Did you know that April 6 is Fresh
Tomato Day? And April 12 is Grilled
Cheese Sandwich Day. The NC K-12
Culinary Institute offers a tasty Gourmet
Grilled Cheese recipe featuring fresh
tomatoes, spinach and cheese. Yum!
School Nutrition managers have had the
opportunity to participate in regional
workshops across the state as part of the
NC K-12 Culinary Institute. Workshop
participants graduate as culinary
specialists, prepared to teach other
School Nutrition professionals at the
local level. NCDPI, School Nutrition
Services worked with a culinary team of
chefs and registered dietitian nutritionists
(RDNs) to design the institute with the
goal of increasing the availability of
appealing, nutritious meals at school.
The institute recipes and resources will
assist School Nutrition professionals in
providing optimal nutrition though
school meals for student health and
academic achievement.
As you celebrate Fresh Tomato Day and
Grilled Cheese Day along with Earth
Day and Garden Month this April, use
the recipes and how-to videos from the
NC K-12 Culinary Institute for
inspiration in planting your garden and
planning menus.

How Does Your Garden
Grow? All over North Carolina, people are
planting school and community gardens.
For Earth Day, use your green thumb!
With your friends, family, teachers and
others, you can help the people in your
community and the environment.
Start or join a People’s Garden
The People’s Garden is a project of the
U.S. Department of Agriculture (USDA).
USDA encourages all people to start
gardens that:
Help your community. Develop a
recreation space that everyone can use.
Donate your garden’s harvest to a local
food bank or shelter. Create a landscape
that is friendly to birds, bees,
butterflies, animals, etc.
Bring people together to help.
Volunteers, neighbors, and local
organizations can share in the effort.
Use practices that maintain and
protect the environment. Use
rainwater collected in rain barrels.
Compost and mulch. Plant veggies,
fruit, herbs, flowers and trees that are
native (local) to the area.
