THE UNIVERSITY CLUB OF TORONTO WINE LIST: June 2017 1 Introduction to the Wine List On behalf of the Wine Committee I am delighted to introduce to you the University Club of Toronto’s wine list. May I begin by offering a warm welcome to our members and guests to the delights of the University Club’s wine cellar. There are many benefits to being a member of the club, and one of the distinct pleasures we suggest you take advantage of is the enjoyment of fine wines at unusually good – let’s say unheard of – pricing. We have adopted a wine pricing policy for the sale of wines in the bar and dining room which limits the mark up to a $28 maximum. This provides an opportunity to sample some excellent wines that you may not have had an opportunity to purchase at home, with it being an affordable pleasure. To give you an example of how this compares to local restaurants in Toronto, a bottle of Chateau Palmer 1982 sells in our dining room for $280 while the price at three leading restaurants in Toronto with sizeable cellars: Restaurant #1: $560; Restaurant #2: $620; Restaurant #3 $600. We hope that you enjoy all the benefits the Club has to offer – a wonderful meal prepared by Chef Patrick Desmoulins accompanied by the best quality and value provided by our expansive cellar. Santé! Introduction to the Wine List

On behalf of the Wine Committee I am delighted to introduce to you the University Club of Toronto’s wine list. SPARKLING WINES

FRANCE Champagne or Sparkling—Non-vintage W109 Taittinger Brut Prestige Rose Champagne NV 102.00

Blended from Pinot Noir and Pinot Meunier grapes, this is a succulently fruity, supple and aromatic Champagne with fine bubbles and a crisp, refreshing finish of extended length. Taittinger Cuvée Prestige Rosé is intense cherry-pink in color with extremely fine, persistent pinpoint bubbles rising in delicate strands to the surface of the wine. Its classic, aromatic Pinot fragrance of red raspberries and strawberries is offset by elegant, subtle floral and earth nuances. On the palate, the ripe, full berry flavors are vibrant yet refined, delicately balanced by a fresh acidity which carries into a crisp, refreshing finish of persistent length. "A swirl of bubbles carries fresh raspberry flavors along with a lively green edge of acidity. The flavors are persistent and clean, the wine mouthwatering." 90 Points Wine & Spirits

Bordeaux

R15 Ch. Cos d’Estournel (2ieme Cru Classé) (St. Estèphe) 1988 274.00 * “The 1988 has an intriguing bouquet of exotic spices and black fruits. Savagely tannic in its youth, the wine has softened and developed more charm and appeal. Still deep ruby/purple in color, with little signs of age, this medium-bodied, slightly austere wine possesses good cassis fruit, excellent purity, and an elegant, classic style.” Robert Parker

R31 Ch. Gruaud-Larose (2ieme Cru Classé) (St. Julien) 1990 261 .00 * Gruaud-Larose was superb at the most recent tasting. Moreover, this might be a 1990 that is still affordable. The wine exhibits a thick-looking, plum/purple/garnet-like color. A sensational nose of jammy black-cherries, earth, cedar, and herbs has become far more intense and striking. The wine displays sensational richness and power, but not quite the burly, monstrous size and hulking weight of the 1986 or 1982. Yet it reveals impressive stuffing and power. The low acidity emphasizes the thick, juicy, succulent fruit in this backward yet rich, chewy wine. This was the finest showing yet for the 1990 Gruaud Larose. Score 93 – Robert Parker

R156 Ch. Gruaud-Larose (2ieme Cru Classé) (St. Julien) 1996 145.00 * Jancis Robinson 17/20 Robert Parker’s Wine Spectator: 90 points “This has a Gruaud signature etched onto its enticing, rich and decadent nose. This is a superb example of Bordeaux and particular St Julien at its very best. Really silky and creamy on the palate with a fabulously exotic, powerful, ripe and sweet black/red fruit core. Long finish and very classy indeed. Medium to full bodied with pure, rich blackcurrent flavours, liquorice and herbs. A very elegant wine, steering away from the massive, muscular styles provided by many other Chateaux in '96.

R147 Ch. Palmer (3ieme Cru Classé) (Margaux) 1996 258.00 * This wine, a blend of 55% Cabernet Sauvignon, 40% Merlot, and 5% Petit Verdot, is performing well after its July, 1998 bottling. It boasts an impressively saturated purple color, in addition to a backward yet intense nose of black plums, currants, licorice, and smoke. Following terrific fruit on the attack, the wine's structure and tannin take over. There is plenty of sweet fruit, and the tannin is well-integrated, but the wine requires 7-8 years of cellaring. Anticipated maturity: 2007-2028. Score 91, Robert Parker.

R80 Mouton-Rothschild Grand Cru Classé (Pauillac) 1996 393.00 * Wine Advocate Score: 94 Maturity 2007-2030. Cabernet Sauvignon 77%, Cabernet Franc 13%, Merlot 10%. From magnum. This wine has a superb colour compared to the maturing wines tasted alongside; it has a dark core, a dense rim, with plenty of red pigment still. This is very impressive. The nose here is divine; it has a very typical profile for the vintage, full of iron and rust, but enticingly perfumed with violets. It kicks off very elegantly on the palate, and it has a wonderful texture, composed rather than showy. It has great style; the tannins and acidity show through and there is plenty of perfumed character as there is on the nose. There is structure and grip, and a fine persistence. This very superb wine, with its reserved character, will go for more than ten years yet. At its apogee this will be truly remarkable. 19+/20 (February 2008) The Wine Doctor – Chris Kissack

R138 Ch. Latour Grand Cru Classé (Pauillac) 1998 270.00 * Steven Tanzer IWC: Red-ruby. Deep aromas of cassis, licorice and lead pencil. Deeper than Les Forts but currently rather mute in the middle. Strongly minerally. Offers classic Latour structure and spine. Finishes with sneaky, subtle persistence. Score 91

R158 Ch. Pavie (St. Emilion) Magnum 1999 406.00 * The inky/ruby/purple-colored 1999 exhibits a tight but promising nose of crushed stones, a liqueur of blackberries, cherries, and black currants, and subtle smoke and licorice in the background. Powerful, with impressive elegance, fine harmony among its elements, a multi-layered texture, it has a finish that lasts for 50+ seconds. There is considerable tannin, but it is well-integrated. Give it 3-4 years, and drink it over the next two decades. A profound effort for the vintage, it is an example of a perfectionist proprietor pushing the envelope of quality. "The 1999 Pavie is a candidate for "wine of the vintage". It boasts an opaque ruby/purple color in addition to gorgeous aromas of crushed minerals, smoke, licorice, cherry liqueur, and black currants. The wine is exceptionally pure and multilayered, with stunning texture and overall balance. The tannin level suggests 3-4 years of cellaring is warranted; it should age gracefully for 25+ years. If readers are wondering why Pavie has become so much better under the administration of Chantal and Gerard Perse, keep in mind that yields are one-third of what they were under the previous owners." - Robert Parker’s Wine Advocate: 95 points

R205 Ch. De Lamarque Cru Bourgeois 1999 60.00 * Wine Advocate: “This is an excellent, seductive, lower level cru bourgeois with loads of blackberry and cherry fruit intermixed with a smoked herb component. Some spicy oak is also evident. The wine is medium-bodied, with good fruit, and balance.”

