1,Peelandchoptheonionandaddtoasaucepanwithalittleoil,andthecumin.Cookonalowheattosoftentheonionsintoaspicysweetness.

2,Drainthetinofpotatoesandemptyintothesaucepan.Iliketochopmineintosmallcubesbutthisisoptional!Justmeansthattheycookquicker–Icanbeanimpatientoikwhenitcomestomylunch…

3,Add200mlofboilingwaterandcrumblethechickenstockin.Simmerfor10minutesoruntilthepotatoesareverysoft.

4,Tipintoablenderwiththeyoghurt,andblitzuntilsmoothandcreamy.Addmorewaterifnecessary–Ifinddifferenttinsofpotatoescomeupdifferentlybutaround200mlisusuallyenough.
