In this book, Germá Bel analyses the factors that have been crucial in the process of the construction of the Radial State in Spain: the politico-administrative capital of Madrid and the radial system of transport and communications. These actions have been driven by administrative and political objectives, rather than economic dynamics, following a continuous and regular historical pattern since the 18th Century. This explains why the infrastructure policies in contemporary Spain are so distinct from the countries around it and why they are supported by such a wide consensus. This leads the author to conclude that “after over a decade of rigid infrastructure policy, it might be a good idea to just stop and think.”

No resulta extraño que se escogiera el Barney Greengrass como localización de un filme ambientado en los cincuenta: su deco-ración y los característicos dibujos (que representan New Orleans a principios de siglo) que ilustran sus paredes son absolutamente de otra época. Este
deli, un negocio familiar fundado en 1929, se cono-ce como “El rey del esturión”, una descripción nada exagerada: en la tienda, un enorme mostrador ven-de toda clase de ahumados y salazones además de otros productos típicamente kosher como los bagels o los bialys. 2h 3’ 42’’ La edad de la inocencia, el mordaz retra-to de la clase alta neoyorquina de finales del siglo XIX firmado por Martin Scorsese, termina en París. Concretamente, en la pequeña plaza de la Rue de Furstenberg, un sitio tranquilo y apartado del bullicio del centro parisino. La localización se corresponde al tono íntimo, delicado y nostálgico de la escena. Sen-tado en un banco, un envejecido Newland Archer observa la ventana de su antigua amante, cuando el reflejo del cristal le transporta a la rememoración de su turbulenta relación con Olenska. Finalmente, la ventana se cierra ante él, para dejar el romance del pasado definitivamente en el terreno del recuerdo. El
banco donde se sienta Archer no existe; en cambio, los edificios y farolas que se ven en la película per-manecen intactos. El apartamento de Olenska se si-túa en una de las esquinas de la pequeña plaza, a la altura del número seis, justo donde se encuentra, en la actualidad, el museo Eugène Delacroix. Antes de sentarse en el centro de la Rue de Furstenberg y re-memorar con melancolía su pasado amoroso, Archer visita otro museo, el del Louvre, donde se exhibe jus-tamente una de las obras más famosas de Delacroix: La Libertad guiando al pueblo. Archer se detiene un instante ante un enorme cuadro, Apotheosis of Henry IV and the Proclamation of the Regency, de Rubens.

De la galleta de coco: Introducir la harina junto con el polvo de coco en la amasadora con varilla y mezclar.Incorporar la mantequilla en pomada hasta obtener una masa homogénea. Añadir el azúcar glass, mezclar y estirar entre dos papeles sulfurizados. Dejar reposar en la cámara seis horas. Introducir en el horno a una temperatura de 180 oC durante ocho minutos. Dejar enfriar, conservar en conservar en lugar fresco y seco.PresentaciónDibujar un trazo de tapenade con la ayuda de una espátula de 5 cm x 2 cm (largo por ancho). Cubrir con la galleta de coco desmigada y colocar sobre ella tres esféricos de naranja sanguina. Calentar los medallones de bogavante (tres por plato) en la sopa de aceite, sin que llegue a hervir. Napar con la sopa de aceite y un cordón de coral de bogavante. Poner tres puntos de aceituna repartidos sobre la sopa de aceite. Terminar el plato colocando la flor de menta, la flor de albahaca y la ralladura de naranja sobre los esféricos de naranja sanguina y la sal maldon sobre el bogavante.
Del bogavante: Poner a hervir el agua y cocer los bogavantes durante dos minutos. Separar la cabeza de las pinzas y la cola. Reservar el agua de cocción. Guardar las pinzas para otras elaboraciones. Pelar la cola y cortar cada una en seis medallones de 1,5 cm de grueso. Sacar todo el coral y colarlo por colador fino. Cocer el coral sin dejar de remover hasta que esté cocido. Colar y guardar. De la grasa de aceituna verde: Escurrir las aceitunas del agua del envase. Deshuesar y triturarlas en el vaso americano y pasar la pasta resultante por una estameña.Dejar decantar el líquido obtenido en un recipiente alto y estrecho, con el fin de que la grasa se deposite en la parte superior. Extraerla, procurando que no se mezcle con el agua que se situará en la parte inferior. Llenar dos pipetas con la grasa de aceituna. Guardar el agua para otros platos.De la sopa de aceite de oliva: Juntar el agua con la xantana y llevar a ebullición sin dejar de remover. Cuando la mezcla haya ligado bien, añadir el aceite fuera del fuego y ligar. Poner a punto de sal.De la base de alginato sódico: Mezclar el agua con alginato con la ayuda del Túrmix. Dejar reposar en la nevera durante veinticuatro horas, a fin de que el aire que se haya incorporado en la mezcla desaparezca y el alginato se rehidrate por completo.De los esféricos de naranja sanguina: Incorporar el gluco y la xantana en el zumo de naranja y mezclar con