R224 Ch. Cambon la Pelouse (Haut Medoc) 2000 68.00 * The Wine Enthusiast: “The 2000, which has a slightly more saturated ruby/purple color than the 2001, is fleshier,

with a more substantial mouthfeel. Exhibiting sumptuous fruit, ripe tannin and a seamless texture, this serious Haut-Medoc is equivalent to many classified growths.”

Decanter, 4 out of 5: Classic cassis/cedar Medoc bouquet, quite dry and restrained. Fine fruit and good elegant wine, shows elegance, depth and finesse. Drink 2-10 years.

R220 Ch. Rauzan-Segla (Margaux) Magnum 1.5 Ltr 2000 495.00 * Score 90 Robert Parker: “The dark ruby/purple color is saturated and impressive. With coaxing, notes of lead pencil shavings, black currants, earth, cedar, and spice box emerge from a relatively closed, firm, medium to full-bodied wine or, as the French would say, a classic vin de garde (for long-term cellaring). There is no denying the classicism and purity of this 2000. Best drinking: 2010-2025.”

R226 Ch. Rauzan-Segla (Margaux) 2000 269.00 * Score 90 Robert Parker: “The dark ruby/purple color is saturated and impressive.

R232 Ch. Rauzan-Segla (Margaux) 2003 112.00 * 95 points James Suckling What a decadent nose, with strawberry pie, cream, vanilla, and exotic fruits. Almost new world in style. Full and round, with minty, bright fruits on the palate. Long and wonderful, exciting and fresh. A real beauty. Closes down a little bit, but this is still a big surprise. Pull the cork after 2015

R203 Les Forts de Latour (Pauillac) 2000 180.00 * Score 92 Robert Parker: “The 2000 Les Forts de Latour is a seriously endowed wine with notes of black walnuts, black currants, crushed rock, tobacco and spice box. Full-bodied, luscious but still in need of another 2-3 years to hit full maturity, it certainly can evolve for another 15 or more years, and looks to be slightly richer and longer-lived than I originally predicted.” Drink 2012-2027

R221 Ch. Gazin (Pomerol) 2000 135.00 * Score 92 Robert Parker: “A big, backward, full-bodied Pomerol, the 2000 Gazin appears to have added weight as well as structure. Still young, it exhibits beautiful notes of sandy, loamy soil intermixed with mulberries, black cherries, cedar, and licorice. Tightly wound, powerful, and rich, with noticeable oak, it needs another 3-5 years of bottle age, and should drink well for two decades. Best drinking 2010-2030”

R214 Ch. Figeac (St. Emilion) 2000 201.00 * Score 93 Robert Parker: “Figeac has become a more consistent wine over the last few years. A profound effort, the surprisingly full-bodied 2000 Figeac has an opaque purple color accompanied by a terrific bouquet of camphor, graphite, black currants, licorice, and smoked herbs. With well-balanced, powerful tannin, concentration, and pinpoint precision, finesse, and purity, this expressive as well as textured effort will drink well between 2004-2018. When Figeac hits on all cylinders, one can understand why some tasters believe it is as complex as Cheval Blanc. This is undeniably the estate's finest effort since 1996.”

R97 Ch. La Conseillante (Pomerol) 2000 385.00 * Score 96 Robert Parker: the 2000 La Conseillante has a deep ruby/plum/purple color and an unbelievably expressive nose of sweet kirsch liqueur intermixed with raspberries, incense, toast, and licorice. Full-bodied yet ethereal in the sense that it seems to combine power along with eloquence and delicacy, this is a beautifully pure wine that has just hit its plateau of full maturity, although ideally I think it would benefit strongly from another 4-5 years of bottle age and drink well for two to three decades. (Jun 2010)

R98 Ch. Mouton Rothschild (Pauillac) 2000 727.00 * Score 96+ Robert Parker: “Perhaps the most beautiful packaging ever on a Bordeaux bottle, Baroness Philippine de Rothschild literally produced a work of art in the gold-engraved bottle of 2000 Mouton Rothschild. Of course, one can’t drink the glass, but this is a top-flight Mouton Rothschild, eclipsed only by the 2006 and 2009. A rich, tannic, earthy style, with loads of creme de cassis and floral notes, the final blend of 86% Cabernet Sauvignon and 14% Merlot is a full-bodied wine with plenty of coffee, earth, chocolatey notes, and still plenty of tannin to resolve. I gave it an anticipated maturity range of 2015-2050 back in 2003, and that looks on target. The 2000 Mouton Rothschild is at its best with about 24-48 hours of decanting. A blend of 86% Cabernet Sauvignon and 14% Merlot, the wine offers a saturated ruby/purple color in addition to reticent but promising aromas of toast, coffee, licorice, creme de cassis, and roasted nuts. Dense, chewy, and backward, with tremendous purity and density in addition to obvious toasty oak, it is full-bodied, powerful, tannic, and backward. Twenty-four to 48 hours of aeration only hints at its ultimate potential. This blockbuster will be exceptionally long-lived

R216 Ch. Pavie Macquin (St. Emilion) 2000 191.00 * Score 95+ Robert Parker: “A wine of great density, concentration, and intensity, the opaque blue/purple 2000 Pavie Macquin needs considerable aeration, but with decanting the prodigious bouquet of graphite, camphor, blackberry, blueberry, mineral, coffee, and smoky oak finally makes an appearance. Persuasive, expansive, full-bodied, and muscular, this enormously endowed, rich wine looks set for a long life, at least three decades. A terrific effort that rivals the compelling 1998. Anticipated maturity: 2010-2030+

R219 Ch. Canon (St. Emilion) 2000 165.00 * Score 90 Robert Parker: “This elegant St.-Emilion has filled out nicely over the last decade. From barrel and post-bottling, I thought it might turn out austere, but that does not appear to be the case. It offers a deep ruby/purple color as well as copious aromas of black cherries, crushed rocks, and earthy undertones. While not a blockbuster, it is beautifully balanced and pure, revealing slightly more depth and richness than I expected. Best drinking 2010-2025”

R228 Ch. Ducru-Beaucaillou (St. Julien) 2002 108.00 * Score 89 Robert Parker: “The wine has a deep ruby/purple-tinged color, excellent density, and medium body in an elegant style with a hint of road tar and sweet fruit. It should drink well young but age nicely for 12-15 years.”

