshop will give you tips for shooting nature, followed by a field trip to some areas of great natural beauty in Hong Kong. No photography skills or specific cameras are required.

香港的深山幽谷,河溪濕地,是城市背後的綠花園,自然攝影愛好者的寶地。對於自然愛好者,郊遊是認識花鳥蟲魚,探索飛瀑流水,拍攝落日雲霞,用相機記錄自然美的好機會。攝影是運用光和構圖的藝術,需要攝影師的觀察力、構圖技巧、器材操作技術。不論我們使用哪種器材,只要掌握戶外拍攝竅門,熟習器材及配件的使用,了解拍攝主題的習性,大家都可以盡情發揮攝影創意,對自然生態作忠實記錄,享受箇中樂趣。參加者毋須攝影經驗,歡迎使用各種攝影器材。

Hit or Miss? – The Coming Season of Hong Kong Football一係入一係唔入——香港足球下半場

The passion for Hong Kong football is on the rise with the qualifying rounds of World Cup 2018 and dramatically enough, in the time of fluctuating struggle for national identity, Hong Kong will face China at home in November. Is it real passion for the sport? Or is it just a tool for emotional release? One thing is certain: Hong Kong's athletes here definitely deserve much more of our attention and respect. We have invited scholars and local heroes to talk about the development of Hong Kong football and its role in Hong Kong's history and culture. Will Hong Kong football experience a lively springtime or a cold dead winter in the coming years?

Hong Kong faces a new, or renewed, set of challenges linked to its economy, culture, and politics. After his professional training, he practised as a barrister until 1987 when he joined the Judiciary as a District Judge. He was appointed a High Court Judge in 1992, the Chief Judge in 1997 and became a Permanent Judge of the Court of Final Appeal in 2000. He retired in 2013 and now continues as a Non-Permanent Judge of that court. He is now the Chairman of the Standing Committee on Legal Education and Training.

The law's movement is generally towards progress. So when concerns arise over movement in the law, they are usually to do with its slowness. But Lord Chris Patten called Hong Kong, '… the only place [he has] ever been able to identify that is liberal but not (alas) democratic'. Such a state of affairs cannot last forever. If Hong Kong does not move in the direction of democracy, will it not slip backwards on liberty and on social fairness? This problem is by no means for lawyers alone to address. But it is one for which lawyers have a particular responsibility, for democracy is a part of human rights and human rights are a part of the rule of law.

Respect for the law and the legal system is the foundation of the Rule of law. The English Common Law, brought into Hong Kong in the 1840s when it was ceded to the British, has taken root and developed through the past 170 years. There are two special features which have affected its application and development in this Chinese setting. Mr. Justice Bokhary has been a Non-Permanent Judge of the Court of Final Appeal. He was appointed to the High Court in 1989 and elevated to the Court of Appeal in 1993. In 1997 he was further elevated to become one of the founding justices of the Court of Final Appeal. From 1997 to 2012, Mr. Justice Bokhary was a Permanent Judge of the Court of Final Appeal and participated in almost every constitutional case brought before that Court.

A third party force rooted in Taiwan's civic movements has taken shape. Speakers Dr. James Frankel

James D. Frankel holds a Bachelor's degree in East Asian Studies and a doctorate in Religion from Columbia University. Currently on the faculty in the Department of Cultural and Religious Studies at The Chinese University of Hong Kong, he is working to build the Centre for the Study of Islamic Culture, while teaching and researching on religious fundamentalism in Asia.

Mr. Jacky Li

Jacky Li Chun Leung, a Catholic grew up under the Bruneian Chinese and Malaysian Chinese family, was interested in Chinese history and modern European history in his early life. While he was enlightened by his parents and started self-learning on Jawi script (Arabic-writing Malay language) and Arabic language, and the rise of International Politics in recent years, he started his research on Islamic Politics in Middle East, North Africa, Central Asia and Nusantara (literally means Malay World, including Singapore, Brunei, Malaysia and Indonesia). He hopes to build a study base in Hong Kong with the connection of Islamic Studies in Nusantara as to broaden people's insights.

Ms. Zhou Yijun

Zhou Yijun is the Chief Content Director (International News) of Initium Media in Hong Kong. Up to June 2014, she was Chief International Correspondent at Phoenix Satellite Television. Since 1998, she has reported in Iraq, Afghanistan, the Korean Peninsula, the Palestinian territories, Israel, Egypt, Libya, and throughout Europe and the United States. She has also written a book, The Closest Place to God, which comprises a range of stories about the Gaza Strip.

