Treur, The Dutch Cheese Experience! E.M. Treur en Zn. BV is located in Woerden, right in the heart of Dutch cheese making country. Treur was founded by Mr. E.M. Treur in 1955 and is a real family business. Over more than 55 years, Treur has become a specialist in the ageing and care of Dutch Gouda cheese. Currently the company is guided by the second generation Treur, Daan and René Treur, two brothers.

Treur can provide in the following cheese specialties:

With its own climate-controlled cheese warehouse and cellars, Treur supplies quality cheese by carefully monitoring its quality chain. The company is IFS Higher Level, BRC Food and Safety, BRC Storage and Distribution, COKZ Process and Skal certified. The warehouse can store 1,000,000 kg cheese on 34km of wooden shelves, and has a constant temperature and humidity, which means the cheese develops a unique flavour. By covering the cheese in the thinnest plastic coating possible (to protect the crust), the cheese matures better, as it can continue to breathe. As a result, the cheese develops the perfect flavour.

To provide next generations as well with delicious cheese, Treur contributes to sustainability. Therefore Treur has a special basement where we store and mature circa 200 ton cheese. This basement is located deeper in the ground, which means the temperature is more constant. This is why we need to cool less in summertime. Moreover, the automatic robot takes care of the cheese in the basement and therefore it makes it physically less heavy.

With our own exclusive cheese brands we offer excellent quality and an intense flavour. Our cheeses are always of an intensive flavour, naturally riped and with a perfect flavour. Moreover, each brand has its own unique story and this makes the cheese brands distinctly different from those of our competitors.

Weydeland | 48+ Premium Quality GoudaWeydeland, with love

for cow, human and nature!

Weydeland cheese is inimitable. Fresh milk from Dutch cows is essential for Weydeland’s

soft, creamy taste. Cheese maker CONO pays the farmers an honest price for this milk, so the farmers

are able to earn a good living. The farmers also receive a premium for keeping their herd outdoors, which means

the cows are able to roam and graze in the fresh air from spring until autumn. Thus, the cows are more comfortable in their skin and they produce more and better milk. Grazing outdoors in grassy meadows improves the composition of the fats and proteins in the milk.

In the Midden-Beemster (North-Holland), where CONO’s cheese factory is located, the fresh milk is processed into cheese using traditional methods, according to a traditional recipe. After 2 weeks, the cheese leaves the factory and then it is aged in Treur’s warehouse. Here, each cheese has its own place, where it gets all the care it needs to give it time to develop the taste that makes Weydeland so excellent. It does so under optimal circumstances while being continually checked for taste and quality. Needless to say, Weydeland may be found among the premium quality cheeses.

Old Weydeland | The famous Black Gouda

Old Weydeland, naturally aged, extra delicious! Old Weydeland is an artisan very matured cheese made from the fresh milk of Dutch cows. The cheese factory combines modern-day technology with traditional methods to manufacture the cheese according to an authentic recipe.

When the cheese leaves the cheese factory it gets its own place in Weydeland’s warehouse. The humidity and temperature in the warehouse are constant, creating the best possible environment for the maturation of the cheese.

Here, the cheese rests for more than 16 months on wooden shelves. During this time the cheese gets all the care and attention it needs, to develop the perfect flavour. The cheese also gets the thinnest coating possible; allowing the cheese to breathe and letting nature to take its course. Only the best cheeses may carry the Old Weydeland label, and that is definitely something you can taste! The deliciously strong, lingering flavour of Old Weydeland is unsurpassed. A cheese with character!Old Weydeland only contains 2 grams of salt per 100 grams cheese, which is remarkably low for a cheese of this age.

