Candle Light Dinner!

VETERAN’S DAY

It salutes all those who went and did what other did not want to do It salutes all those who went where others feared to go It salutes all those who were called upon to do what others failed to do It salutes all those who spent their youth learning the true meaning of death and all it hid-eous forms. It salutes all those who quiet veteran's who lived through times others felt would be best forgotten, but forget is some-thing we as a nation, can never afford to do It was the eleventh hour of the eleventh day , it was the last moment of the slaughter of the battle field It was the last moment of the war to end It was eleven a.m. November 11, 1918: the moment the ar-my ended what would be known as WORLD WAR I.

The election has passed, and Obama has won another term. Other than that, little has changed. In a way I’m glad for it. The country is divided, but there’s truths on each side. No one can have it all their way. Ideas clash and tangle, yet somehow we muddle through. Politically, I’m as opinionated as anyone. I seldom talk about it though. Opinions are just the way I see things, and others might see it quite differently. In most things I accept that. Disagreements don’t bother me. For some rea-son though, in politics I often feel like I’ve got to prove my views are right, so I usually just listen. Ester, the Activities Director, recom-mended a book to me. “The Innocent Man” by John Grisham. I’ve long been a fan of Grisham’s legal thrillers, but this story was true. It made quite an impression on me. A cocktail waitress was murdered in a small town in Oklahoma. The police and prose-cutors quickly settled on a pair they were sure had done it. Any evidence that might prove guilt was kept. They ignored the alibi witness for the two men, and ignored testimonies of witnesses that last saw the waitress arguing with an ex-boyfriend. The pair was arrested, tied and convicted and sentences to death. After years of imprison-ment DNA testing proved that the ex-boyfriend had done the murder, and the men were freed. What a story! The book is in the Vienna Li-brary. It’s well worth reading. My wife Jan, gave me a couple of small booklets called “Angels on Earth”, published by Guideposts magazine. Accounts of meeting an-gels. I’ve never seen an angel, but I have no doubts of their existence, and I’ve learned that it’s not so important that bad things happen as it is that there is help nearby. Those I have seen. I’ll always be grateful to the human angels who have helped me along the way. All My Best,

Ingredients: 6 oz Bleu Cheese 4 large potatoes ½ pound cooked bacon 4 tbs. of bacon fat for leeks and garlic 2 quarts half and half 32 oz can of chicken broth 1 cup leeks (chopped fine, cleaned, 2-3 stalks) ½ tub (8oz) sour cream 4 oz parmesan cheese 6 oz cream cheese (¾ brick of large ) 1-2 cups of grated cheedar cheeseand /or jack cheese (optional) 4-5 cloves of garlic (minced fine) 1 teaspoon salt when soup done Directions : 1. Sauté bacon and render fat, remove and save for

crumbling on the top of the soup for garnish, reserve 3~4 tablespoons of bacon fat for leeks and garlic.

2. Peel and cut up potatoes in chicken stock (32 oz can) cook till tender.

3. Add leeks to 3~4 tablespoons bacon fat and allow to sweat out.

4. Add minced garlic and add potatoes with chicken stock to leeks mixture cook on low for 20 minutes (smash coarsely)

5. Add half and half for another 15 minutes then add sour cream, cream cheese, jack and/or cheddar cheese, keep simmering on low.

6. Stir often to ensure no cheese sticks to the bottom of the pot, keep covered note* always use pot with thick bottom

7. 15 minutes before serving add the salt, pepper, and parmesan cheese.

Note* bleu cheese, chicken broth, cheeses have salt already in them Note* I like to use white pepper with cream soups Note* bacon can be omitted, therefore 3 tablespoons butter can be used to sweat leeks, fresh chopped parsley can be used on top

Makes 1 gallon (can be cut in half) Enjoy!!

It’s hard to believe Halloween has passed us by in a flash and we are making plans for Thanksgiving

already. Didn’t we just celebrate 4th of July? Well before we get to Christmas let’s re-cap on some of

last month’s events. We started off October with a great pumpkin

craft. They were made using household items that most people have around. First you fill a plastic bag with beans and tie it off with a rubber band.

(you could use rice too) then with orange material cut into 18 inch squares, wrap it around the bag

and tie that off. Using brown or green felt cut to look like leaves, we finished off the

project. They turned out real cute.

The following week we had bingo four times. Who wouldn’t want to win. We had our

regularly scheduled bingo games and two special sponsors. The Kiwanis Club came in and gave us

stuffed animals or money. The other guest that week was the Eagles Auxiliary. They gave out dol-

lar bills. Wow, what luck four times in one week. Not even when we play the lottery. That same week our singer, LeDeana

Newhall’s beautiful voice was enjoyed by all dur-ing the birthday party. She was asked if she would

consider trying out for a TV singing show. She said then she couldn’t enjoy singing to all our

folks. Lucky for us she hasn’t. The following day we made homemade ice cream with Mr. Nevis’ 5th graders. We had lots of

fun, except for the mess. We needed a lot more ice, but you wouldn't know it by the water on the

floor. The best part was eating it. There were many flavors, butr the favorite was chocolate.

Painting pumpkins was next on the list. We had many small pumpkins. Some were painted to look like ghosts and others to look like witches.

Some were a little psychedelic with many colors.

They all turned out pretty spectacular.

Pumpkins seemed to be the theme this month. Next we baked mini pumpkin pies. They

were served the following day as our dessert for candle light dinner. This month our residents requested chili

beans, corn bread and baked potatoes. They loved it! Amazing something as simple as chili beans.

The pies were a hit also they were the perfect size to end the meal.

The last weekend of the month we carved pumpkins into jack-o-lanterns. The were not as

easy as the pattern made them look. They were full of seeds. After the carving were scheduled to

roast the seeds, however they did not turn out as good as we hoped.

Now the moment we waited all month for, our Halloween costume contest. We had lots of

people sporting their Halloween spirit. There were several dressed as witches. A witch bride, Glenda the good witch, a spider witch and one that resem-

bled the wicked Witch of the West. There was a bumble bee, a queen, Lucille Ball, a little girl car-

rying her baby, a scary man with a long beard, a Mariachi, a fairy, a baseball player from the first

woman's league, a chicken, a peacock, a school girl, a football player, a clown, a princess, raggedy

Ann, Tinkerbelle, a firefighter, a hot dog, tomato,

mustard, ketchup, a pink piggy, a cry baby, Cleo-patra and Madame of North Dakota. Thank you

to all those who participated.