Persecution, war, and massacre seem far from our daily lives in Hong Kong and we only hear about them through the news. According to the UNHCR, since the war raged in Syria and the conflict erupted in Ukraine, the number of refugees, asylum-seekers, and internally displaced people worldwide has reached almost 60 million at the end of 2014, which is an increase of 60% from a decade ago. In addition, both the Islamic State of Iraq and Syria (ISIS) and the Ebola and MERS-CoV outbreaks have caused deep anxiety around the globe.

On the sports field, Malina represented Hong Kong in track & field from 1983 to 1988 in the heptathlon. Changing her focus from the track to the lane, Malina was a member of Hong Kong's national rowing team from 1992 to 1995. Some of her rowing achievements include a bronze medal at the 1994 Asian Games in Hiroshima, third runnerup in the 1994 Commonwealth Championships in Vancouver, and a silver medal at the 1993 Asian Championships in Seoul.

This presentation aims to provide an introduction to the international refugee protection framework, looking at the recent trends in forced displacement and UNHCR's role in providing for our Persons of Concern, both globally and domestically.

In this simulation, participants face simulated attacks, mine fields where they may be ‘injured’, life in a refugee camp, hunger, illness, and uncertain shelter or safety. Participants may also be marched under guard, subjected to ambush and, ultimately, offered a chance of re-settlement where they must re-build their lives.

Instructors Prof. Ricky Kwok

Prof. Kwok is Associate Vice-President (Teaching and Learning) at HKU. He assists the Vice-President and Pro-Vice-Chancellor (Teaching and Learning) with pertinent issues about e-learning, such as strategic directions, learning management system utilisation, and data analytics. He oversees the development of HKU's MOOCs and SPOCs, as well as the promotion of technology-enabled teaching and learning at the university.

Dr. Leon Lei

Dr. Lei has been working on teaching and learning initiatives in higher education with a focus on e-learning and learning analytics. Before joining the Technology-Enriched Learning Initiative team at HKU, he was involved in teaching classes as well as designing e-learning pedagogies and technologies (e.g. Web 2.0 tools, LMS, learning analytics and smart learning environment) for the Department of Electrical and Electronic Engineering (EEE), HKU. He has taken numerous MOOCs and has obtained certificates from seven Coursera courses.

Have you ever thought of being a maker and of making what you want by yourself?

The Do-It-Yourself (D.I.Y.) culture has been growing in popularity across the world in recent years. On the technical side, D.I.Y. consists of various digital fabrications skills, including laser cutting, electronics D.I.Y., and the latest 3D printing technology. The availability of these skills fuels the Maker Movement, where individuals can design and create customised tools, toys, devices and art pieces at low cost. In this course, two young innovators, Ricky and Data, will guide you through a journey of technological and entrepreneurial exploration. Participants can choose to join a field trip to the Qianhai district in Shenzhen on start-up culture and support, and/or a two-session workshop on 3D printing.

Prof. Peter Mathieson, the fifteenth President and Vice-Chancellor of HKU, was born and raised in the UK. After graduating from the University of London, he obtained a research training fellowship from the Medical Research Council to study at the University of Cambridge where he received his PhD in 1992. In 2008, he was appointed the Dean of the Faculty of Medicine and Dentistry at Bristol and also the founding director of the Bristol Health Partners, a role that he undertook alongside the role of Dean.

Dr. York Chow

York Chow was appointed as the Chairperson of Equal Opportunities Commission (EOC) in April 2013. He is an orthopedic surgeon by profession. He was appointed Hospital Chief Executive of Queen Elizabeth Hospital in 1992 and Hospital Chief Executive of Queen Mary Hospital in 2001. He was subsequently appointed Cluster Chief Executive of the Hong Kong West Cluster of the Hong Kong Hospital Authority in 2002. He served as the Secretary for Health, Welfare and Food from 2004 to 2007, and again as the Secretary for Food and Health from 2007 till 2012.

