Introduction
Our expanded second edition of Winemetrics’ Wine Buyer’s Report, is nearly twice the size of last year’s
edition. We have added wine list profiles of 75 leading, wine-oriented* restaurant chains in the 10 Account
Type/Cuisine categories. This permits our chain clients to compare their own lists against key competitors.
The wine lists used in this report were compiled in Q, 2016 through August 2016. Over 225 casual, upscale
casual and fine dining chains and restaurant groups, representing over 15,000 accounts nationwide, were
surveyed for this report. As with all of our reports, we limit our survey to lists with fewer than 500 wines by the
750 ml. bottle so as prevent accounts with vast wine selections from skewing our data.
Winemetrics’ 2016 Wine Buyer’s report supplies a wealth of competitive set information to wine buyers. One
of the issues most frequently mentioned by on-premise wine buyers was the lack of competitive information on
wine selections. While many wine buyers have access to data on the most popular wines and brands sold off-
premise, there is limited information regarding which wines and brands were most popular in their specific
account type and cuisine. Our 2016 Wine Buyer’s Report offers composite wine list content including list size,
varietal content, pricing structure and leading brands for 10 different segments (e.g. Upscale Casual Seafood).
We also list the leading brands by variety for Casual, Upscale Casual and Fine Dining segments. All
distribution is listed for both by-the-glass (BTG) and by-the-bottle (BTB) with average pricing.
Also in this second edition, we are providing Wine List Profiles of 75 leading chains, allowing buyers to
compare their lists with these market leaders.

About Winemetrics’ Survey
Winemetrics surveys upscale casual and fine dining chains on an annual basis and large, national casual chain
several times a year. Our listing numbers are based on a 10% sample of our target chain list. Essentially if a
chain has 200 units and a wine/brand has one BTG placement on that chain's list it will show up as 20
placements or listings. The numbers in our reports represent the sum of such listings. In many cases our 10%
sample can be extrapolated to a far larger on-premise market presence where a chain's wine list is uniform
nationwide. However we have discovered that many chains have minor variations from region to region so we
cannot assume uniformity in every case.
We attempt to capture the 'average' list for each chain so that it can be compared to its competitive set. We do
this by sampling lists where a particular regional chain has its greatest presence (e.g. MA/CT for
Bertucci's). In the case of national chains, we sample from accounts outside of the metro Northeast and West
Coast markets that may have larger and more diverse lists than the chain average.
How Winemetrics Classifies Restaurant Chains
Based on many years of analyzing restaurant chains and their wine lists, we have created three classifications of
restaurant types: Casual Dining, Fine Dining and Upscale Casual Dining. Winemetrics only surveys full-service
restaurants with wine/beer or full bar service; fast casual and limited-service restaurants are not monitored in
our surveys. Our classifications are based primarily on wine list size which is a remarkably accurate metric in
determining a chain’s dining classification.
Casual Dining - casual atmosphere, lowest check averages. By-the-bottle (BTB) wine list size from 9 to 39
full bottle (750 ml.) selections. Half –bottles are not utilized in our classification metric. Note: previously our
designation for casual dining was 12-49 wines BTB but that has been modified due to reduced wine selections
of major chains in recent years.
Fine Dining – the most elegant and expensive restaurants. Their BTB selections range from 80 to 500 items.
Winemetrics does not survey chains with wine lists larger than 500 items due to the negative effects on our
database. Also, we do not survey separate reserve wine lists or include wine verticals due to their influence on
pricing and brand presence. Formerly this category used a wine list size of 100 to 500 BTB items as defining
parameters.
Upscale Casual Dining – service and menu pricing just below Fine-Dining but significantly higher than casual
dining. BTB selections number from 40 to 79; formerly the parameters were 50 to 99 BTB items.
Besides type, restaurants chains are further classified by cuisine and the combinations of type and cuisine
determine chain competitive sets. The eleven competitive sets outlined in the report are as follows:

How To Use Winemetrics’ 2015 Wine Buyers Report
1. Wine Buyer’s Utilization
a. How this report is used is dependent upon your wine list objectives.
i. Do you wish to have a list primarily of popular, well-recognized brands or
are you seeking a mix of popular wines supplemented by more esoteric
selections?
ii. Winemetric’s 2015 Wine Buyer’s Report can help you determine the
appropriate blends of wine by providing ranking of wines by account type
and variety
b. Identify the type/cuisine of your restaurant(s). This will determine your
competitive set.
c. Compare your wine list to the averages for your competitive set.
i. Average number of BTG and BTB listings and average pricing
1. Is your list’s BTG and BTB offerings higher or lower than the
competitive set average?
2. Is your average price BTG and BTB higher or lower than the group
average?
3. Determine the changes required to improve your list’s competitive
advantage by size or price.
ii. Pricing structure BTG and BTB
1. Does your BTG/BTB pricing distribution range conform to the group
composite?
2. Based on the image and clientele of your chain, should your price
distribution be wider or narrower?
3. Determine the changes needed to make your pricing more competitive
iii. Variety Distribution BTG and BTB
1. Does your BTG and BTB selection by variety conform to the group
average or do you list more/less of a particular variety?
2. Is your wine list as diverse as your competitive set’s average?
d. Check the list of the most popular wines among restaurants of your type/cuisine
i. Does your list have a fair representation of these popular wines or is it more
esoteric?
ii. A balance of high-recognition and emerging brands is often a formula for a
successful and profitable wine program.
iii. If the variety distribution graph indicates a need for more of a specific
variety, consult the list of wines by variety to find the ranking of wines BTG
or BTB for this addition.

2. Supplier/Distributor National Account Sales Utilization
a. Using Account Type/Cuisine Profile for Distribution Opportunities
i. Compare the wine list of a target account against the profile listed among
Winemetrics’ Wine Buyer’s Report’s segments by type and cuisine.
ii. Identify disparities in BTG/BTB selection size, pricing distribution and
varietal composition that can serve as opportunities to secure new
distribution
iii. Examine the list of leading wines to determine if one or more wines on the
target list have lower distribution than those in your portfolio
iv. Review appropriate wines from your portfolio for pricing advantages
b. Using Leading Brands BTG/BTB by Variety by Account Type
i. Our lists of leading brands by Variety by Casual, Fine and Upscale Casual
Dining distribution are excellent resources to determine the on-premise
strength of your brands versus your competition.
ii. Discovering that one or more of your brands outrank a competitor may be a
compelling reason to replace it on a wine list. Conversely, if a wine buyer is
seeking to provide a more esoteric selection of wine, larger, more dominant
brands may be replacement targets.
3. Wine List Profiles
a. The above analysis for both wine buyers and wine salespeople can be
accomplished with our 2015 Wine Buyers Report. However, for clients who wish
to have this analysis done for them, Winemetrics provides a customized Wine List
Analysis Report (WLAR) that uses a specific competitive set to find distribution
opportunities in target wine lists. Competitive sets can either be determined by
Winemetrics or the client. Pricing of the WLAR is dependent on quantity and size
