Gather ingredients and materials needed to demonstrate the recipe (see pages 5-6). Prepare materials for the introduction and objectives 2, 3, and 4. Make copies of take home messages handout you wish to distribute (see page 5-6) – enough for all

class participants to take home to families. Utah Food $ense - Make copies of all required paperwork for lesson.

LESSON PLANIntroduction Time: 5 minutesHold up a picture of the food guide pyramid for the children to see.

Ask the class: Do you know what food can fit into the vegetable group and the meat group? Hint: The meat group is called the “meat and ______” group.

Answer: Beans! Beans have lots of protein and so they are included in the meat group. They are also a plant based food that is full of nutrients so are also included in the vegetable category.

Objective 1: Participate in a cooking/ food sensory experience and sample food. Time: 15 minutesChoose a recipe that will work for your lesson:

Black bean stew Black bean burgers/cakes Black bean salad Black bean pizza Black bean pasta salad

Demonstrate how to combine ingredients and show students how black beans look before they are cooked (dry) and cooked (from a can or cooked from dry).

Even if you want to prepare the recipe before, let children participate by letting them help smash some black beans with a potato masher in a bowl. Tell them that this is what you have to do with the beans to make black bean burgers.

Serve samples to children. Ask how they like the taste and texture of the beans.

Objective 2: Participate in a physical activity or game that reinforces food concept. Time: 5-10 minutesBeany Hopscotch

Use outdoor hopscotch or draw on a large piece of butcher paper and secure to the classroom floor. Choose a square on the hopscotch and place a dry black bean on it.

Have the children hop through the hopscotch avoiding the square with the black bean on it. Explain: This game is to help us to remember that if we eat beans it will help us to “avoid” disease

(heart disease and certain types of cancer) just like we “avoid” the black bean in the game.

Objective 3: Identify food name through reading, writing or other activity. Time: 10-15 minutes Play “pass the bean game” with children. To play the game:

Have children stand in a circle.

Give one child a dry bean in their hand. Teach the children the chant (below) and then have them say the words as they are passing the

bean from person to person. When the chant is over whoever has the bean is out and the game continues until you have a few

winners. Students who are out can still join in with the chant.

Objective 4: Participate in a food exposure experience by doing and art, craft, or other activity. Time: 10 minutes

Bean Art Jars For this activity allow the children to make bean art with dry beans. This will be similar to making

sand art with different colors of sand but you will do this with different colors of beans. To do this project gather 3 to 4 colors of dry beans and place in separate bowls for the children to

use. Use black beans as one of them, a type of white beans as one and maybe some green or other color lentils as a third and/or fourth color.

Gather small glass jars (such as baby food jars) one for each child. Let the children put layers of beans in the jars to make a design. After the children have filled their jars put on the lid and let them take home. Explain: Eating black beans can be very fun. There are many types and colors of beans to try.

Eating beans is like eating a work of art like your bean jars that you made.

Background Teaching Information

History: Beans have been around for centuries with some originally cultivated 7000 years ago! Black beans are a favorite of Mexico, Central and South America, the Caribbean and the southern United States. Other names for black beans include Black Turtle Bean, Mexican Black Bean and Spanish Black Bean.

Nutrition: Beans are a staple of life for many people all over the world. These delicious morsels provide protein, fiber and many valuable nutrients essential to life. Just a half-cup of black beans contains about 8 grams of fiber and provides essential nutrients such as iron, magnesium, folate and other B-vitamins. Studies show that a diet that includes beans can help reduce risk for heart disease and some cancers.

Eating: Beans are very versatile and can be used in many ways. You can often substitute beans in your favorite dishes for meat. Try using beans to make your taco meat go farther, to bulk up your favorite soups and stews or seasoned with your favorite spices and served on top of rice. Beans can be made into burgers, simple side dishes, salads, used to substitute for oil in baking and for just about anything else you can think of! Black beans have a hearty rich taste with a touch of meaty mushroom-like flavor.

