MANGO SALSA
1 mango diced
½ cup chopped red onion
2 limes juiced
3 tbls chopped cilantro
salt and pepper to taste
1. Mix all ingrediants in bowl.2. Sprinkle over cooked ribs to garnish.
DELLA COTTA SQUASH PUREE
4 della cotta squash
pealed and quartered
½ stick butter
1 tsp curry powder
1. Place squash in sauce pot cover with water and cook until tender.2. Place cooked squash in food processor and puree with butter until smooth.3. Season with salt, pepper and curry.4. For plating, swoosh on base of plate and nest ribs on top.
SHORT RIBS
4 lb bone in short ribs
1 cup chopped onion
½ inch ginger root
1 orange sliced
2 cups red wine
3 tbls soy sauce
3 tbls hot sauce /garlic
chilli paste
3 cinnamon sticks
1 branch of rosemary
1 whole garlic head
water to cover
salt and pepper
2 tbls olive oil
1. Take all ingredients for the short ribs, excluding the water, and marinade for 24 hour prior to cooking.2. Set oven to 325° Remove short ribs from marinade, strain off the liquid and save.3. Season short ribs with salt and fresh ground pepper.4. Using a Dutch oven or heavy bottom skillet add olive oil over high heat place meat side down and brown meat on both sides. Once browned remove beef and add vegetables from the marinade to the pan and lightly caramelize.5. Once vegetables have browned, add marinade back into the pan and reduce until half the liquid has evaporated. 6. Add water to just cover the short ribs, bring to a simmer, cover and place into oven to braise for 3 hours, or until tender and just falling off the bone.
CIDER SOY GLAZE
½ cup sweet soy
½ cup boiled cider
1. Place ingredients into sauce pot and reduce by half.2. Once ribs are braised, brush glaze over cooked ribs.

ome of my fondest childhood memories are from the many vacations my family spent in Vermont - skiing at
Suicide Six, gazing in wonder at the beautiful colors of the annual balloon festival in Quechee, and strolling along the streets of
Woodstock, enjoying the breathtaking views and friendly shopkeepers.Soon after Jason and I began dating, we decided to visit
Vermont so I could share some of my favorite places with him. In no time at all, he was in love with it too, and the peaceful villages along the Ottaquechee River quickly became our go-to for romantic getaways.Having been together for a few years, Jason and I did not want a long engagement. So when he proposed in August, we quickly decided on a January wedding. At first, we were looking at tropical resorts, but none of them seemed to be just the right fit. And then it hit us, what could be more beautiful or romantic than a winter wedding in our beloved Vermont? After that, everything fell into place as if it were meant to be. The Woodstock Inn proved to be the ideal combination of old-world elegance and luxury that we wanted for our guests, and so we set the date for January 5, 2013. Our wedding day was perfect. The sun was shining in a beautiful blue sky, the snow was glistening and the air was full of love and joy as our family and friends gathered to celebrate with us. At the end of the evening, as we watched more than 100 wish balloons float silently into the heavens, illuminating the still, dark night above Woodstock Village, Jason and I both realized that all of our dreams had come true. Vermont, with its idyllic country-side and warm, welcoming people will always hold a special place in our hearts. - Meg

OCTOBER SIBERIANS SLED DOG ADVENTURES
Imagine giving a gift that will be talked about for years to come, long after the ribbons have been untied and wrapping paper has been thrown away. The beauty of Vermont that is so accessible in the summer to our visitors, through the parks, trails and back roads, is often forgotten when the winter time visitors arrive, but that does not have to be the case. Rob Farley travelled hundreds of miles every winter with his friendly Siberian Huskies pulling a dogsled. Rob, who started mushing in 1994, shares many of these miles with the Vermont winter visitors in Little River State Park through his business – October Siberians Sled Dog Adventures. What makes this place so special according to Rob is: the vast terrain from campground roads along the Waterbury reservoir to the old hillside settlements where the remnants of the old saw mills and small farms helps us imagine what it must have been like to simply get by with what your hard work produced. Robs knowledge of the area and skills as a Musher will bring the adventure to life with stories of the people who lived there, the history of Mushing and the Siberian Huskies, as well as, the amazing performance of the dogs. The Little River trip is a two hour adventure that always seems to end too soon. You can easily compliment the dogsled adventure and fill your day with cross country, backcountry skiing, snow shoeing or sledding in the Park; and when you had enough of the cold, there are plenty of places to warm up in Waterbury from fine dining, to the Ben & Jerry’s ice cream factory, Green Mt. coffee roasters, Cold Hollow cider mills, local breweries and plenty of shops. If time is tight for two hours with the dogs, Rob has 20 minutes dog sled rides in the evening at the Stoweflake Resort through Umiak Outfitters. ermont is where we first met, first dated, first skied together, first lived together… Needless to say, it’s an
important place for us as a couple. After college, Pete lived on a farm in Cornwall for a few years before moving to
Burlington, and it was during that time that we truly fell in love. I was living in Connecticut getting my masters in teaching, and I drove up to
Cornwall nearly every weekend. We relished our time together and grew closer despite the long distance. When we got engaged, we knew that we would get married in Vermont. We visited venues all over the state before realizing that we were completely overlooking the perfect site- the farm where Pete had lived, a place that meant so much to us as a couple and was stunning to boot. - Laura

s native Vermonters our roots are buried deep in the green mountain soil and we wanted our wed-
ding day to be the same way. Our vision was to have an outdoor wedding with the mountains as our backdrop. As a
wedding planner I knew I wanted to fuse modern elegance with the lush Vermont landscape. The perfect location was merely steps away from
my father’s house on 600 acres of field blanketed with yellow buttercups and surrounded by majestic mountains, Camels Hump and Mount Mansfield.I rode into the ceremony on a tractor driven by my father while family and friends looked on with smiles and laughter. The alter was non-traditional as I wanted something simple yet statement worthy. A design of rose pet-als encompassed Jason and I while we exchanged vows of love and honor.White roses and orchids decorated the tent while hundreds of Swarovski crystal wrapped candles provided the perfect glow and glimmer to an August summers night wedding. The grand finale of the evening had everyone gathered outside gazing into the night sky lite by thousands of white stars before the colorful fireworks burst into the sky and painted our faces with the most vibrant colors. The firework show ended with red hearts bursting into the night sky leaving the feeling of love in the air.” - Chelsea