R234 Ch. Grand-Puy-Lacoste (Pauillac) 2003 100.00 * Robert Parker: “A deep ruby/purple-tinged color is followed by a moderately intense bouquet of black currants and underbrush. It hits the palate with good fruit and medium body, but tails off in the finish. It is an elegant, lighter-styled example of this generally high-class performer. It can be consumed over the next 10-12 years.” Best drinking 2006-2018

R237 Ch. Gruaud Larose (St. Julien) 2004 83.00 * "Intriguing, complex nose with layers of black and red fruit and toasted oak, tobacco, spice and alluring minerals. Beautifully textured with an airy lift and vitality." Decanter- Wines of the Year

R239 Ch. Cos d’Estournel (St. Estephe) 2004 137.00 * Score 92 Robert Parker: “A beautiful example of the vintage, proprietor Michel Reybier and his top-notch winemaker, Jean-Guillaume Prats, have fashioned an exceptional wine displaying a dense ruby/purple color as well as a sweet perfume of boysenberries, black currants, cherries, pain grille, roasted herbs, and licorice. Medium-bodied with impressive density for the vintage, sweet tannin, and outstanding richness and length, it should be at its finest between 2009 and 2020+.”

R40 Ulysse Cazabonne Ch. Lalande Borie (St. Julien) 2005 78.00 *

R120 Ch. Capet-Guillier Grand Cru (Saint Emilion) 2005 64.00 * Rich and robust, this is an old-fashioned style of Saint Emilion, composed in most years of 80% Merlot and 20% Cabernet Sauvignon.

R70 Les Brulières de Beychevelle (Haut Medoc) 2006 56.00 * The appearance is deep crimson. The bouquet displays aromas of violets, blackcurrant, cedar and spice. On the palate flavours of truffle, cedar and blackcurrant emerge. Excellent structure, with fine grained tannin, followed by a long aftertaste of spice, cedar, truffle and confectionery. Overall, Brulières is a standout, classic Claret rivalling most Cru Bourgeois wines and which clearly benefits from the attentions of the Château Beychevelle team.

R149 Chateau Les Hauts de BelAir 2014 25.00

R127 Ch. Capet-Guillier Grand Cru (Saint Emilion) 2006 60.00 Chateau Capet-Guiller is a rather lovely, elegant Saint Emilion planted on clay-limestone slopes, in the commune of St Hippolyte, with an average vine age of 35 years. A Merlot-dominated blend, enriched by 20% new oak, makes for a wine which is, at once, supple and accessible, with dark, berried fruit and spice, supported by fine-grained tannins.

R243 Ch. Smith-Haut-Lafitte (Pessac-Leognan) 2006 104.00 * Score 93 Robert Parker: “A top-notch success, the dense ruby/purple-colored 2006 Smith-Haut-Lafitte offers aromas of smoky, juicy black currants, graphite, earth, truffles, and forest floor. Full-bodied with superb purity, noticeable but sweet tannins, this round, generous, long wine should drink nicely for 15-20+ years. One can’t say enough about the work proprietors Daniel and Florence Cathiard have done at Smith-Haut-Lafitte since 1990.” Best drinking 2009-2029

R37 Ch. Saintem Grand Cru 2009 58.00 Rounded, ripe and inviting, with freshly crushed plum, blackberry and blueberry fruit woven with toasty spice and framed by a lingering cocoa edge on the finish. Merlot. Best from 2013 through 2020. Score - 90. (James Molesworth, winespectator.com, March 31, 2012)

R21 Ch. D’Aggasac (Haut Medoc) 2009 72.00 “Fine fragrant lifted cassis nose, classy modern Cabernet fruit, very good expression of southern Medoc fruit,

classy and classic. Drink 2013-18.” 16.5 points Decanter. 16 pts Jancis Robinson

R188 Chateau Teyssier Montagne (St. Emilion) 2010 38.00

R171 Chateau Rahoul Recolte (Graves) 2010 55.00 Polished and alluring, with black tea, dense plum and blackberry fruit, followed by a long, licorice- and tar-filled finish that glides along with surprisingly polished structure. An echo of smoky tobacco lingers as well, and this offers good range and depth. Best from 2014 through 2021. Score - 90. (James Molesworth, Wine Spectator, web only, 2013)

R89 Ch. Grand Terrier des Eyriaux Bordeaux Superieur 2011 33.00 Ripe black plum and cassis fills out the nose and this black fruited power is there on the palate. Ripe feeling tannins give a mid suppleness lovely and fleshy. The ripe cassis is backed by firmer black cherry with towards the back coffee and spice giving an added complexity. The finish is sweet fruited and quite rich." 93 points - Derek Smedley, Master of Wine, June 2012 (2009 vintage)

R45 Chateau Clos de Sarpe (St. Emilion) 2011 162.00

R58 Ch. La Croix Bonis (St. Estèphe) 2011 67.00 Closely affiliated with Château Phélan Ségur, “La Croix Bonis” comes from selected plots in the estate, most of which are Cabernet Sauvignon, located on the best land in Saint Estèphe. The Gardinier family strives and succeeds in producing a great wine, reputed as one of the appellation’s best. Careful vineyard management including controlled yields and sustainable crop practices help to achieve such year-to-year quality. The harvest is picked entirely by hand, and carried in small trays. After strict sorting, only the very best grapes are kept. Winemaking takes place at Château Phélan Ségur, using the best techniques. True to character, “La Croix Bonis” will be as enjoyable as the great Saint Estèphe wines

R141 Domaine Bouchard Père et Fils Nuits St. Georges “Les Cailles” 1er Cru 2000 99.00 Wine Advocate: “The dark cherry-scented 2000 Nuits-St.-Georges Les Cailles reveals excellent amplitude to its satin-textured, medium-bodied personality. Blackberries dominate this well-balanced wine’s flavor profile.”

R199 Domaine Bouchard Père et Fils Volnay Caillerets 1er Cru Anciènne Cuvée Carnot (Cote de Beaune) 2004 79.00

Burgundy Report: “Medium ruby-red. Depth and dimension on the nose – really grandstanding at the moment, and the oak is barely perceptible. Mouth-filling and concentrated, there’s good depth and plenty of tannin. There is a little oak flavour, but nothing compared to what its 05 and 06 cousins currently show. The finish is a little warm, but long. Very well balanced and has the sweet fruit which is the hallmark of the vintage.”

