EXPO, UNA RISPOSTA DI RESPONSABILITĂEXPO, A REPLY ABOUT RESPONSIBILITY
I primi a consegnare il loro stand allâExpo di Mi-lano sono stati gli svizzeri. Puntuali, e non po-
teva essere altrimenti. Hanno costruito una strut-tura assai particolare: quattro silos pieni di cibo, dove ognuno può prenderne quanto ne vuole. Quando il cibo sarĂ terminato, non ce ne sarĂ dellâaltro. SarĂ fi nito per tutti. Una metafora assai chiara della situazione planetaria.LâExpo può essere visto in molti modi: come una calamita capace di attrarre venti milioni di turisti, come un motore che contribuirĂ a far ripartire lâe-conomia dellâItalia, come la vetrina delle soluzioni progettuali piĂš aff ascinanti. Ma il suo signifi cato piĂš autentico sta in altri numeri, piĂš crudi: siamo in sette miliardi sulla Terra, si produce cibo per 12 miliardi ma ottocento milioni di persone muoio-no di fame. Sono le cifre della Fao, riportate da Carlo Petrini di Slow Food, che denuncia unâaltra contraddizione: lo spreco del cibo. Solo in Italia si buttano nellâimmondizia quattromila tonnellate di cibo al giorno.Come rimediare a questi squilibri? LâExpo deve fornire una risposta di responsabilitĂ a questo in-terrogativo fondamentale. I temi del diritto al ci-bo, della malnutrizione, dellâobesitĂ e dello spreco sono altrettante sfi de che la âCarta di Milanoâ in elaborazione (che rappresenta la vera ereditĂ del-lâExpo) dovrĂ aff rontare e vincere. Ă sul piano dei valori che si gioca la credibilitĂ dellâExpo, che non deve rappresentare una fi era delle vanitĂ , ma lâinizio di un futuro profondamente diverso per il vecchio pianeta Terra. Che è la nostra unica casa.
T he fi rst to deliver their stand to Expo in Milan were the Swiss. On time, and it couldnât have
been otherwise. Th ey supplied a structure that was quite unusual: four silos full of food, where everyone can take as much as they want. And when the food is fi nished there will be no resupply; it will be fi nished for everyone. A clear metaphor for whatâs happening with the planet.Expo can be interpreted in many ways: as a disaster capable of attracting 20 million tourists, as a motor to help restart the Italian economy, or as the shop window for some more fascinating project solutions. But its most authentic meaning lies in other, more basic calculations: there are seven billion of us on Earth and we produce enough food for 12 billion, but 800 million people are dying of hunger. Th ere are also the fi gures produced by the FAO and quoted by Carlo Petrini of Slow Food that show something else: how much food we waste. In Italy alone, four thousand tons of food are dumped in the waste bins every day.How do we put these imbalances right? Expo must provide a responsible reply to this fundamental ques-tion. Th e themes of the right to food, of malnutrition, of obesity and waste are challenges that the âCharter of Milanâ (which is being prepared now and will be the real legacy of Expo) will have to face up to and conquer. Th is is the scale of values where the cred-ibility of Expo will be played out: it must not become a fair for vanities, but the beginning of a profoundly diff erent future for our old planet Earth. Which is our only home.

