Okonomiyaki (Japanese Pizza)
What is Okonomiyaki?
Japanese pancake containing a variety of ingredients.
Okonomi = “what you like” or “what you
want”Yaki =
“grilled” or “cooked”
Batter IngredientsWater/ Chicken Broth (148 ml)
Okonomi-Yaki Flour
Cabbage(200g)
Kimchee
Tuna Egg Bacon
Step 1: Ingredients

Aonori(Seaweed Flakes)
Spring Onion
If you cannot find Okonomiyaki Flour Mix,the ingredients below can be used as a
substitute. 100g soft wheat flour (3 ½ Oz) ¼ tsp baking powder 148 ml Dashi Soup 1 tbsp grated Yamaimo (Japanese
Mountain Yam) A little bit of salt/ a pinch of salt
Tsp = teaspoon
Tbsp= tablespoon
COOKING OKONOMIYAKI
Before we cook, we will watch a short video!
Step 1: Making the Batter
148 ml water
Dashi soup Or
Chicken Broth
Okonomiyaki Flour (100g)
Mix Okonomiyaki flour with water
and chicken broth

Kimchi 1 Egg
Mix these ingredients
into the batter
Step 4: Cooking Okonomiyaki
1) Pour some oil into the pan
2) Pour the okonomiyaki batter into the pan. Short metal spatulas are used to shape the batter into a circle.
3) Once one side of the okonomiyaki has been sufficiently cooked, the spatulas are used flip it onto the other side.
Note: make sure that the okonomiyaki has been cooked enough before flipping.
4) When both sides of the okonomiyaki are cooked the toppings are added
Step 5: Cooking Okonomiyaki
The sauce is applied to the Okonomiyaki (with a brush).
The 1st layer is the okonomiyaki sauce.
Step 6: Dressing the Okonomiyaki
The 2nd layer is the Japanese Mayonnaise.
Mayonnaise is added to the okonomiyaki, usually in zigzagging lines.
Shavings called katsuobushi are placed on the okonomiyaki (with wooden pincers).
Step 7: Dressing the Okonomiyaki
The 3rd layer is the katsuobushi (dried fish flakes).
Step 8: Dressing the Okonomiyaki
Small flakes of aonori, sprinkled over the okonomiyaki with a little spoon.
The 4th layer is the aonori (dried seaweed powder).