劇場導演。中學畢業前曾任職前麗的電視及電視廣播有限公司編劇,後與友人組成前衛劇團進念.二十面體。1989年至 1995年旅居倫敦,期間組成非常林奕華舞蹈劇團,至今創作 55齣作品。1994年憑電影《紅玫瑰白玫瑰》獲台灣金馬獎最佳改編劇本獎。2010年與 2012年分別憑《男人與女人之戰爭與和平》與《紅娘的異想世界之在西廂》獲上海現代戲劇谷「壹戲劇大賞」年度最佳導演獎。最新作品為四大名著系列最終章《紅樓夢》。最新著作《是銀幕不是熒幕,是放映不是播映——當女性明星還是大女明星》。

When visual storytelling becomes a new form of writing that is shared among our everyday life, everyone can make their own D.I.Y. video programme and share it instantly through social media. But how can you improve the quality from amateur home video to professional broadcasting lookalike with tightly limited manpower and an equally limited budget? In this course, Mr. Patrick Cheong, TV producer and director, will provide you with an initial concept to start your documentary project easily, using the minimum of human and material resources. Nolan and many others all started off as nameless amateurs just like us. Crews, equipment and budgets may have been constrained, but there was never a big, ‘nah, impossible’. Organised by the Hong Kong Arts Centre, Incubator for Film and Visual media in Asia (IFVA) has been nurturing independent spirit in Hong Kong for 20 years. To celebrate both our 20th anniversaries, we joined hands to tailor-make programmes especially for HKU students. We are proud to have invited IFVA winners from various generations to bring along their works, ideas and experiences.

African Drumming Playshop

The drum is an essential part of African culture. From its spiritual purpose, social wellness to daily communication, it is present in all walks of life. This semester we will take a glimpse at how one of the world's most ancient musical instruments can connect to our bodies and hearts in its most direct way. In this 4-session playshop, you will be able to learn the basics of African drumming techniques and enjoy a brief introduction to African music and culture. Most of all, you will be guaranteed a fun-filled, stress-reducing, and self-healing experience with the added bonus of making new friends. No previous musical experience is required.

Pitshu, a native of Congo, Central Africa, is an accomplished drummer and an experienced Drum Jam programme facilitator. With his roots deeply connected to Africa, Pitshu continues to share his passion in uplifting, inspiring and uniting people through his music and dance.

Music Salon – Vinyl Fantasies

Some might think it is an outmoded music carrier. There are also many myths about vinyls: only old music sells on vinyl; they are only for DJs scratching sound effects; vinyl is dead, etc.

Vinyls mean a lot to some music lovers. The Vinyl Revival is also a recent rising phenomenon, upon which the music industry, media, and fans hang their hopes and build their fantasies. The sound and feel of listening to this analogue music medium in our digital era seems contradictory. In fact, the more computerised and digitalized our lives have become, the more our sentiment has grown for the simplicity of the vinyl record. For instance, the Makers Movement and the Back-to-the-basic movement keep building the momentum of the revival of some vintage technologies and artefacts. Chi Chung has been a veteran DJ in Commercial Radio 2 for 30 years promoting international and local indie music culture. He has been hosting lectures and concerts at GE since 2000 and became the Assistant Director of HKU's General Education Unit in 2011. Since then he has been curating a wide array of events with Jacky Cheung, Sam Hui, DJ Spooky, Maksim, Luc Besson, Michelle Yeoh and a lot more. He has also collaborated in various cross-cultural projects such as David Bowie's Mandarin song (1997), <Dream Come True 80 Days Around the World> (2000), <PoPo Song> (2004), Gen-S Concert, Shanghai Expo (2010); HK Week @ Taipei (2012).

Every wine vintage is a story of intrigue told through the geography, history and culture of the place where the vineyards are planted and the grapes matured. In this course, veteran artist Mr. Ricky Yeung will guide you through a journey of public art creation. From the ground to the rooftop, we will be blending art and space with boundless imagination, making our campus more artistic and colourful.

香港大學校園有三多:(一)建築外牆多以磚塊鋪成、(二)許多落地玻璃、(三)多樓梯。這樣的空間構成,提供了各種藝術創作的可能性。資深藝術家楊秀卓先生將帶學生走出班房,實行以藝術介入空間,美化校園,由地下到屋頂,以不損一磚一瓦的方法,創作賞心悅目的作品,為校園平添色彩,將藝術變成日常。參加者毋須任何藝術經驗,只需一夥熱愛創作的心。

Ethnodrama Performance – Taking Root人種誌戲劇演出──「樂」地生根

In order to cope with a new environment, immigrants have had to compromise or even give up part of their culture. Guided by the ethnodrama methodology, this performance is devised from direct interviews with both Chinese and ethnic minority groups, whose parents were not born in Hong Kong. Why and how did these immigrants come to and settled down in Hong Kong? Beyond our outward appearance, are we really so different?

