How to Make;The Perfect Cupcake

Ingredients
For butter cream icing;280g icing sugar140g butter2 tablespoons milk2 teaspoons vanilla extract4 teaspoons of food colouring
For 12 sponge buns;150g self raising flour150g butter150g caster sugar3 medium eggs2 teaspoons vanilla extract
Step 1 Preparation
Preheat the oven to 180CPlace the bun cases into the baking tray and set aside for later
Step 2 Creaming method
Put the butter and the sugar into a large bowlUsing an electric whisk or wooden spoon, cream togetherthe butter and the sugar until light and fluffy
Step 3 The eggs
Crack the 3 eggs into a cup or measuring jug and whisk wellAdd a small amount of eggBeat into the mixtureRepeat until all of the egg is beaten into the mixture
Step 4 Folding the flour
Sieve the flour into the mixing bowl which already contains your mixtureUsing a metal spoon, fold in the flour, ensuring no air bubbles are trapped
Step 5 Flavours and Colours
Add 2 teaspoons of vanilla extract to the mixture and mix thoroughly(Optional) Add another 2 teaspoons of a food colouring of your choice to the mixture and mix thoroughly
Step 6 Baking and Waiting
Spoon into bun cases, ensuring each one is filled equallySet a timer for 10-15 minutesPut in the oven to bake until golden brown and springy
Step 7 Making the Icing
Sieve icing sugar into mixing bowlAdd the butter and mix well using a wooden spoon or electric whiskAdd a few drops of milk, depending on your desired consistency Add 2 teaspoons of food colouring and mix thoroughly
Step 8 Piping
Once the buns have been removed from the oven and have totally cooled, put your icing into a piping bag with your desired nozzlePipe swirls or any other pattern you desire onto the top of each cupcake
