Marcee’s Corner It’s July and we typically think of celebrations in July. As I write this newsletter today, we are about to have our annual Volunteer Recog- nition Dinner. Our volunteers and all their hard work are truly worth celebrating. We have volunteers who do many things. Here are some examples of what they do: Work in dining center kitchens; they help set up and clean up. They serve food and wash dishes. Our sites just couldn’t operate without them. Deliver meals on 40 different routes. It’s been said, “without their wheels, there’d be no meals.” That statement is spot-on. Provide reception and registration at our dining centers. Friendly faces greet and register lunch guests as they arrive. Work in the office, where they file, organize, fold, staple, cut, enter computer data, make phone calls, make name tags, and so much more. Volunteer at special event throughout the year for things such as volunteer recognition events, Fun Run, Farmers Market, Food Bank deliveries, nursing student visits, maintenance of our building and grounds, garden boxes, and even a couple of Eagle Scout projects, just to name a few. Drive as transporters who deliver bulk prepared foods to Pasco and Parkside. When we add up all this service, we come up with over 350 people giving more than 25,000 hours and driving 92,000 miles last year. In this newsletter, you will see some pictures from the Volunteer Recognition dinner. Take a look and find a volunteer to thank, and help me “Celebrate” all they do for Meals on Wheels, making our community a better place to live. It’s July and we typically think of

celebrations in July. As I write this

newsletter today, we are about to

have our annual Volunteer Recog-

nition Dinner. Our volunteers and

all their hard work are truly worth

We have volunteers who do many things. Here are some

examples of what they do:

Work in dining center kitchens; they help set up and

clean up. They serve food and wash dishes. Our

student visits, maintenance of our building and

Scout projects, just to name a few.

Drive as transporters who deliver bulk prepared

When we add up all this service, we come up with over

TIPS to Get Moving . . . from Fitness over Fifty

KNEE FLEXION — Strengthens muscles in back of thigh. Add ankle weights when you are ready. 1. Stand straight holding onto a

table or chair for balance. 2. Slowly bend knee as far as

possible. Don’t move your upper leg at all; bend your knee only.

3. Hold position for 1 second. 4. Slowly lower foot all the way back

down. Pause. 5. Repeat with other leg. 6. Alternate legs until you have

done 8 to 15 repetitions with each leg.

7. Rest; then do another set of 8 to 15 alternating repetitions.

Squash It! Cyndi Balk, Registered Dietitian

Farmers Markets are already starting to pop up for

the summer, and I can’t wait for you to get your fill of

farm fresh produce! Summer squash is something you

will find at all most all farmers markets, and it’s cheap

and packed with nutrients! Get your fill of squash for

the following reasons:

Vitamin C

Squash provides a moderate level of Vitamin C.

Our bodies use Vitamin C for immune support,

and it helps in the formation of collagen.

Beta Carotene

Squash provides high levels of beta carotene. Beta

carotene is an antioxidant and helps protect

our bodies from free radicals. Add diced sum-

mer squash to soups, salads, and casseroles.

Low Calorie and Low Carb

Unlike some winter squash, summer squash is low

in calories and carbohydrates. 1 cup of yellow

summer squash contains 20 calories and only 4

carbs. Summer squash is great for those who

are diabetic and watching carbs.

Preheat the oven to 350°F. Remove the stem ends and slice the squash cross-wise in 1/4-inch-thick rounds. Toss with the olive oil. In a small bowl, combine the bread crumbs, Parmesan, salt, and pepper. Arrange the squash rounds in a 9x12-inch rectangular baking dish, or 10-inch pie plate. Sprinkle the bread crumb mixture over. Cover the baking dish with foil and bake in the oven for 30 minutes. Remove foil and bake an-other five minutes until the top is bubbling and crispy.

Serves 6 2 pounds summer squash (zucchini, pattypan squash, yellow crookneck squash) 1/4 cup olive oil 1/2 cup grated Parmesan cheese 1/3 cup bread crumbs 1/2 teaspoon flaked salt 1/4 teaspoon freshly ground pepper

So much was accomplished, and all for the benefit of local seniors! Garden boxes were provid-ed through a grant and in conjunction with The Master Gardeners and United Way.
