Cacharrada: It is made with beef giblets including the preparation of 7 dishes: heart, anchuras, gizzards, veins, liver, criadilla, and chunchuli that are well-paired with red wine.
Patasca moqueguana: soup made with giblets, corn, and spearmint. Frutos del mar: traditional firewood cooking dish that mixes cebiche, deep fried
shellfish, tiraditos, fried limpets, and is served with potatoes, sweet potatoes, red hot pepper, and garnish.
Sancochado: white broth with brisket, sliced pork, racacha, potatoes, cabbage, and chickpeas. The broth is served alone first and then the beef, sliced pork, cabbage, racacha, fried chuño (dish made from milk, cheese, and eggs), and grained rice.
Among the typical deserts are: alfajor de penco, corn pancakes, guargueros, voladores, hojaldrilla, among others. Also, it is possible to try traditional liquors such as local wine, pisco, apricot liquor, leche de monja, figs liquor, and pisco cream.