少數族裔遠渡重洋,在港落地生根,為融入香港社會而調整自身生活及文化習慣,適應本地文化習俗,其實本地華人又何嘗不是?無數華人社群也是從內地因着各種原因來港落戶。創作團隊採用人種誌戲劇 (ethnodrama) 的理念,訪尋少數族裔與華人落地生根的故事,發掘彼此聯繫,省思我們安居樂業的源由及期盼。

Polish society in the 1970s was heading from a social movement to an even greater struggle. Polish filmmakers turned their focus to the lives of ordinary people living under an oppressive regime, living between the confines of ideals and reality. This period is commonly known as ‘Cinema of Moral Anxiety’.

1970年代的波蘭社會正從一場社會動盪走向另一場更大的抗爭,波蘭的電影工作者開始把鏡頭對準當下的社會,發掘政治高壓下,小人物面對理想與現實衝突的困境,這一波電影運動,被稱為「道德焦慮電影」。為求通過電檢,這個時期電影中對現實的批判往往以隱喻來呈現。這場運動,隨着 1981年的軍法管治而結束,但孕育出奇斯洛夫斯基、賀蘭等上世紀八、九十年代名噪一時的大導演,對波蘭以至世界影壇影響深遠。

Dr. Andreas Leutzsch is DAAD Visiting and Honorary Associate Professor for European Studies at the School of Modern Languages and Cultures of HKU. He obtained his PhD from Bielefeld University in 2007, where he was Fellow at the Institute for World Society and worked as Lecturer until 2012. He was awarded the A.SK Social Science Fellowship by the Social Science Research Centre Berlin (WZB) in 2007 and he taught as Visiting Professor at universities in Germany, Russia, Uzbekistan and the Netherlands.

Why Our Marriage Matters and Brings Honour to Our Family

SpeakersMr. John Catania and Mr. Charles Ignacio

Mr. Catania and Mr. Ignacio were married in 2011 after 18 years together. Their relationship began in 1993 when they worked together, producing In the Life, the first U.S. national television series documenting the real lives of LGBT people. As executive producer Mr. Ignacio oversaw all production of the series during its first decade and Mr. Catania was a writer, editor, and staff producer, as well as the communications director. In 2013, Mr. Catania and Mr. Ignacio spearheaded the committee that oversaw the deposit of all of In the Life's historical materials into the permanent collection of the UCLA Film & Television Archive, the largest university-based media archive in the world. The couple has received numerous awards and recognitions for their work in LGBT media and activism, and among those Mr. Catania was named one of the 101 Movers and Shakers in Entertainment Weekly's Gay Hollywood 2000 millennium issue, and Mr. Ignacio was named one of Out magazine's Out 100.

John Catania and Charles Ignacio have been together for 21 years and were legally married in the U.S. in 2011. During the past two decades Charles and John have also worked side by side on LGBT issues, most notably as producers for the groundbreaking lesbian and gay television newsmagazine, In the Life, which aired from 1992 to 2012 across the USA and Canada. As they reflect on their long and close relationship they will share their personal experiences and the In the Life stories that shaped their own thinking on LGBT life. With a focus on family, they will present documentary segments about same-sex marriage, gay and lesbian couples raising children, and the strongest advocates of health, happiness and prosperity for young LGBT people: their parents. They will chart the course of their own realization that marriage was something they wanted and deserved, and show how, in various cultures of guilt, shame and fear, legal marriage for same-sex couples is the key to family acceptance of LGBT people worldwide.

This event is co-presented by Pink Season and the Consulate General of the United States, Hong Kong and Macao, and in association with the UCLA Film & Television Archive.

Henan Opera: Talk and Performance河南豫劇:表演及講座

Chinese opera is an art form combining music, singing, dancing, acting, martial art, body movement, and visual art. For over a thousand years, it has evolved, and been appropriated into various indigenous cultures. Today, Henan (literally meaning, ‘South of the Yellow River’) has become an important centre of Chinese Opera with its unique style and plays.

One of China's best performing troupes - the award winning Henan Opera House's Youth Group will perform three classic pieces based on Chinese literature and folklore with introductions from group representative.

Instead of following the established instructions on recipes, students are encouraged to create innovative dishes under the guidance of renowned food curators.

The following eight recipes are developed by students who have participated in previous GE programmes. These recipes seem to be amateur, but they all are healthy, creative and delicious. Whether you are cooking for yourself or your friends, these recipes can make your meal time special.

