onr country there has been a period when thestrictest domestic economy becomes a religiousnecessity, that time, more than any other, is thepresent. Lmboklened by political dissension,unhappy excitement, and universal prostration ofbusiness, want, and, io tens of thousands of in-
stances, stark famine, have, since the advent of1801, thrust their hideous visages into homesheretofore eacred, from the visits of such unwel-come intruders.
Leaving entirely out of the question all thatour husbands and fathers have done toward in-
augurating the cri-- that now threatens to crushus under its imn rule, let us, wives and mother?,managers of the internal Home Department, re-
flect calmlv, and inquire of ourselves if we havenot thoughtlessly Pent out our cards broadcast,inviting the unwelcome guests to our homes.
The homely, d aphorism that "a wo-
man can throw out with a teaspoon faster than aman can throw in with a shovel," when or wher-ever it was first uttered, is as true as inthe moment of its inception. How many of usthoughtlessly throw out not only our husband'sincome, but something over, that by the exerciseof a little economical forethought might be 1 tidby as a sinking furd against the possiLle daywhen that income th ill be diminished or entirelyfail?
ln the general household economy, one of themott prolific, and beyond question the most con-
stant source of waste, is the kitchen drainage.Take the average of all our American homes, andof all the tmterial thHt gies into the kitchen,twenty-liv- e percent, pees out as offal, sheer wa3te,when six per cent, ought, in all cases, to be themaximum. And yet it is scarcely possiblo to lindtbatcoik or housekeeper who will not arguestoutly that she is saving and prudent as evercook or housekeeper was. And they honestlybelieve it, for habit is their education, and it israther their education than themselves that is atfault, though that fact does not argue that theyought not to improve their kitchen education.
With such examples before us as that of theSovereign of Great Britain, and a thousand ofour own countrywomen, the poors of f'ueen
herself, no woman need blush to supervise,or eveu to put her hand to the duties of her own
houhold. But it is rather to that class of wo-
men to which I belong they with whom kitcheneconomy is a necessity as well as a virtue, ratherthan to those, whose husband's "State securities
'railroad stock, bank dividends, ocean steamers,and a quarter of a million at interest, insure anincome beyond their possibility of expenditure,that I now address myeclf, advising uothing be-
vond the bare results of mv own practical expe-
rience, but most emphatically enjoining uponthem the importance of kitchen economy. A few
plain, practical hints as a tinale to my presentexordium.
Don't throw awav the crusts and bits of stalebread. If you have scorched or burned a loaf,
don t cut off the crust and throw it away. Thatis a needle&s waste. Crumb it line and boil itwithvour collee. It improves the tlavor of allthe ordinary kinds, as Kio, Laguayra, St. Domin-- K
&c. and takes nothing from that of Java andMocha; besides it is an excellent corrective andtonic where the stomache is disposed to undueacidity. '
Dou't waste the crumbs and bits of stale breadIt is absolutely wicked. Soak in a quart of sweetmilk, beat in two eggs, add a teaspoonful of all-
spice, a lif tie nutmeg, bake 20 minutes, and youhttve a delicious pudding sufficient for six reason-able persons.
Save all the odds and ends of meat left at din-de- r,
whether beef, veal, mutton, pork, or ham,chop it with cold boiled potatoes into a fine niiuce,and brown nicely in the dripping-pa- n for break-fast. The perfon who refuses such a hash has noapnreciatkm of the excellent in cookery.

er the water in which you have boiled any sort ofmeat, fresh or salt, containing an ouce of groat-e- .
Wis ounces makes the pounds. Let it stand untillcold, skim it carefully off, and put it with others
f the same sort, and when you have a quirt orbo, heat and clarify by pouring gently off anddraining. Set it by for shortening. It is bettorthan leaf lard for all ordinary pastry, and is aclear saving of ninety per cent, in 6horteting.We consume, I think, our due share of pastry, for
ftlain, every -- day people, and my cookery, in thatif the'testfmony of our neighbors goes for
anything, star dial a premium; neverthele$9,witha family of seven, I don't consume 15 pounds ofleaf lard per annum.
As, however, with all economy, there will beBcrapi ard tags of fat meat that cannot be con-
verted into cooking material, another as econom-ical disposition may be made of them. Save care-fully until enough is obtained to make live pouudsof greas-- ; then try out and cleanse, buy a can of"concentrated lye," and by following the rimpledirec'bna on the wrapper, twelve pounds of ex-
cellent hard soap may be obtained wilh smalllabor, and far superior to anv cf the soaps scld inthe shops. I manufacture all the soaps, of everyquality, used in my family, from such edds andend, at a cost of less than one dollar a year.
With a family of four rompiog girls, all under12 years of age, and one boy, the junior of three ofthe girls, there is of necessity a rather extensivewear and tear of cotton fabrics. Nevertheless,when worn past all oliices of decency, we do not

How to Cdke Cancei:. The MilwaukieDemocrat Btates that some eight months ago, Mr.T. B. Mason, of that city, ascertained that hehad a cancer on his face the size of a pin. It wascut out by Dr. Walcott, and the wound partiallyhealed. Subsequently it grew again, and whilehe was at Cincinnati on business, it attained thenize of a hickory r.ut. He remained there sinceChristmas under treatment, and is now perfectlyured. The process is thi-?- A piece of sticking
plaster was put over the cancer, with a circularpiece cut out of the centre a little larger than thecancer, so lint the cancer and a small circularrim of healthy skin next to it was exposed. Thena piaster made of chloride of zinc, blood root andwheat fi'iur, was spread on a pioce of mull in thesize of this circular opening, and applied to thecancer for 21 hours. On removing it, the cancerwill he found burnt into and appoar of the colorand harduess of an old shoe sole, and the circularrim ou'Mde of it will appear white and parboiled,as if scalded by hot steam. The wound is nowdress d, and tk-- outside rim soon separates, andthe cancer comes out in a hard lump, and theplace hewls up. The plaster kills the cancer, sothat it sloughs out like dead liesb, and nevergrows again. The remeoV was discovered by Dr.Fell, of London, and has been used by him forhx or tight vears, with unfailing success, and nota cae has been known of the reappearance ofthe cancer when this remedy has beon applied.