R183 Compte Georges de Vogue Bonnes Mares Grand Cru 2000 358.00 Score: 96 points, Wine Enthusiast. “More blueberry fruit and violet aromas with big, robust, very powerful, linear flavors with chewy tannins and outstanding persistence. This stains the palate and coats the mouth and offers superb fruit/acid balance.” Burghound

R192 Domaine Bouchard Père et Fils Nuits Saint Georges Clos Saint-Marc 2002 132.00

Score 90 Robert Parker “The fresh red fruit-scented 2002 Nuits-St.-Georges Clos St.-Marc is light to medium-bodied, lively, and detailed. It displays copious quantities of red cherries in its nuanced, well-ripened character.”

R198 Domaine Bouchard Père et Fils Pommard Rugiens 2004 91.00 Score 89-92 Stephen Tanzer, IWC: “Red-ruby. Captivating nose shows more fruit complexity and finesse than the Pezerolles, offering raspberry and iron notes and a whiff of licorice. Suave, broad and vinous; less fat but more subtle and nuanced than the Pezerolles. Elegant and bright on the back end, which features substantial but fine tannins. Classy Pommard in the making.”

R118 Ch. Langoa Barton (Cote d’Or) 2004 75.00

90 Points Robert Parker: “Another sleeper of the vintage from this somewhat under the radar step-child of Anthony Barton’s more famous Leoville Barton, the 2004 Langoa Barton exhibits deep, concentrated, chunky, black currant and cherry fruit intermixed with notions of forest floor and aged beef blood. This impressive, full-bodied, powerful, ageworthy St.-Julien is atypically backward and brooding. Anticipated maturity: 2013-2025+”

R27 Tollot-Beaut Savigny 1er Cru Les Lavières (Cotes du Beaune) 2005 83.00

R34 Dom. Taupenot-Merme Saint Romain (Cote d’Or) 2005 64.00 Vintages: Very deep intense purple colour. Intense, slightly spicy, youthful, plummy, cassis nose with some vanilla stick notes. Dry, medium bodied, quite well structured, youthful, plummy, dried red cherry flavours with a lingering finish.

R123 D. Louis Latour Beaune Perrières 1er Cru (Cote d’Or) 2005 78.00

R200 D. Louis Jadot Savigny les Beaune ‘La Dominode’ 1er Cru 2006 72.00 Jadot's 2006 Savigny-Les-Beaune La Dominode is predictably denser and meatier than the corresponding Guettes, as well as yet more inflected by mineral suggestions of sealing wax, chalk and salts. Bright fresh red raspberry fruit compliments low-toned rich, roasted meatiness with the mediation of those mineral notes, and this finishes with sustained, strong, lip-smacking savor and a dynamic, Riesling-like interplay of fruit and mineral elements. The structure here is sinewy but the texture seamless. This will probably be even better in a couple of years and be worth following for the better part of a decade. Speaking of which, Lardiere has begun working these vines biodynamically and claims you will see significant improvement in the next couple of years in this wine. Score - 91. (David Schildknecht, erobertparker.com, Dec. 2009)

R93 Dominique Piron Moulin-a-Vent Les Vignes du Vieux Bourg 2007 39.00

R122 D. Gachot-Monot Cotes de Nuits Villages 2007 63.00 Amazing red Burgundy value. Soft and caressing on the palate, with cherries, strawberries, red plums, currants and fresh minerals robe in a creamy flavor. Plenty of body for this price point. This is a true value not only for Burgundy, but also for Pinot Noir.

R60 Ch. Tour Pibran (Medoc) 2009 76.00 90 points: A major sleeper of the vintage from the owners of Pichon Longueville Baron, this blend of 60% Merlot and 40% Cabernet Sauvignon displays plenty of coffee bean, creme de cassis and sweet cherry notes in a very intense, full-bodied, opulent style. There is some serious power underlying the extravagant fruit. (Robert Parker, The Wine Advocate, February 2012)

Côtes-du-Rhône

R81 Domaine J.L. Chave Hermitage Rouge (Northern Rhone) 2000 211.00 Score 96 Robert Parker: “Along with the single vineyard offerings from Michel Chapoutier, Chave’s 2000 Hermitage is a candidate for this appellation’s “wine of the vintage.” A dense ruby/purple color is accompanied by sumptuous aromas of licorice, blackberries, currants, spice box, and earth. Deep, full-bodied, and rich, with moderately high tannin, it is atypical for the vintage given its structure and density (two characteristics most 2000 northern Rhones lack). It is a brilliant achievement in a challenging year. Anticipated maturity: 2007-2035.”

R190 Domaine Patrick Jasmin Cote Rotie 2001 91.00 Robert Parker Score 90-92 “The 2001 Cote Rotie’s deep ruby color is accompanied by explosive aromas of sweet raspberry fruit intermixed with a hint of apricots (7-8% Viognier is added to the blend). Well-delineated and floral, with a cherry/raspberry fruit component beautifully displayed, this medium-bodied 2001 is not a blockbuster, but it wins the taster over with its delicacy and finesse.”

R186 Chateau La Nerthe Chateauneuf-du-Pape 2012 73.00 Juicy and lively, with good energy coursing through the core of plum, anise, blackberry and fruitcake flavors, while sweet spice and juniper hints fill the finish. Offers a chewy feel without being heavy. Best from 2016 through 2023. Score - 91. (James Molesworth, winespectator.com, Sept. 30, 2015)

R82 Domaine Brusset Gigondas 'Le Grand Montmirail' (Côtes-du-Rhône) 2007 78.00 The most recent vintage from this celebrated domaine, whose winemaker is considered by Clive Coates to be “one of the southern Rhone’s best.” A blend of low yielding, hand picked vines comprising 65% Grenache, 15% Syrah, 15% Mouvèdre and 5% Cinsault. The wine boasts a deep crimson colour, ripe red fruit aromas with a touch of mineral and vanilla. The palate is generously full-bodied with silky tannins and has an exceptionally well integrated finish. Definitely a find and a little gem at the price. Robert Parker writes on the 2007 vintage: "Throughout the southern Rhône, 2007 is the greatest vintage I have tasted in my thirty years working in that region."

