The Vinoteca Wine List

Once again we’ve been on the long, thirsty hunt for great wines, and it’s taken us everywhere. We’ve got new bottles from Crete, Morocco, France and Australia. We’ve got Barbera from Argentina, Vermentino from the Clare Valley and Grecanico from Sicily – in a keg. Hell, we’ve even got dry-hopped sparkling wine from Bethnal Green, proving there’s nowhere too near or too far on our search for the best juice to put in your glass.

After all our tasting, we thought you should get as much out of trying wines as we do, so we invented our Wine Paddles – an easy way to taste three wines at the same time, with a theme and some bite-size information alongside, and there’s a new one every month.

Once you’ve tasted and found your favourite, why not celebrate? Call Elisabetta, our Private Room Co-ordinator, on 020 3544 7406 or drop her a line at [email protected] to book one of our private spaces. Maybe the party’s at yours and you need us to fill your fridge with a delivery from our online wine shop. Or you want to make sure your wine rack is never empty by joining the Vinoteca Wine Club with six bottles delivered to your door every month from just £80. Either way, check out our website and we’ll make sure that your wine supply is a lot more reliable than the Summer weather.

And whatever you do, don’t forget – if you like what you’re drinking, TAKE IT HOME TODAY! Every Vinoteca is also a Wine Shop, with the full range of wines, beers and artisan spirits available to take away at proper retail prices.

Happy drinking, Brett & Charlie

Staff picksThe wines that our staff just can’t stop drinking. Even though they probably should.

SPARKLINGProsecco Superiore Asolo Extra Dry NV — Vinvita, Veneto [V] 32.50A sparkling wine for every occasion, and a massive step up from Prosecco you find on the high street. (Simon, Sous Chef — Marylebone)

Blanc de Blancs Brut NV — Wiston Estate, West Sussex, England 59.00Being made from Chardonnay, this is full of yeasty apple flavours. I really can’t tell the difference between this and Champagne. (Tomi, Chiswick)

WHITEIGP Val de Loire Sauvignon Blanc 2018 — Vignerons de Valencay [V] 24.50What I like the most about this is the gooseberry lemon freshness that Sauvignon should have, and then this ripeness that fills your mouth. (Michael — Head Chef, Farringdon)

Gruner Veltliner ‘Rieden Selektion’ 2017 — Stadt Krems, Niederosterreich [V] 1 27.00This is what I go for when I can’t decide between a Riesling and an unoaked Chardonnay. Its zippy, but follows with plenty of orchard & passion fruit. (Marina, Marylebone)

Coteaux de Beziers Viognier 2018 — Preignes Le Neuf, Languedoc [V] 3 27.00So much more than you’d expect. Its a little waxy with faint floral aromas, and then subtle apricot flavours and awesome texture and acidity. (Sandro, Chiswick)

Montsant Blanco ‘Pinyeres’ 2017 — Celler Masroig, Catalunya [V] 2 32.00The more I drink good white Grenache, the more I love it. Apples & white peaches, very fresh, but with really good weight and a lovely smoothness. (Archie, City)

Clare Valley Riesling 2018 — Rodney & The Horse, Clare Valley [V] 1 35.00This vintage of Rodney & The Horse Riesling is almost delicate, but the lovely lime juice and oily texture are there as you’d expect. (Stephane, King’s Cross)

Kerner 2017 — Abbazia di Novacella, Alto Adige [V] 3 43.00I just can’t get enough of this. There’s so much flavour and ripeness, full of fragrant tangerine fruit, but then the juicy acidity just lifts it beautifully. (Sara, City)

Pouilly Fume ‘Vitae’ 2018 — Domaine du Bouchot [ORG] [BIO] [V] 3 44.50This reminds you just how much Sauvignon Blanc can offer. Fennel, peach and lemon, with a mineral seam that energises the wine all the way to the very end, emphasising the orchard fruit and adding layers & layers of savoury complexity. (Charlie, Boss Man)

Wild Boy Chardonnay 2017 — Au Bon Climat, California, USA [V] 4 50.00Big ripe awesome Chardonnay-ness. And so glad that there isn’t much oak to spoil it! (Louise, Farringdon)

Page 10: WINE LIST - Vinoteca · BEER ON TAP (available at Marylebone, King’s Cross and City) 2/3 PINT 378ml Schiehallion Lager — Harviestoun, Scotland (4.8% ABV) 4.90 Neck Oil Session

