Take ripe plums, clean and cut into pieces and stew with enough water to cover
them until soft. Cool and sieve to remove stones and skins. Mix with an equal
volume of concentrated apple juice or sugar syrup. Cool slightly then pour into an
ice-cream maker and churn until frozen. Alternatively, if you don’t have a machine
place into a metal tub and part freeze. Whisk the mix every 11/2 hours or so to
aerate and prevent ice crystals forming until you have a soft sorbet. Return to the
freezer until ready to eat. If not used within weeks, the sorbet will slowly turn
hard and white – this is a crystallisation and the icy mixture formed is another
frozen delight.

VarietiesThe earliest fruiters ripen in July, with such varieties as ‘EarlyLaxton’, which is multipurpose, and ‘River’s Early Prolific’, theearliest good cooker; but the more choice varieties, such as‘Cambridge Gage’ and the popular cooker ‘Csar’, come in August;the tasty dual-purpose ‘Marjorie’s Seedling’ and the ubiquitous(because it is good) ‘Victoria’ ripens in September; and then thedivine ‘Coe’s Golden Drop’ and the large dessert ‘Severn Cross’,and late cookers such as the old central ‘European Quetsche’,finish the season in October. For prunes, grow ‘Giant Prune’(‘Burbanks’), which ripens in early September and is a good all-round pollinator. Look for purple-leaved ornamental plums goingfor the asking, as these often set good crops of dark fruits whichmake excellent jam – something few people realise.
HarvestThe first plums to ripen may have plum moth maggots, so beobservant, pick them up and dispose of them; any damaged plumscan be cleaned if needed as there is little taint. Dessert plums canoften be better eating once they’re peeled, from the stalk end; it’sthe skins that have the dire effects. For bottling, a tad under-ripe isbest – and this is certainly the case for jam, where you need less-than-ripe plums to keep the flavour acid enough; otherwise addwhite- or redcurrant juice. For drying, the longer they can be lefton the tree without becoming damaged, the better. Plums do nothang long, but they do ripen unevenly, so pick carefully. Many ofthe gages become translucent when ripe. Shaking down plumsmay be safer from tall trees and where wasps are a problem.
Preserving and usePlums dry well – very well: unfortunately they all turn into prunessooner or later. Initially, though, the different plums dry differently,even retaining some colour, but they continue to darken relent-lessly, sometimes exuding a farina of sugar. Drying is simpleenough: halve and stone the plums and dry them on wire trays,slowly so they don’t darken too much. To speed up the processing,make a stone-gripper: take a typical plum stone, hammer it gentlyinto the end of a hand’s-width length of copper tube; do thisconsecutively with several stones until the mouth of the tube hasbeen moulded such that a stone fits almost halfway in. Then get abamboo cane a tad longer to fit snugly inside the tube. Now halveeach plum round the middle and twist; one half comes free andthe stone remains in the other half. Push the pipe over the stone,twist – and the stone will come out stuck in the tube; then push
the stone out of the tube from the other end using the bamboocane. As with coring batches of apples, it is quicker to cut them all,halve them all, and twist the stones out of all of them as a batch.
Plums can be reduced to a tasty leather, for which they are bestmixed with apple; their flavour overwhelms other fruits.
Plums can be frozen whole, but the stones give a taint ofcyanide’s almondy bitterness so are best removed beforehand;then freeze the plums open on trays and repack them in bags orboxes. They can be reduced to a purée and frozen or made intovery tasty sorbets and ices. For some reason, purple and red plumsare usually preferred to yellow for freezing, bottling and chutneys.
To bottle plums (again, red or purple preferably), pick them justunder-ripe and on the smaller size, pack in wide-mouthed bottles,cover with hot plum juice, surround with warm water and heat forhalf an hour till the water is simmering; then hold it there for tenminutes or so, seal and cool. Plums are hard to squeeze juice outof, and most kitchen juicers waste too much, so they may be betterheated slowly in a covered pan. Start them off with just a littlewater or juice, and once the fruits have broken down, strain off the
