What is “Osechi”? “ お” + “ せち”

• Osechi is New Year dishes which are prepared to celebrate for New Year holidays.

• “O” is a word added to the beginning to convey respect .

• “ せち” is “The gnarl” .• It represents “a seasonal day”( せちにち ),whic

h is the holiday equal to the turning point of the season.

History

On a seasonal day, a party called “the court banquet ( せちえ )” was held in old days in the Imperial Court.

New Year's Day was a special and particularly happy day among them.

• It is filled with lucky and storable dishes in the nest of lucqured boxes.

• Each dishes has it’s own wishes.

• Some are for prosperity,others for long life.

• They must be colorful, well-shaped and storable.

• During New Yeas Holidays we eat them in the whole family.

• Nikiri-Sake To evaporate Sake

• Nikiri-Mirin To evaporate Sweet Sake • Nikiri-Sake with kelp To dip kelp into Nikiri-sa

• Tosa-soy source To boil Light soy source and put the dried‐bonito( かつお節 ) in it

• Basic Soup(Happou Dasi)    To make broth include Konbu, dried bonito
