INSTRUCTIONS
1. Melt chocolate in a boiler. When melted, place it to a medium-sized saucepan, turn heat to medium and add the water ( boiled ), cocoa powder and half of the sugar. Stir vigorously until there are no lumps.
2. Add the milk, cream ( 1 cup ), left sugar, coffee (if using), and the salt to the chocolate base, and whisk vigorously until everything is mixed properly. When the chocolate base is properly mixed and becomes smooth, turn heat to medium high, stirring in between, and wait till the base starts to steam.
3. Whisk the egg yolks in a medium bowl. Once the chocolate base is heated properly, temper the eggs by slowly pouring some of the hot base into the eggs while whisking the eggs vigorously to prevent them from cooking. Once you’ve mixed half of the base with the eggs, pour the egg mixture again into the pan with the rest of the chocolate base and stir to combine.