Twight, good to eat! Twight is the finest 20+ cheese with the best possible taste! It is made from Dutch cow’s milk with softer milk fat, more unsaturated fats and more conjugated linoleic acid than you will find in regular cheese. Oudelandse Boeren, authentic farmhouse cheese!Oudelandse Boeren is the authentic farmhouse cheese from the Green Heart of the Netherlands. Made from the best farmhouse milk, without colourings. Prepared with love and care by our experts. The recipe for Oudelandse Boeren was put together by a large number of cheese connoisseurs, which is evident from its unique flavour. During the aging process the cheese is turned by hand and covered with a very thin coating in order to give the cheese more air and give it the chance to mature better.

Farmhouse ‘Pure & Tasty’ is made from daily-fresh raw milk. The cows graze in the ‘Green Heart’ of Holland at the farm called ‘De Spruithoeve’. They use daily-fresh raw milk to make authentic farmhouse cheese. Using raw milk (no pasteurization) give this cheese the typical ‘farmhouse’ taste.

After production, the cheese matures for one year on wooden shelves in a climate controlled warehouse. During that time the cheese get a careful treatment to develop a unique flavour.

‘Pure & Tasty’ is a tasteful farmhouse cheese, pure and with small crystals in the cheese.

Farmhouse ‘Rich & Creamy’ is a raw-milk cheese with a rich flavour. On a big farm in a polder called ‘Flevopolder’, 150 cows are at home in a comfortable livestock house.

The family Blokland are owners of this farm. Generation by generation they learned the cheese making process by their own. A special starter culture made the cheese very creamy. After 4 months maturing, farmhouse ‘Rich & Creamy’ is delicious.

A wheel of 16kg creamy and tasteful farmhouse cheese is the result.

‘Farmers Cheese Affiné 30+’ is made from daily-fresh milk. His fat content is 25% lower than the standard. In a polder called ‘Krimpenerwaard’ is an old family farm with 100 cows located.

And..., generation after generation they made cheese and butter here. Reduced-fat cheese is their specialization. A special starter culture made the texture soft and delicious. During 6 months, the cheese is matured on wooden shelves to develop its rich flavour.

Herbed artisanal cheeses Thanks to the daily fresh, raw milk of the farmer’s own cows, these herbed farmhouse cheeses have a rich, strong taste. This true “farmhouse flavour” can vary a little with each season. Just as mother na-ture intended. The dedication, an affinity with cheese, and expertise of the cheese makers ensure that this farmhouse cheese is prepared with a lot of care and attention. Each cheese has its own mixture of herbs and spices, which gives it its unique flavour.

Once the cheeses are prepared, they are carefully aged in the warehouse. Resting on wooden shelves, they can relax and develop the typical farmhouse flavour.

From the “Top” of North-Holland

Twisca | Sheep’s cheese

Twisca, a unique Dutch sheep’s cheese.Twisca is a delicious flavourful Noord-Holland sheep’s cheese, full of vitamins. This cheese owes its rich, creamy taste to its high shape, which really benefits the aging process, and - more importantly - to the North-Holland pastures where the dairy ewes are allowed to graze to their hearts’ content.

Origin The origin of Twisca’s milk is from the farm West Friesedijk in North-Holland. The name is derived from the monumental dike which enclose the entire region Westfriesland. It has a total length of 137 km. At the farm there are 800 sheep on 70 hectares of land. The food grows on the farm and therefore the quality of the milk is always very high. Ons Genot owes its rich taste to the special grass that the cows eat. At the farm special grasses with a high protein content are sown, which are healthy and extra tasty. Moreover, the grass contains a lot of sugar which result in a slightly sweet cheese. The grass is mixed with straw, corn, beet pulp and important minerals so that the cows give the best tasting milk with the right balance of fats and proteins for extra creamy cheese. By using flaxseed, the cholesterol content of the cheese is low.

Bon Repas: Farmhouse cheese with holes

Bon Repas is an authentic raw milk cheese with holes. This cheese is crafted according to a unique recipe and has an exceptionally creamy texture. It has a popular appeal and a flavour that everyone will enjoy.

The cheese is made by Cock and Piet Verweij at the polder village of Bonrepas in Krimpenerwaard near Gouda. The local people also refer to Bonrepas as Boenderpas, Boerenpas, Bonrepas (1254) or Bonrepois (1268). Bon Repas is French for a good meal.