ROSECotes de Provence ‘No. 2’ 2017 — Ch de Saint-Martin, Provence (bag-in-box) 29.00Although this is genuinely yummy and super-drinkable, it also makes me feel quite grown up when I’m drinking it! (Barbie, Marylebone)

Pinot Noir Rose 2017 — Dunleavy, Somerset [V] 35.50The quality really shines through here. Lovely Pinot Noir, and great with pork or something off the BBQ (Lianne, HR Manager)

REDMontsant Criança ‘Vi Negre’ 2017 — Cellar El Masroig, Cataluna (bag-in-box) 3 24.50Always a favourite, as it has just the right balance between its full & ripe fruit and the tannins and oak. (Will — Operations Director)

Alentejo Tinto ‘Estate’ 2018 — Terra d’Alter, Alentejo [V] 1 27.00I’m really getting in to Portuguese reds as the quality is amazing. This is deep and fruity and the flavours just go on and on. (Nicole, Marketing Manager)

Pinot Noir ‘Village’ 2018 — Kumeu River, Hawkes Bay [V] 2 32.00We’re all big fans of Kumeu River. as you’d expcect, this is quite Burgundian in style — not heavy, but full of red fruit and spice. (Brett, Vinoteca Boss Man)

Clare Valley Shiraz 2017 — Rodney & The Horse, Clare Valley, South Australia [V] 3 35.00Often the freshness and peppery characters of Aussie shiraz are hidden by the oak. Not here! LOVE this. (Fabrizio — Head Chef, City)

'Bogan goes Walkabout’ 2016 — Mark Haisma, Rhone North/Ardeche [V] 2 36.00It might seem obvious given Mark Haisma makes Burgundy, but this is like a northern Rhone red with Burgundian elegance. (David, Wine Shop Manager — King’s Cross)

Barbera ‘Extremo’ 2017 — Vallisto, Cafayate Valley, Salta 2 37.50Wow. Definitely a wow wine. The fruit and body is so deep, but it never becomes sweet or jammy and it has cracking acidity. (Bart, Sous Chef — King’s Cross)

Rapsani 2016 — Thymiopoulos, Rapsani [BIO] [V] 3 46.50Greece is such an exciting place for wine now. This is every bit as good and serious as many Nebbiolos from Piedmont. (Anna, Farringdon)

Bolgheri Rosso ‘Il Seggio’ 2015 — Poggio Al Tesoro [ORG] 3 48.00I’ve had other Cabernet-based Super Tuscans for twice the price which aren’t as good as this. Stonking. (Sam, Manager — Marylebone)

SWEETMoscatel de Setubal 2015 — SIVIPA, Setubal, Portugal [V] 35.00Brilliant sweet wine that reminds me of barley sugar. It goes with many desserts, but also superbly with blue or hard cheese. (Iulia - King's Cross)

Sauvignon Blanc ‘Sweetheart’ 2018 — Oliver Zeter, 50cl, Pfalz, Germany [V] 35.50I reckon this is one of the most drinkable sweet wines on the planet. Its so fresh and pure, but obviously properly sweet too. One for fruity desserts. (Victoria - City)

Racy, Mineral: 1 Fruity, Bright: 2 Complex, Savoury: 3 Rich, Opulent: 4

IGT Primitivo 2017 — Caiaffa [ORG] 3 31.00Unashamedly full bodied, dark & spicy. The positives: organic, sustainable, wild yeast fermented, fresh as a daisy. Negatives? Label is a bit funny.

Bolgheri Rosso ‘Il Seggio’ 2014 — Poggio Al Tesoro [ORG] 3 47.00A blend of Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot grown in the Bolgheri region of coastal Tuscany. It’s a heck of a wine — intense red berry fruit, plenty of spice, silky tannins and a fresh lift to finish.

Pint?At Vinoteca, our beers are just like our wines – well-made, interesting and 100% delicious. We work with Biercraft, run by our friends Nick Trower and Theresa Bird who keep us (and you) stocked with the best beers around, including The Kernel, Gipsy Hill, Partizan and Braybrooke, a joint project between Nick and some other friends of ours, Luke Wilson and Cameron Emirali from 10 Greek Street. Braybrooke is one of our favourites – they take inspiration from German brewing expertise and make unique and delicious beers just outside Market Harborough in Leicestershire. Their operations are based around their Keller and Session Lagers, crisp and full flavoured bottom-fermented and cold-matured beers; they also make specials and experiment with a few different styles (New Zealand Pils? Yes please!) but always staying true to high quality beers, made with care, attention and traditional methods.

