Why do traditional dishes change when they are brought fromone country to another? In the U.S. we enjoy foods frommany different Spanish-speaking countries. In manyparts of the U.S. you can easily find dishes fromMexico, the Caribbean, Central America, and SouthAmerica. Yet you might be surprised that thosedishes aren’t exactly the same as they are in theircountries of origin. Here are two traditional recipes. The original list of ingredients for both has beenmodified to include foods more readily available inthe U.S. They also reflect the widespread cookingpractices and tastes that were already in place whenthe recipes were brought to this country.