Un fi lm dâautore per Masi e lâamarone. Un documenta-rio di tredici minuti che racconta non solo il vino, em-blema dellâazienda di Gargagnago in Valpolicella, ma soprattutto la fi losofi a, spesso controcorrente, che ne caratterizza la vita. Il video porta la fi rma di Andrea Se-gre, pluripremiato regista di Dolo, il cui ultimo fi lm è La prima neve e anche con Io sono Li sâè aggiudicato una pioggia di riconoscimenti, dalla Mostra del cinema di Ve-nezia ai David di Donatello. Lâha realizzato per la Jolefi lm di Francesco Bonsembiante e lâha intitolato Il gusto del tempo proprio per sintetizzare quella lentezza, ricca di signifi cati, che caratterizza la produzione (e la degusta-zione) dellâAmarone.Diciamolo subito: non è una âclipâ pubblicitaria. An art house video has been dedicated to Masi and Amarone. An thirteen-minute documentary about not just the fl agship wine of the Masi company, based in Gargagnago in Valpolicella, but also and above all about the often contrary philosophy behind it. The au-thor of this video is Andrea Segre, the multi-award-win-ning fi lm director from Dolo whose most recent fi lm is La prima neve and whose Io sono Li won prizes at the Venice Film Festival and also the âDavid di Donatelloâ. Segre made the video for Francesco Bonsembianteâs Jolefi lm company under the title Il gusto del tempo ( The taste of time ), taking its name from the wealth of meaning behind the slowness that characterises the making (and tasting) of Amarone.
Letâs admit it now: this is no âpub-licity clipâ. Masi wouldnât have asked for it, and Segre wouldnât have done it. Too far from his work as a fi lm director concerned with the gritty realities of (diffi cult) so-cial integration. âWhen we talked to Sandro Boscaini about making this video two years ago â explains Andrea Segre â I explained right

Thereâs no room for the old fashioned at Masi. Itâs Raffaele Boscaini, in fact, who explains that nature is no bar to progress: âNature gives us the basics. We use natural yeasts, but selected by us in our cellars. This is hidden technology; itâs not artifi cial, itâs a com-plement to the naturalness of our wines.â âIn my opi-nion â Segre says â if you want to be courageous in life you must never stop striving, never sit back. And Sandro Boscaini, who could have just churned out his wines willy-nilly, never stopped striving. He set out in a new direction. This is an attitude thatâs good for the whole economy, which concentrates too much on peopleâs salaries rather than actually doing anything.â âWe dared to stop time â Segre says in the video â we werenât afraid to listen. We werenât afraid to see it disappear. And time itself knew how to change. It knew how to astonish us. Wine in this land has beco-me the past and the future. It has embraced its own memory.â

