This year will be my 10th year at Waxham Barn Café. It’s long hours and hard work, but every morning, I walk through the courtyard and

feel lucky to be a part of the history of this amazing site. There is no other building comparable in the county: impressive, imposing – and free to visit.

As this stretch of coast gets busier, Waxham village has managed to keep its rural charm and attracts many visitors who like to leave to modern world behind and soak up the quiet atmosphere. Our site is just ten minutes’ walk from the beach or costal path, past our peaceful, local church, St. John’s.

The café menu is compiled of simple, fresh ingredients, locally sourced wherever possible. Our suppliers include Broadland Ham, Breckland Orchard and Cooks Farm Shop at Ingham.

We have our free range eggs delivered from the farm, next door. We have a small kitchen garden, and grow some of our own herbs and vegetables, like courgettes, onions, beetroot, potatoes, chives and parsley.

The café is open from Easter until October, 10:30am to 4pm, every day except Wednesday.

Carrot and Courgette Soup

All our soup is vegan, and gluten free. This has a unique flavour and is my personal favourite.

3 large carrots3 large courgettes2 large onionsStock and coconut milk to taste.

Roughly chop the vegetables, cover with water in a pan. Add your favourite stock powder or paste. (I use 2 teaspoons of vegetable bouillon.) Bring to the boil and simmer until soft. I sometimes remove some of the water at this stage; I like my soup to be thick and hearty. Blend until smooth. Stir in the coconut milk to taste. (I use 2 tablespoons.)

Banana and Caramel Cake

This is an Australian recipe that I’ve adapted to make it gluten and dairy free. I’ve written it out for customers many, many times!

2 large bananas, (the older, the better) mashed125g vegetable oil150g caster sugar200g self-raising gluten free flour (I use rice flour)2 large eggs1 tsp Bicarbonate of soda (don’t be tempted to use a different raising agent!)For the icing;25g dairy-free spread30g soft, brown sugar1 tbsp soya milk60g icing sugar

This cake can be mixed by hand, but is best done by machine! Whisk together, throughly, all the cake ingredients: the mixture needs lots of air bubbles

to make the sponge light. Pour into a greased, lined tin (9inch, round) and bake for approximately 35 minutes at 160 degrees Celsius. The sponge will be very dark, in colour. Don’t be tempted to take it out of the oven too early, use a cake tester, if necessary.

The cake must be cold before you ice it.Melt the spread, brown sugar and soya milk,

gently, in a pan. Remove from the heat and whisk in the sieved icing sugar until smooth. Spread the warm icing over the cake.

Lime and Coconut Cake

This is a twist on the classic lemon drizzle cake; substitute lime for lemon and add coconut. Simple!

110g margarine 150g caster sugar175g self raising flour, sifted2 large eggs2 tbsp milk 1tsp baking power Grated zest from 1 lime 35g desiccated coconut For the icing;Juice of the lime40g icing sugar15g desiccated coconut

A hand blender is best to mix all the cake ingredients together until smooth and pale in colour. Pour into a greased, lined tin. (9inch round) and bake at 160 degrees Celsius for approximately 30 minutes. The cake should be well risen and browned.

Ice the cake while it is still warm.Mix the lime juice with the icing sugar - pop this

mixture into the microwave for about 15 seconds. It should be liquid enough to pour and spread over the hot cake. (If your lime is not very ‘juicy’, use 2 or add some lemon juice.)

Sprinkle over the remaining coconut immediately.

From local schoolchildren working with local artists to a globally famous sculptor, this year’s the time to catch

some amazing outdoor art on the coast.

A unique exhibition by ground-breaking conceptual artist Richard Long at Houghton offers the chance to introduce children to this radical art for free.

EARTH SKY is the first exhibi-tion ever to present the Turner Prize winning artist’s outdoor works in the landscape, the show will be the larg-est since Long’s retrospective at the Tate in 2009 and is an opportunity to see new site-specific works set within the historic landscape and gardens at Houghton alongside permanent art-works by a range of contemporary artists, including James Turrell, Zhan Wang, Jeppe Hein, Stephen Cox, Ra-chel Whiteread, Anya Gallaccio and Phillip King.

Exhibition curator Lorcan O’Neill said: “Richard Long is one of the most influential figures of conceptual and land art, part of a generation of distin-guished British artists who extended the possibilities of sculpture beyond traditional materials and method; his work is rooted in his deep affinity and engagement with nature.”

The artist’s new works, in the grounds of the hall, use a variety of materials, including local Carr stone, flint from East Anglia and tree stumps from the Estate. They accompany the permanent Long sculpture, Full Moon Circle, which was commis-sioned for Houghton in 2003. There will also be large mud works in the outdoor colonnades, and smaller-scale works in gallery spaces, as well as his-toric material relating to the artist’s career.

Out and about, free open air art that adds to the interest of a walk can be found at a number of sites on the

Norfolk coast, including Salthouse churchyard, the back garden of Kel-ling Primary School, the garden of Kelling Tea Room - a good place for walkers to get refreshment, and at Cley Wildlife reserve. All of these can be reached on the CoastHopper bus. Also look out for sculptures in Kelling Heath Holiday Park, Albert Street in Holt, and in Fakenham.

John Millwood organised a trail of outdoor art on the coast some years ago. Still in place is ‘Monument to Salthouse Mariners’, by Kevin Lee, standing dramatically against the sky-line above Salthouse. He said “it can be seen from miles around – the site is a splendid viewpoint, easily reached in a few minutes’ walk westwards up the public footpath from the village through two kissing gates.”

The Norfolk Coast Partnership has worked with local artists to mark some of the places on the Glaven River where the mysterious eels and pass through and live.

In the spring, when the moon is full, if you look carefully you may see glass eels climbing the sluice gates at Blakeney – arriving in Norfolk from their long journey from the Sargasso

Sea. A sculpture by Henry Stephens now marks their struggle.

Eels are also celebrated in art at NWT Cley Marshes centre in a film by local natural history film maker Josh Jaggard; at Natural Surroundings in the Glaven Valley through a panel on the life cycle of eel in tea gardens by Susan Purser-Hope; and colour-ful glassworks by local schoolchil-dren, also facilitated by Susan Purser-Hope. At Bayfield Lower Meadow picnic spot there is a sculpture by Henry Stephens, and at Letheringsett Mill, where eels pass by on land there are more artworks by local school-

The Glaven eel art trail is part of a Norfolk Coast Partnership Heritage Lottery funded project to protect this threatened creature, delivered with the Norfolk Rivers Trust.

In the future, more work will ap-pear in the landscape, as plans are afoot to use an imaginative variety of art on a route to explore the heritage of the peoples of sea and shore in and around Wells-next-the-Sea.

Benedictus the seal (pictured) was admitted to RSPCA East Winch Wildlife Centre after a member of public found him swimming around a post inshore of the car park at Stiffkey in early January following the tidal surge.

The centre cares for all native British wildlife from a pipistrelle bat or shrew weighing less than 5g to a large adult grey seal weighing 300kg. In 2016 the centre cared for 4108 patients: hedgehogs were the number one admission with 952 in care. Following the 2013 surge tide 106 seals were looked after.

This year the centre is holding its bi annual open day, on Sunday 23 July from 10am to 4pm – see behind the scenes, talk to staff, and enjoy tombola, games, competitions, stalls, BBQ and refreshments. As part of this there is a children’s

art competition - send your wildlife art pictures – with name, address, telephone number and age printed on the back (categories 5-7, 8-11) by 7 July to address below for display on the day.

You can make donations direct to the centre. Any copies of this newspaper left over after the summer go the centre to be used as bedding!