We asked Theresa what she loves most about working with beer: “We work with small producers that produce high quality beers, and make that accessible to a lot of restaurants, and the independent off trade. There are so many different products just with the same four ingredients. So many people are so incredibly creative, the industry is brilliant, it’s a big community and no-one is trying to compete, everyone is friends!” And if she had to choose a favourite brew? “My favourite beers are lagers and sours – if lagers are done well, they’re the best beer style that’s out there. Sour beers are my other favourite – it’s a very complex beer, quite similar to wine actually – both styles are incredibly refreshing and easy drinking.”

Luneau Papin:The Muscadet Maverick

A Muscadet helps you work, rest and play. Pierre-Marie Luneau is the Muscadet Maverick – far from making the expected crisp, light, simple wines typical of the region, he goes for broke with beautiful, complex and delicious wines that are way beyond. He is the current head of the Luneau-Papin dynasty, and is carrying on the family tradition of making Muscadet in a characterful and complex style. Still retaining the typical zest and zing of the wines from this region, he lets many of his wines sit on the yeast lees for seven months, adding a serious savoury tang to the wine, and making it even more mouth-watering in flavour. Some of his wines then get up to ten years in bottle before releasing them, displaying unbelievable depth and concentration.

Remember Luneau-Papin, the Muscadet Maverick, and if you see his name on the label then make sure you grab a bottle immediately and crack it open (well chilled) with the freshest seafood you can find. We featured him in our April Wine Paddle, so just ask any of our staff and they’ll recommend their favourite bottle.

MUSCADET: THE LOWDOWN

Muscadet is a white wine, made in the most western region of the Loire Valley closest to the Atlantic ocean. It’s about halfway down the west coast of France.

Muscadet typically is a clean, light fresh wine with citrus and saline notes.

Most wine from the region is made from a grape called Melon de Bourgogne. Other grapes are grown there, but they can’t be labelled as Muscadet.

Muscadet ‘Sur Lie’ means Muscadet that’s been aged on the yeast cells left over after they’ve finished fermenting the wine; they can give a savoury, bready flavour and more fullness to the wine.

Rosé – today’s the dayIf your thoughts haven’t yet turned to rose, tell them to buck up because it’s always time for a glass of pink. There are a million brilliant things about rose, but here are the top two:

1) Versatility. It ranges from palest blush through to deep dark fuschia, and from delicately floral through to spicy and crunchy, meaning there’s always the right bottle for you.

2) Crushability. Despite some roses of stunning quality, structure and even ageing potential, there’s one thing that every good rose possesses – it just makes you want to drink it. Now.

DID YOU KNOW? Your rose fact of the day is…

In Champagne, you can make rose wine by blending white and red wine. Everywhere else in the world, it’s ILLEGAL. Most rose is made by crushing red grapes, and leaving the juice on the skins for a little while to pick up that gorgeous colour, then pressing it off to keep it fresh, light and crisp.

Page 37: WINE LIST - Vinoteca · BEER ON TAP (available at Marylebone, King’s Cross and City) 2/3 PINT 378ml Schiehallion Lager — Harviestoun, Scotland (4.8% ABV) 4.90 Neck Oil Session

All the roses on our list are the nuts, but top of the list for us has to be the wines from Chateau de Saint-Martin in Provence.

We’ve known them for a few years, first finding them when we needed a top quality Provence rose in bag-in-box. They have a beautiful estate about 20 miles inland from Saint Tropez, and a winemaking history that goes back generations, passed down from mother to daughter.

Current owner Adeline de Barry works with a great team of winemakers, focussing on sustainable agriculture and using techniques like night harvesting to keep the freshest flavours in the grapes.

The No.2 Cotes de Provence which we stock in bag-in-box is a blend of grenache, syrah and cinsault, and the Vintage Grande Reserve also adds tibouren and carignan to the mix. They’re both all kinds of delicious – the No.2 for everyday juiciness, and the Reserve for more intensity and flavour than you’d ever expect from a rose.

Gimme some skin!Is orange wine made from oranges? Does skin contact mean the winemaker crushed the grapes with his hands? If you want to know more about what it all means and how skin contact affects the taste of your wine, read on…

Wine is made from grapes (ok, we know you’ve probably got that far already); grapes are made up of skin, seeds, and pulp – stalks too, but they’re mostly removed before the winemaking begins.

