1kg Macphie Lemon Sensation Mix 350g Water 270g Oil
500g Macphie 5th Avenue™ Lemon Icing 100g Cake Margarine or Butter
Method
1. Add Lemon Sensation Mix to mixer and slowly add water and oil on 1st speed and mix for 1 minute. 2. Scrape down and mix for a further
2 minutes on 2nd speed. 3. Reduce to 1st speed and mix for a final minute. 4. Deposit 50g of batter into paper cases and bake at 180ºC
(360ºF) for approximately 25 minutes. 5. Beat 5th Avenue™ Lemon Icing with margarine to create a lemon ‘buttercream’ icing. 6. Once
cupcakes are cool, either flood with 5th Avenue™ Icing heated to 45ºC or swirl with ‘buttercream’ icing.
SPICED CRANBERRY & ORANGE CAKEIngredients
1kg Macphie Spiced Cranberry & Orange Sensation Mix 400g Water 236g Oil
500g Macphie 5th Avenue™ White Icing 100g Cake Margarine or Butter
Method
1. Add Spiced Cranberry & Orange Mix to mixer and slowly add water and oil on 1st speed and mix for 1 minute. 2. Scrape down and mix
for a further 2 minutes on 2nd speed. 3. Reduce to 1st speed and mix for a final minute. 4. Deposit 400g of batter into round cake shaper.
5. Bake at 180ºC (360ºF) for approximately 60 minutes. 6. Beat 5th Avenue™ White Icing with margarine to create a lemon ‘buttercream’
icing and sandwich cake together. 7. Coat sides and top of cake with ‘buttercream’ and finish with sugar motifs as shown.

1. Add Chocolate Orange Sensation Mix to mixer and slowly add water and oil on 1st speed and mix for 1 minute. 2. Scrape down and mix
for a further 2 minutes on 2nd speed. 3. Reduce to 1st speed and mix for a final minute. 4. Deposit 50g of batter into paper cases and
bake at 180ºC (360ºF) for approximately 25 minutes. 5. Once cool, beat 5th Avenue™ Chocolate Icing with margarine to create a
‘buttercream’ icing and swirl on top of cupcake. 6. Sprinkle with toasted desiccated coconut and finish with chocolate eggs as shown.

1. Add Lemon Sensation Mix to a mixer and slowly add water and oil on 1st speed and mix for 1 minute. 2. Scrape down and mix for a
further 2 minutes on 2nd speed. 3. Reduce to 1st speed and mix for a final minute. 4. Deposit 75g of batter into paper cases and bake
at 190ºC (380ºF) for approximately 35 minutes. 5. Heat 5th Avenue™ Lemon Icing to 45ºC. Dip muffins into icing then sprinkle with
