約20種類のビスケットを生産しており、成形型段取り替えは受注状況で決める

従業員従業員は約100人(男：女＝6：4、平均年齢30歳前後)。

女性のほとんどは包装作業で1シフト(8H/日)就業。

作業ごとにリーダーをおいて(7-10年目の社員)、OJTにて新人教育。

スキル向上に応じて昇給を決める。

最もスキルを要するのが、生地作り工程。

離職率：ほとんどゼロ。


生産生産量： 2トン/日(6,000パック)

市場：国内(Upper Myanmar ミャンマー北半分)のみ

生産設備：機械･成形型は中国製(2000年に導入)

機械メンテナンス：小トラブルは地元の業者に、大修理は中国メーカーに依頼

焼成（オーブン）：電気と炭焼きの併用

品質検査：焼き上げ前に形状不良品を除く→素材でリサイクル

異常時対応：停電時は発電機使用

包装作業：ハンドによる袋詰め＆箱詰め(200箱/日)


工程小麦粉、砂糖、食用油、食塩、卵を混合・攪拌し生地を製造

→自動機に乗せると薄く延ばされ成型機を通る(型による打ち抜き)

→成形された生地を2名の作業員が目視で検査

→オーブンで焼成(オーブンは200-240℃で管理)

→ベルトコンベア上で自然冷却されながら収納箱へ

[Oven system]

Oil heated in a coal boiler upstream runs through

15 pipes that run up and down the biscuit baking

line to bake the biscuits.

The blower to feed the air is adjusted manually while the

operator watches the posted temperature (aiming at 200

-240°C).

１. ビスケット焼成工程のオーブンの温度管理・オーブンシステム上流にある石炭ボイラーで高温化されたオイルが、ビスケット焼成（オーブン）ラインの上下に渡されている15本のパイプ内を通りビスケットを焼成する

1.(つづき) 温度管理はオイルの温度管理で上流のボイラーへの空気供給量で調整。空気を送るブロアーは作業者が掲示温度を見ながら人的に調整(200-240℃狙い)。240℃を超えるオイルが一定時間流れると焦げ付いた不良品になる。