SELLA DI CAPRIOLO ALLâAMARONE MASI CON RICOTTA DI PECORA PROFUMATA ALLA CAMOMILLA, FUNGHI DI MUSCHIO E ZUCCAIngredienti: 1 lombatina di capriolo, 100 gr di ricotta di pecora, 2 dl di infuso alla camomilla, 200 gr funghi di muschio, cardoncelli shitake, 2 dl di Amarone Masi, zucca al vapore e poi scottata al burro.Procedimento: arrostire la lombatina in burro chiarifi cato a fuoco dolce e lasciare riposare per 10 minuti. Deglassare la padella con il vino e lasciare ridurre, dopodichĂŠ unire il fondo e ag-giustare di sapore. Formare le chenelle di ricotta e metterle in infusione nella camomilla. Sal-tare i funghi in padella e tenere in caldo. Servire come da foto.
LOIN OF VENISON WITH MASI AMARONE, SHEEPâS CHEESE RICOTTA INFUSED WITH CAMOMILE, MUSHROOMS AND PUMPKINIngredients: 1 loin of venison, 100 gr sheepâs cheese ricotta, 2 dl camomile infusion, 200 gr mushrooms (shitake type), 2 dl Masi Amarone, steamed and seared pumpkin with butter.Procedure: roast the venison loin in clarifi ed butter on a low heat and leave to rest for 10 minutes. Deglaze the pan with the wine and reduce; blend sauce and adjust seasoning. Make quenelles of ricotta and put them in the camomile infusion. SautĂŠe the mush-rooms in a pan and keep warm. ROAST SCALLOPS WITH SOFT AND CRUNCHY ARTICHOKES DRESSED WITH VEAL JUS AND AMARONE SAUCE
Ingredients for 4 persons: 12 scallops without shells, 6 Sardinian artichokes, 2 dl veal jus reduction, half litre Amarone della Valpolicella.
Preparation: peel the outer leaves off the artichokes, and put in a bowl with 1 lt water and 3 gr vitamin C (to stop the artichokes oxidising). Thinly slice three articho-kes, fl our them, sprinkle with salt and pepper and fry in olive oil; thinly slice the other three artichokes, sautĂŠe with shallots and marjoram before blitzing to make a smooth cream. Boil the Amarone della Valpolicella un-til reduced to one third of original volume and add veal jus. SautĂŠe the scallops in extra-virgin olive oil un-til golden.
Serving: start with the artichoke cream and alternate the scallops on top with the julienne of artichokes; de-corate with marjoram and tomato confi t; add the Ama-rone della Valpolicella sauce last.
CAPESANTE ARROSTITE CARCIOFI SOFFICI E CROCCANTI CON SUCCO DI VITELLO ALLâAMARONE DELLA VALPOLICELLA
Ingredienti per 4 persone: 12 capesante senza guscio, 6 carciofi spinosi sardi, 2 dl di riduzione di vitello, mezzo litro di Amarone della Valpolicella.
Preparazione: eliminare le foglie esterne dei carcio-fi , preparare un recipiente con 1 lt di acqua e 3 gr di vi-tamina c, che servirĂ per non far ossidare i carciofi ; tre carciofi dovranno essere tagliati fi nemente e saltati in padella con aglio in camicia, sale e pepe; gli altri tre car-ciofi invece devono essere sempre tagliati fi nemente e poi rosolati con un fondo di scalogno e maggiorana; a cottura ultimata frullare il tutto fi no ad ottenere una cre-ma omogenea. Fare bollire l'Amarone della Valpolicella sino a ridurlo ad un terzo, in seguito aggiungere il succo di vitello. Le capesante vengono rosolate con olio extra-vergine dâoliva, sale, pepe aromatico fi no alla loro com-pleta doratura.
Impiattamento: preparare la crema di carciofi e alter-nare le capesante guarnendole tra una e lâaltra con la julienne di carciofi , decorare con maggiorana e pomo-dori confi t, alla fi ne aggiungere la salsa di Amarone del-la Valpolicella.

Tucked away in the vineyards at Sommacampagna you fi nd the friendly Locanda Vecchia Custoza restau-rant, run by the âBoscaini familyâ with great hospitality. A good horsemeat steak cooked on the charcoal grill and washed down with a full-bodied Argentinian red, like Passo Doble, makes the mouth water. But the holiday spirit would be much better suited to Masiâs rosĂŠ wine, the fresh and fruity Rosa dei Masi, with its cherry-red colour refl ections and its raspberry and marasca cher-ry aromas â perfect for an aperitif or as an accompa-niment to the antipasti course, and of great interest to Italian and foreign tourists alike.

Preparazione: lessare il polipo con limone e aromi. Tagliare le zucchine a julienne molto sottile e mari-narle con limone, olio e sale. Preparare una dadola-ta di pomodoro privato di pelle e semi. Ammollare in acqua del pane carasau e ricavarne un rettango-lo, friggerlo in olio bollente. Comporre il piatto par-tendo dalla dadolata di pomodoro quindi la tegola di pane, le zucchine marinate ed infi ne lâinsalata di po-lipo condito con olio limone e sale.

Preparation: boil the octopus with lemon and fl a-vourings. Cut the courgettes into extremely thin juli-enne strips and marinade with lemon, olive oil and salt. Peel the tomato, de-pip it, and dice. Soften car-asau bread in water, make into a rectangle and deep fry. Serve the dish by starting with the diced tomato, adding the fried bread, the marinated cour-gettes and lastly the octopus salad seasoned with olive-oil, lemon and salt.