Technical Arts Workshop

With the establishment of the new theatre at CYM Amenities Centre, HKU students will have the advantage not only to enjoy more performances, but also to produce their own programmes at the home ground. Among the different roles involved in theatrical productions, stage and production managers are the most knowledgeable ones on technical operations because they have to ensure a smooth execution of the production. In addition, students will have more opportunities to explore their talents for technical arts such as lighting, sound, set, and costume design/technology.

In this semester, GE will organise a series of workshops at both the elementary and advanced levels on stage management and technical arts in order to facilitate the usage of the new theatre. Students who complete the advanced workshops successfully may have the opportunity of being appointed student technicians and provide support to performances under the supervision of experienced personnel.

Steps1 Slice the bitter melons. Rub them with salt and

marinate for 15 minutes. Blanch the melons in boiling water for 2 minutes.

2 Finely chop the spring onion and cloves of garlic.3 Separate yolk and white of salted eggs. Dice the

egg white into small pieces.4 Fry the bitter melons until dry. Remove from pan.5 Heat a clean pan. Add oil, and fry the salted

egg yolk. Then, add the spring onion and garlic. Add the egg white, followed by cold rice, and the bitter melons.

Note As the rice is cold, it will be quite stiff. To make it easier

to fry, put it in a large bowl first and use a fork to break it up into smaller pieces. Then add to the pan using your hand, ‘crumbling’ the rice into the pan whilst stirring.

6 Season to taste.7 Continue to fry, stirring all the time until the

mixture is piping hot.

Steps1 Cook the rice and store it in the refrigerator overnight. 2 Wash all the vegetables, shrimps and

mushrooms. Cut them all into small pieces.3 Mix the eggs. Add salt to taste then mix the

beaten egg mixture with the rice.4 Mix the Nanru with sugar and water.5 Pour some oil into the pan and heat

the pan. Stir-fry the carrots, then add shrimps, finally cucumber and mushrooms. Take everything out. Remove to a large dish.

6 Add some more oil to the pan. Pour in the egg-rice mixture. Add the Nanru mixture. Cook until almost done. Add some spring onions.

7 Add the vegetable mixture and mix well, cooking until combined.

Rice Quartet – with a twist米飯四重奏 Student-chefs

Strawberry Risotto士多 啤 梨 意 大 利 飯

Ingredients4 cups Vegetable stock6 tablespoons Butter1 Onion, finely chopped1 Carrot1.5 cups Risotto rice3 cups Strawberries5 tablespoons Parmesan Cheese (Grated)

Seasoning1.75 cups White wineSalt to tasteGround white pepper to tasteBalsamic vinegar – a drizzle

Ingredients400 g Glutinous Rice

1 Pineapple

4 ladle-full Sugar

Oil

Wolfberries

酸Sour

Fried Rice with Bitter Melon苦瓜 炒 飯

Ingredients2 cups Cold Rice3 Bitter melons1 Spring onionGarlic 4 Salted eggs

Seasoning1 tablespoon Rice wine1 teaspoon Sesame oil2 g Salt

Stir Fried Rice with Eggs and Red Fermented Bean Curd 南 乳 雜 錦 蛋 炒 飯

Ingredients2 cups Rice2 Eggs1 Carrot100 g Mushrooms100 g Shrimps1 Cucumber1 Spring onion

Seasoning1 tablespoon Oil2 g SaltGrounded white pepperNanru (Red fermented bean curd)SugarWater

咸Savoury

Steps1 Melt half of the butter in a pan. Add the

chopped onion and cook over low heat until it is softened. Add the rice and stir gently to coat it with melted butter.

2 Add the wine and cook until the alcohol has evaporated. Add two ladles of hot stock to the rice and continue to cook until it has been absorbed. Continue adding the stock, and stirring until each addition has been absorbed. This takes around 18-20 minutes.

3 Cut the strawberries into quarters, and set some aside for the garnish. Around 10 minutes before the end of the cooking time, add the strawberries to the risotto. When the risotto is almost ready, add the remaining butter and grated parmesan cheese, then season with salt and pepper.

4 Cover with the lid. Let the risotto rest for 2-3 minutes.

5 Garnish, then drizzle with balsamic vinegar before serving.

Steps1 Soak the glutinous rice in water for at least half an hour.2 Cut the top off the pineapple. Scoop out the

flesh and soak in salted water for 15 minutes. Then cut the flesh into chunks.

