不飽和脂肪酸およびメチルエステル
天然には炭素二重結合を一つ持つ一価不飽和脂肪酸が木の実や種子の油脂に多く含まれ、リノール酸やリノレン酸
などはヒトの体内で生合成できない必須脂肪酸です。二重結合を複数持つ多価不飽和脂肪酸は魚類に多く存在して
います。天然に存在するほとんどの不飽和脂肪酸の二重結合はシス結合ですが、反芻動物の消化器官内に生息する
微生物によりトランス型の不飽和脂肪酸が生成し、乳や食肉等に微量含まれることがあります。また、不飽和脂肪
酸の水素添加により製造されるマーガリンやショートニング中にトランス脂肪酸が生成することが知られています。
トランス脂肪酸の多量の摂取は心臓病のリスクを高める可能性が示唆されていますが、どの種類のトランス脂肪酸
がどのような影響があるかは未だ研究段階でよくわかっていません。
不飽和脂肪酸は酸化しやすいため、-20℃遮光にて、アルゴン又は窒素封入容器にて納入されます。

天然において、必須脂肪酸の一つリノール酸(18:2 ω6)の共役異性体がいくつか同定されております。これら異性体
は“共役リノール酸(Conjugated Linoleic Acid : CLA)”と呼ばれ、主なものは9位,11位または10位,12位に二つ
の二重結合(共役ジエン)を持ち、8種の幾何異性体が存在し得ます。
食肉1)や乳・乳製品2),3)に含まれる共役リノール酸は主に9(Z),11(E)-異性体であり、様々な生理活性を持つと考えら
れており、動物由来の食事を通じて消化吸収した共役リノール酸は、腸粘膜・肝臓および脂肪組織で見つかっており
ます4)。
共役リノール酸にはいくつかの生理学的作用が報告されており、抗がん作用1),5),6),7)8)や抗アテローム発生作用9),10)、
タンパク質代謝及び脂質の調節に関与していることが示唆されています11),12)。
共役リノール酸は、Δ6脂肪酸デサチュラーゼの作用に対して、リノール酸と拮抗することも知られています13)。
従来こうした研究の多くは、活性型とされている9(Z),11(E)-異性体を30%未満含む混合物を利用したものでした14),15)。現在、これら広く用いられている混合試料中から、9,11-異性体及び10,12-異性体に加えて、8,10-異性体
