The origin of the dish is uncertain. In North India, different varieties of X developed in Delhi , Lucknow and other small principalities. In South India, where rice is more widely used as a staple food, several distinct varieties of X emerged from Telangana, Tamil Nadu, Karnataka and Kerala. Andhra is the only region of South India that does not have many native varieties of X.Lizzie Collingham states that the modern X was created in the Mughal royal kitchen, as a confluence of the native spicy dishes of India and the Persian pilaf. However, another theory claims that the dish was known in India before the first Mughal emperor Babur came to India. According to chef Jacob Sahaya Kumar, 'Oon Soru' mentioned in 2nd century CE Tamil Sangam literature is an early predecessor of modern-day X.

1. Boil the milk until it reduce to half in volume.When milk turns into pale yellow color, it indicates that the milk has reached the right thickness. Let the thickened milk cool to room temperature. Then refrigerate this for a while.

2. Soak the china grass in water for about 3 hours. After 3 hours it will look like pieces of jellies. Now take out the china grass from water.

3. Now take a glass - Pour milk up to half of the glass - Mix well the sarsaparila syrup and china grass with milk.

X is an extremely popular and common food in West and Central Africa which is made in slightly differently ways in different countries, and is even connected to the classic Caribbean dishes, mofongo and mangu.It derieves it name from the twi word for 'white' due to its appearance. Pieces of boiled cassava or other tubers are pounded together in a giant wooden mortar using a wooden pestle. In between blows from the pestle, the mixture is turned by hand and water gradually added till it becomes slurry and sticky. The mixture is then formed into a ball or a rounded slab and served. X is usually served along with groundnut soup and is the national dish of Ghana.
