SELECTION :
• Select peppers that are firm, with no bruising or discoloration.• Select peppers with a shiny and smooth surface with no wrinkles.• Green bell peppers are the least sweet and can be slightly bitter. They ripen to red bell peppers, which are the sweetest.
Choose the color based on the sweetness of the pepper.
FUN FACTS:
• The mild bell pepper was cultivated in the 1920s in Hungary, although peppers are also native to Mexico, Central America, and South America.
• Paprika is the ground spice made from dried peppers. The spice ranges in sweetness to hot based on the type of pepper used.
• Although we may think of them as vegetables since they are produced from a flowering plant that contains seeds, bell peppers are technically a fruit.
NUTRITION/HEALTH/WELLNESS:
• About 92% of a fresh, raw bell pepper is water and is a good source of vitamin C. • One cup of chopped green bell pepper contains only 4 grams of carbohydrates whereas one cup chopped
red bell pepper contains 9 grams of carbohydrates.
STORAGE:
• Do not wash before storing. Any moisture can make it spoil faster, but always wash before using.
• When storing chopped peppers, store them in an airtight container with a paper towel to absorb moisture. This helps slow down the ripening process.
• Store whole, unchopped peppers in the refrigerator with plenty of air. Storing in an airtight container can make them spoil faster.

Meat CaseStuffed Peppers
Go Lean with Protein!
Ingredients: 5 servings
• 5 bell peppers (any color)• 1 lb. ground meat, lean• ½ onion, diced• 1 garlic clove, minced• 2 tsp. olive oil
• 1 cup instant brown rice• 1 14-15 oz. can diced tomatoes
with chili peppers, drained• 1 15 oz. can tomato sauce• 1 cup shredded cheese
Directions: preheat oven to 350 degrees F
1. Begin cooking the rice according to package directions.2. While the rice is cooking, begin cooking the garlic, onions, and ground
meat in a large pan on medium heat. This pan should be big enough to contain all the ingredients save the peppers. Cook until the meat is no longer pink. Drain the oil and discard.
3. Add the can of diced tomatoes to the beef and bring to heat. Add the rice and ¾ of the tomato sauce. Stir until mixed.
4. Wash and dry the bell peppers. Cut the tops off and discard the top and seeds.
5. Fill the peppers with the rice and beef mixture. Pour the remaining tomato sauce on top of each pepper.
6. Put the peppers on a baking dish and cover loosely with aluminum foil. Bake for 20 minutes.
7. Remove the aluminum foil. Top the peppers with shredded cheese and cook for an additional 10 minutes.

Produce StandKung Pao Chicken
Directions:
1. Heat the oil in a large sauce pan over medium heat. Add the chicken, garlic, ginger, and red pepper flakes and cook for about 5 minutes.
2. Add the chopped vegetables and peanuts and cook until the vegetables are crisp-tender (about 5 more minutes).
3. While the vegetables are cooking, mix together the honey, hot sauce and soy sauce. Add the sauce to the pan and cook for an additional minute mixing gently to incorporate the sauce.
4. Remove from the heat and serve over a bed of chopped green leafy lettuce or some brown rice. Top with the green onions.

Salmon Burgers

Directions:
The World Health Organization recommends that adults consume at least 250-500 mg. of omega-3 fats per day. Research shows that omega-3 fats are beneficial to overall health, but most Americans are not consuming near enough. Eating foods high in omega-3 fats may reduce the risk for some cancer. They are also good for the heart because they decrease triglycerides, slow/prevent the build-up of plaque in the arteries and may assist with managing blood pressure. Fish and shellfish, eggs and dairy products, flax and chia seeds, walnuts, and spinach and Brussel sprouts are examples of some foods that provide omega 3-fats.
Eating the recommended amount of omega-3 fats is easy with fish added to your diet. This is why the American Heart Association recommends eating two servings of fish/shellfish per week. Fatty fish like salmon, mackerel, herring, lake trout, sardines and tuna and shellfish are great sources. A serving size of fish is about 3-4 oz. cooked, or about ¾ of a cup, flaked (canned).
To gain the greatest health benefits from fish and shellfish, while limiting the risk of exceeding the safe levels for mercury exposure, it is important to vary your choices and choose fish that have lower levels of mercury. To assist you with making choices, consumption recommendations are included in the box to the right.
This meal uses canned salmon to quickly prepare a tasty, heart healthy“burger” topped with cheese, and served on a whole wheat bun. To keep the meal heart healthy and nutritious, the rest of the plate is filled with a fresh spinach, walnut, and mandarin salad.
1. Drain and discard the liquid from the canned salmon and then pour the drained salmon into a mixing bowl.
2. Separate the salmon down the center and remove and discard the large bone. Add the dried basil, garlic powder, egg, and the whole wheat crackers (crumbled) to the salmon and then mix well. (If the mixture is too crumbly, then add milk, one tablespoon at a time; or if it is too wet, then add a couple more crumbled crackers).
3. Divide the mixture into four equal portions and then form into “burger patties."
4. Heat a non-stick skillet coated with 1 tbsp. of olive or coconut oil over medium heat. Once the oil is heated, add the salmon burgers.
5. When the bottom of the burgers begin to brown a bit, (about 3-4 minutes), flip them over, cover, and let the other side cook for an additional 3-4 minutes.
6. While the burgers are cooking, prepare the salad by mixing the spinach leaves with a the drained mandarin oranges, balsamic vinaigrette dressing, and the walnut pieces.
7. Top each burger with a slice of your favorite cheese and serve on a whole wheat bun.
8. Divide the salad into 4 equal portions and then serve one portion of salad and a salmon burger on each plate.
