Using a three-compartment sink Rinse , scrape or soak the items in the middle sink before setting up. Remove any waste (food scraps, dirt, etc.), clean the sink, and then begin setup.

Sink 1: Wash- Fill with water at least 110 degree F ( 43 degree C )

- Add the correct amount of soap/detergent

Sink 2: Rinse - Fill with water (110 degrees F, 43 degrees C)

- If spray-rinsing items, leave sink empty

- Drain and refill sink as it becomes full of dirt or suds.

Sink 3: Sanitize- Fill with water

- Add the correct amount of sanitizer

- (Concentration)

- Check the strength of the sanitizer with a test kit, and adjust the mixture as needed

Wash the items in the first sink Use a brush , cloth or nylon scrub pad to loosen dirt

- Change the water and detergent when the suds are gone or the water is dirty.

- NEVER use hands or nails to scrub or scrape off food and dirt.

Rinse the items in the second sink Dunk the items in the water or spray-rinse them

- Remove any food or detergent

- Change the water when it becomes dirty or full of suds

Sanitize the items in the third sink Soak them in the sanitizer solution for the correct length of time

- NEVER rinse items after sanitizing, the water will rinse off the sanitizer, contaminating the surface.

Air - dry the items Place them upside down so they will drain

- Do NOT wipe them dry
