AVOCADOS: Though not a high protein food.avocados contain more protein than milk. Theyare high in fat and the small percentage of proteinthey contain is of high biological value. They arebest used with a salad meal. Eating avocados withsalad enhances their digestabiJity. The next bestcombination for avocado is to take it with subacidor acid fruit. It is even better when lettuce leaves

and celery are eaten with the fruit and the avocado.

Since the avocado is low in protein, it may alsobe used with potatoes or other starch foods,provided a green salad is included in the meal.Avocados should never be used with nuts, which

are also high in fat.Fats other than nuts and avocadosare notrecommended for regular use.

6. Do not eat acid fruits with proteins.

Citrus, tomatoes, pineapple, strawberries andother acid fruits should not be eaten with nuts,

cheese, eggs or meat.

7. Do not combine sweet fruits with

proteins, starches or acid fruits.

The sugars in sweet fruit should be free to leavethe stomach within twenty minutes, and are aptto ferment if digestion is delayed by mixing with'other foods. Sugar-starch combinations causeadditional problems. When sugar is taken themouth quickly fills with saliva, but no ptyalin ispresent. Ptyalin is essential for starch digestion.Ifstarch is disguised by sugar, honey, molasses orsweet fruit, digestion is impaired. Fermentationis inevitable if sugars of any kind are delayed inthe stomach by the digestion of .starch, proteiq,or acid fruit. Sugar also has a marked inhibitingeffect on the flow of gastric juices.

8. Eat only one concentrated starchat a meal.

This rule is more important as a means ofavoiding overeating starches than avoiding abad combination. Slightlystarchyvegetablesmay

-be combined with more. starchy vegetables such

as carrots and potatoes, but not with combination'foods sl}?t.as grains and legumes.

Two concentrated proteins,of different characterand composiqon, such as nutS and cheese, shouldnot be combined. Gastric acidity. type, strengthand timing of secretions for various proteins is

not uniform. Since concentrated protein is moredifficult to digest than other food elements,incompatible combinations of two differentconcentrated proteins should be avoided.

10. Subacid fruits may be used withsweet fruits.

It is best to use the sweeter varieties of subacid

fruits when making this combination. For peoplewith poor digestion, bananas are best eaten alone.For others, bananas combine fairlywellwith dates,

raisins, grapes and other sweet fruit and with greenleafy vegetables such as lettuce and celery. Driedsweet fruits should be used sparingly, because thesugar concentration is naturally greater. It is bestto have these fruits at a fruit meal combined with

a salad oflettUce and celery.

11.Combine fruit only with lettuceand celery.

These uncooked vegetables with a fruit meal mayeven enhance digestion of the fruit.

12. Salads combine very well with proteinsor starches.

Nonstarchy vegetablesmay be combined withproteins or starch. The green leafy vegetablescombine very well with most other foods, andshould form the major part of one's daily diet.Through the week, use as wide a variety ofvegetables as possible.

Lettuce and other green and nonstarchy vegetablesleave the stomach with little change. They pass

through the stomach rapidly unless delayed byoily dressing or foods that require a morethorough gastric digestion.

13. Do not consume melons with

any other foods.

Many people who have complained that melonsdid not agree with them have no trouble wheneating only melons at a meal. Melons are morethan 90% liquid and leave the stomach quicklyif not delayed and fermented by combihing withother foods.

14. Sprouts.The best way to eat grains is as sprouts. Otherseedsand legumesmaybe sprouted aswell.

15. Other non-recommended foods.

Cranberries, rhubarb, over ripe fruit and.. .bitter vegetables.

SPICES& CONDIMENTS

Salt, pepper, vinegar, oils, garlic, radishes,mustard, cranberry sauce and allother condimentsare irritants and should be avoided.

WATER

You should drink water only when thirsty. Dr.Sheltonrecommendsthat youdrinkwaterat least:.15minutesbeforemeals,

. 30 minutes afrer a fruit meal,

. 2 hours afrer a starch meal and

. 4 hours afrer a protein meal.Don't dilute the natUral enzymes in your body by

drinking with meals.