Although beans are a great tasting nutritional food, many consumers are hesitant to eat them because of the gas that some consumers experience after eating. If you are not use to eating high fiber foods often beans may cause you some intestinal discomfort. Beans contain indigestible carbohydrate called oligosachharides that can cause gas to be produced when they reach the lower intestines. The good news is that there are ways to significantly reduce these gas-producing carbohydrates in the beans you cook. The best way to do this is to pour the water used to soak the beans off and replace with fresh water before cooking. If canned beans are being used rinsing off the liquid on the beans from the can will also help (will also help reduce sodium (salt) added to beans during processing). Gradually increasing the amount of beans you eat each week is another way to avoid intestinal discomfort after eating beans. Over time your body will adjust to the oligosaccharides and you will be able to tolerate eating more beans without any side effects.

Ingredients:1 large diced onion1 – 3 minced cloves garlic¼ teaspoon red pepper flakes2 tablespoons olive oil½ teaspoon cumin½ teaspoon thyme2 cans chicken broth1 small can diced green chilies1 (14 oz) can stewed tomatoes1 (28 oz) can black beans, drained and rinsedCooked riceCilantroSour creamLime slices

Directions: In a heavy pot, sauté onion, garlic, and pepper flakes in olive oil.  Add herbs, broth, and chilies and bring to boil. 

Add tomatoes and beans.  Simmer one hour. Remove ½ of stew, cool slightly, and puree until smooth.  Add pureed mixture back into pot and stir to combine. Serve stew over rice with fresh cilantro, sour cream and lime slices. Black Bean Burger/CakesIngredients:2 cans black beans, drained and quickly rinsed2 cans green chilies (4 oz. each)1-1/2 cups bread crumbs, plain1/2 teaspoon chili powder1/2 teaspoon ground cumin1/2 teaspoon pepper1/2 teaspoon Cajun seasoning2 eggs, lightly beaten1/2 cup yellow cornmealCanola oil cooking spray-as needed

Directions:In a medium mixing bowl, mash the black beans well with a potato masher or the back of a fork. The mixture should be mostly smooth with no whole beans remaining. Stir in bread crumbs*, green chilies, chili powder, ground cumin, pepper, Cajun seasoning and eggs, mix well. Shape mixture into evenly sized patties, about 1/3 cup each. Coat each patty with corn meal. Spray skillet with cooking spray. Place patty in skillet and cook on medium heat for 5-10 minutes or until crisp and thoroughly cooked on both sides.

Tips: This recipe can be served as a patty for a burger, topped with Munster cheese, sour cream, salsa and shredded

lettuce on a bun. The patties can also be served as a main dish, plain, or garnished with guacamole, salsa, and sour cream.

If you want to make several burgers at a time you can place burgers on a lightly greased cookie sheet and place in oven and bake at 425ºF for 10-15 minutes or until crispy on the outside.

Black Bean SaladIngredients: 1 can black beans 2 cans of corn½ green pepper, diced

½ red onion, diced1 large tomato, diced1 avocado2 Tbl. Lime juice½ cup Italian Salad Dressing½ tsp garlic salt

Directions: In a large bowl combine all ingredients and mix well. Serve with tortilla chips.

Black Bean PizzaIngredients:1 large pizza crust1/4 medium onion, chopped1 garlic clove, minced1 tsp vegetable oil1/2 cup finely chopped zucchini1 can black beans, drained1 (14.5 ounce) can Italian diced tomatoes1 cup shredded Mexican blend cheese½ green bell pepper, diced

Directions:Preheat oven to 425 F. Place pie crust onto pizza pan and set aside. Then sauté the onion and garlic in oil until tender. Add zucchini and bell pepper; cook and stir for 1 minute. Add the beans and tomatoes; bring to a boil. Boil, uncovered, for 2 minutes; drain. Sprinkle 1/2 cup of cheese over crust. Top with bean mixture and remaining cheese. Bake 8-10 minutes longer or until crust is browned and cheese is melted.

Black Bean Pasta SaladIngredients:8 ounces penne pasta1 (16 ounce) jar salsa1 can black beans, drained1 can corn3/4 cup shredded reduced-fat Mexican-blend cheese1/2 cup chopped green pepper1/4 small onion, chopped

Directions:Cook pasta in boiling water until tender. Drain and place in a bowl; stir in the remaining ingredients. Chill and serve.