PAPPARDELLE AL PESTO DI ZUCCHINE E ANACARDI CON VONGOLE E PANCETTA
Ingredienti per 4 persone: pappardelle allâuovo 320 g, zucchina media 1, anacardi 50 g, parmigia-no reggiano 40 g, basilico 2 rametti, aglio 1 spic-chio, olio extravergine di oliva 1 dl, vongole 400 g, pancetta 50 g, sale.
Preparazione: lavare la zucchina e, con un pela-patate, prelevarne la buccia. Scottare le listarelle di buccia in acqua bollente per un minuto, scola-re e passare sotto lâacqua fresca. Frullare le buc-ce di zucchina insieme al basilico, lâaglio, il par-migiano, gli anacardi, una presa di sale e lâolio dâoliva.

Ingredients for 4: 320 g egg pappardelle 1 me-dium courgette 50 g cashews, 40 g parmigiano reggiano, 2 sprigs basil, 1 clove garlic, 1 dl extra-virgin olive oil, 400 g clams, 50 g pancetta, salt.
Preparation: wash the courgette and peel the skin off in ribbons with a potato peeler. Blanch the courgette ribbons in boiling water for one minute, drain and refresh with cold water. Blend together the courgette pulp, basil, garlic, parmi-giano and cashews in a mixer with a pinch of salt and the olive oil.

His fi lm quickly brings to mind Don Loren-zo Milaniâs famous instruction âObbe-dire in piediâ (âObey standing upâ, or âObey with actionâ) from the authorâs radical correspondence with military chaplains fi fty years ago entitled âObe-dience is no longer a virtueâ. But Olmiâs fi lm is no simplistic anti-war
âJâaccuseâ. The ferocity and absurdity of the First World War has already been explored by fi lm classics such as Stanley Kubrickâs âPaths of Gloryâ, Francesco Rosiâs âMany Wars Agoâ and Mario Monicelliâs âThe Great Warâ. 83-year-old Olmi remembers his father speaking about his experience as a 19-year-old assault trooper
on the Isonzo and Carso fronts in the Great War when he told his children in the 1930s that: âIf war comes youâll know what it means to leave even the small-est morsel on your plate.â Sadly, they did learn what it meant too.Born in Bergamo, but now living in Asiago, Olmi won the Masi CiviltĂ Veneta Prize in 1994. Their presence is felt, like the Tartars in Buzzatiâs De-serto, as an imminent event. But the maestro keeps his surprise to the end. One line from the script lets us into the secret: âOur real enemy is ourselves, because often we create an adversary to fi ght which is really
a substitute for our own omissions and failures.â This is the fi lmâs philosophy: stressing our own personal re-sponsibility for creating peace. For the same reason, no badges or names appear on the uniforms. Characters do not have names; they are just âTerritorial Offi cerâ (Claudio Santamaria), âLieutenantâ, âCaptainâ, and so on. Denying the characters names is a choice de-signed to accentuate the universal signifi cance of the message.

La fa intuire con una frase: âIl nostro vero nemico siamo noi stessi, perchĂŠ molto spesso ci creiamo dei nemici contro cui com-battere, per combattere in realtĂ i no-stri fallimenti e le nostre omissioniâ. Perfettamente in linea con la fi losofi a del fi lm, che pun-ta a responsabilizzare ognuno per creare la pace. Per lo stesso motivo, non appare nessuna mostrina sulle divi-se, nĂŠ compaiono nomi, ma esiste solo lâuffi ciale terri-toriale (Claudio Santamaria) il tenentino, il capitano e cosĂŹ via. La scelta di rendere impersonali i personaggi serve na-turalmente ad accentuare il signifi cato universale del messaggio.

