Mango capsal base 600 gr mango puree

350gr fruit mango diced

20 gr trimoline

30 gr glucose

30 gr glucose atomize

20 gr sugar

Boil all the sugar, syrup and powders together, add in the mango puree .Then add the fresh mango diced, at the end egg white and metil

500ml water

24 hours deydrate

And mix for 15 mins and deydrate

Vodka centre mix

100ml vodka

200ml Malibu

100 ml sorbitol

50gr dextrose

50gr cane sugar syrup {monin}

Boil altogether once cooled down add xantana to the mix

Coconut lynchee pearl

250 ml coconut milk

250 ml lychee syrup juice

7gr gluco

2.5 gr xanatana

Add everything together, take air out and drop in alginate mix water