Very solid. Drink now through 2018. 6,500 cases made." 90 points, Wine Spectator, Oct 2012

R6 Domaine Saint Michel (Cotes du Rhone) 2012 29.00 An outstanding cuvee from a small family estate, in a fantastic vintage. Run by the Boyers in their Medieval fortified

house in the Rhone valley. A delicious, classic red from southern Rhone. Made from Grenache, Syrah and Cinsault it is

fresh and fruity. Persisting aromas of red berries enhanced by the lingering fragrance of blackberries and cherries in

brandy. Soft tannins and ripe brambly fruit. Delicate and creamy mouthfeel

R49 Alain Graillot St. Joseph Rouge (Northern Rhône) 2010 $63.00 "This kicks off with a lively licorice snap note, followed by mouthwatering plum skin, linzer torte and boysenberry confiture notes, all framed by a well-embedded mesquite edge through the finish. R182 Brokenwood Graveyard Vineyard Shiraz (Hunter Valley) 2007 148.00 96 pts James Halliday, Australian Wine Companion; 93 pts Wine Advocate The Wine Enthusiast: “One of the Hunter Valley’s top bottlings, Brokenwood’s Graveyard Vineyard is still marked by hints of toasty oak at this young stage in its evolution. Vanilla accents lifted sour cherry and cranberry aromas, but on the palate the flavors darken and deepen, trending toward black cherries and plum. R202 Cullen Diana Madeline Cab/Merlot (Margaret River) 2009 126.00 Langtons Classification 2005 - "Exceptional" Vanya Cullen has taken her cabernet merlot into the top echelon of Australian cabernet through determination and superb technical skills. The vineyard site is planted on granitic soils in the central Willyabrup subregion of Margaret River. Cullen has adopted biodynamic viticulture principles to "achieve greater individuality of site through working with nature rather than against it". This estate style is about freshness and complexity, structure and suppleness. There are cassis and cedar aromas with fine, beautifully ripe tannins, and earthy, anise, gamy aromas and flavours develop with age. Named for Diana Cullen, who established the winery and vineyard with her husband in 1966.

R176 Penfolds Thomas Hyland Shiraz 2009 32.00 The Thomas Hyland Shiraz is buoyant with a fresh style that contains plenty of juicy blackberry fruit aromas and flavours, chocolaty, ripe tannins and some savoury oak nuances. R178 Kilikanoon Killerman’s Run Shiraz (Clare Valley) 2009 32.00 “Look no further for your favourite Aussie red! Since 2001 this wine has been awarded scores of 90 and up in Robert Parker’s Wine Advocate. By sourcing grapes from prime Australian vineyards and ageing the wine for up to two years in small French and American oak barrels, Kilikanoon crafts a fruit driven Shiraz. Densely flavoured with smoky black fruit, spices and toasted oak, pair this wine with Roast beef or aged hard cheeses.” Vintages.

R177 Mitolo ‘The Jester’ Shiraz (McLaren Vale) 2010 36.00 “This full-bodied, juicy Shiraz delivers upfront and approachable aromas of chocolate-covered dark cherries, anise, allspice, coffee and hints of oak. R103 Spinifex Papillon (Barossa Valley) 2010 58.00 “Crystal clear, light, bright purple; a Grenache/Cinsaut/Carignan/Shiraz blend; the flowery red berry bouquet is followed by a light- to medium-bodied palate that has an overall savoury personality, even though the red fruit notes are still important; filigree tannins on the very long finish. Drink [until] 2020.” Score - 94. (James Halliday, winecompanion.com.au, Aug. 11, 2011)

R159 Terlato & Chapoutier Lieu dit Malakoff Shiraz (Victoria-Pyranees) 2010 80.00 “These Chapoutier wines are sometimes reviewed by my colleagues David Schildknect in his Languedoc-Roussillon report and Lisa Perrotti-Brown in her reviews of Australian wines, so I will just list the wines, my score, and the region from which they emerge. R36 Shaw & Smith Shiraz 2010 72.00 This label has, in a very short time, established itself as one of Australia's greatest expressions of Shiraz and this 2010 may just be the best to date. On the 2010 vintage, Ben Edwards in the Halliday Companion writes "a complex bouquet, with a wealth of red and black fruits, spice and ironstone complexity; the medium to full bodied palate is fleshy, silky, rich and almost hedonistic in its appeal; long, languid and beautifully detailed from start to finish; excellent viticulture and winemaking in total harmony. Drink by:

R69 Avignonesi Merlot Toro Desiderio 2003 88.00 This is an intense wine produced mainly from Merlot with a dash of Cabernet Sauvignon. For those people who enjoy the finer wines of Pomerol then this is for you. It is barrique-aged for about 30 months with a further refinement in bottle for six months prior to release. International Wine Cellar (Stephen Tanzer) rated the 2003 bottling of this wine 92 points. "A fruit bomb, with loads of coffee and intense blackberry character. Full-bodied, thick and very jammy, with loads of fruit and flavour. I like the jammy Aussie style of this. Still fresh at the end. Merlot and Cabernet Sauvignon. Best after 2008"

R38 Valdicava Brunello di Montalcino 2004 170.00 95 pts Wine Spectator: “Displays complex aromas of blackberry and cherry, with a hint of licorice.Full-bodied, with silky tannins and a delicious finish of wonderful yet subtle fruit. Well-integrated and beautiful. Everything is in the right place.” Best after 2011-2014 through 2024.

94 pts Robert Parker: “The 2004 Brunello di Montalcino is simply beautiful. Now that the wine is in the bottle it is even better than when I tasted it from barrel. Firm but silky tannins frame a core of ripe dark fruit as this powerful yet elegant Brunello opens up in the glass. Smoke, cured meats, earthiness and graphite develop in the glass, adding further complexity. Sweet roses and spices linger on the long, refined finish. This is a big structured Brunello, and like all of Abbruzzese’s wines, it needs at least a few years of bottle age before it offers its finest drinking.”

