V I N E YA R D S & G R A P E S Grapes originate from vineyards with the best positioning in Tuscany. The soils
are of various types, predominating sand and clay. Tuscany is known for a warm,
sunny growing season with substantial temperature differential between day and
night. Such conditions produce flavourful and rich grapes for wines appealingly
complex with distinctive aromas. The vines are manly positioned to point south,
which contributes to the complete maturation of the fruit.
F E R M E N TAT I O N A N D A G I N GThe grapes are harvested upon full maturation during September. The wine is
vinified using an average maceration time of 8 days. Temperature is controlled
(28-29 °C) during the fermentation to encourage the release of attractive tannins
and to develop a clear ruby colour, while maintaining the rich fruit aromas of the
grape. After fermentation, the wine is kept in stainless steel temperature-con-
trolled tanks for 6 months.
