A century- eggs are a popular appetizer in the Chinese cuisine. Eggs are specially kept for several months in a special blend of tea, lime, salt, ash and clay, then are rolled into rice husks and straw, placed in a basket and buried in the ground (for 20 days or even 4 weeks.) Consiquently eggs become dark brown.The yolk becomes creamy, of dark colour (from light grey to almost black ) and emits a strong ammonia smell.