R39 Hunter’s Pinot Noir (Marlborough) 2010 37.00 Rich ripe plum, berry and subtle forest floor aromas marry together for a smooth medium bodied Pinot Noir. The palate shows persistent rich cherry/plum flavours and mild spicy oak making an enjoyable and easy drinking wine. “If there is one company that started the whole international story called Marlborough Sauvignon Blanc it is Hunter’s – they got the magic started”. Bob Campbell MW

Alluring and elegant. A modern-style wine with distinctive regional flavors. Smoky chocolate notes from new oak frame intriguing notes of wild berry, mountain herbs and minerals. Focused and still fresh..--Thomas Matthews 93 points The Wine Advocate

R135 B. Resalte de Peñafiel Reserva 2004 80.00 “Toasty, smoky notes frame a fresh core of black cherry and plum in this firm, vibrant red. Lively acidity keeps this juicy and refreshing, yet plenty of concentration provides depth. Harmonious and long. Drink now through 2016.” Score 94, Thomas Matthews, winespectator.com Aug 2010

R43 Casado Morales Selecciόn Privada 2005 57.00 The 2005 Seleccion Privada is a blend of 60% Tempranillo and 40% Graciano. Purple-colored, it surrenders a lovely aromatic array of wood smoke, incense, brier, lavender, black cherry, and blackberry. Medium-bodied and elegant on the palate, this concentrated effort conceals enough structure to blossom for another 4-5 years. It will offer a drinking window extending from 2014 to 2025. Score - 93. (Jay Miller, erobertparker.com, June 2010)

R47 Castano La Casona Monastrell (Yecla) 2009 25.00 The miracles performed at Bodegas Castano have attracted the attention of leading critics, opinion-leaders and buyers the around the world. Nobody can believe just how wines this good, at prices this cheap, can be produced, and all in a region that was until recently wholly unknown to anyone involved with quality wine. -erobertparker 90pts: "Dark fruit, pepper spice and leather nose, dry, med-ripe tannins, med-full body, intense, and fresh finish."

R14 Clos Figueras Priorat Tinto Font de la Figuera 2007 81.00 “Lively and expressive, this red brims with wild berry, mountain herb, mineral, smoke and black pepper flavors. Though supple, it has a firm grip and juicy acidity, with a long, vibrant finish. Drink now through 2017. Tasted twice, with consistent notes. 720 cases made.” 93 points, Wine Spectator

R5 Tilenus Envejecido en Roble 2007 32.00 “The 2007 Envejecido en Roble exhibits a perfume of toasty oak, Asian spices, lilacs, and black raspberry. In the glass it displays layers of spicy fruit, a hint of minerality, and a sense of elegance. R7 Del Quorum Nacido del Quorum Seleccion 2007 34.00 “Dark ruby in color, it sports an inviting nose of wood smoke, incense, Asian spices, black cherry, and blueberry. This leads to a supple, ripe, velvety-textured wine with ample spicy black and blue fruit flavors and a finish with no hard edges. R153 Luis Canas Crianza Rioja 2011 32.00

R28 J. Palacios Pétalos Bierzos 2011 53.00 The wine is very aromatic and flowery (violets), almost heady, with clear notes of blueberries and licorice. The oak is perfectly integrated, almost imperceptible, save for a touch of spices and a lactic hint denoting a very young wine. It has a medium body, with a thick silky texture, is very tasty, with some acidic strawberry flavors. This is one of my go-to wines at restaurant lists, as it offers very good value for money and is widely available in Spain (and elsewhere, I hope!), as 320,000 bottles were produced. This could very well be the best Petalos produced to date. Drink now through 2019. Score - 92. (Luis Gutierrez, erobertparker.com, Aug. 2013)

R251 Barahonda Barrica Monastrell 2011 32.00

The 2011 Barrica (75% Monastrell and 25% Syrah) is the richest and densest. It offers up camphor, pepper, bouquet garni, roasted meat, black currant and earthy blue fruit. R92 Bodegas Castaño Hecula Old Vines Monastrell 2012 25.00 "The basic offering from proprietor Ramon Castano Santa, who owns a whopping 1,000 acres in Yecla, is the 2012 Hecula, which is sourced from a non-irrigated, single vineyard planted with 100% Monastrell. Aged in both tank and French oak, it comes from 60-80-year-old vines planted in limestone soils at a relatively high elevation of over 1,600 feet. Its opaque purple color is followed by copious aromas of blueberries, black raspberries, camphor, licorice, white flowers and a chalky limestone/dusty character. Full-bodied, rich and well-balanced, it is an incredible value." 91 points - Robert Parker, Wine Advocate, Nov 2013

R52 Barahonda Carro 2014 36.00 "The 2014 Carro is a ridiculous value in a full-bodied, complex, rich and savory dry red wine. Dense ruby/purple

with notes of blackberry and blueberry fruit, licorice and camphor, the wine is totally unoaked and naked. This

is a beauty of purity and richness and just goes to show what one can buy if careful with researching importers.

Drink it over the next several years." 90 Points – Robert Parker

R134 Barahonda Campo Arriba Old Vines 2014 53.00

"The 2014 Campo Arriba comes from one of the highest elevations in Yecla and it's a blend of 70% Mourvèdre,

20% Syrah and 10% Grenache aged three months in small French oak. This winery, started in 1925 by the Candela

family, has really hit pay day with this amazing value. Blackberries, blueberries, acacia flowers, and chalky

minerality dominate the aromatics and flavors. It is full-bodied, the price is absurdly low for a wine of this quality,

and I suspect it can age nicely for another 5-6 years, although its true value is its exuberance, fruit purity and

density." 93 points - Robert Parker, Wine Advocate, Nov 2015

R29 Cain Cellars ‘Cain Five’ (Napa Valley) 1993 $172.00 * Produced from the five grape varieties permitted to be used in Bordeaux (Cabernet Sauvignon, Cabernet Franc, Merlot, Petit Verdot and Malbec), this wine is an opaque purple colour, with a complex nose dominated by aromas of cassis. Medium to full-bodied on the palate, it displays generous black fruits, well integrated acidity, subtle French oak and soft tannins. All of these elements are well balanced, resulting in cellar-worthy wine that is also enjoyable now.

High acidity dances around fresh layers of strawberry and raspberry on the palate, with a grippy, cinnamon-spiced finish. (Wine Enthusiast)

R95 Marimar Don Miguel Vinyard Pinot Noir (Russian River Valley) 2005 74.00 This vintage shows amazing depth, with aromas of faded roses and black cherry. The palate is velvety and rich, with firm tannins and toasty oak rounding out the silky mouthfeel. Notes of mocha and spice show up in the end and contribute complexity to this captivating Pinot Noir.

R210 Cherry Pie Stanly Ranch Pinot Noir (Carneros) 2012 88.00 "Pale-medium bright red. Aromas of raspberry, brown spices and underbrush are lifted by a floral note. Silky and light on its feet, with ripe acidity framing the rich, sweet flavors of red berries, red cherry and earth. Offers good fat without excess weight, finishing with a fine dusting of tannins and very good length. Sweeter and more expansive than the 2011 bottling. Jayson Woodbridge's pinots have gotten much subtler and more perfumed in recent vintages." 90 Points (Wine Enthusiast)

R129 Joseph Phelps Insignia Estate Bottled 2005 228.00 Score 95+ points Robert Parker (Nov 2013): “The wine possesses a European-like structure because of the firm tannins and slight austerity, but it exhibits a beautiful density of fruit. Not yet an adolescent, this youthful 2005 reveals an inky/purple color as well as notes of lead pencil shavings, charcoal, black currants, cedar and underbrush. Full and rich, but backward and structured, it needs to be forgotten for another 3-4 years, and drunk over the following 25 years. An extraordinary amount of rain fell between January and June of 2005, causing some flooding in lower areas of Napa Valley. The flowering was enormous and it was clear a potentially huge crop was in store for growers unless crop-thinning was employed. The warm summer, with a few heat spikes in July and August, was followed by a cooling trend that ushered in a perfect Indian Summer that allowed growers to extend their hang-time, and harvest throughout the month of October. Some of the mountain vineyards did not finish picking until mid-November – very late for Napa. The 2005 Insignia, made from 100% estate fruit, is composed of 92% Cabernet Sauvignon, 7% Petit Verdot and 1% Merlot that achieved 14.5% natural alcohol. It was aged 24 months in 100% new French oak.”