nating white wine: VignâAsmara 2013. The name comes from Villa Asmara, a sumptuous villa lost in the middle of the 19th century as the result of a far-off war that lives on in memory alone in the hillside vineyards that
slope down to Lake Garda and the basalt-fronted terraces that face Rovereto and Isera. But what remains, embellished by judicious viticultural technique, is the vine-yard that made Asmara one of the premier cru sites of the whole Triveneto.Itâs a specialist vineyard, not too big, planted with Chardonnay vines mostly more than fi fty years old, suspended between the ledg-es overlooking the lake and the slopes that lead up to Mount Bal-do, an area cultivated almost as if it were a garden.A famous grape variety, Char-donnay, together with a variety rarely seen on the hills of Rover-eto, Traminer, growing under the benign infl uence of the breezes from nearby Lake Garda, both unite with the special nature of the vineyard site: dark, basaltic, densely-packed chalky soil. All this makes VignâAsmara a very mod-ern wine: international in style but with specifi c local roots. A white wine that speaks many lan-guages, but has not forgotten its accent, the typical phonetic ca-dences of its beautiful land of origin.The grapes are picked by hand and cultivated using sound, sus-
tainable environmental practices. Harvesting takes place in tranches, according to prevailing weather con-ditions, in a process designed to produce the healthiest grapes possible. Yields are kept low and vinifi cation is carried out traditionally.The Chardonnay component (the largest) is left to mature in small new oak barrels while the Tramin-er ages in modern stainless steel tanks designed to conserve its intrinsic aromatic characteristics. Un vino bianco che dialoga in â e con â tante lingue, senza dimenti-care lâaccento, la tipica cadenza fo-netica della sua terra, della bellez-za del luogo dove nasce.Trattasi di uve vendemmiate a ma-no, dopo pratiche colturali di sana sostenibilitĂ ambien-tale, con tempi di raccolta differenziati, rispettosi dellâan-damento climatico dellâannata, nella tutela della spon-tanea vigorĂŹa delle varietĂ , senza forzature produttive (basse, le rese per ettaro) con altrettanta mirata vinifi ca-zione tradizionale.Lungo è il riposo in nuove piccole botti di rovere per lo Chardonnay (vitigno prevalente) mentre il Traminer si evolve in moderni contenitori dâacciaio, per conservarne

Entrambi sono accuditi con sapiente pazienza, in attesa dellâas-semblaggio fi nale, coltivando il tempo.Lâassaggio della prima annata di VignâAsmara 2013 re-cupera il fascino per certi versi ancestrale che evoca il suo nome e rilancia una gamma di sensazioni decisa-mente appaganti: sommatoria di schietta fi nezza, nobi-le eleganza e vibrante fi nale; dorato nellâaspetto, lumi-noso, solatĂŹo, conciliante nellâapproccio; largo quanto avvolgente nel ventaglio aromatico, timbro fragrante, con note di agrume, spezie, pepe bianco e pure alloro. The methods used to grow the best quality grapes used to make the regionâs fi nest red wines â Amarone and Recioto, above all â are a product of local exper-tise refi ned by tradition: the genius loci of the Valpoli-cella region. It is the âgeniusâ of the territory, expressed by its people, that has codifi ed the vineyard and dry-
ing loft practices that scientifi c ex-periment only serves to confi rm and perfect.Using pergola training for vines on hillside sites, selecting sparsely packed grape bunches, and the use of certain selected grape va-rieties are all part of the corpus of knowledge that the Masi Techni-cal Group presents as the result of their experiments at the traditional Masi Seminar at Vinitaly 2015. Under
examination is the development of the appassimento and over-ripening processes in the last three vintages â 2012, 2013 and 2014 â judged in relation to different climates, different grape varieties and different viticul-tural practices. âThese were three profoundly different vintages,â explains Prof. Lucio Brancadoro from Milan University, whose team worked on the project with the

So we have a representative selection of conditions in three different years.âThe project looks at Corvina and Corvi-none grapes in Masi-owned vineyards located in Gargagnago, Mazzano and Torbe in hillside sites and on the plains, trained in both pergola and Guyot fashion. Further variations were intro-duced with two different vineyard inter-ventions: using calcium and defoliation.

