Milk and cookies
• Chocolate consommé • 6 litre water• 16 leaves gelatin leaves• 1 kg 70% chocolate• 65 gr cacao bits• Once made freeze till set, then put into strainer with cheese cloth
and drip while defrosting in the fridge = clear stock• Milk marshmallows• 150 gr sugar• 45 gr gomme arabique• 100 ml Water• 62 gr glucose• 50 gr trimoline• 10 in no gelitin • Chocolate brownies • 40 gr chopped pitashio• 100 gr butter• 250 gr sugar• 90 gr 70% chocolate• 2 in no eggs• 15 ml vanilla essence • 125 gr flour• Croissant ice • 250 gr fresh crossiants• 250 ml milk• 15 gr glucose powder• 20 gr sugar• 5 gr trimoline• Paco jet 1 day and freeze