R8 Kenwood Yulupa Merlot (Sonoma County) 2007 31.00 "Fruity aromas of figs and plums with more complex notes of fresh herbs, well balanced tannins and rich mouth feel give way to a long, elegant finish."

R140 Cakebread Cellars Dancing Bear Ranch Cabernet Sauvignon (Napa) 2007 149.00 Score 91 points Robert Parker “The dense purple-colored 2007 Dancing Bear Ranch Proprietary Red reveals more chocolate fudge and coffee notes. It does not have the nuances or complexity of the Benchland Select or the sheer joy of the Napa Cabernet Sauvignon, but there is a lot going on in this cuvee. Slightly monolithic, it is well-endowed, rich and full, so my rating may be slightly conservative.”

R51 Jonata Todos Vineyard Blend (Santa Ynez Valley) 2008 81.00 “The 2008 Todos (mostly Syrah) bursts from the glass with expressive blackberries, blueberries, smoke, tar and incense.

It is an exotic, full-bodied wine supported by considerable freshness and vibrancy. A clean, layered finish rounds things out nicely. In 2008 the blend is 65% Syrah, 17% Cab Sauv, 5% Merlot and the rest assorted other varietals.” 92 pts The Wine Advocate, Aug 2011

R139 La Sangre de Jonata Syrah (Santa Ynez Valley) 2008 162.00 Score 95 Robert Parker: “The 2008 La Sangre de Jonata is a huge, opulent wine. Layers of blue and black fruit, graphite and licorice flow from this large-scaled, muscular Syrah. This is a super-ripe style that needs a few years in bottle to settle down. It is also the only wine I tasted where the alcohol is slightly intrusive. La Sangre de Jonata is 98% Syrah and 2% Viognier. The wine was aged in medium-sized barrels, 50% new. Anticipated maturity: 2014-2022.”

R44 L. de Lyeth Cabernet Sauvignon (Sonoma Valley) 2009 32.00 Delicious, complex hints of plum, cherry, blackberry and truffle. Rich and concentrated with layers of juicy plum, black currant and coffee nuances. A gorgeous, medium-bodied wine that finishes with polished tannins allowing the ripe fruit flavors to show through.

R148 Calera Ryan Vineyard Pinot Noir (Mt. Harlan) 2009 78.00 Score 93 points The Wine Advocate: “The 2009 Pinot Noir Ryan Vineyard shows off layers of sweet tobacco, crushed flowers, leather, spices and dried cherries. The 100% whole clusters come through on the saline, floral-infused finish. Bottle age should help the stems to integrate and the tannins to soften. Ryan is Calera’s highest altitude site. Anticipated maturity: 2014-2024.”

R94 Caymus Napa Valley Cabernet Sauvignon 2009 98.00 "Supple and creamy-textured, with mocha, ripe plum and cherry flavours that show touches of tobacco, espresso and underbrush. Full-bodied, gaining tannic traction on the finish, elegant and readily approachable. Drink now through 2018." Wine Spectator, 91 points.

R18 Ch. Montelena Napa Valley Cabernet Sauvignon 2009 81.00 "The 2009 Cabernet Sauvignon is wonderfully supple and fragrant. Silky tannins frame a core of expressive dark red fruit. Floral and spice notes are nicely woven throughout. This textured, gracious Cabernet Sauvignon should continue to age gracefully for another 7-10 years, but it is awfully good right now. The blend includes 7% Merlot and 1.5% Cabernet Franc in 2009. Anticipated maturity: 2012-2019." 91 points, Robert Parker's Wine Advocate, Dec 2011

I say that because of its tannic structure and spice. This serious full-bodied, concentrated 2012 will benefit from 2-3 years of bottle age, and should drink well for two decades. R119 Sextant Zinfandel (Central Coast) 2013 38.00 This wine from San Ardo Ranch in the San Lucas appellation wins against Zins twice the price. Burgundy

Chablis produces white wines made from the Chardonnay grape. These are classified (in descending order of quality) as Grand Cru, Premier Cru, Chablis and Petit Chablis. With an aroma reminiscent of wet stones, Chablis derives its uniqueness from the chalk soil in which the vines are grown. Unlike white Burgundy from the Côte d’Or, Chablis is typically lean and zesty. Not all Chablis wines are aged in oak.

W202 J. Drouhin Laforet Bourgogne Chardonnay (Chablis) 2008 36.00 Laforêt Bourgogne Chardonnay from Maison Joseph DROUHIN is made from 100 % Chardonnay grapes, picked by hand, coming from all over Burgundy. It derives its bouquet and taste from various "terroirs" ; its general character from Mâcon, its crispy structure from Chablis, its body from Rully, Chassagne and Puligny-Montrachet depending on certain vintages, and its overall nascent complexity from the young vines of Joseph Drouhin`s own "Crus". The Laforêt Burgundy white is an aromatic wine, with robust flavors and fruit, recalling the fresh grape and the green almond. "Fruity and full of life. This is a classical white Burgundy and a good entry level wine for Burgundy in general. The colour is golden yellow, with a greenish glint. The aromas are reminiscent of fresh grape and green almond. Elegant texture".

Warm yet fresh mouth feel with a delightful array of flavours, which leas onto a beautiful finish underpinned with subtle minerality.

Languedoc/Roussillon W80 Baron de Montgaillard Blanc (Pays D’Oc) 2015 28.00

This superb bargain white is an innovative (and rather exciting) 50-50 blend of Roussanne, the classic white grape of the southern Rhône, and Sauvignon Blanc, the mainstay of the Loire Valley. The blend is a marriage made in heaven, combining the plump, round, opulent texture of Roussanne, with the nervy, electric energy of a Loire Sauvignon Blanc. Remarkably, neither grape variety predominates, yielding a strikingly well balanced wine featuring the yellow apple, mango, and white flower notes of a top-quality Côtes-du-Rhône Blanc, with the zip and flinty crispness of a good Sancerre.