WHITE WINES

In white wines, traditionally you want to press the grapes to extract the juice from the pulp, then move the juice off the skins as soon as possible before leaving it to ferment. This is because contact with the skins gives the juice and the resulting wine certain characteristics – tannins, body, texture – that you might not want or expect in a white wine.

E.g. the super-fresh and zesty Rodney & the Horse Clare Valley Riesling

RED WINES

In red wine, it’s the opposite – you leave the juice ON the skins during fermentation in order to capture the tannins, the body, the bigger flavours and textures, and of course the colour (colour in wine comes from grape skins) that you associate with reds.

E.g. the deep and delicious Rodney & the Horse Clare Valley Shiraz (yes, another one of the wines made specially for Vinoteca, but if you can’t use your own wine label to illustrate points in your own magazine, where CAN you?)

Page 39: WINE LIST - Vinoteca · BEER ON TAP (available at Marylebone, King’s Cross and City) 2/3 PINT 378ml Schiehallion Lager — Harviestoun, Scotland (4.8% ABV) 4.90 Neck Oil Session

ORANGE WINES

But in some cases, winemakers decide to treat the white grapes like red grapes – they crush the grapes, then leave the juice right in there with all the skins to get just the right amount of tannin, flavour etc, also taking on lots of colour from the skins (which tend to have more colour than the name would suggest!) and through oxidation – hence, orange wine.

E.g. the spicy and intriguing Kisi ‘Vita Vinea’ from Dakishvili in Georgia, with flavours of dried apricot and almonds

WHITE WINES FROM RED GRAPES?

Yes! You can turn it around too – if you take red grapes, press them, then immediately drain the juice off the skins, you won’t get any of the colour of red wine but you’ll still get some of the complexity and depth from the grape variety. This is the opposite of orange wine – skin no-contact in fact – but worth knowing about if you’re exploring the role of grape skins.

E.g. – the white Oltrepo Pavese Barbera Bianca from Castello di Cigognola

FILTERING & OXIDATION

We probably need to mention filtration too – lots of the people making orange wine are trying to get as much flavour and kerpow into their wine as possible, so why would they want to filter anything out? Equally, many orange wines are made with some exposure to oxygen, perhaps they’re given more air at the beginning of fermentation, more like a red wine, or they’re left to ferment and age in porous containers like amphorae, but either way it can add to the savoury, nutty flavours in an orange wine.

E.g. – the unfiltered Sicilian Catarratto ‘Baglio Bianco’

BYOB: Bring your own boganIt wouldn’t be a Vinoteca wine list without a few bottles from our favourite Ozzy-making-wine-in-France, the very talented Mr Mark Haisma. We always grab some of his small-production Burgundies for our list and shops, and his adventures in the Rhone have proved just as delicious – we’re happy to drink just about anything he makes!

Mark’s latest French adventure is ‘A Bogan Goes Walkabout’ – see a for his explanation of ‘bogan’, the answer he sent us was so lyrical that it’s pretty much poetry. About the wines themselves, Mark says this: “The Bogan label is very simple, it’s great wine trying to get away from stuffy old ideas. I want to break down the AOC dominance and to demonstrate that gorgeous wine can be made from vines grown outside of AOC. The Walkabout covers all wines from outside of Burgundy I might make, there will be a back label with what the actual wine is on each bottle.”

Whether or not you’ve tried Mark’s wines from France, you’ve got to check out the Romanian wines that he’s involved with, Dagon Clan. Here, he works with local winemakers to make the best possible versions of their indigenous varieties including feteasca alba and feteasca neagra, as well as some international grapes, but there’s the typical Haisma drinkability that marks them out (no pun intended. Ok, pun intended).

Ode to a Boganby winemaker supremo and accidental poet

Mark Haisma

Fiercely loyal to their clan.

A bogan is tribal, there are many forms, it’s in a class of its own and a finger in the eye of any class system.

Educated or not, it doesn’t matter.

People would use it to offend, my own sense is to have a laugh at myself and the bull around me.

You can’t take yourself seriously and be a bogan.

It’s a complex term and means many things to many people.

So, not to over complicate things, wine or life.

Loyal and caring.

Doesn’t give a crap about what people think.

At times direct and crass.

Loves a motor, and in my case footie.

It’s a larrikin, loves a story, which doesn’t need to be based truly on whole facts.