According to legend, the name Bon Repas originated from Napoleon, who apparently enjoyed a good meal in the village. Nothing could be further from the truth, however, as the name already existed in the Middle Ages. Guido van Chatillon is associated with Bon Repas due to the following quote:

“Het is eene heerlijkheid, sedert onheugelijke jaren met Vlist tot ééne heerlijkheid vereenigd. Men wil, dat zij den naam Bonrepas, beteekenende eenen goeden maaltijd, gekregen hebbe van Guido van Chatillon, om reden het aan hem, die een groote smulbroer was, niet meer opbragt dan hij op eenen maaltijd kon verteeren”, according to (602).

The above quote is Old Dutch and translates as follows: This is a manor that has been joined with Vlist to form one estate since time immemorial. Legend has it that the name of Bonrepas - meaning a good meal - derives from the great gourmet Guido van Chatillon, since it yielded no more to him than he was able to consume during one repast.

This polder has other historical associations as well: Wilhelmina van Pruisen, wife of Stadtholder Willem V, was arrested near the River Vlist on 28 June 1787. Her arrest is known as the Arrest of Goejanverwellesluis.

Whatever the true origin of the name Bon Repas may be, it is a fact that dairy farms that make cheese have been established in this area for centuries. And this isn’t surprising because there

are some very rich pastures in these polders. The polder is located at 0.3 metres below Amsterdam Ordnance Datum, and its Bonrepas windmill is a well-known landmark. This smock windmill was built round about 1600 along the River Vlist in order to drain the polder. It is wind-powered and the water is lifted up by its large wheel.

The cows spend the summer months out in the rich pastures, and this results in the fresh full-cream milk used to make the unique Bon Repas farmhouse cheese. A combined cheese-curd maker can process 6,000 litres of fresh full-cream milk, and propionic acid bacteria are added to create the holes during the maturing process.

Maturing is a leisurely process that takes place on wooden planks, and the cheeses are allowed to mature at a high temperature (20 °C) for about 14 days. This serves to activate the bacteria in the cheese and creates the large holes, and it also makes the cheese bulge slightly. Bon Repas cheese matures for a total of 8 weeks before it can be eaten, and this period is essential for preparing a good meal.

This process results in a unique farmhouse cheese with an exceptionally creamy texture. The flavour is pleasantly sweet and mild and can be enjoyed by people of all ages. Bon Repas is delicious as a topping for bread, in toasted cheese sandwiches and

salads, or in au gratin dishes. It has a low salt content: only 1.9 grams for each 100 grams of

cheese. In short, it’s delicious and very versatile. So why not take

the time to enjoy a good meal - with Bon Repas cheese?

Jerseyhoeve Bio is an organic cheese made of 100% Jersey milk. The cheese is made of pasteurized Jersey milk of a herd of 80 cows. At the island Goeree-Overflakkee in the Netherlands the cheese is made by De Mèkkerstee, known for its Mèkkerstee organic goat’s cheese.

Jersey milk has a different composition of fat and protein than milk of Holstein cows. The amounts of fat (5,9%) and protein (4,2) are higher, which results in a more creamy cheese and a perfect flavour. More-over, Jersey milk is naturally rich of vitamins and minerals (2x), carotene and conjugated linoleic acid (CLA) than milk of Holstein cows. This results in a particularly rich cheese with a distinctive flavour.

In addition, the Jersey cow is a strong race that efficiently handles its food supply. They use less food for the same amount of milk. This makes the Jersey cow suitable for organic agriculture. However, the cow is a lot smaller and gives less milk.

The biological nature of the Jerseyhoeve is characterized by the use of only natural ingredients. Cato is the name of a range organic cheese by Treur. Cato was a dairy cow. With her age of 19 years old she produced fresh milk everyday. Nevertheless her herd with relatives consisting of 70 horned cows, still produce milk.