Rhone Valley W52 Michel Gassier Nostre Païs Blanc Costières de Nîmes 2011 53.00

"The 2011 Nostre Pais Blanc’s aromas and rich, honeyed, full-bodied texture reminded me of the famous white Chateauneuf du Pape made by Beaucastel, which sells for three or more times the price. An amazing blend of 90% Grenache Blanc, 5% Roussanne and 5% Viognier aged six months in French oak, the Roussanne component jumps from the glass, offering notes of acacia flowers, honeysuckle, white peach, quince and pineapple. The flamboyant, intense aromatics are followed by a full-bodied, exuberant, dry white wine that must be tasted to be believed. I suspect this offering has some aging potential, but why risk it given how beautiful it is showing at present. I recommend consuming it over the next several years." 93 points - Robert Parker, Wine Advocate issue #201, June 2012

W27 D. Masson-Blondelet “Villa Paulus” Pouilly Fumé 2007 54.00 Aromatically, this wine is pure Upper Loire Sauvignon. As the wine hits the palate there is an explosion of grapefruit and lime, yet underpinning this is a mineral complexity (suggestion of gunflint) that differentiates this wine from close neighbour Sancerre. The fruit on the palate is particularly round, lush, and supple yet retains good balancing acidity. M.W. Clive Coates rates Domaine Masson-Blondelet as “one of the best Pouilly Domaines”.

W82 D. Raimbault Sancerre Blanc 2012 56.00 A beautifully balanced wine, bringing together ripe apples and citrus with fragrant acidity. There is a sense of minerality in the texture, with depth of flavor finishing with lively acidity. Score - 90. (Roger Voss, Wine Enthusiast, Oct. 2013)

Alsace Alsace is a North-eastern French province lying on the Rhine. The region is known for rich, dry white wines made from grapes of German heritage, primarily Riesling and Gewurztraminer.

W21 Zind-Humbrecht Reisling, Herrenweg Turckheim 2000 65.00 92 points Robert Parker's Wine Advocate: Crisp apples are intermingled with smoky botrytis scents in the nose of the 2000 Riesling Herrenweg de Turckheim. A broad, pulp-laden, medium-bodied wine, it bastes the palate with loads of juicy pears, chamomile, linden, and minerals. Concentrated and powerful, it also possesses an exceptionally long, pure finish.

W28 Dopff & Irion Gewurztraminer 2001 26.00 The Gewurztraminer grape thrives in Alsace. It has a highly aromatic bouquet reminiscent of rose petals and lychee fruit.

W85 Weinbach Riesling Cuvée Theo 2008 69.00 Open and airy, framing white peach, quince, grapefruit zest and salt flavors. This is very accessible, despite its firm acidity

It presents youthfully subtle aromas of lemon curd and peach blossoms with nuances of meal and toasted almonds. W65 St. Urbans-Hof Ockfener Bockstein Riesling Spätlese 1999 58.00 Jancis Robinson has observed that “Riesling enthusiasts tend to be cleverer, wittier and better-looking than the average wine lover.” We can’t promise that you will be better looking if you drink this wine, but you will be making a smart choice, as it has won Decanter Magazine’s coveted Award of Excellence. Expressing excellent Mosel Valley typicity, it balances a slight sweetness with perfect acidity. Vibrant lemon aromas foreshadow the generous amount of citrus fruit that follows through on the palate.

W3 Dr. Pauly-Bergweiler Bernkastler Riesling Auslese 2003 60.00 “A hedonist’s delight. W63 Ajello ‘Majus’ Bianco (Sicily) 2006 31.00 Cataratto produces soft pear and melon flavours and Grillo brings the refreshing acidity and brightness to the wine. This wonderful white is lush and ripe with aromas of mineral, fresh flowers and citrus fruit, yet remains plush on the palate. It’s no surprise that this is a perfect partner for anything aquatic. Think Salmon, Sushi, Oysters or Crab.

W53 Brigaldara Soave (Veneto) 2009 29.00 This lovely Soave is produced from 20 year old Garganega vines grown near San Martino Buon Albergo Marcellise. It is fermented and raised in stainless steel and malolactic fermentation is prevented, allowing the wine to display its natural acidity while playing off its rich, yet not weighty, yellow plum and fresh herb flavours. Its flavours are pristine and succulent. A perfect match to fresh pan roasted trout with fingerling potatoes.

W32 Masi Masianco Pinot Grigio e Verduzzo delle Venezie (Fruili) 2012 25.00 The richness of the perfumes and aromas of Pinot Grigio delle Venezie cultivated at Castions di Strada, in the Friuli region, compelements the structure of the native Verduzzo grape. PORT, SHERRY & MADEIRA

PORT Port is a fortified wine made in Portugal from various grape varieties grown in the Douro valley. Brandy is added to halt fermentation at a point where sufficient natural sugar remains to give the wine its characteristic sweetness. There are many different types of port. Vintage port is wine of an exceptional year, kept in cask for two or three years, then matured in bottles. Late Bottled Vintage (LBV) ports are generally the produce of a single vintage. They are left in wood for four to six years, then fined and filtered before bottling. Ruby port, generally a blend of wines of different vintages, is stored in wood and bottled before it loses its clear, red color. Vintage Character port is essentially premium ruby port. Tawny port remains longer in the cask, losing some color and alcohol. Colheita is a tawny port from a single vintage. Crusted port is vintage or ruby port kept in bottles until it has formed a crust-like sediment. Single Quinta Ports are made in both tawny and vintage styles but with the distinction that they come from only one vineyard. White port is a sweet, amber-coloured port that is delicious served chilled as an aperitif.

SHERRY

Sherry is a fortified wine that comes from white grapes that are grown near the town of Jerez de la Frontera in Andalusia, Spain. Sherry is produced in a viariety of dry styles made primarily from the Palomino grape, raning from light versions similar to white table wine, such as Manzanilla and Fino, to darker and heavier versions that have been allowed to oxidise as they age in barrel, such as Amontillado and Oloroso. Sweet dessert wines are also made, from Pedro Ximinez or Moscatel grapes, and are sometimes blended with Palomino-based Sherries.

Madeira is a fortified wine that comes from an island off the northwest coast of Africa of the same name. Originally it was naturally oxidized as a result of ageing on shipboard. This process, which produces strong, rich wines, is now undertaken in heated buildings called "estufas," Madeira ranges from very sweet (Malmsey) to medium sweet (Bual) to rather dry (Verdelho and Sercial).
