As Chef de Cuisine, Clément will oversee all operation of the kitchen area at Sirocco, ensuring the highest standards of quality and presentation as well as bring new creations to each dish and provide a unique gastronomic experience for guests. A French national, Chef Clément completed the course in Culinary Management School in France where he was trained formally in courses covering International and French cuisine. With more than 10 years’ experience, he has over a decade of work experience in International hotels and fine dining restaurants including Les Ursulines Restaurant at Château et Hôtel Collection in Autun, Relais et Châteaux Fitz Roy Hôtel in Val Thorens, L'Atelier de Joël Robuchon, Two-Michelin-Stars L'Astor and La Tour d'Argent in Paris, France; Poulot’s Fine Dining Restaurant and Thornton’s one-Michelin-Star Restaurant in Dublin, Ireland; and Fairplay Golf, 5-star luxury golf hotel in Benalup Casas-Vieja, Spain. Prior to joining Sirocco Restaurant, Tower Club at lebua, Chef Clément had formed the team opening The Grand Brasserie Restaurant and headed the culinary team at Pelham Restaurant in the Waldorf Astoria Shanghai, China. About Sirocco & Sky Bar Perched on the 63rd floor of lebua some 200 meters high above the bustling Thai capital, Sirocco is the world's highest al fresco restaurant and one of Bangkok’s most coveted dining destinations.