The whole project is summed up in one illustration, a copy of the great plan put on public display at two conferences held by Filopanti in March 1870 â the fi rst of which was in the Great Hall of the Conservatories in the Campi-doglio. The fi nal part of the publication contains a letter sent to him by Garibaldi, dated 29 April 1875, thanking

Mussolini was convinced that it was necessary to âreclaim the land, and with the land, men.â The report was called La bonifi ca integrale nel decen-nale della legge Mussolini, Roma, XVII*** and its author was the Under-Secretary of State for Rec-lamations in person, Giuseppe Tassinari, who adorned the publi-cation with maps of almost all the Italian regions and fi nished with a vast plan, the north-east corner of which can be seen in the map at pages 45-46.Quite apart from the 6,000 vol-ume contribution of the Fon-do Caproni, originating from the eponymous family of aeronauti-cal entrepreneurs, who were also involved in drainage work on the Vizzola Ticino estate, the works on land reclamation held at Bib-lioteca âLa Vignaâ show Italy as the country with the largest tracts of reclaimed land after Holland.
Documentation on this type of activity was already extant in the 18th century with, for example, the book Della Fisica Riduzione della Maremma Senese. Ragio-namenti due****, published in Florence in 1769. Its au-thor, Leonardo Ximenes, a Jesuit mathematician in the service of Grand Duke Leopold I, outlines the urgent interventions (with colour illustrations) needed to mod-ify the landscape of the âchaotic and ruinedâ Sienese Maremma with land reclamations in the Grosseto plain and bank construction on the River Ombrone.

In the quest for people, values and things with a par-ticular Venetian identity, the Masi Foundation selected the Fabbrica Lenta di Bonotto (Bonotto Slow Facto-
ry) to transform the young Alice Voglinoâs artworks into artisanal textiles. The charm and vitality of her colours have been captured by the expert hands of master craftsmen who prove not only that they can make a highly skilled work of art, but also that Venetians can still fi nd the inspiration for in-novation and for the creation of original work in their cultural roots. The Fabbrica Lenta di Bonotto (Masi CiviltĂ Veneta Prize 2013), is located in Molvena di Vicenza and works with Japanese mechanical looms from the 1950s in the fi n-est tradition of artisanal family workshop production. âThis is the search for a new possible model for manufacturing in which hand-work takes centre stage. experience. âGrapes, terroir and man â explains Raffaele Boscaini â form the âquality triangleâ that the three books published by the Masi Foundation talk about. Particular emphasis should be placed on the relevant work and manufacturing skills of the people in the Veneto and the contribution that technology has made to winemaking in recent decades. Think of the wine schools: San Michele allâAdige and Conegliano,
for example; think of the mechanical equipment (vats, pumps, barrels, pressesâŚ) that are in demand all over the world and are the result of manufacturing expertise in the Veneto, even if this is a very little known fact.âThe other aspect to underline is the work thatâs being done in universities. A good example is the university collaboration with the Masi Technical Group to assess the effect of ânatural yeastsâ (nothing artifi cial here) on winemaking. This project was a source of particular pride for Masi, since there are few companies which can lay claim to having their own personal strains of yeast.

T he Masi Foundation has as its aim the promo-tion and development of the territory, the popu-
lation and the cultural inheritance of the Venetian territories, as well as the skill and productive capa-bilities that are part of the civiltĂ veneta (Venetian culture). Particular attention is given to the art of winemaking, which is a special characteristic of the Venetian regions. Th e Masi Foundation acts at both national and international levels in collaboration with governments, public and private institutions, foundations and other Italian and foreign entities.Th e Masi Foundation was established in 2001 as a product of a twenty year experience with the Masi Prize to guarantee the continuity of it. At the same time the Masi Foundation began a cultural pro-gramme to highlight the values of the civiltĂ veneta that are the inspiration behind manufacturing, cul-tural and civil progress on an international scale. On 16 th April 2007 the Masi Foundation was given of-fi cial status as a legal entity by Regione Veneto, with full recognition of its values and statutory aims.