3 Steam the glutinous rice. Mix the pineapple pieces with sugar and wolfberries.

4 Mix the cooked rice with pineapple mixture. Add a bit of oil and mix well.

5 Pour the pineapple rice into the emptied pineapple shells.

6 Cover with lid. Steam it for at least 10 minutes, or until cooked.

Ingredients400 g Minced pork2 Toasted bread2 Tomatoes 1 Cheese½ Onion100 g Instant oats1 teaspoon SaltOilSoy sauceSugarCorn starch

Steps1 Season the minced pork with salt, sugar, corn

starch, oil, and soy sauce.2 Mix oats into the seasoned pork.3 Roll the minced pork and oats into small balls

and place them inside the refrigerator to settle.4 Fry the diced onion and tomatoes until golden.5 Take the meat ball out from the refrigerator.

Open the ball up and place the onion, tomatoes, cheese, and a small cube of toast inside.

6 Add oil to a frying pan and heat until red hot.7 Fry the meat balls until they have a good touch

of golden colour and are fully cooked inside.

Ingredients300 g Rice cake (boiled)5 teaspoons Bibimbap sauce 100 g Mozzarella cheese1 Fried tomato½ Onion1 tablespoon Liquid honeyOlive oilSaltPepper

Ingredients3 Small royal gala applesCinnamon powderBrown (or white) sugar1 tablespoon Roasted, unsalted almonds1 piece 2 cm-thick Sandwich bread1 tablespoon Dried sweetened cranberries (such as Craisins)¼ LemonButterWater

Ingredients2 Chiffon cakes1 bag Instant black sesame soup powder100 g Dried banana chips100 g Butter

Steps1 Line a square baking tin with aluminium foil.2 Add oil to the aluminium foil to grease it.3 Add a layer of rice cake slices to the aluminium foil.4 Add bibimbap sauce, mozzarella cheese, fried and

sliced tomato and onion on top of the rice cake.5 Add another layer of rice cake.6 Mix the bibimbap sauce with honey, salt and pepper.7 Add the mixed sauce, cheese and fried tomato

and onion on top.8 Another layer of rice cake. Add a layer of

cheese to cover them all.9 Bake in an oven at 200 degrees for 15 minutes

(top and bottom fan).10 Bake at 200 degrees for 5 minutes (top fan).11 Decorate with anything you like (we did the

smiley face). Note To improve it, feel free to add some honey/tomato

sauce/sugar to dilute the spicy sauce.

StepsApple topping1 Halve and core apples and slice into 2-3mm thick

pieces, no need to peel.2 Squeeze the juice of ¼ lemon over the apple slices;

toss gently to coat well.3 Heat pan on medium-low heat, melt ~5-7g butter.

Be careful not to burn the butter.4 Place all apple slices into the pan; gently stir

through for ~1 minute.5 Add 2 tablespoon sugar; stir until all sugar is

dissolved.6 Add ½ teaspoon cinnamon, stir to mix well then

cover the pan and let cook for ~2-3 minutes.7 Meanwhile, chop the almonds up into chunks.

Place these in a small bowl for use later.8 Uncover the pan and add 1 tablespoon dried

sweetened cranberries, stirring evenly to mix. Add a little water if the mixture is too dry at this point (i.e. no more running liquids). Cook until apples are softened and browned (but NOT MUSHED), and the liquids are thickened and somewhat gooey.

9 Take the pan off the heat and keep covered. Start making the toast.

Toast base1 Cut the bread slice into 4 squares.2 Butter the squares on all sides.3 Mix 2 tablespoons sugar and 2 teaspoons

cinnamon in a small bowl, spread this all over the buttered squares.

4 Preheat oven at 180°C. Bake the squares 10mins for a golden and caramelised exterior. Be sure not to let it burn.

Combining1 Place the cooked apple mix with all juices on top

of the toast squares.2 Sprinkle on top with chopped almonds.3 Serve warm. Note After completion, don't let the product stand for too

long before serving or else the juices will soak into the toast and make it soggy and unpleasant.

Steps1 Roughly chop the dried banana chips.2 Cut chiffon cakes into cubes.3 Melt butter in a pan.4 Stir instant black sesame soup powder into the

melted butter. Keep heating and stirring until the texture becomes like paste.

5 Spread the black sesame paste onto the chiffon cake cubes.

6 Top with the dried banana chops and serves.
